The wife wanted spaghetti casserole. For the sauce, I ended up going with a mushroom base, with a dollop of goat cheese and another of ricotta and half a cup of heavy cream, one egg, a teaspoon of minced garlic, and a healthy pinch of Herbs de Provence. Boil half a large box of spaghetti noodles and set aside al dente. Sautee red peppers, slivered tomatoes, and hand torn sausage until meat is cooked throughout. Preheat your oven to 350. In a round pie pan, pour the cream mixture in and spread evenly. Then, one handful at a time, begin to fill up the pan with spaghetti noodles. Once full, knead the noodle mixture two or three times. Lightly spoon the sauteed mixture on top and pat to an even surface. Sprinkle with fresh mozzarella and spread out sliced olives and cilantro on top. Bake for 40 minutes.
Yeah, my first casserole! I was given a casserole dish last year, amongst a bunch of other, miscellaneous items of crockery and kitchen equipment, but till now I'd only been using it as a fruit bowl. Today I made a casserole in it.
500g of diced steak, 3 large carrots, 2 large onions, and a sachet of mix and water. Yeah I know, boo, sachets. Still, they work.
2 hours in the oven later, served up with mashed potatoes - and it was delicious. The meat was a touch dry, but I just need to add extra water/stock next time. It even made about 3 or 4 me-sized servings, which isn't bad going.
I'm not much of a cook, but I do ok. :)
