i was flicking through a cook book this morning and sebastian saw these teddy bear biscuits on the cover and immediately started demanding an 'icky'. so this afternoon, i cooked up a batch of these chocolate teddy bear biscuits. of course, in the recipe book of healthy foods for toddlers, this was the *only* recipe with a 'we know this isn't healthy but...' disclaimer. oh well. i'll make the muesli slice next time!

I got the Daisy Cooks! cookbook for Christmas and have started experimenting. Her yellow rice was really standout (but best to cut back on the salt), as was the chicken with figs (photo soon). I've now got homemade sofrito in the fridge/freezer and achiote oil in the pantry, so I'm due for a Puerto Rican cooking frenzy!

This is my beautiful kitchen! (In which I seldom cook!!) The backsplash is the same 2 inch square slate tile as the fireplace surround, only set on a diagonal. The cabinets are maple shaker style and the counter tops are verde butterfly granite. The doorway you can see a sliver of goes to the dining room. We have a microwave fan, ceramic cooktop, and built in oven at a diagonal in the corner. I love having the cupboards to the ceiling -- I can't REACH them (without a stool) but it's a clean look and gives that much extra storage. The pantry (on the right) is great, too.

B. Kitchen, longer view without nook showing. Dishwasher is newer and very quiet. This Kitchen is bigger than my kitchen now in my House. Boy, do I miss this kitchen! It is NICE to be able to look out the window while you are doing dishes; most apartments don't have that!

"Pasta di casa al fuscello" (73/365)










We made "Pasta di casa al fuscello" at a Slow Food Perth event this morning.

It was interesting and fun. The pasta is hand-rolled around thin sticks and it took quite a while to make enough for a houseful of people!

And of course - being a recipe handed down through generations of an Italian family from Calabria, served with a slow-cooked pasta sauce with pork and veal meatballs and a traditional seasonal salad - it tasted fabulous.

I hadn't made sushi in a while so I made up some tamago for the maki rolls, made onigiri like Kumiko taught me, and enjoyed it all with my sashimi. Thankfully my flatmate Nicky arrived home to taste some of this!

A new way to cook the turkey- nothing too dry and no brining. Cut the turkey up into one big breast and two thighs, 2 drumsticks. Brush with butter and breast side down. Oven at 275 degrees. 1 hour turn the breast over. Cook at least 1 hour and take the temp with instant read thermometer. Legs out when they're done and continuing cooking breast until 160. Out it comes, cover and rest up to 1 1/2 hours. Turn oven up to 500 degrees and turkey back in to brown - about 10-15 minutes. Out it comes, rest and carve. Delicious. Stuffing done in 9x13 pan while the turkey is out of the oven.

Chili in the slow cooker, eat it the day after as the flavor develops slowly. I diced onions and one serrano pepper, sauteed them lightly with olive oil, then added the ground turkey with a chili spice mix, and added extra paprika and cayenne pepper powder. You have to cook the meat in a pan because the slow cooker does not go up to temp. The other ingredients are visible on the pic: corn, three kinds of beans and two kinds of tomatoes. Cook for six hours and chill overnight. Serve plain or over rice, couscous, buckwheat, etc.

Palate cleansers are commonly employed in sensory evaluation studies to cleanse the palates of subjects before and in between samples. Their purpose is to rid the oral environment of substances that would interfere with product evaluations due to carryover or adaptation.

Lime

Lime is a term referring to a number of different fruits (generally citruses), both species and hybrids, which are typically round, green to yellow in color, 3–6 cm in diameter, generally containing sour pulp, and frequently associated with the lemon. Limes are often used to accent the flavors of foods and beverages.

In order to prevent scurvy during the 19th century, British sailors were issued a daily allowance of citrus such as lime (Citrus aurantifolia), which led in time to the nickname "limey" for all Britons. It was later discovered that this beneficial effect derived from the quantities of Vitamin C the fruit contains.
Lime extracts and essential oils are frequently used in perfumes, cleaning products, and aromatherapy.

Pink Peppercorns

Pink peppercorns have a delicate, fragrant, sweet, and spicy flavor. They are reminiscent of a mild citrus zest and sweet berries. Pink peppercorns go especially well in fruit sauces, vinaigrettes, and desserts.

These are not true "peppercorns", but similar tasting berries often called Pink Peppercorns, Peruvian pepper, Baies Rose Plant, or Peppertree (Schinus molle) that is native to South America.
The Baies Rose plant is a small tree that has numerous compound leaves with slender, symmetrical, leaflets on each side of the leaf.
The peppercorns form in clusters on the tips of the branches and can be from white, at an immature age, to pink or even a dark red. And like it's cousin the mango (Anacardiaceae family), this plant can also cause allergies.

Aka Palak Panner. This was my first time cooking with paneer. I fried it before adding it to the sag. A bit messy, but very good. The recipe came from "The Essential Madhur Jaffrey" cookbrook. I think it might be worth blending the spinach next time. This stuff is also pretty good with tofu!

1-inch cube ginger, chopped
3-6 garlic cloves, peeled
1/2-1 hot green chili
paneer
salt
1/4 tsp garam masala
1/4 tsp cayenne pepper (optional)
6 tbsp vegetable oil
675g spinach, washed, trimmed and very finely chopped
3 Tbsp single cream

Put the ginger, garlic and green chili into a blender or food processor along with 50ml (2 fl oz) water. Blend until you have a smooth paste.

Heat oil in a large pan over medium flame. Add the paneer and fry them, turning over gently, until they are golden-brown on all sides. Remove paneer with a slotted spoon and place on a plate in a single layer. Sprinkle quickly with 1/8 tsp salt, the garam masala and cayenne pepper. Set aside.

Put the paste from the blender into the hot oil (beware of splatters!) and fry it, stirring constantly, for about 30 seconds. Add the spinach and 1/2 tsp salt. Stir the spinach around for 1 minute. Cover the pan, lower the heat and let the spinach cook gently with the paste for 15 minutes. If you've just washed the spinach, there should be enough water on them too cook. If not, add a little water to the pan.

Gently stir in the paneer and cream. Simmer on a low heat for another 10 minutes, stirring occasionally.

Is it Desirable?
The following is an excerpt from Marriage in Islam by Muhammad Abdul-Rauf, Ph.D. Fifth printing 1993, published by Al-Saadawi Publications, P.O. Box 4059, Alexandria, VA, U.S.A. 22303.
Marriage in Islam is strongly recommended on
religious, moral, social, psychological and physiological grounds.

SCRIPTURE AND TRADITION
The Qur'an, which Muslims believe to be the word of God, reads:
And marry those among you who are single . . . If they are needy, God will make them free from want out of His grace. [Qur'an 24:32]
And He it is Who has created man from water; then He has made for him blood relationship and marriage relationship. And thy Lord is ever Powerful. [Qur'an 25:54]
One of His signs is this: that He has created mates for you from yourselves that you might find quiet of mind in them, and He put between you love and compassion. Surely there are signs in this for a people who reflect. [Qur'an 30:21]
In the context of praising the prophet preceding the Prophet Muhammad, the Qur'an reads:
And surely We sent Messengers before thee and appointed for them wives and children. [Qur'an 33:38]
And in praising the habits of good believers, it reads:
And those who say, "Our Lord, grant us in our wives and our offspring the joy of our eyes . . ." [Qur'an 25:74]
There are also many Traditions ascribed to the Prophet Muhammad in which the practice of marriage is emphatically praised. The following are some of these Traditions:
Marriage is my recommended custom. Whosoever turns away from my recommended custom is turning away from me.
Get married so you multiply. I shall indeed be proud of your multitude on the Day of Resurrection.
Get married, and do not divorce; indeed, divorce causes the Throne [of God] to shake!
O you young people, men and women! Whosoever can bear the burden of marriage, let him or her get married. It [marriage] is indeed contentment to the eye and a protection to the modest parts.
When one is married, he secures half of his religion. So let him fear God in the other half.
ADVANTAGES
1. Procreation
This is the paramount advantage of marriage; namely, to contribute through legitimate means to the continuity and preservation of the human race. The sexual urge serves the function of bringing the mates together for the fulfilment of this basic objective.
The procreational objective has four aspects: to fulfil the will of God; to seek the love of the Prophet Muhammad; to benefit from the prayer of the child; and to profit from its intercession on behalf of its parents.
Almighty God, in providing the male with intricate fertilizing organs and the female with a receptive fertile womb, is telling us in the most eloquent but voiceless language of the purpose of these provisions. To let them be idle is to ignore the divine wisdom written on these God-given instruments. Imagine a farmer who, although he is given a piece of fertile land, seeds and farming tools, just lets the land go to waste, the seeds rot and tools rust. This farmer not only is a fool, but is to be condemned for his wasteful and harmful indifference.
Procreation through marriage is also a means of seeking the pleasure of the Prophet Muhammad, peace and blessings be upon him, who is believed to be alive in his grave and to whom the deeds of the members of his nation are regularly presented. He has called upon his nation: "Marry, so your number increases. The practice of marriage is an answer to his call.
Prayer of a child is believed to be beneficial to his dead parent. The Prophet, peace be upon him says:
When the son of Adam dies, nothing would be of any more benefit to him except three things: a continuous charity, some useful knowledge he has left behind and a child who may pray for him.
Should the child die early and the parents accept its loss as an act of God, without despair, it would be like a ticket to Paradise for them. The Prophet, prayers and peace be upon him, is related to have said:
A child [who dies before reaching puberty] leads the parents to Paradise.
A child will be brought [on the Day of Judgement] and told, "Get into Paradise." But he will stand reluctantly and angrily at its gate and say, "I am not going to enter Paradise without my parents." It will then be said, "let his parents enter Paradise with him."
It is related that an unmarried man of good conduct who lived in the early past shouted when he was rising from sleep one morning. "Help me to get married! Help me to get married. Maybe God will give me a child who will be useful to me on the Day of Judgement." He was asked, "What has happened?" He said, "I dreamt that the Day of Judgement had come, and all mankind was raised and brought together in one place with the burning sun close over their heads. Everyone became very thirsty and I was dying of thirst. Suddenly, children appeared among us, lively and handsome, covered with protective lig

Through the hard-frozen streets we go at a regular canter; often I am upraised as high as the first storey of a house; never do I sink as low as the house doors. And at last I float at an extraordinary height above the vaulted cellar of the dealer, whom I see far below crouching over his table, where he is writing; he has opened the door to let out the excessive heat.

"Coaldealer!" I cry in a voice burned hollow by the frost and muffled in the cloud made by my breath, "please, coaldealer, give me a little coal. My bucket is so light that I can ride on it. Be kind. When I can I'll pay you."

The dealer puts his hand to his ear. "Do I hear right?" he throws the question over his shoulder to his wife. "Do I hear right? A customer."

"I hear nothing," says his wife, breathing in and out peacefully while she knits on, her back pleasantly warmed by the heat.

"Oh yes, you must hear," I cry. "It's me; an old customer; faithful and true; only without means at the moment."

"Wife," says the dealer, "it's someone, it must be; my ears can't have deceived me so much as that; it must be and old, a very old customer, that can move me so deeply."

"What ails you, man?" says his wife, ceasing from her work for a moment and pressing her knitting to her bosom. "It's nobody, the street is empty, all our customers are provided for; we could close down the shop for several days and take a rest."

"But I am sitting up here on the bucket," I cry, and numb, frozen tears dim my eyes, "please look up here, just once; you'll see me directly; I beg you, just a shovelful; and if you give me more it'll make me so happy that I wont know what to do." "Then be sure to tell him all the kinds of coal we have in stock! I'll shout out the prices after you."

"Right," says the wife, climbing up to the street. Naturally she sees me at once. "Frau Coaldealer" I cry, "my humblest greetings; just one shovelful of coal; here in my bucket; I'll carry it home myself. One shovelful of the worst you have. I'll pay you in full for it, of course, but not just now, not just now." What a knell-like sound the words "not just now" have, and how bewilderingly they mingle with the evening chimes that fall from the church steeple nearby!

"Well, what does he want?" shouts the dealer. "Nothing," his wife shouts back, "there's nothing here; I see nothing, I hear nothing; only six striking, and now we must shut up the shop. The cold is terrible; tomorrow we'll likely have lots to do again."

She sees nothing and hears nothing; but all the same she loosens her apron strings and waves her apron to waft me away. She succeeds, unluckily. My bucket has all the virtues of a good steed except powers of resistance, which it has not; it is too light; a woman's apron can make it fly through the air.

Affinity Wines, originally from Napa, California has a very distinct bottle to which I have made my logo. I designed the logo to look like as if it were a stain from the bottom of a wine glass, being tilted by the foot of the glass while the stem is also showing inside an outlined box. The logo being Affinity Wines, I put an “A” and a “W” within the foot of the glass to make them look as if a glare is on the glass. I have also made two sub logos for cooking wines, and sparkling wines. The cooking wine logo has small flames as if a gas stove is appearing behind the foot of the glass. The sparkling wine logo is a variety of sized bubbles rising to the top of the outlined box behind the foot and stem of the glass. At Affinity Wines, we will make and distribute the different types of wines nationally. Also sell signature wine glasses and other accessories. Since wine is a form of Alcohol, my target market is going to be 21 and older. Our wine will cost on average of 40 dollars per bottle. The logo will be visible on the bottles, packaging, and on gift boxes. We will have a cold warehouse full of wine in every state and there all of the distribution within every state. Also all major cities will have stores where people can pick up their wine or just gaze at our large selections.

Until I learned this recipe, I thought that all "flans" were a creme caramel custard. I learned though, that in French cooking flan can refer to a "Normandy Tart", and that's what this is.

Flan aux Pommes (Apple Flan Tart)

Ingredients:

Pate a Sucre (Sugar Pastry)
1-3/4 cups flour
5 TBSP sugar
3/4 cup butter (chilled)
1 tsp salt
1 egg
1/8 cup cream (approx.. you may not need any)

Filling
2 lbs tart apples (granny smith work well)
1/4 cup sugar
3 TBSP apricot glaze (apricot jam boiled then strained)

Directions:

Cut the cold butter into the flour until you get a sandy texture.

Beat the egg and sugar together.

Make a well in the flour mixture and add in the egg mixture.

Gradually incorporate until the paste is smooth. If the pastry is dry add the cream, it may or may not need it depending on the humidity of your kitchen.

Line a greased flan ring or pie plate with the pastry.

Pierce the bottom with a fork, set aside to rest.

Keep aside the best 2 apples for the top

Peel the remainder, chop up and cook on top of the stove. Add sugar to taste. Let cool.

Place the cooled apple filling into the pastry shell.

Peel the two best apples and cut into neat slices. Lay carefully on top of the apple filling in a circular design.

Sprinkle a little sugar on top of the apple slices and bake the flan in a 350 oven for 30-40 minutes.

When pastry is cooked through, remove and let cool. Remove flan ring if using.

Mask the top with the apricot glaze.

Once you're happy that it's looking good, put the plate on a rack to cool for a few minutes. You could be cliched and put it on a window sill, but I wouldn't trust that. It smells far too good to tempt fate!

Once cooled, just sprinkle some caster suger on top and you're done!! One fantastically tasty apple tart.

It really is very simple. This is only my second time ever making this, and it looks perfect. Serve with some yummy custard, cream or ice-cream for the perfect taste of success. As you can see, custard made from the powder is my own preferance. Although it take smore work than instant from a carton, it's far nicer.

Julia Anich Hull, wife, mother, Professor Emeritus, and force of nature, died Sunday, September 5th, 2010.

She was born in Akron to Nick and Mary Anich September 2nd, 1923, their second oldest. She spoke Serbo-Croatian until she began public school where she learned English, as children will, given a chance. Because of her experiences, especially with her first and eighth grade teachers, she determined to join their ranks as an educator.

She graduated from East High in 1941. Despite her grandmother’s derision, with the moral support of her father she enrolled at the University of Akron and began taking education classes. It was with a heavy heart that she determined that there was no way in hell she could stick out that course of study, basket weaving being her particular bane, and so she became an English major, abandoning all hopes of teaching.

After graduation she cast about as the job market for English majors then was about as bleak as it remains. Then she did what all English majors do: applied to Graduate school. Whilst retrieving her transcript one spring day in 1947, she bumped into the English Department Head. He inquired with a straight face whether she had found employment and told her of his dire need for bodies to throw before the flood of returning veterans attending college under the GI bill.

She took up the task of teaching men older than she who had seen the ravages of war (and the actual buildings they would read about). She bunked in an office with her former professors which was intimidating in the extreme. As the end of the term approached, she asked her mentor, Ruth Putman, whether she thought that they would keep her on. Ruth replied, in her Alabama drawl, “Oh, Joo’ya, you just stay until they tell you to leave.” And so she did for the next 43 years.

Having already applied to Western Reserve University for graduate work, and in spite of the fact that she had actually managed to land a job, she began taking classes. A part timer in the English department, John Hull, offered to drive her to Cleveland since he was studying there as well. After the first trip she returned home and told her older sister “I’m going to marry him.” John evidently did not get that memo.

They worked together, rode together, and socialized together for years while she finished her MA but it was only after a drunken party at the home of Leonard and Nellie Bertsch that he got up the nerve to propose. She said yes. He threw up on the way home. She cried herself to sleep. However, with her father’s blessing they wed and their marriage was a match for the ages, still remarked upon. They brought out the best in each other. “Cut off in the flower of his youth,” John died October 2, 1971 after a prolonged illness leaving Julia alone as the single mother of their only child, Jane Alexandra, nearly thirteen.

Julia had a great ability to communicate her enthusiasm for literature and the arts. She coached the debate team, helped start The Johnson Club, an academic social club, advised Alpha Lambda Delta, Freshman scholastic honorary, performed in faculty plays, taught literature, drama, poetry, and Western Culture, and almost always got stuck with at least one Freshman Comp class until she was so old that they felt sorry for her and stopped assigning it to her.

She had an extraordinary combination of kindness and sardonic wit, yet a sharp eye for the ridiculous and the despicable. She loathed faculty meetings although she enjoyed her colleagues--many as friends and some as cannon fodder. As her niece put it, “When she comes at you with open arms you are never sure whether you are walking into a hug or a propeller.” She enjoyed argument, that which weaker personalities call “fighting.” She loved art and cooking and was happily making French food after that other Julia’s book came out. She enjoyed music and was very grateful that her husband faithfully supported the nascent Akron Symphony since she found it painful to listen to in the early years and didn’t want to go. She loved to travel and had an unerring sense of direction: she was always exactly wrong, which, if you consider, is as good as being always exactly right. She enjoyed torturing her daughter with art and architecture lessons whenever they traveled (Clerestory, mom. Flying buttresses. Barrel vault...)

She was lucky enough to find a neighborhood of loving and fun friends and she lived there from 1956 until she died. She was an avid gardener, antique hunter, and fixer-upper. The parties with the Slocums and Gentners were some of her fondest times. There was the Momus Club, a monthly gathering of faculty for the purpose of food, merriment, and argument (fighting). All in all, not a bad life for a girl from east Akron whose funny name kept her from rushing any of the sororities at Akron U.

Dr. Johnson wrote, “While grief is fresh, every attempt to divert only irritates

Venturing deeper into the volatile seas off the coast of Yemen towards Somalia and Djibouti, fishermen like Abdalla Abrahem must spend more time and travel further into these troubled waters to find fish and support his family. Earning at best $10 a day, Abrahem and the rest of the people in the small village of 600 called Dobaba, along the hot arid Red Sea coastline, are one of the communities that are in dire need of food assistance.

Heading off the coast of Yemen in Bab al Mandeb, a narrow strip of sea only 12 miles across where the Middle East and Africa are there closest, Abrahem and I and a few others head out for a day of fishing.

I arrived in this area after a three-hour drive from Taiz. Descending down more than 4,000 feet through a lush oasis-like winding canyon with palm trees and camels everywhere, the temperature must have increased 30 degrees or more.
I arrived at the village of Dobaba and was shocked to see a series of villages in the middle of this unforgiving landscape and families trying to scrape by on the wind-swept plane. It’s one thing to not have enough to eat, but another thing all together to have to by your water.
Yemen isn’t just food insecure, it’s also facing a water crisis. Yemenis consume 2.8 billion cubic meters of water while renewed water in the aquifers does not exceed 2.1 billion cubic meters. Estimates indicate that the Western part of the country, where nearly 90 percent of Yemen’s population lives, will run out of water in the aquifer in ten years. Drilling in this region requires going to the expensive depth of 1,000 meters. Compared to only 40 meters 25 years ago. Nothing about this village is sustainable and yet they cannot afford to travel the long distance to Taiz let alone afford to live in such a city. Furthermore, their dependency and skill sets revolve around the sea.
Yemen’s food problems stem from multiple sources going back many years. During the Gulf War in 1991, Yemen supported Iraq politically, but not militarily. In retaliation, Saudi Arabia and Kuwait expelled as many as one million Yemenis. The Yemenis and their families relied heavily upon remittances. As a result, unemployment skyrocketed and inflation has run rampant.
Recently, rebel activity and border conflicts with Saudi Arabia have prevented Yemen’s ability to develop oil reserves in the North. Yemen’s oil refining industry relied on crude from Iraq and Kuwait, which dried up during the war and meanwhile, the US slashed its economic aid by nearly 90%, further fueling the fires of discontent and sparking the growth of the Fundamentalist Islamic movement.
Back in the village, Abrahem's daughter Shema attends a government-run girls school. “We are thankful that our children can receive a good education, but we still need food.” “What good is education when you can’t eat?”

After returning from the Sea and we give our fish to a local cook and we enjoy the best meal I’ve had on this trip. Relaxing and taking in the much-needed shade, I see a group of people walking towards the building. It’s a group of completely exhausted Somali refugees that just landed on the beach.

As I spend my last day in Yemen, hundreds continue to flee civil conflict in Somalia by making this hazardous journey across the sea I was just on all arriving on the beach I’m enjoying my lunch. Nearby is a makeshift graveyard that the UNHCR has buried over 500 bodies recovered on the beaches around Bab al Mandeb.

These exhausted new arrivals, who are given automatic political asylum, will soon be picked up and driven to the camp that I was at last week.

Another full day; convicting to use the word exhausted. I have no idea what that word means.
