A new way to cook the turkey- nothing too dry and no brining. Cut the turkey up into one big breast and two thighs, 2 drumsticks. Brush with butter and breast side down. Oven at 275 degrees. 1 hour turn the breast over. Cook at least 1 hour and take the temp with instant read thermometer. Legs out when they're done and continuing cooking breast until 160. Out it comes, cover and rest up to 1 1/2 hours. Turn oven up to 500 degrees and turkey back in to brown - about 10-15 minutes. Out it comes, rest and carve. Delicious. Stuffing done in 9x13 pan while the turkey is out of the oven.
Chili 03
Chili in the slow cooker, eat it the day after as the flavor develops slowly. I diced onions and one serrano pepper, sauteed them lightly with olive oil, then added the ground turkey with a chili spice mix, and added extra paprika and cayenne pepper powder. You have to cook the meat in a pan because the slow cooker does not go up to temp. The other ingredients are visible on the pic: corn, three kinds of beans and two kinds of tomatoes. Cook for six hours and chill overnight. Serve plain or over rice, couscous, buckwheat, etc.
