These gourmet picnic-worthy sandwiches are perfect for a winter woodland hike (or cozy day inside).
Ingredients:

Makes 8 sandwiches

* 4 tablespoons white horseradish
* 2/3 cup mayonnaise
* 2 tablespoons Dijon mustard
* 2 crusty French baguettes, sliced in half lengthwise
* 16 oz thinly-sliced roast beef
* 2 bunches (about 2 cups) arugula, rinsed, drained, and stems trimmed
* Parchment or waxed paper for wrapping

Place the horseradish, mayonnaise and mustard in a small bowl, and stir to combine. Spread evenly over the two bottom halves of the baguettes. Top with roast beef then arugula. Add tops of baguettes and slice each baguette into 4 pieces. Wrap each piece in parchment paper for easy transport.

Makes 8 sandwiches

* I loaf cranberry walnut bread (or other nutty or wholegrain bread), sliced into 16 ?" thick slices
* 6 tablespoons lightly salted butter, at room temperature
* 10 oz. soft goat cheese, at room temperature
* 1 bunch watercress, rinsed, drained, and tough stems removed
* Sea salt and freshly ground black pepper

Spread one side of each bread slice with butter. Divide the goat cheese between 8 of the buttered slices and evenly spread it over top. Season with salt and pepper. Divide watercress among the 8 slices and top each with another piece of bread, buttered-side down. Cut each sandwich in half. Wrap in parchment paper for easy transport.

"FOREWORD

It gives me great pleasure to write a brief foreword to Veronica's book of vegetarian recipes. During the last few years there has been quite a spate of vegetarian recipe books, and each of these has made an unique contribution calculated to help in destroying the false notion that meals without flesh, fish or fowl are necessarily monotonous and lacking in variety.

The author is the daughter of Lillian and Also Vezza, whose vegetarian guest house, Sandy Point, at Frinton-on-Sea, Essex, has rightly come to be regarded s one of the best of its kind. Two factors, judging from appreciative comments one has heard repeatedly over the years, have commended Sandy Point to its many guests; these are the welcome friendly atmosphere of the place and the generous and attractive catering.

Now the general public are being given the opportunity of enjoying the favourite recipes devised in the Sandy Point kitchen, and from personal experience I can assure them that they will not be disappointed. The simple presentation of the recipes should make this a very popular book with busy people.
