Sugar-Free Chocolate Chunk Pecan Mini Muffins (From Almond Meal Flour!)

These mini muffins are incredible! Imagine flakey, chocolate comfort food combined with sugar-free, gluten-free, low-carb goodness! It's practically a culinary miracle! Mini muffins are the perfect way to keep portions under control. They're also so cute! Bake up a batch today-- you won't be dissapointed! :-)


* 2 Cups of "NOW Foods" almond flour (almond 'meal')
* 2 tsp baking powder
* 1/4 tsp salt
* 1/3 cup Davinci Sweetener Syrup (plain or flavored, as desired)
* 1 sticks butter, melted
* 2 eggs
* 1/3 cup water
* 5 Dove sugar-free chocolates, minced
* 1 bag (2.25 oz) chopped pecans

Add dry ingredients together. Mix well. Add in liquid ingredients. Mix until batter becomes dough-like. Spoon into mini-muffin tins. Bake at 350 degrees Ferenheight for aproxamately 10-12 minutes, or until the tops are slightly golden brown. Cool and enjoy!

Yields 24 mini muffins ("NOW Foods" brand has only 1 net carb per 1/4 cup.) The whole recipe contains roughly 14 net carbohydrates. Each muffin has 0.583 net carbs.

December 1, 2007 - Old-fashioned oatmeal with bananas and low-carb chocolate soy milk. Coffee with the same soymilk in it and some sugar-free International Foods coffee mix. Yes, the coffee cup is humungous. :)
