This is how I do it. I take short cuts. ;)

Veg oil or Ghee for frying
2 chicken breasts
1 small onion or large shallot
garlic galore
3 medium to small white potatoes
Any assortment of veggies you want. Frozen Mixed works well. (My batch usually has mixed veg, potatoes, onions, mushrooms, and sometimes broccoli.) At least 2 cups worth of veg total.
1 can tomato paste
2-3 tablespoons good curry powder (the more you use the "hotter" it is)
1 can coconut milk
1 small onion or shallot

Wash potatoes and put them in the microwave and bake them. Trust me. Saves TONS on cooking time.

Dice onions, garlic, and chicken. Set chicken aside.

In a stock pot or dutch oven (heh heh), add ghee or veg oil and turn heat on high. Get oil very hot then reduce heat to med/low and add shallots/onions. Saute until almost soft and add chicken and some salt and pepper. When chicken is almost golden, add mushrooms and let mushrooms get softer too.

Add curry powder and coat the fuck out of everything.

Add in mix veg and about 1 1/2 cup water. Turn heat up to boil and add tomato paste. Bring to a boil and then add coconut milk. Simmer about 1 hour.

Viola. Steam some rice to put underneath and get a bag of Naan. :)

In this batch, I added about 1/4 cup of toasted almonds to the batch when I added the coconut milk.

Place the spinach in a microwave-safe bowl and microwave on high for 5 minutes.

While your spinach is cooking poach your eggs. Have a pan of simmering water on the hob and make a whirlpool with a spoon in the water. Drop the eggs into the whirlpool of water and turn off the heat and cover the pan. the eggs need to be covered for about 4 minutes so they cook perfectly.

While you are waiting for the eggs to cook, chop the spinach and divide between 2 plates add salt and pepper to taste then put your turkey slice on top of the spinach and sprinkle over the parmesen cheese.

Use a slotted spoon to scoup out the eggs and place the eggs on top of the spinach turkey and cheese and enjoy.

80g rice
1 onion
1 courgette
handful of mushrooms
small tin sweetcorn
30g sultanas
1 red pepper
1 clove garlic
curry powder
turmeric
1 egg
2-3 fillets smoked haddock

Set the rice to simmer in a pan of water, with a spoonful of curry powder. Meanwhile, hardboil the egg. Dice all the veg and fry in a pan with the sultanas, garlic, and a spoonful of turmeric. When soft, remove from the heat.

Cook the haddock - either poach it in a pan of milk or stick it in the microwave. When it's cooked, remove the skin and flake the fish.

Peel the egg and cut it into quarters, lengthways.

Add the cooked rice to the fried veg and reheat. Split between two plates.

Top with the flaked fish and the egg.

My new favorite food!

Preheat the oven to 170?C/325?F/gas 3. Rub a nice duck with loads of salt, inside and out. Dust the bird all over with five-spice and, if you've got any, grate some fresh ginger and rub it round the cavity, leaving the ginger inside to flavour. Place the duck in a roasting tray and put it in the oven. All you need to do is check on it every so often and spoon away the excess fat that has rendered out of the duck. This will make the skin go wonderfully crispy. Generally, after a couple of hours it will be perfect – the leg meat will pull off the bone and the skin will be wonderfully crisp. You don't always need to, but I sometimes turn the heat up to 200?C/400?F/gas 6 for a short while until it's really crispy.

While this beautiful bird is cooking, you can make your plum sauce. Chuck 10 or 12 destoned plums into a pan with 5 tablespoons of sugar, a couple of pinches of five-spice, a couple of tablespoons of soy sauce, half a teaspoon of chilli powder and a splash of water. Bring to the boil, then simmer until you get a nice shiny pulp. You can remove the plum skins if you want to, but I usually leave them in. Sometimes I add a little grated orange zest, as this goes well with duck. Put the sauce to one side to cool before serving it, and taste to check the seasoning.

As for the spring onions and cucumber, that's straightforward. Finely slice them. I strongly advise buying pre-made pancakes which you can place in a steamer or microwave and slowly steam until nice and hot. The bamboo steamers are only a few quid from Chinese supermarkets, so it's worth getting hold of some and they're great to serve at the table.

Once the duck has cooled a little bit, use two forks to shred all the meat off the carcass. I remember the Chinese lady at the restaurant in Sawbridgeworth doing this. You can do the same, putting all the meat with its crispy skin on to a serving plate. Take a pancake, place some duck, a bit of spring onion, a little cucumber and a dollop of plum sauce on to it, then roll it up – lovely.

Crispy Skin Grill Salmon

Salmon is a ridiculously easy fish to cook. Even if you have no cooking experience at all, you can cook salmon. All you need to do is just season with some salt, pepper and/or soya sauce and microwave it. Yupe, that's because salmon contains a lot of naturally flavouring within the fish meat itself and requires minimal seasoning.

But of course, we should attempt something more refine that that. I've always want to cook salmon such that the meat is still juicy and tender but the skin meanwhile is crispy.

So here's the recipe

1) Buy a fresh fillet of salmon ( preferably Norwegian ). Wash and then marinate it in a bag with worchester sauce, chilli oil, salt, white pepper, cumin, sage and a splash of sherry wine. Leave in fridge for 2 hours to marinate.

2) Covered a tray with aluminium foil. Chop some onions and lemon slices. Fill up tray.

3) In a pan, heat up some butter and peanut oil. Wait until oil turn into a sizzling golden liquid.

4) Add salmon and pan seared both side for about one minute until meat start to brown. Do not leave it in the pan longer than that.

5) Remove salmon after browning in pan into tray prepared in step (2), skin side up.

6) Put tray into an oven preheated to 170DegC. Leave to cook for 15 to 20 mins. In the last 5 mins, check the fish is cooked by porking with a fork. Fork should penetrate without resistance, means it's cooked. Do not over-cooked.

7) Remove from oven. Heat up some peanut oil in a small sauce pan until it's smoking hot. Pour hot oil over the salmon to crispy the skin. ( Note : Oil must be smoking hot ). Please exercise care, don't burn yourself or burn down the house. Disclaimer applied :D

8) Garnish with fresh cabbage leaves and tartar sauce. Remove to serve.

P/S : Another simpler way to crisp the skin is pan fried it skin-down for 1-2 mins. But this way is harder to control.

Slow Cooker Chicken in Red Wine Recipe

Ingredients:

6 slices bacon
8 boneless skinless chicken thighs (about 1 1/2 lb)
1 bag (16 oz) ready-to-eat baby-cut carrots
8 oz tiny pearl onions
1 teaspoon salt
1/4 teaspoon pepper
1 teaspoon dried thyme leaves
2 cloves garlic, finely chopped
2 dried bay leaves
1 1/4 cups dry red wine
3/4 cup chicken broth
1 lb fresh small whole mushrooms
2 tablespoons Gold Medal® all-purpose flour
2 tablespoons cold water
2 tablespoons chopped fresh parsley

Directions:

1. Line microwavable plate with microwavable paper towel. Add bacon; cover with paper towel. Microwave on High 3 to 5 minutes or until crisp. Crumble bacon.

2. Spray 5- to 6-quart slow cooker with cooking spray. Place chicken in cooker. Add carrots, onions, bacon, salt, pepper, thyme, garlic, bay leaves, wine and broth.

3. Cover; cook on Low heat setting 8 to 10 hours.

4. Skim any fat from surface of chicken mixture. Stir in mushrooms. In small bowl, mix flour and water; stir into chicken mixture. Stir in parsley.

5. Increase heat setting to High. Cover; cook about 30 minutes longer or until mixture is thickened. Remove bay leaves before serving. Sprinkle with remaining chopped parsley.

Easy Italian Vegetable Soup au Gratin Recipe

DESCRIPTION

Soup topped with oven-baked dinner rolls turns up the satisfaction dial in this all-in-one meal for two.

INGREDIENTS

2 Pillsbury® Oven Baked frozen crusty French dinner rolls (from 12.4-oz bag)
1 can (18.5 oz) Progresso® light Italian-style vegetable soup
1 cup fresh baby spinach leaves
1/4 cup shredded Asiago cheese

DIRECTIONS

1.Move oven rack 6 to 8 inches from broiler. Heat oven to 425°F. Place frozen rolls on microwavable plate. Microwave uncovered on High about 5 seconds or until partially thawed. Cut each roll in half. Place rolls, cut sides down, on cookie sheet. Bake 3 to 5 minutes or until light golden brown. Remove from oven. Set oven control to broil.

2.In 2-quart saucepan, heat soup over medium-high heat until hot. Stir in spinach. Place 2 ovenproof bowls on cookie sheet with sides. Ladle soup into bowls. Place 2 roll halves, cut sides up, in each bowl. Sprinkle with Asiago cheese.

3.Broil with tops 3 to 5 inches from heat 1 to 3 minutes or until cheese is bubbly. Carefully transfer bowls to serving plates.

Peanut Butter – Toffee Cheesecake Brownies

INGREDIENTS
1 box (19.5 oz) Pillsbury® Chocolate Fudge Brownie Mix
1/2 cup Crisco® Pure Vegetable Oil
1/4 cup water
2 EGGLAND’S BEST eggs
1 package (8 oz) cream cheese, softened
1 can (14 oz) Eagle Brand® Sweetened Condensed Milk
1/2 cup Jif® Creamy Peanut Butter
1 bag (8 oz) Heath® milk chocolate toffee bits
1 cup Hershey's® milk chocolate baking chips
3 tablespoons whipping cream

DIRECTIONS
1. Heat oven to 350°F. Lightly spray 13x9-inch pan with Crisco® Original No-Stick Cooking Spray.
2. In medium bowl, stir brownie mix, oil, water and eggs 50 strokes with spoon. Spread batter in pan; set aside.
3. In large bowl, beat cream cheese with electric mixer on medium speed until fluffy. Add milk and peanut butter; beat until smooth. Stir in 1 cup of the toffee bits. Spoon mixture over batter; spread evenly.
4. Bake 30 to 40 minutes or until cheesecake layer is set and edges are light golden brown. Cool on cooling rack 30 minutes. Refrigerate 40 minutes.
5. In small microwavable bowl, microwave chocolate chips and cream uncovered on High 40 to 60 seconds or until chips are melted; stir until smooth. Spread over cheesecake layer. Sprinkle with remaining toffee bits. Cool completely, about 1 hour. For brownies, cut into 6 rows by 6 rows. Store covered in refrigerator.

INGREDIENTS
3/4 cup Fisher® Roasted and Salted Almonds
1 1/2 cups coconut
1/2 cup Eagle Brand® Sweetened Condensed Milk (from 14-oz can)
1 package (16 oz) Pillsbury® Ready to Bake!™ refrigerated sugar cookies (24 cookies)
1/3 cup Hershey’s® baking cocoa
1/3 cup Hershey's® milk chocolate baking chips

DIRECTIONS
1. Reserve 20 almonds; set aside. Chop remaining almonds. In medium bowl, stir chopped almonds, coconut and milk until well blended. Refrigerate mixture 25 minutes for easier handling. Let cookie dough stand at room temperature for 10 minutes to soften.
2. Meanwhile, heat oven to 350°F. In large bowl, knead cookie dough and cocoa with hands until well blended. Cover with plastic wrap; set aside.
3. For each cookie, press 1 rounded tablespoon dough into 3-inch round. Place 1 tablespoon coconut mixture on center of each round. Wrap dough around filling, pressing edges to seal; shape into a ball. Place balls 3 inches apart on ungreased cookie sheets. Press each ball with fingers into 2 1/2-inch round. Press 1 whole almond on each cookie.
4. Bake 9 to 12 minutes or until puffed and edges are set. Immediately remove from cookie sheet to cooling rack. Cool completely, about 30 minutes.
5. In small microwavable bowl, microwave chocolate chips uncovered on High 10 to 20 second, stirring every 10 seconds, until smooth. Place in resealable food-storage plastic bag; cut small tip from corner of bag. Drizzle chocolate over cookies. Before storing, let cookies stand at room temperature until chocolate is set. Store in airtight container.

122109 Holiday Tradition

This year the neighbor gift was an Eggs Benedict "kit." I included a microwave egg poacher, english muffins, Hollandaise sauce packet, directions, and a personalized note. Eggs Benedict has been a family tradition for us for the last several years to cook on Christmas (and Thanksgiving or any other holiday or special occassion). I am actually kind of proud of myself. I think it came together well and people seemed to like it.

I decided to poach them in Julia's sillicone cupcake molds to prevent the eggs from dispersing in the water. You can also get sillicone egg poachers with rounded bottoms from the kitchen shops, but I think the fluted cupcake molds aren't bad looking.

The bantam eggs were very fresh and the yolks were rich and yellow!

Deeter Leak Detector

The Deeter Leak Detector comprises a Leak Detect Controller and a series of Leak Sensors connected in a chain to the Controller via a 3-core cable. The Sensors will detect a conductive liquid (e.g. water leak) between a pair of probes on their underside. The Controller will respond to a leak detected at any one of the Sensors.

The Controller provides an LED indication of wet or dry conditions and will also detect a fault, should one occur, in the sensor cable. The Controller provides three outputs (two SPDT relays and an open-collector transistor) that may be used to directly drive pumps and alarms, or may be used to interface to other equipment, such as Programmable Logic Controllers, Building Management Systems, and dial-up alarms systems.

Power to the Controller can be from a mains supply (220-240VAC) or a lowvoltage supply (10-24V), either AC or DC. Power to the Sensors is provided by the 3-core linking cable.

The Controller is housed in a UL94-V0 flame retardant case that will fit on a 35mm DIN rail. All inputs and outputs are via screw terminals.

Sensors come in an IP65 ABS enclosure and are simple to connect using cable lengths to suit the installation. Screw terminals are provided for the three wires in and the three wires out to the next Sensor in the chain.

The Sensor enclosure is held off the floor by rubber feet with two M3 threaded probes extending downwards to within 1mm of the floor. The probes may be extended using the threads if required. The enclosure also has provision for bolting the Sensors to the floor.

Behind the Controller front panel is a bank of DIP switches that allow a number of user-selectable options. The switches are visible through the front panel but are only accessible with the panel removed, so cannot accidentally be changed. Options include: assigning outputs to either a leak or a fault condition; setting the relays to default to open or closed; selecting outputs to latch so that they remain in the ‘wet’ state after a leak has dried. A Reset button is provided for clearing latched outputs.

A sneak peek at a slide from the talk I'm giving at the Canberra Web Standards Group meeting tomorrow. I'm talking about the search in Picture Australia (so it only seems right to add this to the PA pool).

This tap is located in the toilets in the public area of the National Library of Australia. A tap is an interface for getting water. The instructions are necessary because the interface is too complex for the given environment. A traditional tap would work much better in this location.

Here's the thing that I think is hilarious about this sign: You take a stupidly (or brilliantly) simple concept of the red hand that means stop and the green walking-man that means go. It's a basic concept that transcends language and culture, but yet somebody decided that they needed to put -- in English -- instructions next to the button.

The Sensor Knows

I bought a new microwave and it rocks. There was nothing wrong with the old unit, but I wanted something a little more "automated."

Old Microwave: 800watts, reliable, simple.

New Microwave: 1200watts, automatic cooking, AWESOME.

The sensor on it works wonders -- just throw some food in there, any kind and hit "REHEAT." Thing beeps when done and the food it pretty much does it perfectly every time. I love it! Worth the $100. Oh, and the 1200 watts cooks food so fast.

My friend Eric needed a Microwave so I gave him my old one.

I transfered the Tivo logo onto the new one, BTW. :-)

Open Kitchen

SHARP students at Dryden participate in activities

Six area students are spending their summer vacation learning about the many facets of flight research as participants in the Summer High School Apprenticeship Program (SHARP).

Started by NASA in 1980, the 8-week program is geared toward gifted high school juniors who are entering their senior year and are interested in science and mkath. The program gives students a chance to prepare for a future career as well as make meaningful contributions to flight research. Participants in this year's program are involved in a wide range of activities, including video productions and Long Range Optics (LRO) activities, World Wide Web (WWW) development, microcomputer support, and participating as a member of Dryden's environmental team.

Robert Garza, science teacher at Antelope Valley HIgh School and the SHARP faculty advisor, is working on his 15th year with the program. Garza monitors the program and directs the career exploration activities. Garza says the SHARP program enhances the student's look into engineering and science. The intent of the program is to expose educators in the Antelope Valley to NASA and what is being done at Dryden through briefings with project managers and by encouraging educators to utilize the resources available here. The following students are this year's participants in the SHARP program:

Josephine Bernabe is a student at Paraclete High School. Her mentor for the summer is Sue Wheaton (XFI). Bernabe is involved in the development of a booklet on how airplanes fly and how control surfaces function. She is preparing lessons to be presented on the World Wide Web at a technical level appropriate for younger students on how airplanes fly.

Andre A. Alforque, who is working with John Harness (XFR), is a senior at Paraclete High School. He is assisting Harness in the mission control systems modifications and upgrades and sepcifically in computer buildup, equipment replacement, equipment configuration and documentation.

Ericka Brooks, a senior at Antelope Valley HIgh School, is assigned to mentor Mike Doyle (Stellacom/XFI). She is involved in various aspects of the Dryden Television Group such as video productions, maintenance of video equipment, and Long Range Optics (LRO) activities. Brooks is learning overall production skills including camera operations, editing, lighting and dubbing. She is also getting an overview of troubleshooting video equipment and the procedures for setting up and tracking research flights in LRO.

Joyce Chang, is involved with the development of Dryden's World Wide Web (WWW). Under the guidance of mentor Reuben Cano (PRC/XR), Chang is developing hyper-text marcup language (HTML) text for WWW publications. Chang is a Quartz Hill senior.

James Ha is a senior at Tehachapi HIgh School. He is working as a member of the microcomputer support group with mento Oscar Campos (CSC/XFI), assisting with software installation in addition to troubleshooting, repair and maintenance of both software and hardware.

Rubi Mendoza, a senior at Littlerock High School, is supporting environmental administrative functions in the Dryden Safety Office. As a member of the environmental team, Mendoza performs tasks representative of the quality plan review; occupational safety; industrial safety; construction safety; environmental management; and institutional safety. Her mentor is John Torres.

Buffalo Chicken Macaroni and Cheese

Buffalo Chicken Macaroni and Cheese

7 tablespoons unsalted butter, plus more for the dish
Kosher salt
1 pound elbow macaroni
1 small onion, finely chopped
2 stalks celery, finely chopped
3 cups shredded rotisserie chicken
2 cloves garlic, minced
3/4 cup hot sauce (preferably Frank's)
2 tablespoons all-purpose flour
2 teaspoons dry mustard
2 1/2 cups half-and-half
1 pound yellow sharp cheddar cheese, cut into 1-inch cubes (about 3 1/2 cups)
8 ounces pepper jack cheese, shredded (about 2 cups)
2/3 cup sour cream
1 cup panko (Japanese breadcrumbs)
1/2 cup crumbled blue cheese
2 tablespoons chopped fresh parsley

Preheat the oven to 350 degrees F and butter a 9-by-13-inch baking dish. Bring a large pot of salted water to a boil; add the pasta and cook until al dente, about 7 minutes. Drain.

Meanwhile, melt 3 tablespoons butter in a large skillet over medium heat. Add the onion and celery and cook until soft, about 5 minutes. Stir in the chicken and garlic and cook 2 minutes, then add 1/2 cup hot sauce and simmer until slightly thickened, about 1 more minute.

Melt 2 tablespoons butter in a saucepan over medium heat. Stir in the flour and mustard with a wooden spoon until smooth. Whisk in the half-and-half, then add the remaining 1/4 cup hot sauce and stir until thick, about 2 minutes. Whisk in the cheddar and pepper jack cheeses, then whisk in the sour cream until smooth.

Spread half of the macaroni in the prepared baking dish, then top with the chicken mixture and the remaining macaroni. Pour the cheese sauce evenly on top.

Put the remaining 2 tablespoons butter in a medium microwave-safe bowl and microwave until melted. Stir in the panko, blue cheese and parsley. Sprinkle over the macaroni and bake until bubbly, 30 to 40 minutes. Let rest 10 minutes before serving.

More than three decades later the Rubik's cube is still one of the best selling brainteasers. Each side is just over 2", while each sticker is about ?" square.
For all of the hullabaloo, the Rubik’s Cube actually has a pretty straightforward premise. The faces of the cube are covered by nine stickers in six solid colors (one for each 2.25" side); when the puzzle is solved, each face is one solid color. Then you realize as you turn the rows and columns and see all the colors flash by that there are 43 quintillion possible pattern combinations (that’s 43 million millions), but just one right one. Maybe Cubaholics Anonymous wasn’t such a bad idea after all….
This Rubik’s Cube has reflective red, white, blue, yellow, green, and orange colored stickers with an official twenty-fifth anniversary sticker in the center white square. The cube is packaged in a clear hexagon box and includes a black display stand. There is also a solutions hint and game suggestion book, just in case.
