Condensed milk in pressure cooker
Put the condensed milk in a heatproof container (I'm using a jam jar here), and cover it with some alu foil. Put that in your pressure cooker. Turn on the heat, and, when it is fully pressurized, let it cook for ca. 30 to 45 minutes. Longer cooking results in a darker, and firmer dulce de leche.

Normally with backlight I throw some fill flash as I HATE ! blown out highlights. However I didn't have flash this day and I was thankful I shot Raw (CR2) as the degree of control covers a multitude of sins. Photoshop is one of those programs that has a learning curve as steep as Mt Everest. Just when you think you wrapped your brain around the controls it throws a new thingy at me that short circuits my brain cells..........I love it !

I bought these accidentally; I thought they were Watercress and I saute' them as I always do, then I realize that they are sour as Rhubarb and Lemon!! I wonder, 'Did I put Vinegar in place of Oil?? What the hell??', Then I did further research, and turns out to be a herb/grass commonly used in Latin cooking. It can be eaten raw, but it does have some slimyness to it, like Okra. The acidity maybe fun with Tartare or something...Hmmm, Next time ;-D

Science Experiment
Ready to snooze...all hooked up for the Multiple Sleep Latency Test. Find out the results tomorrow! yesterday...I'm not narcoleptic, but I'm not too much in the "normal" range either, soooo...Idiopathic Hypersomnia is the diagnosis. Basically, they don't know why I'm so freakin' tired other than I have obstructive sleep apnea and stop breathing sometimes (1 minute plus in some instances!!), even when using CPAP.
I get to try a stimulant med called Provigil now. Maybe that'll give me enough oompf to actually get more exercise, cook better meals, make better decisions...not fall asleep at work (!), etc. I so need to consider doing Atkins again or maybe more of a modified South Beach approach! Kinda difficult (read: tempting) when you have a toddler who actually needs carbs...Momma needs to discover/reconnect with her willpower!

A Posing Nose
This photograph is about the concept of degrees of magnitude. It is easy to understand this as applied to simple counting combined with what you know about both the finitude (as our minds are constrained) we are bound within and the infinity we know theoretically exists. So I can count to five: one, two three, four, five. But in another sense one can never get from one to two because between one and two there is an infinity such as there is even between 1.0278394678 and 1.0278394679. And on and on it goes. But we allow ourselves the convenience that degrees of magnitude provides otherwise we'd never get out of bed in the morning as we'd still be counting sheep from the night before! In some ways this is similar to what naturally occurring THC does for our sensorium as it helps us attend to incoming stimuli that matters versus attending to all that does not matter. Or such it is for those of us fortunate enough to not have scrambled brain chemistry. So to my point: here we have the button nose of a dog which Newsweek tells us recently is 100,000 times more sensitive than our human noses! (I might pause here to suggest that anyone who has not read "Perfume" might find it expanding; the movie is not a substitute). After reading the Newsweek article, one has a new appreciation for these marvelous creatures who are so humble and seem so simultaneously happy and sad all the time. Do you think the sadness is for all of the stinky and discouraging things that must waft their way in the course of a day? Labradors can detect bowel cancer with 98% accuracy whereas current human designed tests only allow for 10%. Rottweilers can help track endangered species. You probably have read about dogs being used by their diabetic owners to forewarn of glucose control issues before the patient is aware and before testing would reveal the approaching problem. So I was wondering about the whole idea of how a thing, a characteristic, a phenomenon, a capacity, once it is intensified to a certain level it must become so different that it really isnt the same thing anymore. LIke we think about heat in terms of cooking and keeping ourselves warm, basking in the sun. But if you consider the actual surface of the sun, you're into fusion I think which is far removed from our experience of toasty toes. Or think about coldness and how once something gets cold enough, like absolute zero, the whole physics and/or chemisry of the thing changes. There is all of that business about being able to practically infinitely store energy. So at one end of the extreme we have energy creation and at the other we have energy preservation. And in between we have cold beers and cozy times by the fireplace. As Chloe actually seemed to get into this photo shoot after a bit and turned her head just so allowing me to get this shot, I wondered how "different" in this same "degrees of magnitude" sense her faculty of smell is from mine. I mean they are a universe apart such that if we were to define a sense of smell in her terms, humans would probably have 4 senses instead of the classic 5. Or to put it somewhat conversely, I have a sense of smell but Chloe "has a Sense of Something Else", which is not yet named. We call it the same thing, but it is not. I think it was in the book "Animals in Translation" that autistic Veterinarian, Temple Grandin, describes how humans and dogs evolved together so that over time the "job" of smelling was evolutionarily handed over to dogs such that humans very gradually developed less and less sensitive noses because it wasn't necessary, it wasn't efficient, for both dogs and humans to have this ability. Aside from those who have used dogs for hunting and a few other assorted tasks, our dependence upon them to use this powerful tool took a long vacation. It is nice to read that we're more and more learning about the useful work these creatures can and want to do for us. This photograph is completely taken right off the camera in RAW format. No adjustments were made. Although this was a daytime shot in a set up mix of window light, incandescent light, and bounced flash, the ISO I think on this is 1600. (Yes, I know the EXIF info says flash didn't fire but that only "reads" the built-in camera flash not an attached flash). The 100mm f2.8 macro lens I recently sprang for produced a lovely fairly noise-free product. The depth of field on this lens is from very narrow to razor thin and the blurred areas are beautifully smooth. The shutter was 1/125 and the camera was on a tripod looking upward to the subject who, as I say, after we got going, seemed to understand the game and willingly played along. Of course along with such a powerful nose to pose, she can also read minds and knows that I never oppose her claim to a treat. The magnification on this macro ended up being 1::4. I am still learning about the difference between a true

The brownie's first public appearance was during the 1893 Columbian Exposition, held in Chicago, Illinois. A chef at the city's Palmer House Hotel created the confection after Bertha Palmer requested a dessert for ladies attending the fair; it should be, she said, smaller than a piece of cake and easily eaten from boxed lunches. These first brownies featured an apricot glaze and walnuts, and they are still being made at the hotel according to the original recipe.
The earliest published recipes for a brownie like those of today appeared in the Home Cookery (1904, Laconia, NH), Service Club Cook Book (1904, Chicago, IL), The Boston Globe (April 2, 1905 p.34) and the 1906 edition of The Boston Cooking School Cook Book by Fannie Merritt Farmer. These recipes produced a relatively mild and cake-like brownie. The name "brownie" first appeared in the 1896 version of the cookbook, but this was in reference to molasses cakes baked individually in tin molds, not true brownies.
A second recipe appeared in 1907 in Lowney’s Cook Book, by Maria Willet Howard and published by the Walter M. Lowney Company of Boston, Massachusetts. This recipe added an extra egg and an additional square of chocolate to the Boston Cooking School recipe, creating a richer, fudgier brownie. The recipe was named Bangor Brownies, possibly because it was created by a woman in Bangor, Maine.
The chocolate brownie, once familiar only to Americans and Canadians, can now be found in many bakeries in Europe.
Chive Biscuits with Herb Butter
33: I made the recipe for baking soda biscuits from an old (1950s) edition of the Fannie Farmer Boston Cooking School cookbook, but added 1/2 c. chopped fresh chives and some parmesan (probably about 1/3 c.). For the butter, I whipped 1/2 stick of salted butter, 1 tsp. lemon juice, some chopped fresh parsley (probably about 2 T.) and some garlic powder (probably about 1-2 tsp.), then stuck it back in the fridge for a couple hours. Very tasty indeed!

Fish Curry
I normally make this dish with fish available in India (White Pomfret / Surmai). However, these are not available in the UK so after trying salmon and trout, I've settled on fresh wild Sea Bass as the best substitute. However even this fish crumbles a bit on cooking...suggestions for other substitutes are welcome!
Ingredients
Fresh wild Sea Bass / fish of your choice=====500gm (1 lb)
Fresh grated coconut====================1/4 th
Fresh Corriander leaves (cilantro)===========15gm
Tomato================================1 (large)
Green chilies============================3 (optional)
Garlic==================================3 cloves
Cumin seeds (Jeera)======================1 tsp
Turmeric powder (haldi)====================1/4 tsp
Garam masala (Curry powder)============1 tsp
Vegetable oil================3 tbsp

All these ingredients are available at any Indian store (some supermarkets e.g. Tescos also stock ingredients for Indian cooking now)
Method
1. Clean and cut the fish into slices / chunks. Remove the scales and the skin as well (if you don't like that extra fishy taste)
2. Put all the ingredients (except the fish & oil) into a blender. Add (as little as possible) water and blend into a fine paste.
3. Heat the oil in a thick bottomed vessel. When hot add the blended paste to it and reduce the heat to medium.
4. Fry and stir occassionaly in order to ensure that the paste does not burn / stick to the bottom of the vessel.
5. Fry for 10 min / until the paste dries and a faint film of oil appears on the surface (this will not happen if the water added was too much but don't worry too much about it)
6. Add 3 cups of water to the vessel and mix (you can use 2 cups if you want a thicker gravy but it should be enough to cover the fish when added). Increase the heat & bring the water to a boil.
7. Add the fish in. Once the curry starts boiling again, reduce the heat to medium. (you can add a few pieces of kokum if available - but I think this can only be found in India....anyway it's optional)
8. Add salt to taste and boil for 20 min / until fish is done
9. Serve with plain boiled rice

This is called Dahi Bhalla Chaat . Prepared by my mother as she always give stress on self cooking .Believe me, this is the favorite stuff of every North Indian ,especially girls and ladies.But the bad part if is my mother cannot eat more of such stuff because of her asthma disease.
Dahi Bhalla Chaat recipe Ingredients
1 c urad dal ( White Lentils )
1 kg yoghurt or curd
2 tsp roasted cumin powder
1 tsp red chili powder
1 tsp kala namak –Black Rock salt (salt to taste)
1 inch ginger fine choped
Edible oil for frying
3 tbsp chopped coriander leaves
15-20 raisins
1 green chillli, deseeded & slivered
mint chutney
tamarind chutney
Method
Wash and soak the dal in cold water overnight. Next day, strain and grind to a smooth paste. Whisk into the batter 1/2 tsp salt, 1/2 tsp red chilli powder and raisins.
Heat oil in a wok. Drop tablespoons of batter in it and fry until light golden.
Remove, drain on absorbent paper. Put the bhallas in hot water. Leave for 2 minutes. Drain, squeezing out the water between the palm of your hands.
Whisk the yoghurt well with kala namak and salt to taste.
To serve, place the bhallas on a plate and cover with yoghurt. Drizzle mint chutney and tamarind chutney. Sprinkle red chilli powder, cumin powder. Garnish with coriander leaves, ginger and green chili.

First Attempt at Toad in the Hole
This was my first attempt at making toad in the hole. I'd been wanting to try this since seeing a Delia Smith video on Youtube where she makes it for one. But I've seen pictures of it before, and it seemed easy to make. I took what was left of the Johnsonville breakfast links and cooked them in the baking dish along with some sliced mushrooms and onions. Once everything was properly brown, I poured my Yorkshire pudding batter over everything and let it bake without opening the oven door. Very important not to open it because you have to let the heat raise the batter and make it puffy! Several things I would do over again is: add more cayenne, add more salt - the sausages didn't have enough to season the whole dish, and add less flour because the pudding was heavier than I would have liked.
Ingredients (I won't give measurements because I did it wrong anyway):
Plain unbleached flour
Eggs
Cayenne, if you want
Crushed garlic, if you want
Mushrooms and onions optional (some like tomatoes baked in)
Milk, preferably whole
Sausages
If you already know how to make Yorkshire pudding, you know most of this recipe.
I like how the lower right corner flipped up. Oh and btw, I did try to arrange the sausages evenly but as the batter rose it kind of tossed things around.

50 daily photos! Here's my version of a poor man's fried rice.
1. Gather materials - frozen veggies, rice, soy sauce, 2 eggs, shrimp or whatever meat you have and 1 cup of pre-cooked/chilled rice. (We're cooking for two).
2. Put out veggies to defrost, slice up the shrimp, whisk the two eggs.
3. Cook eggs then put away for later. Add the rice to the pan with Soysauce to brown it (the best option is to also use Oyster Sauce and soysauce at a something like 6:1 ratio, but don't trust me on that measurement).
4. Add everything else in and cook until the veggies are warm!

ahhhh...summer vacation!
The children love to cook and bake, sometimes I think that perhaps I've influenced them in some way and working at Le Cordon Bleu doesn't hurt...but they are naturally drawn to it. Food TV has replaced Saturday morning cartoons for them and they request kitchen gadgets in place of toys for their Birthday. I guess when you think about it, cooking encompasses all things that are intrigueing and educational for kids, science, math, sanitation, not to mention subjects that are important and hard to grasp without connecting it to food...words like sustainability, environmentally sound, organic, local, compost...those words take on a life of their own when children are in the kitchen or helping their parents grocery shop.
I've fantasized before about a cooking show with kids, for kids and their parents. Imagine all that you could cover! Safety, sanitation, creativity, nutrition and health, environment and sustainabiltiy, science and math, culture, manners and the senses. It's a never-ending learning opportunity for children and their parents and helps bring kids and adults together for quality time, celebration and the sharing of a meal. Food and Wine magazine this month has an intrigueing article about kids and food, shedding light on the fact that many kids today are more savvy in the kitchen than ever and there are even child hosted cooking blogs on the internet, kids teaching kids to cook.
I'm all for it.

Pizza Hut says that the "pops" are filled and overflowing with cheese. We took their word for it and we were disappointed! Cheese was only at the tip of the pops. Overpriced and overhyped!

Recipe:
Preparation Time: 10 minutes
Cooking Time: 45 to 55 minutes
1 jar (16 ounces) Aunt Nellie’s Whole Pickled Beets, well drained
1 small red onion, cut into 12 wedges
2 cups baby Portobello mushrooms, cleaned and stems trimmed
2 cups butternut squash, peeled, seeded and cut into 3/4-inch chunks
2 cups Brussels sprouts, ends trimmed and scored with a cross cut
3 tablespoons olive oil
1 clove garlic, finely chopped
2 teaspoons chopped fresh rosemary
2 teaspoons chopped fresh thyme
? teaspoon salt
1/8 teaspoon pepper
1. Preheat oven to 400?F. Place all vegetables except Brussels sprouts on a rimmed baking sheet (15-1/2 x 10-1/2 x 1-inch) and drizzle with olive oil; add garlic, rosemary, thyme, salt and pepper and toss to coat. Roast in oven 15 minutes.
2. Add Brussels sprouts, stir and continue to roast until vegetables are tender and browned, about 30 to 35 minutes, stirring once. Adjust salt and pepper to taste.
Makes 6 servings

Roasted Capon
I amused myself by making B cringe everytime I explain what a capon is.
This gorgeous 7.5lb bird is purchased from Cumbrae's. Worth every penny. I prepared the bird simply. The night before, I rubbed plenty of softened butter and sliced shallot underneath the breast skin. The cavity was stuffed loosely with aromatics such as thyme, sage, onion, garlic, carrot, and celery. Generously season with salt and pepper of course. I stored the bird uncovered in the fridge overnight to dry out the skin. Cooking time was a total of 2:15 in a 400F oven.
The carcass is now being made into chicken stock. Winter soup season is coming soon!

Title of Panel; "Breath from the Earth"
What is the story behind your panel?
"We all collaborated together on "Breath from the Earth", their submission for the Dream Rocket Project. This group of women -- a daughter, a friend, and a mother --- feel passionately about the joy and value that the process of CREATING brings to their lives. To them every day brings opportunities to be creative; planning and cooking family dinners; crafting a bedtime story from childhood memories; sewing clothes that family members will wear; and producing elaborate projects made as gifts. Creating brings joy to their lives! The theme of this panel evolved organically as they met over six evenings together; eating, sharing, laughing and sewing. They started out wanting to represent the value, role and hope of community in their lives. They tried to represent all the influences in each woman's community; how diverse they were and how each woman's community shaped the person she is today. Each of these women realized a real connection to the outdoors -- to the beauty of Earth. A PBS special on the National Parks and John Muir's musings on nature helped shape the panel into a visual representation of an outdoor scene.
It was important to them to use recycled items in their panel. The fabrics and embellishments used were from remnants the artists had in their possession, most having sentimental meaning; a "yo-yo" quilt piece and crochet square from two grandmothers, a scrap of child's favorite romper, a draganfly pendant for a mother, a piece of someone's nightgown.
To complete the motif, each woman chose a quote to frame the panel. Finally each woman had the members of her "community" sign the back of the panel in a literal expression of the community members each "flying high" on the Dream Rocket.

She asked to add an Alabama cotton stalk she grew to the piece that would fly high on the Saturn V. ?WHAT IS THE DREAM ROCKET PROJECT?
The Dream Rocket Team is collecting nearly 8,000 artworks from participants around the globe. The artwork will be assembled together to create a massive cover in which will wrap a 37 story Saturn V Moon Rocket at the U.S. Space & Rocket Center in Huntsville, Alabama. We will also be displaying submitted artwork in dozens of national venues prior to the wrapping of the Saturn V. Additionally, we are posting images of submitted artwork & their stories on our Website, Flickr, and Facebook.The Dream Rocket project uses the Saturn V Moon Rocket as a symbolism of universal values of the human spirit. Optimism, hope,
caring for our natural resources, scientific exploration, and harnessing technological advancements for a better quality of life while safeguarding our communities, are all common desires across national and international boundaries. Participants are able to express and learn about these values through this creative collaboration. With the completion of each artwork, participants are asked to write an essay explaining their artwork, and the dream theme in which they chose.

The Dream Rocket project would like to challenge you to ‘Dare to Dream’. To dream about your future and the future of our world through dream themes such as health, community, conservation, science, technology, space, peace, and so on. We would like you to use your selected Dream Theme to express, explore, and create your vision on your section of the wrap. We hope that you are able to express and learn through this creative collaboration. With the completion of each artwork, you are asked to write a brief essay explaining your artwork, and the dream theme in which you chose.

Mollie Sugden, the actress who died on July 1 aged 86, endeared herself to television viewers as Mrs Slocombe of the Ladies Separates and Underwear department in Jeremy Lloyd and David Croft's long-running sitcom Are You Being Served?
Like all the best sitcoms, Are You Being Served?, first broadcast on BBC One between 1972 and 1985 and set in Grace Bros department store, drew on the venerable music hall traditions of familiar social stereotypes, heavy double entendre and jokes that could be seen advancing over the horizon from several miles away. The show benefited from strong portrayals by all its main characters, but it was Mrs Slocombe and her counterpart in menswear, the outrageously camp Mr Humphries (John Inman), who made it unmissable.
Mollie Sugden's Mrs Slocombe was a recognisable working type – the shopworn divorcee trying to keep up appearances, defying the years with ever more lurid rinses, and returning home alone each night to her "little pussy", to which there was always at least one reference in every show.
Mrs Slocombe had an arch, Ortonesque way with the unfortunate phrase: "Captain Peacock, I do not respond to any man's finger!", she says in response to a summons from the boss. "Before we go any further, Mr Rumbold, Miss Brahms and I would like to complain about the state of our drawers. They're a positive disgrace."
Mrs Slocombe had no children, which must have been a personal relief to Mollie Sugden, who was more usually cast as the interfering mother figure. As for similarities between the character and her own, she conceded that, like Mrs Slocombe, she could be "a bit bossy", but "unlike me, Mrs Slocombe could never find a fella".
Mary Isobel Sugden was born in Keighley in Yorkshire on July 21 1922. Her father ran an iron and steel company. When she was four years old, she heard a woman reading a comic poem at a village concert. The following Christmas, after being asked if she could "do anything", she read the same poem. It made her realise "how wonderful it was to make people laugh". Her first public performance came a year later in a Sunday School play in which she played a "bold,
bad cat".
Mollie Sugden was educated at the local Grammar School, then worked during the war in a munitions factory in Keighley making shells for the Royal Navy. When she was later made redundant, she enrolled at the Guildhall School of Music and Drama in London.
After graduation she spent eight years in rep with a company that included Eric Sykes and Roy Dotrice, then took small roles on radio and television. Before Are You Being Served? she appeared with Benny Hill, Just Jimmy (as Jimmy Clitheroe's mother), Z-Cars, Up Pompeii!, The Goodies, Steptoe and Son and, in 1968, five episodes of Jackanory.
In 1973 she had a 23 week stint on That's Life! and also appeared as Terry Scott's mother in Son of the Bride.
Her first regular sitcom role, from 1962 to 1966, was as Mrs Crispin in Hugh and I. The series was written by John Chapman and when he got involved with The Liver Birds, he suggested Mollie Sugden for the role of Mrs Hutchinson, mother of Sandra (Nerys Hughes). Sugden portrayed Mrs Hutchinson from 1971 to 1979, and reprised the role when the series was revived in 1996. She also played Robin Nedwell's mother in Doctor in Charge (1972) and John Alderton's mother in My Wife Next Door (1972)
The first episode of Are You Being Served? was a one-off Comedy Playhouse, ignored until terrorists struck at the 1972 Munich Olympics, leaving the BBC with free airspace. The pilot was watched by 19 million viewers and the response was so huge that five more episodes were filmed. In total, 74 were shown between 1973 and 1985. In early episodes, Mollie Sugden had her hair dyed, bleached and re-dyed every time Mrs Slocombe changed her hair colour. It had been her own idea, but it meant that she sometimes had to turn up at her sons' school with her hair a multi-coloured mess. Later, she saved her roots and her dignity by wearing wigs.
In 1978, when it was thought that the series was about to be pensioned off, she appeared in the title role of Come Back Mrs Noah, about a housewife accidentally blasted into orbit on a space rocket, a sitcom which, despite the fact that it had the same writers as Are You Being Served?, is widely regarded as one of the worst ever made. From 1965 to 1976 she made occasional appearances as Nellie Harvey, the landlady of The Laughing Donkey, in Coronation Street.
Mollie Sugden also had roles in other sitcoms, including That's My Boy (1981-86), in which she played housekeeper to Dr Robert Price (Christopher Blake) and his wife Angie (Jennifer Lonsdale), and My Husband and I (1987-8) in which she played opposite her real husband, William Moore, whom she had married in 1958 after meeting him at Swansea rep.

Making Scones - Step Five: In the oven!
I decided to make scones today so thought I'd take some pics with my new iPhone 3GS along the way and upload the vague recipe!
Step Five - Place the scones in a pre-heated oven at around 180-200 degrees celsius. Try and use an oven with a window so you can look through and work out when they are done (usually around 10-15 minutes) as constantly opening the door will cause the scones to collapse... they don't like the outside air when rising.

As we were walking from parking to the field, we were offered a FREE hot dog, well Suzie CAN NOT pass up a free anything - so, of course, she got one. She didn't eat it until about an HOUR later!!! She didn't worry about it getting cold - cuz' it was never cooked - she asked for it RAW.... "I like it raw" she said!!! (Bonus for Troy!) ;)
