I hate cold! We broke record lows this weekend, with lows in the 20's overnight both Saturday and Sundy. The high Saturday was 37 with cold cold rain! I've never seen the beagles go to the bathroom so fast and when they came back in all they wanted to do was snuggle and get warm. I guess I'm not the only one with thin blood in the house!! Lala's Cookies Starting at the bottom of the plate…ginger snaps, then coconut macaroons, peanut butter cup cookies, peppermint swirl kisses, snickerdoodles, pumpkin pecan tassies, nut balls. We do a plate for several of our neighbors and for Father Ed & Jan- eggnog too (which we also made). Nice assortment of color, texture and taste. Noel Nut Balls Makes about 5 dozen * 1 cup (2 sticks) unsalted butter, room temperature * 2 tablespoons honey * 1 teaspoon bourbon or orange juice (I used the bourbon-YUM) * 2 1/4 cups sifted all-purpose flour * 3/4 cup chopped pecans (best if chopped by hand) * 1/2 cup sifted confectioners’ sugar, plus more for rolling * 1/4 teaspoon salt 1. In an electric mixer fitted with the paddle attachment, cream butter and honey until fluffy. Add bourbon, and beat to combine. In a medium bowl, whisk together flour, pecans, confectioners’ sugar, and salt. Add to the butter mixture, and beat to combine. Wrap in plastic wrap, and refrigerate for 3 hours. 2. Preheat oven to 350 degrees. Line baking sheets with Silpats (French nonstick baking mats) or parchment paper. Roll the dough, 2 teaspoons at a time, into balls. Place on prepared baking sheets, leaving 2 inches between them. Bake until brown around the edges, 12 to 13 minutes. Transfer to wire racks to cool completely. Roll in confectioners’ sugar to coat. Linda loved these. ________________________________________________________________ Pumpkin Pecan Tassies * 1/2 cup butter, softened * 1 package (3 ounces) cream cheese, softened * 1 cup all-purpose flour * FILLING: * 3/4 cup packed brown sugar, divided * 1/4 cup canned pumpkin * 4 teaspoons plus 1 tablespoon butter, melted, divided * 1 egg yolk * 1 tablespoon half-and-half cream * 1 teaspoon vanilla extract * 1/4 teaspoon rum extract * 1/8 teaspoon ground cinnamon * 1/8 teaspoon ground nutmeg * 1/2 cup chopped pecans 1. In a small bowl, cream butter and cream cheese. Beat in flour. Shape into 24 balls. With floured fingers, press onto the bottom and up the sides of greased miniature muffin cups. 2. Bake at 325° for 8-10 minutes or until edges are lightly browned. 3. Meanwhile, in a bowl, combine 1/2 cup brown sugar, pumpkin, 4 teaspoons butter, egg yolk, cream, extracts, cinnamon and nutmeg. Spoon into warm cups. Combine the pecans and remaining brown sugar and butter; sprinkle over filling. 4. Bake 23-27 minutes longer or until set and edges are golden brown. Cool for 10 minutes before removing from pans to wire racks. Yield: 2 dozen. Linda won’t give these away on the plates-need I say more! ________________________________________________________________ Peppermint Twist Kisses * 1/2 cup butter, softened * 1/3 cup sugar * 1 egg yolk * 1/2 teaspoon peppermint extract * 1/2 teaspoon vanilla extract * 1-1/4 cups all-purpose flour * 1/4 teaspoon salt * 4 to 8 drops red food coloring * 36 chocolate kisses 1. In a large bowl, cream butter and sugar until light and fluffy. Beat in the egg yolk and extracts. Combine flour and salt; gradually add to creamed mixture and mix well. Divide dough in half; tint one portion red. Divide each into four portions. Cover and refrigerate for 1 hour. 2. Shape each portion into a 9-in. log. Place one red log next to one white log; twist gently to create one swirled roll. Roll gently until roll becomes one log. Repeat with remaining dough. 3. Cut each log into nine slices; roll each into a ball. Place 1 in. apart on ungreased baking sheets. Flatten slightly with a glass. 4. Bake at 350° for 10-12 minutes until edges are lightly browned. Press chocolate kisses into the center of warm cookies. Remove to wire racks to cool. Yield: 3 dozen. ________________________________________________________________ Peanut Butter Treats COOKIE: * 1/2 cup butter, softened * 1/2 cup sugar * 1/2 cup packed brown sugar * 1 egg * 1/2 cup creamy Peanut Butter * 1/2 teaspoon vanilla extract * 1-1/4 cups all-purpose flour * 3/4 teaspoon baking soda * 1/2 teaspoon salt FILLING: * about 42 miniature peanut butter-chocolate cups 1. In a bowl, combine the butter, sugars, egg, peanut butter and vanilla; beat until smooth. Combine the flour, baking soda and salt; gradually add to creamed mixture. Cover and chill for 1 hour or until easy to handle. 2. Roll into walnut-sized balls; place in greased miniature muffin cups. Bake at 375° for 8-9 minutes. 3. Remove from oven; gently press one peanut butter cup into each cookie, forming a depression. Cool for 10 minutes before removing to wire racks to cool completely. Yield: about 3-1/2 dozen. ________________________________________________________________ Soft and Chewy Molasses Cookies * 1 cup plus 3 tablespoons butter * 1-1/4 cups sugar, divided * 1/4 cup molasses * 1 egg * 2-1/2 cups all-purpose flour * 2 teaspoons baking soda * 1 teaspoon ground cinnamon * 1 teaspoon ground ginger * 3/4 teaspoon ground cloves 1. Warehouse construction, which reached its peak in numbers in the late 1880s and continued through the first decade of the twentieth century, reflected the greater scale of commerce not only for merchants of perishables but also for merchants requiring large amounts of storage space such as grocery rs. Cold storage warehouses, many of them constructed for the Merchants' Refrigerating Company, are an important variation of this building type within the district. Scarlett and Ryan's new house in LA The front of the property has an un-gated black-top motor court with front facing two-car garage all of which, Your Mama imagines will soon be protected by high hedges, an electronically controlled access gate, and a state of the art surveillance system. A covered walk from the driveway leads through a small planted courtyard to the front door. The home's primary living spaces face the back yard and the panoramic view. The large living room retains much of the home's original features such as hardwood floors, a clean lined brick fireplace, and wood beamed ceiling. A long wall of floor to ceiling glazing allows for a "seamless" visual flow between the indoors and the outdoors, which of course was a primary objective with many of the architects who operated in what we now consider the mid-century modern milieu. Situated on the same axis as the living room along the back side of the house is the renovated kitchen that manages to maintain a style dialogue with the original house while incorporating all the modern conveniences expected in a multi-million dollar home such as high quality cabinetry and high grade stainless steel appliances that include double ovens and a side-by-side fridge and freezer combo that probably cost more than a Mini Cooper. The kitchen is open not only to the wall of glass that sucks up the view on the back side of the house, but also the dining area and adequately sized corner family room that, like the living room, is wrapped in floor to ceiling glass panes that open to the backyard and the view that, on a good day, extends all the way to the Pacific Ocean. Extra deep overhangs help to modulate light and shade part of the deck that runs along the back of the back of the house and steps down to a flat grassy yard, many sided swimming pool, and adjacent sunbathing deck ~~~~~~~~~ Not my taste. the place had character character (long... no worries if you don't read it, just felt like writing something to go along with this and got a little long-winded) It was a brisk and chilly Saturday afternoon when I stepped out of the wind and into this "Jeff's NY Deli," just off Spring Street near Centennial Park and I was less than impressed. The decor was bold, but sparse... and cheap. A KLH boombox honked Christmas tunes well before Thanksgiving, and through a fog of white noise, to boot. Exposed pipes, ductwork, and electrical raceway but not in a trendy fashion. Two tables shoved together supported newspaper coupons, comics, crosswords, as well as a time-worn (and possibly war-ravaged) coca-cola mug. A refrigerated display cabinet next to the cash register with dated-looking potato salad, fruit sald, etc. and another cooler full of various soft drinks awaited farther in. A braless, frumpy matriarch with questionable dental integrity hovered over a plump, silent boy of middle school age, frustrated that he is not picking up the (apparently) family trade with adequate velocity. They are receiving and calculating a customer's order. On a normal day, I'd have revolved and walked right back out. However, pressed for time and tummy grumbling, knowing this 10 minute window was likely my last for some hours, I continued to the counter, waited my turn behind the only other customers (mother and son) placed my order and sat down. I was slightly depressed and uncomforably impatient. I surveyed the scene again - in more detail this time. Mostly noticing more cheapness, more corners cut, more dirt. Annoyed and still impatient, I pulled out my camera and started checking it over, making sure I was prepared for the photoshoot to follow. Everything checks out. Still hungry. They already have my money - might as well wait. Frumpy matriarch busies herself behind the counter while the boy shuffles some of the newspapers and plays with his hat. I consider engaging him in conversation, think better of it, nod, receive his reciprocal nod and decide to start shooting. With the camera, of course. I start to look at the room in a different way, now. I'm looking for something. But what am I looking for? Something good, for starters. I'm looking for interesting light, interesting geometry, interesting... anything. I quickly find it across the narrow room from me and slight to the right - towards the door. It's the sun reaching in, dousing the room with warm ambient light as well as a few fingers of bright rays. Casting a fragile but intense shadow deep into the deli, the ray of interest penetrates not only the physical space of the room, but my perception of this restaurant as well. One of the beauties of photography is finding beauty where you otherwise might not notice it. After taking a few photos, my sandwich arrives. It is a monstrous mound of honey cooked ham with deli swiss on new york rye bread accompanied by the aforementioned dated-looking potato salad. Oh, and lettuce, tomato and deli mustard as well. Having expected a frumpy sandwich to go along with the frumpy appearance of the shop as well as the preparer, I now felt guilty. The sandwich was, quite honestly, one of the tastiest sandwiches I've ever had. I was beginning to wonder if their "Best sandwiches in Atlanta" claim was not so insulting after all... in fact possibly even true. Now, I have never visited New York, so I have no idea if this place resembles, in any way, a typical NY deli. My guess is no. But one inescapable conclusion was that I had miscalulated, misjudged, and damn near missed out on this place and what it had to offer. What they lacked in appearance, the shiny surfaces, the trendy furniture, the beautiful staff, the friendly smile... they made up for in substance - a warm, natural, and unassuming place to eat and a helluva damn good sandwich. I guess the best way to put it is: the place had character. -true story 2257-Biggera Waters-Sushi Maru Teppanyaki Restaurant-Biggera Waters Metro Market Shopping Centre-16-000703 We were recently at the newly re-furbished and re-named "Metro Market" Shopping Centre at Biggera Waters at the northern end of the Gold Coast. Having just returned from Brisbane, we were also starving and looking for a place to eat when we spotted "Sushi Maru" a very small Korean-Japanese Teppanyaki Restaurant. Through the left window, you could see into the kitchen that was kept spotlessly clean. The sliding door on the right displayed the menu... and the prices were very reasonable... so we decided to enter and order a meal. Entering the restaurant, we were immediately impressed by the refrigerated display counter on the left that also prominently displayed the temperature inside the display counter... The restaurant was very small with only three small tables and three stools at a small bar at the window, which meant that the restaurant mainly catered for take-away customers... As one table was free, we sat down at that table... as the lady was serving two customers at the counter, her young daughter promptly came out and handed us a menu... and came out to take our order as soon as she had finished serving the two customers. As I am not familiar with Korean or Japanese food, I went for a chicken curry... as many Asian dishes contain coriander, which I can't stomach, I asked if she could make it without coriander, but otherwise hot and spicy... and I was delighted that she was very accommodating and eager to prepare the dish just as I like it. My wife, having more knowledge of Japanese dishes, ordered a beef teppanyaki, mild but with coriander... and she was likewise very pleased that the dish would be prepared in accordance with her wishes. In less than ten minutes, the meals were ready... we were very pleasantly surprised that we were presented with two excellent meals that were very tasty, prepared just the way we liked them... we had a very enjoyable meal and a very pleasant and memorable experience... Since then we have eaten here at least one to three times a week and often accompanied by our daughter or friends who have been equally delighted by the fabulous meals served here !!! Black Forest Cake Ingredients: 1 box Betty Crocker® SuperMoist® devil's food cake mix Water, vegetable oil and eggs called for on cake mix box Filling and Topping 1 pint (2 cups) whipping cream 1/2 cup powdered sugar 2 to 3 tablespoons brandy, if desired 1 can (21 oz) cherry pie filling 1/2 teaspoon almond extract 2 tablespoons sliced almonds Directions: 1. Heat oven to 350°F for shiny metal pans (or 325°F for dark or nonstick pans). Spray bottoms and sides of 2 (8- or 9-inch) round cake pans with baking spray with flour. 2. Make and bake cake as directed on box for 8- or 9-inch rounds, using water, oil and eggs. Cool 10 minutes; remove from pans to cooling rack. Cool completely, about 1 hour. 3. In medium bowl, beat whipping cream with electric mixer on high speed until slightly thickened. Gradually beat in powdered sugar until stiff peaks form. Fold in brandy. In another small bowl, mix pie filling and almond extract. 4. On serving plate, place 1 cake layer, bottom side up. Spread with 1 cup cherry mixture to within 1 inch of edge. Top with second cake layer, rounded side up. Frost top and side with whipped cream. Spoon remaining cherry mixture over top. Sprinkle with sliced almonds. Store covered in refrigerator. High Altitude (3500-6500 ft): Follow High Altitude directions on cake mix box for 2 (8- or 9-inch) round cake pans. Black and White Bathroom I lived in an old house for two years. It needed to have been demolished years before due to rotting wood and poor maintenance. This house was built before the year 1900 and at one point was divided into a number of rental units. The bathroom shown was part of a basement unit, long abandoned, where the only light came from windows near the ceiling. To get to it one had to walk down a narrow set of stairs, avoid running into a heating duct, turn a corner to miss a support post, enter through a stuck door and finally cross a skinny bedroom with the bathroom on one end. By the time I saw it the bedroom was filled with building supplies and cobwebs and the bathroom was full of holes and water damage. Neighboring rooms contained large amounts of paint and other flammable chemicals. The pipes in the house were originally all steel. Over the years copper and plastic pipes were added on and they easily busted in the cold. The electrical wiring for the whole place was not grounded, making any electrical device in that bathroom a death risk should it get wet or fall into the sink. This bathroom scared me and I lived in a place with no heat, holes in the wall, fuses which tripped weekly and refrigerator on the front porch. Fruit Tarts Recipe Seasonal Fruit Tarts with Lemon, Toasted Almonds and Fresh Nutmeg Aka, up-dated pop tarts Serves 10 people Ingredients For the Tarts *premade mini or large pie shells will do the trick as well 1 pound all purpose flour 2 teaspoons salt 2 ounces sugar 1 teaspoon baking powder ? pound butter 8 ounces creme fraiche or sour cream pinch salt Fresh seasonal fruit; Strawberries, nectarines, blueberries, apples or pears 1 small piece of nutmeg or 1 teaspoon ground nutmeg juice of one lemon For the Almond Frangipane Filling 6 ounces brown butter, room temperature ? cup sugar 3 eggs 1 cup almond meal zest of one lemon pinch salt Special Equipment Parchment or wax paper Tartlet molds Rolling pin Nutmeg grater or micro plane Cookie cutter or pastry wheel Instructions For the Tarts Chill butter and creme fraiche. Sift dries into a large bowl. Cut cold butter into small pieces and rub into dry ingredients. Mix until the mixture is coarse like cornmeal. Add creme fraiche and flatted dough into thin disk. Cover with plastic wrap and chill. Slice the fruit and then toss in lemon juice and season with fresh grated nutmeg. For the Almond Frangipane Filling Combine all ingredients until a smooth thick batter is formed. Chill. To build and bake the croustades, preheat oven to 325°F. Remove dough from refrigerator and place on flour dusted work surface. Roll out to 1/8-inch thick and cut circles large enough to line the tartlet molds. Chill for 15 minutes and fill with frangipane. Top with sliced fruit and bake for about 40 minutes. To serve Serve warm with toasted almonds, whipped creme fraiche and salt caramel sauce or brown butter vanilla sauce. Another day, another dream... Edna broods over yet another hard day’s work after her hubby arrives back from collecting recyclable plastics off the streets.
