our typical german dishes prepared by mexican cooks, though, was very good. the cooks may be from el salvidor. dunno.

A co-worker came back from Washington today and passing in frankfurt, flying Lufthansa he thought to bring me some newspapers. Yessss.. I want so badly read them (especially "Die Zeit" is one of my favourits). So my dream is more or less like this: Sunday morning I will get up, put on some classic music (or etnic? hmmm), comfy myself on the couch and read all day through. Reality will be like this: I will get up and cook all morning because I invited some friends for lunch. No time to read. Whatever. Guests are good, too!

so wrote Abraham Lincoln.
My few and humble words about Helene are going to be about her contributions of happiness to this world, not a confirmation of the sadness in our loss- even though this now is the stark reality. My hope is these words will reflect some of your thoughts and wishes this day.

You might wonder, when talking to Helene about some of her adversity- how could she be so positive and create such an aura of happiness throughout her last four years and how she kept on going with such a remarkable attitude.

I wish to recognize helene’s courage and her continuous ability to
Be positive, and encourage all around her to stay focused- no negativity allowed, ever.

How she learned to cook and entertain is beyond me. She did not learn it from her mother. In the early years, dinner on Isabella,
Were virtual feasts. My partner, John everyt ime, (and I mean every time) would slap his thigh and announce, “this was the best
Dinner ever. He was right every time.

During, what a call the solo years, my john dead, and helene
Single. The dinners got better, the entertainment got better and
Terry got better. What wonderful Saturday nights.-

And on a date, now lost to history, came one of the most
Important dinners of my life. Helene premiered

Then she left me, for Tom and Nelson. Who was Nelson?, I had never heard of Nelson. But I got to love Nelson and Tom. (not in that particular order, of course)

Helene always doodled. Ever since I could remember. In Nelson,
Her gift flourished. How amazed I was, am of her talent. Her creativity, subject matter, boldness, use of colour. I still am in awe.

As we sit around her art, we are actually sitting with her, and
She with us.

Finally, Helene loved sincerity and she respected where you
Were in your life.

To get back to Lincoln “Most forks are about as happy as they make up their minds to be” I can almost hear Helene saying right now, in all humility
“this is fine-I enjoy a celebration, thanks to all of you for making my life so rich and full. Now let’s get on with it, and be happy.

Organic Ontario Wild Rice, Swiss Chard, Smoked Tomato and Bacon Vinaigrette ($26)

Instead of the cod, the others at our table defaulted to ordering the pickerel, of which our server said was a personal favourite. Interestingly enough, he also mentioned that Globe was one of two restaurants in Toronto serving pickerel, perhaps from a certain source (I didn't catch), but I found that claim a little strange (we subsequently ended the evening at Pangaea for dessert, where we observed a pickerel course in their evening menu – a completely coincidental event for us to visit the only two restaurants in Toronto serving this fish in a row!). :P
The dish was cooked well (as opposed to well cooked), where the mild flavours of this fish were juxtaposed against the hearty bed of wild rice, bitterness of sauteed swiss chard and the grassy pea shoot topping. I enjoyed the smoked tomato and bacon vinaigrette to the side of the dish as it added a bit of pucker, full smoke flavour and richness to an otherwise clean tasting dish. I know that the other companions who were set on the cod were a tad disappointed as this dish didn't satisfy their desire for rich meatiness (I pre-warned them. ;) I know I strategically ordered this dish to follow my richer gnocchi course).
Another interesting item that JL wished to note was the fact that I had two filets of pickerel on my plate, where as he and MS both received only one filet. I mentioned that their one piece was perhaps larger than mine (but we all secretly agreed that even given that fact, I probably still had 45% more fish than either of them). Could this in any way be related to the fact that upon seating at our table, our server questioned whether I had been to Globe before as he thought he recognized me. I assured him that that could not be the case, however he might have mistaken me for a friend (who is also female and Asian) who also photographs her meals (and who had incidentally visited Globe a couple weeks prior). Could this be in any way related to the portions of fish I received? Was it just a coincidence? Am I just lucky? Do I look like I eat a lot (I did finish everything without a hitch)? Perhaps we will never know. ;)

I made it with whole wheat spaghetti to be healthier, but any long pasta works. Melt a tbsp or two of butter and 3 or so tbsp of olive oil. Saute 4 or 5 cloves of garlic (minced or pressed). Add about 1/2 cup dry white wine, salt, pepper, a little dried oregano and red pepper flakes. Meanwhile, cook pasta (about 3/4 box for four servings) according to package directions. Cook garlic/wine mixture over medium about 5 minutes, then add chopped up zucchini (about 1 zucchini) and cook until almost tender. Then add shrimp with the shells off (about 1 lb), and 1 cup stewed tomatoes (if you are lazy you can also dump some canned spag sauce in there, but if you do that, don't add too much oregano). Cook until the shrimp is just opaque. Then add drained pasta and toss to coat. Top with fresh parsley & parmesan.

Here they are slowly getting there. My brother's prepared shrimp (the right) and mine (the left). You have to keep an eye on shrimp, too, while cooking. When it's changing colors is a good indication of when to turn and take it off the grill. Of course, my brother's preparation was a little more difficult to eye up because everything he put on it.

View Through a Rainy Window





This is the view we saw through the rain all day Christmas in Gualala. When we first arrived there was no waterfall there. It sprouted and blossomed as the rainwater needed a place drain into the ocean. I liked the shape of the tree growing on our side of the cliff overlooking the cove. Unfortunately all my shots of it turned out blurry, so I decided to just accept the reality and exaggerate the blur to emphasize the weather conditions. It probably looks simply like a messed up photo to most everyone else, but to those of us who were there it is a reminder of our jolly Christmas day in the rain, laughing our way through funny conversations, bad DVDs, a confusing new dice game, and cooking without all the ingredients we needed. Strange that it isn't all perfectly clear here:)

(I actually added a watery-window texture over the original of this shot, then did some more work in Nik Viveza. The original was blurry anyway, so figured there was no harm in making it worse...haha It simulates our actual view through the kitchen window, although the composition is somewhat improved from the real window.)

Those who want to save money and improve their diets can’t do better than brown-bagging their lunch.

Look for recipes that use fresh, whole ingredients and that combine protein with healthy carbohydrates. For example, the following recipe for Rio Star Grapefruit & Quinoa Salad combines vegetables and citrus fruit with quinoa, a whole grain that supplies a complete protein.

Quinoa, which is like couscous in texture, contains protein, iron, fiber and vitamin B6, while fresh grapefruit contains vitamins A and C. Look for Texas Rio Star Grapefruit, a red variety that’s especially sweet. When choosing grapefruit, pick one that feels heavy for its size – that means that it’s extra juicy.

Rio Star Grapefruit & Quinoa Salad
Makes Four Servings

Ingredients:
1 Texas Rio Star Grapefruit, sectioned and peeled (reserve the peel)
1 Texas Orange, sectioned
8 thin slices fresh ginger
1/4 cup extra-virgin olive oil
3/4 cup quinoa
1/2 teaspoon kosher salt, plus additional for seasoning
1 tablespoon white wine vinegar
2 teaspoons honey
1 small serrano or jalapeno chile, minced
2 scallions, minced
2 carrots, peeled and diced
2 tablespoons chopped fresh cilantro leaves
Freshly ground black pepper

Directions:
1. Warm the grapefruit peel, ginger and olive oil in a small saucepan over medium heat. As soon as the oil starts to bubble, remove from heat. Set the oil aside to steep for 30 minutes. Strain and reserve the oil.

2. Meanwhile, rinse and drain the quinoa, and follow the package directions to cook. Transfer the quinoa to a bowl and fluff with a fork. Cool.

3. Segment the grapefruit over a bowl, reserving the segments and juice separately. Whisk 3 tablespoons of the grapefruit juice with the vinegar, honey and salt to taste in a medium bowl. Gradually whisk in 3 tablespoons of the reserved grapefruit oil, starting with a few drops and then adding the rest in a stream to make a slightly thick dressing. Season with pepper to taste.

4. Toss the quinoa with the dressing, chiles, scallions, carrots and cilantro. Season with salt and pepper, to taste.

5. Toss the grapefruit segment into the salad, divide among four plates. Serve warm or at room temperature.

6. Serving suggestion: This salad makes a great packed lunch. If you want to serve this salad at dinner, try it with grilled salmon.

Made dinner for my mom and dad tonight... This easy to make chicken "stew" is incredibly delicious, full of spicy aromatic flavors. The cool tang of the yogurt on top sets it off perfectly. Just scoop it up with some pita bread and you're good to go!

Ingredients:

2 lb chicken breast (cut up into 1-inch chunks)
1/2 tsp salt
1/2 tsp black pepper
1 Tbsp olive oil
3 cup sliced onion
1 cup sliced red pepper (or a mix of green, red and yellow)
1 Tbsp chopped peeled fresh ginger (or 1 tsp of ground ginger)
1 tsp curry powder
1/2 tsp ground cinnamon
1/2 tsp ground cardamon
1/4 tsp nutmeg
1/4 tsp ground red pepper
2 large garlic clove, thinly sliced
1/2 cup low-sodium chicken broth
1/2 cup dry white wine
1/2 cup orange juice
3 Tbsp chopped pitted dates
3 Tbsp golden raisins

Directions:

Preheat oven to 350°F

Sprinkle chicken with salt and black pepper. Heat oil in a Dutch oven over medium-high heat. Add chicken; cook 4 minutes on each side or until golden brown. Remove the chicken from pan.

Add the onion and red bell pepper to pan; reduce heat to medium-low, and cook for 10 minutes, stirring frequently. (Scrape up all the chicken bits stuck to the bottom to add lots of flavor!)

Add the ginger and next 5 ingredients (ginger through garlic); cook for 1 minute. Stir in chicken, broth, wine and the remaining ingredients, and bring to a boil.

Cover and bake at 350°F for 1 hour (or cover and simmer on stove top for 1 hour).

Serve with plain yogurt, and flatbread or couscous.

Ingredients:

1 bag (12 oz) Green Giant® Valley Fresh Steamers™ frozen broccoli cuts, thawed, drained
2 cups cut-up cooked ham
2 cans (10 3/4 oz each) condensed Cheddar cheese soup
1/4 cup milk
2 cups Original Bisquick® mix
1 cup milk
2 tablespoons yellow mustard
2 eggs

Directions:

1. Heat oven to 400°F. In ungreased 13x9-inch (3-quart) glass baking dish, mix broccoli, ham, soup and 1/4 cup milk.

2. In medium bowl, stir remaining ingredients until blended. Pour over ham mixture.

3. Bake uncovered about 35 minutes or until crust is golden brown.

I found a Red Hots scented candle in Josh's trunk. Romance.

Dinner was amazing thanks to my boyfriend's superb cooking skills. My mom says he's a keeper.

I'd already taken my photo for today, in progress photos of my quilt but while cleaning my disaster area of a screen printing nook, I stumbled upon my grandfathers old collection of la cucina italiana magazines.

He subscribed for a while & I brought them with me. I decided to open one up & all these papers fell out. Old recipes. Both his and one in my moms writing. I have no idea why but I just started crying my eyes out. Hormones? The fact that I've become really into cooking & I can't share it with him? That he didn't see me happily married? All of those reasons + PMS? I'm not sure but it was a good cry.

He was a fantastic cook. He & my grandmother had seperate kitchens. He was an architect. I love his printing, I've always said that if I was better with computers I'd make his printing into a font. I love his way of "recipes", which are really just lists in order that you should cook things. One is the label of a bunch of broccoli rabi & then his notes on how he prepared it.

All I know is, this week I'm making the lentil soup from his notes.

Any thoughts on how to store these? I'm thinking some small acid free/archival frames for our ktichen.

The April 2010 issue of Saveur has an article on cardamom, and being the good Norwegian that I am, I had to make the Cardamom-Ginger Crunch. It's really, really very rich. There's a ton of ginger in it, so it's a little spicy, too. And there's a whole pound of butter.

The Government trail, from the floor of Grand Gulch up to the rim of the canyon is scenic and well built, but it does have a few steep pitches, so my wife (and me too), were anxious to get on up to the top of the Grand Gulch canyon.

This was an easy backpacking trip. Only the very short pitch up and down the rim of Grand Gulch gave us a chance to really "test" the merits of our new lightweight internal frame packs.

We had a lot of fun together on this little excursion and there is nothing like sleeping beneath the desert stars in a mile high slickrock canyon, with somebody you love. Fun!

This was a test run for some new lightweight internal frame backpacks, my wife and I had purchased for this trip. After 40 years of using our comfortable, easy to access, Kelty Tioga external frame backpacks, we decided that for “off trail” canyon hiking, that some new light internal frame backpacks might be better suited (and besides I had a 20% off coupon and my 2010 REI refund dividend burning a hole in my jeans pocket at the time).

So I bought an REI Flash 65 and the Flash 50 for my wife. Not only would these work better for the overhangs encountered with off trail canyon hiking, but they stored in our pickup truck almost flat, when not in use.

To get to right to the point: We both LOVED these new packs. I still think we will use our external frames on most occasions when we are hiking a well established trail and balance and narrow low profile is not a consideration. But when we want to go light and have any plans for off trail backpacking, the new internals are here to stay.

You really need four wheel drive and high clearance to get all the way down to the stock pond trailhead for the Government Trail into Grand Gulch. Our old 1994 Toyota pickup truck with high clearance, low and high range “shift on the fly” four wheel drive, and adequate skid plates underneath, was just the ticket. We ended up parking next to a ranger’s pickup truck.

The Government Trail is easy hiking. It is an old Jeep trail so we could hike side by side for the 2.5 miles or so from the stock pond to the Grand Gulch canyon rim. The next half mile is steep in places and there are a couple of overhangs if you happen to have a high backpack. We had no trouble at all getting on down to the bottom of the Grand Gulch canyon. At a leisurely pace it took us an hour from trailhead to rim and half hour from rim to canyon bottom at Grand Gulch.

We hiked up Grand Gulch and took several “side hikes”, the most fun being to the “Big Man” pictograph panel. The stars of the panel are actually a Big Man (with modest male features) and a Big Woman. So why they don’t call it the Big COUPLE panel, I don’t know. Left over and hard to extinguish male chauvinism I guess.

We met a lot of nice people on this road trip and at the bottom of Grand Gulch we met a fit couple with two energetic young girls, camped near the mouth of Polly Canyon. The wife was preparing camp meals (toasted fajitas), that to us, seemed gourmet and outstanding camp cuisine. The next day the man would turn up as our hero of the road trip as the “Good Samaritan”.

Though the weather was good (nice temperatures and no rain), wind gusts hit pretty hard throughout the afternoon and into the evening. We were lucky that the “nice family” told us about an out of the wind camping location under a big bent cottonwood tree. The camping site was perfect for us.

We slept with the rain fly off of our REI Quarter Dome T-3 tent that night and enjoyed watching the big dipper, shooting stars, and a bright moon through the mesh canopy of the tent that night. We really slept well.

5. Friday 22nd of April 2011
We ate breakfast and watched the morning sun illuminate the sandstone canyon walls around us. The wind was gone and it was a perfect day. We took our time hiking down Grand Gulch and then back up to the rim of the canyon. Here we found a lady lying down under a juniper tree and her husband with a large backpack sitting on the slick rock. During our discussion we were told that she had badly sprained her ankle down in Grand Gulch (her husband didn’t tell us how long ago), but they had obviously made it to the rim together, leaving only the easy 2.5 mile “Jeep” road section to hike to the trailhead.

I asked the husband if they had a vehicle at the trailhead or had they had to park up the road above the four wheel drive section. He said they were at the trailhead. He showed no signs of needing our help so we continued on hiking toward our truck. Along the way we passed three backpackers, heading down government trail, and then along came the “Good Samaritan”, without any pack at all hiking down towards us. To be honest I didn’t recognize him as the father of the two little girls and husband of the good camp cook (the family who had told us about the good camp site). My wife, who is much more observant and attentive than me in socia

This is the Galo de Barcelos, the national symbol of Portugal, symbolising honesty, integrity, trust and honour.

The town of Barcelos is celebrated for its pottery, handicrafts and earthenware. One of the most typical baked clay items is the renowned rooster of Barcelos, with its crest well reared up and with its spurs standing out.

The origin of the cult of the rooster can't be pinned down with accuracy, but people at Barcelos keep worshipping the rooster, and an ancient legend has been passed on from generation to generation.

Once upon a time the inhabitants of Barcelos were quite alarmed with a crime, and this was even more alarming when they couldn't discover the criminal. One day a stranger from the neighboring Spanish province of Galiza, appeared in the village. Suspicion fell on him at once.

The authorities resolved to seize him and in spite of all his oaths of innocence nobody believed the stranger. Not one villager, and no one in authority, could believe that the man was on his way to worship St Tiago, the patron saint of a nearby town. Finally the hapless stranger was condemned to death by hanging.

As a last request before his execution, he asked to be brought once more into the presence of the Judge who had condemned him. The request was granted and they lead him to the residence of the magistrate, who was just banqueting with some friends.

So you are innocent, are you?” laughed the Judge.

“Yes Sir, I am. Before God, I swear it,” answered the stranger.

“Ah, but you have been accused and sentenced to death, and I can’t change the sentence on just your word without proof. How do you think you can prove your innocence, my good man?”

“But Sir, I swear that I am innocent,” the man insisted.

He looked around the banquet room in desperation, seeking some way, some help. His eyes fell on a servant carrying in a large platter of fowl, steaming with seasonings. He fell to his knees.

“Lord God,” he prayed, “as Peter, your servant, denied you at the cock’s crow, would that you show my innocence as your humble servant by this rooster’s crow…”

All eyes turned to the platter of steaming cooked fowl and widened in wonder and amazement as the rooster got up, ruffled his feathers and crowed loudly.

“The Lord has indeed spoken,” the Judge said in awe, and rising to his feet, he proclaimed, “Let this be a lesson to each of us never to sit in quick judgment of our fellow man. The rooster, henceforth, shall be a reminder to us and to our children after us, of this, the Lord’s message. So shall it be in our land forever!”

To this day the Galo de Barcelos is the national synbol of honesty.

After eating we danced in the scorching sun, clapping hands and chanting, and then all the women gathered in a little group, while the men rode around and around them (us) on the camels.

We used a light syrup which was a 2:1 ratio of refined sugar to water, which is in the pot on the left. The big porcelain-covered pot is the waterbath canner, which is needed for canning acidic foods (fruits, mostly, including tomatoes).

The main method in the design practice of kitchen ventilation has been the calculation of the airflow rate, which is sufficient to extract the convective heat and contaminants. Undersized airflow rates could lead into indoor air problems and oversized ventilation system increases unnecessary energy consumption and the life-cycle costs of the system. In the most accurate design method, the design of a kitchen ventilation system is based on the airflow rate of the thermal plume. When the convection flow is calculated, the influence of the cooking process is ignored. In this paper, the actual measured plume characteristics of typical kitchen appliances are presented during cooking mode. The conducted measurements show that the plume equation gives a suitable platform for practical applications during the cooking mode as well. The critical factors affecting the accuracy are the estimation of the actual convection load and the proper adjustment of the virtual origin.
