I don’t know how to describe the effect that this song has on me but I will attempt. I always seem to get this over whelming feeling of sadness and sentiment. I feel overjoyed and lifted and yet I feel the desire to curl up in a ball on the floor. There are so many emotional highs and lows- build ups and fall offs in this song, that every time that I hear it I feel like I have gone on a huge roller coaster ride… and I love it.
My memory with this song is that I had been in love with this song because of the above mentioned emotions that I felt. One day I was in a Wendy’s having lunch with my father, talking about future plans and what I wanted, etc. I never really liked to confess my desire and my love for music with my family for two reasons: one, they never understood and two they never supported my dreams. I’ll take it a step further- they crushed them in the name of safety and stability.
I had a rare moment where I actually started to open up about how music meant so much to me and I was trying to describe how and why. When this song came on- the emotions just sparked something in me and my eyes started to tear up. My father was taken back a bit… and then proceeded to talk about all of the great companies I could work for to make a stable and secure cookie cutter life. Thought there was a cheesy movie moment coming where my father realized things and supported me every day since?? LOL… this isn’t quite Hollywood.
A few years later my father had a discussion with me about how I never open up to the family and how I am like a closed door. My response was this story I described. When I asked him why I would open up if every time I did- I was shut down or dismissed. He had nothing to say…

Not surprisingly, music has always been an important part of Sesame Street. Shown here is the original handwritten sheet music for the Sesame Street theme, officially known as "Sesame Street Theme," but often referred to as "Sunny Days" due to its famous opening lyric. Composed by Joe Raposo with lyrics by Raposo, Bruce Hart, and Jon Stone, Stone considered the song to be "a musical masterpiece and a lyrical embarrassment"- despite this, "Can you tell me how to get to Sesame Street?" has become one of the most famous musical questions of our time.
As the two original composers of the show, Raposo and Jeff Moss had a friendly rivalry: Raposo would frequently write sarcastic remarks on Moss's sheet music, and when Raposo had one more song than Moss on a Sesame Street LP, Moss had his credit placed in a box so it would stand out more. Combined, the two of them wrote many great songs that immediately come to mind when one thinks of Sesame Street, with Moss responsible for such songs as "I Love Trash," "I Don't Want To Live On The Moon," "The People in Your Neighborhood," and the Top 40 hit "Rubber Duckie," with Raposo contributing "Bein' Green," "C is for Cookie," "Sing," and many others.

Brown Sugar Brownies (Recipe)
Brown Sugar Brownies -
Ingredients:
2/3 cup vegetable oil
2 1/4 cups light brown sugar
2 2/3 cups all-purpose flour
3 eggs
2 teaspoons baking powder
1 teaspoon salt
6 oz. chocolate chips
1 cup chopped nuts
Directions:
Preheat oven to 350°F. Grease a 13x9 inch baking pan or line the pan with parchment paper.
In a large bowl, mix together oil and brown sugar. Then add the eggs one at a time and beat until smooth.
In a seperate bowl, sift together dry ingredients and then add them to the brown sugar mixture. Mix well. Stir in chocolate chips and nuts. Spread batter into prepared baking pan. Batter will be thick!
Bake until a toothpick inserted into the center comes out clean, about 25-30 minutes. Remove from oven and let cool. Cut into squares and enjoy!

Someone asked me why Cookie Puss had a bleeding tumor and what flavor was it. I couldn't answer, but the Carvel website provided some enlightenment and ah, trauma: "Cookie Puss: No outer space visitor ever tasted so good. Peanutty Chocolate Chip Cookies
Hope I'm not too late for the virtual cookie exchange! My family got a kick out of it as they benefitted from the fresh cookies!!
These Chocolate Chip cookies include peanut butter and chopped peanuts, plus cinnamon in the recipe. They are a family fave and the recipe is easy to double.

Sausage-Stuffed Pasta Shells
Ingredients:
18 jumbo pasta shells (from 16-oz package)
1 lb bulk Italian sausage
1 container (15 oz) whole-milk ricotta cheese
1 egg, slightly beaten
1 can (28 oz) tomato sauce
1 tablespoon Italian seasoning
1 teaspoon garlic powder
2 cups shredded Italian cheese blend (8 oz)
Directions:
1. Heat oven to 350°F. Cook and drain pasta as directed on package. Rinse with cool water; drain.
2. Meanwhile, in 10-inch nonstick skillet, cook sausage over medium-high heat 5 to 7 minutes, stirring occasionally, until no longer pink; drain. Stir ricotta cheese and egg into sausage.
3. In medium bowl, mix tomato sauce, Italian seasoning and garlic powder. In 13x9-inch (3-quart) glass baking dish, spoon 1 cup tomato sauce mixture over bottom. Spoon about 2 tablespoons sausage mixture into each pasta shell. Arrange shells on sauce in baking dish. Spoon remaining sauce over stuffed shells.
4. Bake uncovered 30 minutes. Sprinkle with cheese. Bake uncovered about 10 minutes longer or until cheese is melted.
High Altitude (3500-6500 ft): Heat oven to 375°F. Cover and bake 35 minutes. Sprinkle with cheese. Bake uncovered 5 minutes longer.
Potato, Broccoli and Sausage Skillet Recipe
INGREDIENTS:
2 cups water
2/3 cup milk
2 tablespoons margarine or butter
1 box (4.9 oz) Betty Crocker® scalloped potatoes
2 cups sliced fully cooked reduced-fat Polska-kielbasa sausage (from 1-lb ring)
1/2 cup Old El Paso® Thick ‘n Chunky salsa (any variety)
2 cups Green Giant® Select® frozen broccoli florets
DIRECTIONS:
1. In 12-inch skillet or 3-quart saucepan, heat water, milk and margarine to boiling. Stir in contents of uncooked potatoes and sauce mix pouches (from potato mix box). Add sausage and salsa; stir until well mixed. Reduce heat; cover and simmer 15 minutes, stirring occasionally.
2. Stir in broccoli. Cover; cook 8 minutes longer or until potatoes and broccoli are tender (sauce will thicken as it stands).

Christmas cut-out cookies
Hayden and I started these last night and finished them today for his Scout troop's Christmas party. It took a lot of self-restraint not to eat them! These were spiced up with nutmeg and cinnamon and smelled divine while in the oven.

that this year I purposely didn't frost the cookies and we all had fun again

A Razorback boar "scotch and crackle" -- how Kiwis refer to the loin cut and the fatty skin.
In this instance, the butcher tied a thick, fatty layer of the boar skin around the otherwise very lean boar loin cut.
This provided two exceptional results: 1.) The crispy outer layer, and 2.) a juicy, succulent roasted loin. But wow, that skin was tough when it was raw -- I had to score it in order to open up areas to rub seasoning into the loin meat, and it took a very sharp knife and lots of patience.

Dark Chocolate Dipped Cinnamon Cookie Dough
Mix up cookie dough:
1 1/8 cups unbleached all-purpose flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1/2 cup vegetable margarine, softened
3/8 cup raw sugar
3/8 cup packed brown sugar
1/2 teaspoon vanilla extract
1 teaspoon cinnamon
1/4 cup soy milk powder (vanilla-flavored works well)
Warm water as needed
Form balls and place on waxed papered cookie sheet and refrigerate 30 minutes.
Melt 1 cup dark chocolate chips.
Dip dough into chocolate and return to cookie sheet. Dust with more powdered sugar. Allow to harden.
Yum.

-A nice terrycloth bathrobe that dad and I bought for mom, but apparently it was too small and she gave it to me which is good because I really wanted one but it was too expensive. YAY.
-A Theory of Fun (game design book, from coworker Robert)
-A whole bunch of stuff with which to make brownies, cookies, and cupcakes. Sally, mom, and Yoshi are trying to conspire to get me to start baking. This DID include a Darth Vader spatula, a skull-and-crossbones cookie cutter, and Star Wars cupcake cups though so they're definitely fighting valiantly.
-A red slanket that Sally bought for Scott the day before Christmas Eve and then I told her that he had one and that I would take it instead. Yay!!
-A set of Beatles cups from Scott which are actually a housewarming present.
-TONS of tasty treats.
-Bowls. We desperately needed bowls.
and many other things I'm forgetting because I already packed it all away!
Dad got Mike a ton of tools for Christmas and book on wtf to do when things in your house break, and included a bottle of beer in the tool belt. :p

Double-Strawberry Baked Alaska Recipe
INGREDIENTS:
2 Pillsbury® Ready to Bake!™ Big Deluxe Classics® refrigerated white chunk macadamia nut cookies (from 18-oz package)
1 cup strawberry ice cream
1 cup Cascadian Farm® frozen organic strawberries (from 10-oz bag), partially thawed
2 tablespoons seedless strawberry jam
2 egg whites (3 to 4 tablespoons)
1/4 cup granulated sugar
1/8 teaspoon vanilla
1 tablespoon chocolate-flavor syrup
2 Hershey's® Kisses® milk chocolates (do not unwrap)
DIRECTIONS:
1. Heat oven to 350°F. Place cookie dough rounds 2 inches apart on ungreased cookie sheet. Bake 14 to 18 minutes or until edges are golden brown. Cool 3 minutes; remove from cookie sheet. Cool completely, about 15 minutes.
2. Place 1/2 cup ice cream on top of each cookie; place 4 to 5 inches apart on same cookie sheet. Cover loosely; freeze until hardened, at least 1 hour 30 minutes or until serving time. Meanwhile, in small bowl, mix strawberries and jam; refrigerate.
3. To serve, heat oven to 450°F. In small bowl, beat egg whites with electric mixer on high speed until foamy. Gradually beat in sugar until stiff peaks form. Beat in vanilla. Spread egg white mixture over ice cream on each cookie, covering ice cream and cookie edge completely.
4. Bake 4 to 6 minutes or just until meringue is lightly browned. Immediately remove from cookie sheet; place on individual dessert plates. Place strawberries from sauce on side of each dessert; spoon sauce over tops. Drizzle chocolate topping over each; place wrapped milk chocolate candy on each plate. Serve immediately.

Chicken and Green Curry with Rice
Although this is in my From My Kitchen set, it's not technically from my own kitchen. I've been staying with my mom the past week because she broke her leg. She doesn't have much in the way of entertainment so I cooked a lot to keep boredom away. The good thing is there's a lot of markets around with fresh produce and ethnic ingredients so shopping was easy. Here's my version of Thai green curry with chicken and coconut milk. Not claiming to be authentic but I wanted something tasty, soupy, and comforting.
1 skinless boneless chicken breast trimmed of fat and cubed into 1" pieces
1 medium onion thinly sliced
1 red bell pepper thinly sliced
several white mushrooms sliced
1 medium zucchini sliced into half moons
half a can of sliced bamboo shoots
1 broccoli cut into florets and stems peeled and sliced
1 can coconut milk
2/3 can of Thai green curry paste or however much you like
small knob of ginger grated
4 cloves garlic crushed
S&B yellow curry powder
pinch of ground coriander
few splashes nam pla
Drizzle of canola oil, or vegetable oil, as long as it has a high smoking point and not strongly flavored
If you want this to be vegetarian, substitute the nam pla for soy sauce (quite a bit more soy sauce because it's less salty than nam pla) and replace the chicken with tofu, or just make it all vegetables.
In a large soup pot I sauteed the onions, peppers, garlic and ginger in the oil until the onions and peppers were soft. The curry powder and coriander went in and also cooked in the oil to release their flavor. In went the mushrooms and cooked until they got a bit of flavor.
Pushing all the vegetables to the side to expose the hot center of the pot, I dropped in the curry paste and let it cook a bit to develop deeper flavor. Then in went a little water, maybe less than half the volume of the vegetables. After bringing everything to a simmer, I added the chicken.
After about 10 minutes, I added the zucchini, broccoli, bamboo shoots, and coconut milk to the pot. The whole thing simmered, covered, for about 15 minutes over medium heat until the broccoli and zucchini were bright green and the soup had thickened a bit. After shutting off the heat, in went sprigs of cilantro and the juice of a whole lime.
I ate this over rice with more cilantro and lemon juice sprinkled all over. I could eat this everyday.
Solar-cooked mexican chicken - again
It was so tasty, I made it again. This time I used more chicken, added a chopped white onion, some of my roasted garlic, various "mexican" seasonings, and some Sri Racha hot sauce to spice it up a little.
I started the cooking at 10 AM with the HotPot in its reflector. By 1 PM, the sun was so directly overhead that I switched to my worn Cook-it and left it on for another 2 hours, just for good measure.
Needless to say, it was delicious again. We fried up a number of corn tortillas and added various things like fresh cut salsa, avacado, lettuce, cilantro, lime juice, hot sauce... you get the idea.
