So here's a pic of me taste testing my cookies - the kitchen is a disaster area! An odd shot for my first new 365 picture, but hopefully they will get better as we go along. I can't let myself get caught up in only taking good shots, some days there just won't be any. That's what killed me last time - if I don't get a good shot, I promise you'll still get something :-) not a new year's resolution, because people don't do those - and I WILL do this.

It's a really weird thing, if I ever get lonely, I cook and bake like mad. Today first I made some cookies (they didn't turn out the greatest) and then I made an elaborate dinner (it was just OK).

The cookies are peanut butter stars (some people use Hershey Kisses). I didn't have baking soda so I used baking powder instead. I knew it'd be a problem...but by the time I realized, it was too late to go to the store and my cookie dough was almost ready to go! So they taste good at least, just a little crunchy. Check out the pictures in my photostream, they sure at least look banging.

For dinner I made Brussels Sprouts with Roast Shallots and Spiced Potato Gnocchi on a Blue Cheese Cream. The sauce and brussels sprouts were delicious - the gnocchi, not so much. I know for next time.

Funny thing though - I didn't realize when I bought the cookbook, but the recipe measurements are all in grams. So it was sort of a crap shoot making the sauce - that is why I love cooking more than baking though. Unlike my cookies, one little ingredient change wouldn't mess up the whole meal!

I'm trying to get better at food photography and push the limits of my point-and-shoot a bit more. The days being longer (aka more time for natural light) certainly helps too. :)

We've only done the workshop in our kitchen at the Vancouver Food Bank. Thanks to a grant from Campbell Company of Canada, Fresh Choice Kitchens was able to run our Community Kitchen Leadership Workshop in Victoria. The workshop was held at Corrine's Kitchen at Fairfield Gonzales Community Association. It was a neat experience to work in a 900 sq ft commercial kitchen! It had stainless steel countertops, gas grill and oven, electric cooktop, commercial fridge and a Hobart sanitizer!

I made cookies for a Thanksgiving celebration this evening, although the actual date is still a few days away. The cookies on the baking sheet are chai-spiced sugar cookies and the ones in the pan on the back of the stove are chocolate chip.

We also had pumpkin pie made by the hostess (from scratch and from real pumpkin because you can't buy canned pumpkin in Australia as far as I know).

Andrew H. Chambers, a leading citizen of Kansas since 1855, and for many years a representative general agriculturist, prosperously tilling a valuable farm located on section 31, Mound Township, Miami County, is a native of Pike County, Ind. and was born January 25, 1844. His father, born March 15, 1815, was likewise a native of Pike County, and was the son of John Chambers, who passed away near Petersburgh, having spent nearly all of his life within the borders of the state. Here he shared the privations and experiences of frontier days in the then wilderness of the territory, the scene of many terrible conflicts between the reedmen and the pioneer citizens. When the father of our subject was a boy, wild game was abundant within rifle range of the old homestead, and wagons were the only vehicles of travel crossing the broad prairies. The mother, Catherine (Grubb) Chambers, was born in North Carolina in March, 1816. Her parents, emigrating from North Carolina in a very early day, made their home in Pike County, Ind., where they later died. The father, Andrew B. Chambers, married his wife in Pike County in the year 1836, and the parents once locating upon a farm gained their living from the fertile soil of Indiana until 1855, when in the month of April they journeyed by wagon to Kansas, and in Osawatomie Township, three miles southwest of the village of Osawatomie, located a Government claim.
The hard-working and energetic father died January 8, 1858, and the devoted mother passed away February 16, 1875. The nine children who gathered in their home were Margaret, John, George, Andrew Henderson, Elizabeth, Rachael, Maria, Nathaniel and Susan. Margaret and Maria are now deceased. Our subject, accompanying his parents to Kansas, remained with his mother until twenty years of age assisting in the conduct of the farm. Upon the 1st of January, 1864, answering to the appeal of the Government, Andrew H. Chambers enlisted in Company G, Sixteenth Kansas Cavalry, and served with courage until December 16, 1865, when he was mustered out at Ft. Leavenworth. Our subject spent almost a year of service near Ft. Leavenworth and took part in the Price raids, and for almost nine months was on duty in the Black Hills country. Prior to his enlistment Mr. Chambers was in the employ of the Government as teamster and cook. When he was mustered out of service, our subject returned at once to his old home and engaged industriously in the pursuit of agriculture.
In Osawatomie Township, November 24, 1867, were united in marriage Andrew H. Chambers and Miss Sarah C. Veach, who was born in Ross County, Ohio, near Chillicothe, March 29, 1848. Her father, Harrison Veach, was a native of Virginia and was born near Petersburgh in November, 1816. Her mother, Matilda (Shafer) Veach, was likewise a native of Ross County, Ohio, and was born April 1, 1829.
The grandparents of Mrs. Chambers were among the pioneer settlers of Ross County, where the grandfather entered into rest while the mother was very young and left a large family with but extremely limited means of support. Mr. and Mrs. Veach were married in Ross County June 10, 1846. They remained for about two years in their early home then journeyed by boat to Iowa, locating in Van Buren County in 1848. In June, 1857, they removed to Kansas and settled upon a Government claim in Osawatomie Township, where the father died, lamented by all who knew him, February 15, 1879.
The five children of Mr. and Mrs. Veach were: Sarah C., Elmira, Winfield S., Annette and William R. Winfield S., a bright, promising young man, was drowned in the Indian Territory while herding cattle. Immediately after his marriage our subject settled on a farm in Osawatomie Township, and having purchased one hundred and sixty acres of wild land entered with energy into its cultivation and improvement. He remained upon this homestead until January, 1886, when he sold the property and invested in his present valuable farm in Mound Township, one hundred and twenty-one acres desirably located on section 31. The farm, now highly improved with excellent buildings, and annually yielding an abundant harvest, is one of the best in the township.
Our subject and his estimable wife have been blessed by the birth of four children: Ida M. resides in Boise City, Idaho; Irma B, is the wife of Harvey Ball, of Boise City, and was married December 1, 1892. William Scott and Clarence H., the two brothers, are intelligent youths attaining to manhood. Our subject is politically a reformer and advocates progress and needed changes for the better. Mr. and Mrs. Chambers are both

Miles, Bernard James, Baron Miles (1907–1991), actor and theatre manager, was born on 27 September 1907 at 1 Poplar Terrace, New Road, Hillingdon, Uxbridge, Middlesex, the son of Edwin James Miles, market gardener, and his wife, Barbara Hooper, nee Fletcher, a Scottish cook. Brought up in a strict Baptist household, he learned from his parents the value of thrift and hard work, as well as a wealth of ancient countryside lore which he later used in a triumphant series of music-hall monologues about life on a farm.

Educated at Uxbridge county school, Miles won a scholarship to Pembroke College, Oxford, and worked briefly as a schoolmaster in Yorkshire. He abandoned this career in 1930 when he made his stage debut as the Second Messenger in a Baliol Holloway revival of Shakespeare's Richard III. In 1931 he married the actress Josephine Wilson (d. 1990), who gave him unstinting support. They had two daughters and a son. The carpentry Miles had learned from his father came in useful during several subsequent years travelling the country with repertory companies, when his responsibilities ranged from building scenery to playing small parts. Towards the end of the 1930s he began to make a name in London, in music-halls and late-night cabaret theatres, where he perfected his comic monologues in Late Joys (1939) and three Herbert Farjeon revues.

During the war Miles found film fame in Noel Coward's In Which We Serve (1942) but also frequently toured with the Old Vic as Iago and directed John Mills in Men in Shadow (1942), later following Mills in the leading role. As the war ended he was back with the Old Vic company at the New Theatre for the 1947–8 season, playing the Inquisitor in Saint Joan and Christopher Sly in The Taming of the Shrew.

From the late 1940s Miles's energies were focused on building the first Mermaid Theatre in his own garden in St John's Wood, a wooden playhouse faithfully replicating Shakespeare's Globe long before the birth of Sam Wanamaker's similar project. In its first (1951) season he played Caliban in The Tempest and, as producer and director, persuaded Kirsten Flagstad and Maggie Teyte to sing Purcell's Dido and Aeneas. The Mermaid then found a temporary home at the Royal Exchange in the City, before Miles and his equally tireless wife finally settled it in Puddle Dock, the first theatre to have been opened in the City for 300 years. They spent six years building the new Mermaid and it eventually opened in May 1959 with a triumphant Lionel Bart musical, Lock up your Daughters, based somewhat loosely on Henry Fielding's Rape upon Rape. Though he was to suffer all the architectural and financial problems only too familiar to anyone trying to build a theatre in Britain, or merely to keep one open, Miles's years at the Mermaid saw triumphant revivals of Treasure Island (in which he was always a definitive Long John Silver) and long-running musical celebrations of the songs of Noel Coward and Cole Porter. The Mermaid also gave birth to Side by Side by Sondheim in the late 1970s, and more classically was the venue for many notable Bernard Shaw and Shakespeare revivals, some of the latter in relatively modern dress. For his services to the theatre Miles was appointed CBE in 1953, knighted in 1969, and given a life peerage as Baron Miles of Blackfriars in 1979.

Miles was an old-fashioned actor, and was often out of tune also with modern directing techniques, but his ability to keep the Mermaid going on knife-edge finance, and frequently to retrieve it from the jaws of bankruptcy, was always admirable. If he sometimes cast himself in wildly unsuitable roles (Oedipus, for instance, or John Gabriel Borkman) he was nevertheless a memorable Schweyk in Schweyk in the Second World War (1963) and a formidable Falstaff in both parts of Henry IV (1970).

Like Joan Littlewood at the Theatre Royal a little further beyond the City in Stratford East, Miles worked with very slender resources and often scant critical acclaim; sadly, what should have been a triumphant rebuilding project when the Mermaid moved a few hundred yards inland in 1981 ended in bankruptcy, and in Miles's forced resignation as artistic director of the theatre he had built and still so loved. He and his wife had invested all their own money in the rebuilding project, and were forced to sell their London home to meet their debts. Following the death of his wife in 1990, Miles was moved into a nursing home with nothing more than his state pension, though funds were raised for him by an all-star Bernard Miles Celebration at the Mermaid on 3 March 1991, at which he made his last public appearance in a wheelchair, having recently fallen and broken a leg. He died at the Thistle Hill Nursing Home, Knaresborough, Yorkshire, on 14 June 1991. He was survived by his son and one daughter, his other daughter, Sally (who had joined her parents in the management of the Mermaid Theatre), having died of motor neurone disease.

this butternut squash recipe is one i've been wanting to try for a couple months. it takes a long time but turned out soooo good. the recipe comes from the blog All Things Vegetarian Herein. The blog has since been deleted, so I'll post the recipe here:

* 2.5 pound butternut squash
* 2 tablespoons unsalted butter
* salt
* 1 quart vegetable broth
* 1 tablespoon extra virgin olive oil
* 1 medium onion, finely chopped
* 3 medium garlic cloves, minced
* 1.5 cups Arborio rice
* 3/4 cup dry white wine
* 1 cup Parmigiano-Reggiano, plus more for passing at the table
* 1 tablespoon minced fresh sage leaves
* Freshly grated nutmeg (just a pinch or so)

1) Put an oven rack in the middle position and heat the oven to 450 degrees F. Poke 8 or 10 holes in your butternut squash and put it on a baking pan. Bake until tender, about 50 to 55 minutes. Remove from oven and let cool before handling. Once cool, halve the squash and scoop out the seeds and strings with a spoon and deposit them in a medium saucepan. Use same spoon to scoop out the flesh into a bowl and mash with a spoon until smooth. (You should have 1.5 to 1.75 cups smashed squash.)

2) Add the vegetable broth to the seeds and strings scrapings from the squash in the medium sauce pan. Stir in 1/2 teaspoon salt, then bring to a boil. Reduce heat to low, cover, and simmer for 20 minutes. Strain the broth and discard the squash scrapings. Measure the broth, and add enough water to make six cups. Return to sauce pan, bring to a simmer, then turn off the heat and keep covered.

3) Heat 1 tablespoon butter and 1 tablespoon olive oil in a medium saucepan over medium heat. When the foaming subsides, add the onion and cook, stirring occasionally, until softened, about 4 minutes. Add the garlic and cook until fragrant, 1 minute. Add the rice and cook for one minute, stirring constantly with a wooden spoon. Add the wine and cook, stirring frequently, for two minutes, until the wine nearly evaporates. Add 1 cup of the broth and cook, stirring frequently, until the rice absorbs the liquid. Continue adding the broth in 3/4 cup increments, stirring very frequently until the rice is creamy (not soupy) and soft but still a bit al dente, about 25 minutes. (usually, you won’t use all of the broth)

4) Remove the saucepan from the heat and stir in 1 tablespoon butter, the squash, sage, and the cheese. Stir vigorously with a wooden spoon until the butter melts, at least 1 minute. Add salt to taste and a few gratings of fresh nutmeg. Serve immediately with more freshly grated Parmigiano-Reggiano at the table.

This was my first course in Cornstore Cork's Octoberfest 2011 celebration also known as their Food & Beer Evening #FoodBeerEve which was a vegetarian substitution for the menu offering of Slow Roast West Cork Pork Belly with sauerkraut, candied walnut, and apple puree. This course was served with Innis & Gunn oak aged beer which is aged in Jack Daniels barrels (once charred for JD, the barrels can only be used once, but scotch and certain beer makers value these barrels for their rich flavors and use them to age their own creations).

When they began calling at Avonmouth in 1901-3 the banana boats were known to the casual dock workers as the 'plum' boats because, unlike other ships, they offered a couple of days of solid work with overtime and a good pay packet.

At the end of hostilities and following pleas from the colony to the Ministry, the first shipment from Jamaica (containing ten million bananas) on the Fyffes ship S.S.Tilapa docked at Avonmouth in December 1945.

As a new generation of Britons sampled the fruit, the trade was rebuilt to its pre-war level and beyond. In the 1950s, more bananas were imported from the Windward Islands (Dominica, Grenada, St.Lucia and St.Vincent). This group of islands is around 1000 miles closer to the UK than Jamaica.

When a ship loaded with bananas arrived at Avonmouth in December 1945, to be greeted by hundreds of children who had never seen a banana.

The arrival of the first bananas at Avonmouth after the war children born during the war had never seen one or how to open and eat it..

Bananas are not grown commercially in the continental United States. They are grown in Latin and South America from countries like Costa Rica, Ecuador, Colombia, Honduras, Panama and Guatemala.

Bananas are one of the few fruits that ripen best off the plant. If left on the plant, the fruit splits open and the pulp has a "cottony" texture and flavor. Even in tropical growing areas, bananas for domestic consumption are cut green and stored in moist shady places to ripen slowly.

Bananas are perennial crops that are grown and harvested year-round. The banana plant does not grow from a seed but rather from a rhizome or bulb. Each fleshy bulb will sprout new shoots year after year.

Bananas have no fat, cholesterol or sodium.

Bananas were officially introduced to the American public at the 1876 Philadelphia Centennial Exhibition. Each banana was wrapped in foil and sold for 10 cents. Before that time, bananas came to America on the decks of sailing ships as sailors took a few stems home after traveling in the Caribbean.

Each banana plant bears only one stem of fruit. To produce a new stem, only two shoots - known as the daughter and the granddaughter - are allowed to grow and be cultivated from the main plant.

In 1516, Friar Tomas sailed to the Caribbean bringing banana roots with him; and planted bananas in the rich, fertile soil of the tropics, thus beginning the banana's future in American life.

In 2001, there were more than 300 banana-related accidents in Britain, most involving people slipping on skins.

In Eastern Africa you can buy banana beer. This beer is brewed from bananas.

In some lands bananas were considered the principal food. Early travelers and settlers would carry the roots of the plant as they migrated to the Middle East and Africa. From there Portuguese traders carried banana roots to the Canary Islands, where bananas are still grown commercially.

In South East Asia, the banana leaf is used to wrap food (in the place of plastic bags and cling wraps), providing a unique flavor and aroma to nasi lemak and the Indian banana leaf rice.

India is by far the largest world producer of bananas, growing 16.5 million tonnes in 2002, followed by Brazil which produced 6.5 million tonnes of bananas in 2002. To the Indians, the flower from the banana tree is sacred. During religious and important ceremonies such as weddings, banana flowers are tied around the head, for they believe this will bring good luck.

Over 96% of American households purchase bananas at least once each month.

Some horticulturists suspect that the banana was the earth's first fruit. Banana plants have been in cultivation since the time of recorded history. One of the first records of bananas dates back to Alexander the Great's conquest of India where he first discovered bananas in 327 B.C.

The average American consumes over 28 pounds of bananas each year.

The banana market is controlled by five large corporations - Chiquita (25%), Dole (25%), Del Monte (15%), Noboa (11%) and Fyffes (8%). Most bananas are grown on huge plantations, controlled by these corporate giants. The remaining banana production for export comes from small banana producers.

Maiolica e un termine usato anticamente per definire quei prodotti ceramici provenienti dall'isola di Maiorca, che originariamente erano ricoperte da una superficie di smalto stannifero (Diossido di stagno, SnO2). Nello studio della ceramica antica il termine e spesso abbinato alla parola "arcaica" "(maiolica arcaica)" semplicemente per dire che si tratta di una tipologia della ceramica medievale.

Spesso erroneamente, anche sui dizionari, viene considerata maiolica tutta la ceramica di terracotta smaltata o un oggetto di tale materiale, ma in realta ci sono tre passaggi fondamentali che identificano questo metodo decorativo: infatti l'oggetto biscotto (cioe gia cotto una prima volta) viene smaltato, "decorato soprasmalto" e spruzzato di un sottile strato di cristallina-vetrina trasparente (fase caratterizzante). Senza quest'ultima fase si avra una mezza maiolica o detto piu semplicemente una decorazione soprasmalto.

I made the mistake of watching the Food Network right after lunch. There was a show on where different chefs shared holiday cookie recipes. Try watching that and not going into the kitchen to bake up a batch. These are basic oatmeal with chunky chocolate chips and walnuts.

"I was going to make a sandwich." He announced. "Want one?"

Rena tried to think of the last time she'd eaten and couldn't come up with a time. "Sounds good; just, no turkey. I don't like turkey, or fish. Everyone thinks I should like fish but I hate it. It smells funny."

Jansen grinned, "I was the same way when I was a kid. Why would you want to eat something that lived its entire life breathing its own piss?" He limped into the kitchen, bringing down bread from a cupboard, before rooting through the refrigerator. "How's ham strike you?" He lifted the package, and added, "Or, wait. I think this is salami."

Rena smiled at the mention of ham, but salamil got him a death look. "Ew. That smells like feet."

He raised the salami to his nose experimentally, "Come on now, a little mustard, some horseradish" He sniffed, and an eye bugged out as the other clenched. Tossing it over his shoulder without another word, he took the ham, and a block of cheddar. "Cheese good? Mayo good? Mustard? Lettuce?" He paused a moment, and took out a stick of butter, as well.

She hmmed sofly. "Cheese and mayo... no veggies." she didn't like veggies either. "And will you cut the crust off? Please?" she gave him the cutest damned smile then.

Renard quirked a brow, "Only if you finish your homework and go to bed on time tonight." He winked, and set about making two sandwiches, chopping up a head of romaine lettuce to put in his sandwich. Reaching up for a skillet, he sliced two pats of butter, and put them to melt. He assembled the the sandwiches, slathering mustard and mayo on one, only mustard on the other, and piling both high with ham and cheese before adding lettuce to his. He put both now to grill in the pan, as the kitchen filled with the smell of melted butter. He chuckled, suddenly.

Rena leaned on the table, her chin in her hands as she watched him move about the kitchen. "You know, it's odd. All the men in my life can cook...but I can't. I wasn't allowed in the kitchen when I was a kid. They said I'd just get fur in the food..."

Jan quirked a brow, grinning, "This isn't cooking. This is making a sandwich. I can't cook." He flipped the sandwiches over in the pan with a fork and his finger quickly, nodding satisfactorily at the level of browning, and glanced back to her. "And I only learned this becaues I was tired of being hungry all the damn time." He took off Rena's sandwich, and carefully disposed off the crusts, making the sandwich into a neat square, he looked over his shoulder as he turned off the heat on the stove. "Triangles or rectangles?" He teased, holding the bread knife over the sandwich.

She grinned at him and announced, as if she were choosing very carefully, "I think, ummm... triangles."

We had guests came over a few days ago. My wife cooked dinner for the two guests. It was a nimono, vegetable boiled in seasoned broth and salmon rice topped with okra.

My wife is very good at entertaining guests with her cooking. She started with a simple appetizer -- sliced onion soaked in water for a while before serve, then wrapped it up with fresh ham. Each poked with a toothpick and squeezed a little lemon juice on it, the dish came in handy.

When we had nimono, I just realized that she hasn't been cooking Japanese for quite some time. Nimono made me felt nostalgic, thought of home, and with its warmth, I felt blessed and comfortable. Hot soup is always nice to have on cold weathers.

I would like to learn how to make this one day.

Peanut Butter Cheesecake
CRUST:
1 cup graham cracker crumbs
1/2 cup chocolate cookie crumbs (approx 5 Oreos)
1/3 cup butter, melted
Combine graham cracker crumbs and cookie crumbs. Stir in butter until well combined. Press onto the bottom and 1 inch up the side of a greased 9" springform pan. Bake at 350° F for 5 minutes.

FILLING:
5 packages (8 oz each) Philadelphia cream cheese
1 1/2 cups granulated sugar
3/4 cup creamy peanut butter
2 tsp vanilla extract
3 eggs
1 cup crumbled Reese Cups candy (optional)

Mix cream cheese and sugar until smooth. Add peanut butter and vanilla, mix well. Add eggs one at a time, beating on low speed just until combined. Stir in candy pieces. Pour into pan. Bake at 350° F for 55 to 60 minutes. Cool for 15 minutes before adding topping.

TOPPING:
1 cup sour cream
3 Tbsp creamy peanut butter
1/2 cup sugar
1/2 finely chopped peanuts (optional)

In a mixing bowl, combine sour cream, peanut butter and sugar. Spread over filling, sprinkle with nuts. Return to oven for 5 minutes. Cool in oven with door open. Refrigerate 12 hours or overnight before serving.

Sugarless Pumpkin Pie Filling Recipe




Sugarless Pumpkin Pie Filling Recipe





Sugarless Pumpkin Pie Filling recipe:
1 c. thawed frozen apple juice concentrate (sugarless), 1 3/4 cups pumpkin(not pumpkin pie filling), 3 tbsp. butter or margarine, melted and cooled slightly; 3 eggs, lightly beaten, 1/2 c. evaporated milk, 1 tsp. cinnamon, 1/2 tsp. ginger, 1/4 tsp. nutmeg, 1/8 tsp. ground cloves.
Pour apple juice concentrate into a medium size saucepan. Bring to boil. Reduce heat and simmer for 7 minutes. Cool.
Combine pumpkin, concentrate, butter or margarine, eggs, milk, and spices. Whisk mixture until completely smooth. Pour into pastry crust.
Place pie in preheated 350 degree oven and bake 40 minutes or until pie is set in center. Cool pie and refrigerate. Bring out of refrigerator one hour before serving.

Looking back with satisfaction and thinking that's where we've just been... we'd just walked the skyline from the left hand side up Green Gable, dropped down into Windy Gap, then up and over Great Gable before coming back on Moses Trod.

Rob and Stew stopped to take photo's of Great Gable, I decided that I wanted them in shot.. but not a posed shot. It back fired a little because when I took my shot they both appear to be viewing their photos on their cameras and not admiring the fabulous view.
