Chicken Tortilla Soup
"I Made This.........56"
A very drunk customer from Dallas, Texas, told me today the following....
"Mexicans don't put corn in their chicken tortilla soup".
"It is creamy, not brothy. It is not authentic".
Brilliant even while drunk, and this was after he had ordered three bowls of it. Hmmm....
This is MY version. It bears little resemblance to "traditional" chicken tortilla soup, although I sometimes wonder if anyone in Mexico actually makes chicken tortilla soup. You know how Americans love to bastardize any other countries cuisine. Being the All-American lad I am, I turned this one on it's head and made it something else. I have had several people tell me it is the best soup they have ever eaten...period. And I did win a soup contest with it, so here is the recipe. It is the version I make at work. For home use, you will want to cut it down to size. This makes about two gallons of soup.
8 chicken breast halves, cooked, shredded and roughly chopped.
2 cups canned diced green chilis
2 cups diced red pimientos, drained
4 tablespoons minced garlic
4 cups chicken stock
4 quarts heavy whipping cream
3 cups diced red onion
3 cups black beans
1 cup chili powder
1/2 teaspoon cayenne pepper
1/2 teaspoon white pepper
1 tablespoon oregano
1 tablespoon cumin
4 cups corn, drained
3 tablespoons chicken base.
Mix it all together, cook for about 45 minutes. In a small bowl, mix some cornstarch and cold water. SLOWLY add some of the cornstarch slurry to the soup, whisking constantly. The heavy whipping cream has a high fat content and so it does not need a lot of thickener to go from creamy to wallpaper paste. When it is the right consistency, remove from the heat.
Cut tortillas in strips, fry in hot oil, and use as a topping.
I had not made this soup in almost a year. When a few of the servers saw it on the marker board as the soup of the day, they informed me that customer have been asking for it for a long time, and several said it was the best soup they had ever had. Huh!!!??? And this is the first I am hearing this?? Oh, how I love the disconnect between the front of the house, and the back of the house.

Anxiety and
Stomach aches, cause longing for
Some good home cooking.
Sadly, this was not from today. But I found myself thinking about this meal from a few weeks ago as I battled hunger, the lightest nausea, and general physical discomfort all day. Maybe it's the tetanus shot (which ached all through the night and continues to this very moment), though it more likely an extension of my previous ailments.
The doctor prescribed Prilosec, to see if perhaps there some kind of acid reflux thing that's causing my anxiety... but since getting the filled this afternoon, I've done some reading and am suddenly worried about side-effects. Do you know how many people are having a really rough time with acid-reflux on the internet? A LOT. But maybe I should just try it for a few days and see what happens... though there are some posts where people claimed that even after they stopped taking it, they were still having side-effects... then again, some of those people sounded a little crazy to begin with.
God I feel so neurotic. And not in a good way.
Speaking of neurotic in a good way, just learned that Woody Allen is a Sagittarius. Well that was unexpected.

G0FAH Dipole SWR Frequency Plot
This is the standing wave ratio (SWR) plot for my G0FAH style antenna (from the ARRL Classic Wire Antennas volume 2 article '5 Bands No Tuner'). I measured it using an MFJ-259B Antenna Analyzer I borrowed from a friend, which saved a lot of time in sampling all the data. Yes, I spun a knob and captured each datum plotted by hand.
For the less technical, here's what's happening. A transmitter shoves power (measured in Watts) into a transmission line to the antenna. This is called 'forward power'. Some power eventually gets to the antenna and radiates into space (this is 'radiated power'). Some of the power bounces back at the transmitter ('reverse power'). Finally some of it heats up the transmission line ('heat'). Power bouncing back is not only harmful to the transmitter (high voltages, mostly), it also results in more heating in the transmission line as the waves reflect back and forth (that's bad). An ideal SWR is 1:1, and anything over 2:1 is increasingly bad news (the vertical axis on the plot shows the first SWR number, basically the higher the more reverse power, so 'low points' are good!).
How to reduce SWR? SWR depends in part on antenna and transmission line materials (copper wire, plastic window material, coaxial cable, insulators). More importantly, adjusting antenna and transmission line geometry (length, layout) affects the SWR. You can tweak the lengths until the low SWR spots match up with the frequencies that you care about.
Finally, an antenna tuner is a box with adjustable coils and capacitors inline and shunted to ground, and this helps match an antenna with too much capacitance or inductance so it doesn't present high voltages and currents to the transmitter itself... the line heats up still but the transmitter doesn't get cooked.

My favourite of the cookies I've ever made. They're very light and kind of....cakey?
OVEN: 375F
Ingredients
2 1/2 CUPS + 2 TBSP all-purpose flour
1 TSP baking powder
1/2 TSP baking soda
1 TSP salt
2 eggs, lightly beaten
3/4 CUP sugar
1/3 CUP vegetable oil
1/2 CUP low-fat lemon yogurt
1/2 TSP finely grated lemon zest
1 TSP fresh lemon juice
confectioner's sugar
1. In a bowl, mix flour, baking powder, baking soda, and salt
2. In another (larger) bowl, beat eggs, sugar, oil, yogurt, zest and juice till well blended
3. Add flour mixture in batches and mix well.
4. Drop in teaspoonfuls about 2 inches apart onto a lightly greased cookie sheet.
5. Bake for 10-12 minutes (I used around 11). Cool for 2 mintues on the sheet before moving to racks.
6. Sprinkle with confectioner's sugar (because otherwise they just taste like lemon and not much else.)
NOTE: I've halved the amount of sugar called for in the original recipe, so if you want a sweeter cookie, add more sugar. :D
Sugar drop cookies
1./ Preheat oven 375F.
2./ Sift together:
- 2.5 cup flour
- 1.5 teaspoon baking powder
- 0.75 teaspoon salt
- 0.25 teaspoon ground cinnamon
3./ Combine
- 1 cup sugar
- 3/4 cup oil
- 2 large eggs (add one at the time)
- 1 teaspoon vanilla
4./ Add the flour mixture and beat well. (It deserves it!)
5./ Shape it into 1/2 balls and dip the balls in sugar.
6./ Grease 2 cookie sheets with butter.
7./ Place the balls about 1" apart and sprinkle with sugar.
8./ Bake it 10-12 minutes.

122/365 - On the Move, Again!
Another empty apartment, another mess of half unpacked luggage, and life's essential items stacked on the floor.
We've moved into our new flat here in Vancouver. It's hilarious, as we really have absolutely nothing except what we brought in our luggages.
Our friends have saved us once already, by having us as their guests for close to a month. And they've saved us yet again, this time providing a few basics, like cooking items, air mattresses, folding chairs, and a table.
Have to see the fun in starting over again with basically nothing. If we didn't look at the bright side, we'd probably have gone mad by now!

Mount Aspiring

Mount Aspiring is New Zealand's highest mountain outside the Aoraki/Mount Cook region. Set within Otago's Mount Aspiring National Park, it has a height of 3,033 metres (9,950 feet). Maori named it Tititea, which translates as Glistening Peak. It is also often called 'the Matterhorn of the South,' for its pyramidal peak when seen from the Dart River.
Mt. Aspiring sits slightly to the west of the main divide, 30 kilometres west of Lake Wanaka. It lies at the junction of three major glacial systems — the Bonar Glacier, which drains into the Waipara River, and the Volta and Therma Glaciers, which both drain into the Waitoto River. The Waipara is a tributary of the Arawhata River, and both the Arawhata and Waitoto Rivers flow out to the west coast in between Haast and Jackson Bay.
I was enroute from Wanaka to Milford Sound courtesy of Aspiring Air, the local air charter company who operate several flights daily across the Southern Alps carrying tourist and supplies to Milford Sound. The flight from Wanaka takes just under an hour and passes over some spectacular scenery, culminating in the 'final approach' down Milford Sound itself. We were flying at approx 9,000ft, but Aspiring was almost another 1,000ft higher. Seen here approaching from the East the flight took us slightly to the south of the main peak. See the next shot.
Lake Matheson - the mirror lake
Taken from the view of views platform on the walk around Lake Matheson. Mount Cook and Mount Tasman can be seen in the distance. The wind started to get a bit strong and the reflection of the mirror lake was disturbed. We got up a bit late and regretted missing it as a perfect mirror. We will just have to go back again. Mount Cook is 3755m high and is New Zealands tallest peak, it is also known by is maori name of Aoraki, it is also the tallest peak in Australasia. Mt Cook was named after James Cook by Captain Stokes of the survey ship HMS Acheron. Mount Tasman is 3498m high and is located in Mount Cook national park. Of the 27 mountains in NZ, 22 are in this park.
I have kept the processing to a minimium, as the scenery can more than speak for itself.

In 1997, a re-survey using satellite technology established its summit (known as Low’s Peak) height at 4,095 metres (13,435 ft) above sea level. The mountain is the fourth tallest in Southeast Asia.
The mountain and its surroundings feature a huge variety of flora, and is one of the world’s most important biological sites.
The main peak of the mountain (Low's Peak) can be relatively easily climbed by a person with a good physical condition, and requires no mountaineering equipment. Other peaks along the massif, however, require rock climbing skills.
The climb starts from Mount Kinabalu Park Headquarters, only a couple of hours drive but already more than 1500m above Kota Kinabalu on the coast. Here is ample accomodation from dormitories to comfortable two person cottages. The climb is usually done in two days from here. The use of an authorised guide is compulsory while a porter is an optional luxury.
Many of the trees and flowers are unique or extremely rare but to the uninitiated novice in matters botanical there is no doubt that the pitcher plants steal the show. Even the most casual observer cannot fail to notice these impressive insect guzzling monsters with up to a pint of liquid waiting to lure and drown the passing fly or mosquito.

Reindeer Peanut Butter Cookies
I promised you some food, so here are Reindeer Peanut butter cookies. I hope you're not allergic to peanuts! Okay, the antlers are either a bit to small, or the heads are a bit large, but this is the first batch. The elves and I will work it out eventually.
Reindeer sugar cookie disaster
The necks were way too thin on the reindeer cookie cutters and the heads kept falling off left and right. So we used frosting to match the situation. (An old photo, but a nice memory)

Day 327/365 - Booger

2008 - Day 5
My father is officially a little insane.
Today we got up in the wee small hours of the morning (actually around 8), ate a wonderful breakfast of Honey Baked ham and a Bagle and then headed out the door towards Lowes Moter Speedway.
I slept most of the way, even though the Land Cruiser is one of the most uncomfortable cars that I've slept in. Except for the front seat of course but I was kicked out of that as soon as we started the trip. But I managed as best as I could to stay comfortable and we arrived at the race track about an hour later.
My Dad was going to partisipate in the Jeff Gordon Racing School where he would get to drive a NASCAR stock car. When we got there we found out that inside the track it was something like a wind tunnel, the wind was blowing 5-10 mph consistantly and it was absolutly freezing. Dad was really lucky though, as soon as he got there they gave him a jumpsuit that kept him really warm, the common folk though were stuck cowering in any protection from the wind that we could find.
Anyway, They loaded my dad and a the 26 others into 4 white vans and took them away to some teaching center on the far side of the track while we, meaning my sister, my mother and I, walked back to the car and had sandwitches, waiting for them to get back. It took about 20 minutes but finally they unloaded off of the buses, and got into line to drive the 4 cars that were lined up on pit road.
While the adults were driving though, they were taking others who just wanted to ride along with a professional driver in the Number 8 Dale Earnheart Jr. Car. That guy really knew what he was doing and quickly got up to speeds of over 180 miles an hour, About 40 miles an hour faster than those that drove themseleves.
It took about an hour for my dad's name to be called to drive, which for me didn't seem long at all because I was trying to fine tune the exposure for the pictures that I was planning on taking, but for others like my sister it was torture because she was cold, bored and dare I say it, incredibly whiney. He put on the neck brace and helmet, climbed slowly into the car, got strapped in and folowing the pace car, gunned the engine and was off.
His first two laps were just practice to try and get the hang of the car but after that they really started moving, on his first 8 laps his top speed was 141.6mph. After that he came into the pits, got a little bit of instruction from one of the pros and headed out for another 9 laps. He really started to get the hang of it all on this series of laps and reached a top speed of almost 150 miles an hour.
After that he was done. He pulled himself out of the car, took off the jumpsuit, got his pictures and threw himself into the car. He had fun though.
Whats really cool though is that he started talking about when I'm 18, we'd go out to Las Vegas and do the Mario Andretti Racing school where you actually get to drive an Indy Car.
That I think, would be incredibly cool, although before I go I would have to learn how to drive stick. I don't suppose it would be that hard though.
Anyway, after that we started home, hearing dad talk about it for the entire trip, then we got back to the Bartels, where he had to repeat everything that he'd told us. That took the better part of 3 hours. But then we went down to the bar, watched football and waited for some of Linda's famous ribs.
And I'll have to admit that they really were some of the best ribs I'd ever had. They pretty much fell right off of the bone. But that may have had something to do with the fact that she's had them in the slow cooker for something like 6 hours.
We ate dinner and watched football, talked some more and then after realizing that it was after 12, we all went to bed.
Once Upstairs I talked to Noah a bit on AIM, Did my best to work out which picture I wanted to be my picture of the day, which took a while because none of them were very good. Now I'm writing this and I'm going to go to bed soon. I've gotta get up really early tomorrow.

Relay For Life

A few months ago, I was asked to be the volunteer photographer for an event that was put on by the Canadian Cancer Society. After losing my Dad to cancer when I was only 21 years old, I just had to say "Yes!!"
When I realized how big this event was, I turned to some of my friends from the Flickr community for help. By the time the event happened, we were a team of 6 photographers, ready to take on the challenge.
KMountMan, MartyPinker, *lena, Jillsjunk and Lisa- S were awesome and I couldn't have done it without them. (Also a special thanks to George K. for coming out with his laptop to upload all of our images)
*The Relay for Life was a 12 hour marathon, walking around the track in support of cancer research and remembering those who lost their battle.
It was an incredibly emotional night...one I won't ever forget.
*The event had more than 1300 participants
*350 volunteers help put this event on
*155 SURVIVORS also participated
* this event helped raise.....OVER $270,000 for the Canadian Cancer Society!!!

Relay For Life ....Luminaria Ceremony...
Here on Hilton Head the loop was about a half mile through Honey Horn Plantation each Luminary represented someone who is or had battled cancer the entire loop was lined . During Relay For Life events, teams of people gather at schools, fairgrounds, or parks and take turns walking or running laps. The events are held overnight to represent the fact that cancer never sleeps. Through the survivors' lap and the luminaria ceremony, we honor the people who have faced cancer first hand, and we remember those who have been lost to this disease.
But, Relay isn't about taking laps -- it's about coming together in the fight against cancer. It’s a time to remember those lost to this disease and celebrate those who have survived. It’s a place where people connect with others, share the cancer experience, and find comfort and solace. And it's an opportunity to build hope for a future where cancer no longer threatens the lives of the people we love.

I went to a Chinese cookery demonstration last night. These were battered deep fried walnuts, something I'd never thought of before, but they were absolutely delicious in a sweet and sour sauce. My #105 entry for 111 Pictures in 2011 - Hot.
