B grew up with Ah-So sauce, but I'd never heard of it. Turns out it's a miso-based pink asian-ish bbq sauce. He seared some pork ribs and then threw them in the slow cooker for a few hours with a jar or two of the sauce on top. Finished under the broiler to crisp things up, they were really tasty! Next time maybe only one jar of sauce in the slow cooker and a cup or so of chicken broth and they'll be perfect. Well, more perfect.

PCH Poultry & Market provides the ducks and will skin them for me, saving a lot of time and labor. I've separated the meaty parts for a confit. I'll roast the remaining carcasses, from head to feet, and use most of them for soup stock. (Dogs will get slivers of giblets with their next couple of meals.) I'm rendering the skin for its fat, which I'll put the meat up in. (Dogs or even a salad may get crumbled skin remaining from this process.) I'll take the resulting confit and use it in cassoulet.

Never cooked duck breast before (I have cooked a whole duck). I used a cumin and orange zest rub, but unfortunately used too much salt. So, the skin was a little on the salty side, but the sliced potatoes we grilled in the duck fat didn't need any spicing at all.

I've decided to go totally hypoallergenic and anti-candida diet starting tomorrow (Monday; I always like to start new things on Mondays) - it's the only thing that's ever really helped my skin (eczema). Well, that and being in Scotland, but I don't really think that's a viable option! I don't generally like milk chocolate or Cadbury's in general, but I got this Dairy Milk Caramel bar in the Edinburgh airport. It's like a Caramilk, but just a little different (the caramel is less liquidy?).

What won't I be able to eat is a long list: gluten, dairy, soy, sugar, caffeine, nightshades (tomato, potato, pepper, eggplant), most fruit, fermented/mold things (including miso, vinegar, yeast, alcohol, mushrooms), sunflower oil, corn products (including corn-based sugars).

The list of things I *can* eat: non-glutenous grains; green and leafy veggies; root veggies except potatoes and turnips; beans and legumes; sprouts; sea vegetables; nuts; seeds (except sunflower); avocados (I ate a lot of these the last time); salt; alliums (onion, garlic, etc); olive oil.

I've done this diet before, but I think I'm more prepared this time, because I've actually grown to like brown rice pasta, plus I have lots more ideas of things to make! There's lots of recipes out there in the gluten-free, vegetarian blogosphere, too. There's always my standbys from the last time I did this diet, rice pasta with oil and garlic and veggies, and lentil and rice soup.

I am making a few exceptions this time, for my sanity (and I haven't reacted to them in the past): unsweetened, probiotic yogourt, unaged goat or sheep cheese once in a while (maybe once a week), oats (morning porridge, here I come), lemon juice, eggs (I didn't react when I introduced them the last time), and I might do 1 free meal a week (like rice pasta with tomatoes! homegrown only, please)

Along with the chocolate, pasta, cheese and potatoes today, I'm currently having a g&t (alcohol and sugar!). Mmmmm.

Stuart was our teacher today, one of the senior chef tutors and a source of great advice. Like "Use a new pan every time you cook" - better start saving up then ... no, that's just an insider joke, he really had got bags of hot tips. But the one I'll take away is "Always cook a duck breast in a cold pan".

I love the way every single person in the room is hanging on every word - this was during the duck / pak choi, and the veg is visibly chucking up steam as it cooks - the duck is already in the oven at this point.

I managed to find a bit of time to hit the kitchen and cook-up a meal for the fam....buttered fresh cuttle-fish with spaghetti in home-made tomato & mushroom sauce.


RECEPIE:

First slightly boil the cuttlefish...then gently part the fillet and do the zig zag cut on it as shown in my pics. Add pepper, salt, tamarind, curry powder, a bit of oil, chilli powder and then a bit of oyster sauce. Marinate for about 2hrs.

Secondly heat up a pan well and then throw in a bit of butter (not Astra, but butter)...before it all melts add a bit of soya sauce then the cuttle fish & pan toss till it turns golden...then add in the herbs, garlic and capsicums. Cook till you feel it's the way you like it.
Thats's the cuttle fish.

To make the spaghetti, boil it in water for about 20mins add sailt and bit of fish sauce to it to add a bit of taste.

To make the sauce, you will need 2 cups of water, with a cube of vege soup, 2 teaspoons of corn flour, 3 tomatoes, 2 tablespoons of tomato sauce, 3 cloves garlic, one big onion, herbs, chili powder and a bit of fish sauce...put the tomatoes into hot water and peel them...throw in the whole tomato in afterwards and squash them inside the vessel or u will loose all the nice juices if u cut it on a board...then add shredded mushrooms and cook till it's nice and thick. This'll take some time.

Then butter-up an oven tray, put a layer of cuttlefish, then some sauce, then the spaghetti, then some sauce, then the cheese. Follow this till the tray is nice and full. Bake for about 10-15mins...bake till its' golden on top...but don't overcook it. Serve with baked beans or just as it is. Before eating make sure to mix evrything well so that the top to bottom is nice and mixed.
Let me know how it goes....call me if u need tips. The mushroom will remove the nasty fish scent and taste since mushrooms don't have taste its neutral.

Thanks to my Auntie Om who gave me the idea to cut up an old, hard squash that was sitting in my kitchen for like 2 months - and give it to the squirrels outside! I'd been looking at that damn squash, not wanting to eat it and feeling annoyed with myself for having picked it past it's prime (I think you're supposed to pick this type early or it gets all hard and bumpy). So, there it sat - this hard, bumpy, unappetizing squash that I felt too guilty to throw away, and too unmotivated to eat. I could probably knock an intruder unconscious with it. So I just kept it on my kitchen counter.

Then one day my Aunty Om told me she put some pieces of Pumpkin out for the squirrels in her back yard and they basically went nuts, attacking anything else in the yard that was orange, in the hopes it could be more of that precious pumpkin.

So I cut up the squash, plus this other super hard, big "spaghetti squash" that I wasn't sure how to cook, either. I did try a little of it and it was pretty good but it was a lot more fun to put it on the fence and watch the squirrels make it disappear. It is so damn cold outside these days, I got a lot of joy out of feeding the little critters. I did save some of the seeds, though, and plan on doing this again next year.

This is fairly inexpensive to do and makes a little lean ground beef go a long way. It's bulked up with a lot of vegetables and flavored with Thai green curry paste. It's delicious over some steamed jasmine rice, but any kind of rice is fine.

1 lb lean ground beef
Small head broccoli cut into small pieces
1 medium carrot peeled and sliced thin
1/2 red bell pepper sliced
1/2 medium onion sliced
Several torn leaves of perilla (a way of using up the last of the season)
Few cilantro leaves
Few cloves garlic
Several grates of ginger
2 tbsp green curry paste
1 small can bamboo shoots
Several mushrooms
Few dashes nam pla
Few dashes soy sauce
Few dashes mirin
Few shakes of curry powder, cumin, and turmeric
Drizzle of sesame oil

I marinated the meat about 15 minutes in advance by mixing it with some of the curry paste, grated ginger, minced garlic, mirin (optional, but I like the moisture and slight sweetness it gives), curry powder, cumin, and turmeric. This isn't necessary. Just brown it in oil, and add the onions, more garlic, carrots, and rest of the curry paste. Once the onions and carrots have softened, I added the broccoli and bell peppers and allowed the vegetables to release some water to get a sauce. Stir in some nam pla, soy sauce, and the rest of the green curry paste. If you don't have nam pla, just add more soy sauce - it's still delicious.

Finally, add in the mushrooms and let them release their water and cook down a little. Here I used oyster mushrooms but any kind is fine. Drain the can of bamboo shoots and add them as well as the roughly torn perilla. Check the bottom of the pan to see how moist everything is. It should be quite moist, with a little sauce but not runny. Shut off the heat and sprinkle some cilantro over everything. A nice touch is to sprinkle some lime juice, as well as some chopped peanuts but as I had neither I didn't.

Servings: 8

2 medium carrots, sliced thin
1 small onion, chopped
1 Tbsp. olive oil
1 oz. uncooked bacon or pancetta, finely chopped (tryfreezing it first)
2 cloves garlic, minced
1 beef bouillon cube
1 chicken bouillon cube
8 cups water
8 oz. dry lentils
5 oz. raw spinach (1/2 bag)
2 Tbsp. molasses
1 Tbsp. ground curry powder (to taste)
1 Tbsp. ground coriander (to taste)
1 tsp. black pepper
1 tsp. salt

Warm oil over medium heat in a large soup pot. Add onion, carrot and salt. Cover and cook for 1 minute or so, stirring occasionally, until the onion is soft and translucent. Add the chopped pancetta/bacon and garlic. Cover and cook for 30 seconds to 1 minute, until fragrant. Add coriander, curry and pepper, stir to coat veggies.
To deglaze the pan, add water and scrape bottom with wooden spoon. Add bouillon cubes, lentils and molasses. Raise heat and cover until boiling. Lower heat and simmer for 30 minutes.
Add spinach, cover and cook for 20 minutes
Meanwhile, cook elbow macaroni in a separate pot.
Serve 1/2 cup elbow macaroni with 1 cup of lentil soup. Dust with parmesan cheese.

Donkey meat doesn’t taste like chicken, it’s actually much better. We started with half a kilo of meat and before the noodle is ready, we have consumed 1 kilogram.

I began to get impatient as we have waited 20 minutes and the noodle was still not ready. How complicated can that be? So I poked my head into the kitchen and found that the chef was working on the dough.

It was at that time I realized I had been indulged by the modern way of living where noodle comes pre-cut and packaged. When we ordered noodle in this little restaurant in Dunhuang (??, province of Gansu), a major stop along the ancient Silkroad, the chef didn’t pull out a package of ready-to-cook noodle. He began with flour.

I stood there to watch the second and last part of the noodle-making trilogy: stretching the dough into thin strings of noodle, and dropping them into boiling broth.

Examining the final product, I was amazed to find that each string of noodle has the same width as if they are cut by machine or metal. Noodle making is indeed an art, and I got to appreciate it more by watching how it is done, by hand.

The whole meal cost 31 Chinese Yuan (~ USD 3.88) which includes 1 kilogram of donkey meat, 2 plates of noodle, 2 bottles of local beer that taste more like water than beer.

1. Cook noodles (Udong noodles from Chinese grocery)
2. Stir-fry pea pods, garlic, ginger, and hot pepper (from garden) in a little sesame oil
3. Add cilantro and squirt of lime juice, and let cook for just a minute, then
4. Add broth (this is store-bought, canned... all out of homemade)
5. Heat until broth is hot, then add noodles to bowl and spoon soup over noodles.

SO GOOD it almost makes me want to cry. That combo of cilantro, lime and chicken broth is amazing. Ok, I should give a little credit also to the ginger and garlic. The hot pepper didn't add much to the broth but certainly made itself known when I bit into it!

Kamaboko (??, Kamaboko?) is a variety of Japanese processed seafood products, called surimi, in which various white fish are pureed, formed into distinctive loaves, and then steamed until fully cooked and firm in texture. The steamed loaves are then sliced and served unheated (or chilled) with various dipping sauces or sliced and included in various hot soups, one-dish meals, or noodle dishes. Kamaboko is typically sold in semicylindrical, Quonset hut-shaped loaves. Some kamaboko are made so that a slice looks like an object. Quelle feast! Some eggs and hot pot condiments side our protein rich meal. This was pre-cooking. I'll confess, even with BY and my "healthy" appetites, the amount remaining on the table didn't look too different by the end of the meal.

From fresh seafood like halibut, salmon, grouper head, mussels, oysters, shrimp, lobsters, scallops, and crab, to red and white meats including drunken chicken wings, pork shoulder, rib eye, lamb and veal tongue. Then there were classics including 1000 year old eggs, egg tofu, bean curd, tripe, squid and fried fish balls, shrimp and pork dumplings, bamboo fungus (mmm) and new style mushroom stuffed fish tofu balls and purple yam.

For those wanting a little fiber, there was also king oyster mushrooms, enoki mushrooms, bok choy and A-choy.

Made my favorite cookie recipe and they came out flat. I thought it was a total failure but they were really tasty. and the flatness has its uses. I am thinking ice cream sammies. Next time I will make the same mistake on purpose. I used 1/2 white choc chips because I didn't have enough regular chips. I guess the extra fat made them melt flat. Also, I think I softened the butter too much so the dough was already melty.

Deep Dark FLAT Chocolate Fudge Cookies
makes about 3 dozen cookies

1 1/2 cups all purpose flour
1/2 cup unsweetened cocoa
1 teaspoon baking soda
1 teaspoon salt
6 ounces chocolate chips
6 ounces white chocolate chips
1 1/2 cups tightly packed light brown sugar
12 tablespoons unsalted butter, melted
3 eggs
1 teaspoon pure vanilla extract
coarse sugar for sprinkling on top

Preheat 325
mix flour, cocoa, baking soda, salt, set aside
melt chocolate in double boiler
in separate mixing bowl add brown sugar and butter, then eggs and vanilla.
add melted chocolate, then flour mix

Drop cookie dough on to trays. Each cookie drop should be 2 level tablespoons full. I suggest hollow air trays lined with parchment paper for best results. Sprinkle coarse sugar on top of each dough drop.
Bake 17 minutes at 325 degrees.

Variation:
Use all chocolate chips (no white chips) and don't melt the butter for more cakey fluffy cookies. Add 3 cups chocolate chips for absolutely deep dark

2 1/4 cups all-purpose flour
1/2 cup baking cocoa
1 teaspoon baking soda
1/2 teaspoon salt

1 cup butter, softened
1 cup packed brown sugar
3/4 cup granulated sugar
1 teaspoon vanilla extract
2 eggs
1 cup mint flavored chocolate chips
1/2 cup semi-sweet chocolate chips

Combine flour, cocoa, baking soda and salt in a small bowl. Beat butter, brown sugar, granulated sugar and vanilla with mixer until creamy. Beat in eggs about 2 minutes. Gradually mix in flour mixture. Stir in chips. Drop by rounded tablespoon onto ungreased baking sheet. Bake in preheated 375'F oven 8 to 10 minutes (no longer because you want them soft and chewy). Let stand for 2 minutes, remove to wire rack to cool completely. Makes about 4 dozen cookies.

I don't think I've ever successfully made candy of any type, but I gave this recipe the ol' college try. As usual, I, uh, had to improvise a bit. It wasn't until I was already knee deep into the process that I realized that:

1) I didn't have enough brown sugar;
2) I didn't have any parchment paper or waxed paper; and,
3) i didn't have enough crackers.

Whoops!

1) I threw about 1/4 cup of natural sugar (don't know what kind, I threw the label away a long time ago, but it smells like caramel) in to make up the difference in brown sugar.

2) I decided to just use aluminum foil, but when I pulled it out, realized that I didn't have enough to cover the cookie sheet. After a lengthy search of every cabinet and drawer in the kitchen, I scrounged up a clean piece of foil remnant to use.

3) I switched to a smaller cookie sheet and was just able to cover the bottom.

Appropriate for the book audience -- teens and young adults in the high school/college/first flat age.

Not bad, but needs a little work for my tastes. I like mine a lot spicier and probably with some coconut milk in there somewhere.
