My Kitchen Area
I love this kitchen. It's much better than my last kitchen. Everything is new and matches the whole apartment. The appliances are all new and the right size. Most manhattan apartments have miniature appliances. I have a big stove and a big fridge with an awesome wine rack inside and a huge freezer at the bottom. I also have a dishwasher I use as a drying rack.

Here we have the fridge/freezer. There's highest cabinet has the deep fryer in it since we don't use it that often, and our plastic containers. The middle one is the fridge, and the bottom one is the freezer. The fridge and freezer have a surprising amount of space in them considering the size.

Crab cakes
1. Steam two racks of crab, hoping you will end up with about a pound of meat. Make and eat yakisoba for dinner, then shell the crab. Do not eat it, but instead put it in the refrigerator for the next day.
2. Combine the following in a medium bowl:
1T chopped chives or green onions
1.5T mayo
1/2t grated lemon zest
1T lemon juice
1/4t ground pepper
1 egg
3. Add 1/3c panko and 1lb of chopped fresh crab meat, then toss to coat. Cover and chill in the refrigerator for 30 minutes.
4. Make the remoulade (or tartar sauce) by whisking the following in a small bowl:
1/4c mayonnaise
1T chopped shallot
1.5T chopped capers
2t mustard
1t lemon juice
salt and pepper to taste
5. Who chops capers?
6. No, really?
7. After a half hour, fill a 1/3c measuring cup with the crab mixture. Invert it onto a dry cutting board and flatten gently into a 3/4inch patty. Do this with the rest of the crab stuff. You will end up with 5 patties despite the recipe claiming this makes 8.
8. Ponder how it really did look like a full pound of crab meat, but then maybe not. And maybe 1/3c is bigger in Alaska like everything else.
9. Fry each cake in a bit of oil over medium-high heat until golden brown on both sides.
10. Serve hot and drizzle some of the remulade over the cakes. Wonder if it's worth all of the extra work when you could have just eaten the meat directly from the crab legs. But it's still damn good.
VEGAN TEMAKI ROLLS
Ingredients (makes 6 servings):
• 2 C shredded cabbage
• ? C shredded carrots
• 1 tsp lemon juice
• ? C raw whole walnuts
• ? C veggie mayonnaise (also known as "Vegenaise)
• Flavored veggie protein
• A pack of 12 seaweed sheets or 12
taco shells
Directions:
1. Coleslaw preparation:
a. Mix cabbage, carrots, lemon juice,
and veggie mayonnaise in a big bowl
b. Add in walnuts, mix gently
c. Let the mix chill in a refrigerator
2. Break seaweed sheets into hand-size pieces
3. Put one spoonful of chilled coleslaw at the center of each seaweed sheet or
taco
4. Sprinkle a pinch of flavored veggie
protein on top of the coleslaw

LEE COUNTY INFIRMARY.

On December 11 the Board of Supervisors of Lee County, Illinois, approved and adopted the plans of Architect Morrison H. Vail for a new County Infirmary building. These plans were prepared after the board's building committee and the architect had carefully studied the needs and had visited the best institutions of this character in the State. This thorough consideration of the subject and a considerable previous experience in similar institutional practise have enabled the architect to design a model building for the purpose. Therefore we are pleased to accept the invitation to present these plans and design for the consideration of the readers of this quarterly and trust that some benefit may result therefrom.
Lee County farm is located near the village of Eldena, about six miles southeast of Dixon the county seat. The county has an area of 738 sq. mi., and a population of about 30,000. The chief endeavor has been to plan for convenience and economy of administration and maintenance, as well as for the health and comfort of the patients.
The building will face south and be in the form of a T with the stem to the front. The stem or central portion will contain the superintendent's quarters and office, while the east wing is for the male patients and the west wing for the female patients, thus separating the two sexes entirely. There will be accommodations for thirty males and twenty females, or fifty patients besides the superintendent's family and servants; but the wings are so arranged that future extensions may be made readily if required.
The building is 162 feet long by 104 feet deep; the front portion being 36 feet wide and the wings 32 feet wide. The first floor of the central portion contains the superintendent's reception room, office, living room, dining room, private kitchen, toilet room and the doctor's office. This living room and dining room are so arranged as to be thrown together for special occasions, such as the County Board's visits, etc., and the doctor's office will also be used as a visitor's room for the patients. To the rear of these rooms is located the general kitchen with the women's dining room to the west and the men's dining room to the east of it. On the second floor of this central portion are the bed rooms of the superintendent at the front, with the servants' rooms behind and the operating room at the rear. On either side of the operating room is a sick ward with adjoining bath and toilet.
On the second floor of each wing are two isolated rooms that will be prepared for insane patients. There will be toilets and baths on each floor of each wing, as well as linen closets, broom closets, slop sinks and soiled clothes chutes to the basement. Each bath room will have individual clean clothes lockers for each patient. The balance of the first and second floors of these wings will be devoted to bedrooms, with seven foot corridors and large sun porches or sitting rooms at each end. Four of the bed rooms are ouble size and can be used for two patients, married couples or sitting rooms as desired.
In connection with the kitchen there will be a refrigerator room, dish pantry, stores pantry and a screened service porch. The kitchen equipment will be very complete and arranged for convenience, including range, steamer, broiler, carving, dishing and cook's tables, pot, vegetable, scrap and wash sinks, tea and coffee percolator, water cooler, cup and glass racks, and roller table for clean dishes. The refrigerator will have a large outside icing chamber and separate apartments for meats, milk and provisions. There will be direct dumb-waiter service from the kitchen to the bakery and to the second floor, convenient to the sick rooms.
On the first floor of the east wing there will be a tuberculosis ward, consisting of two bed rooms, a toilet and a sun porch, that will be entirely isolated from the rest of the building.
The practical and convenient arrangement of the basement is especially noteworthy. The laundry will occupy the main portion of the west wing with a large vegetable, cellar at the extreme end. The laundry equipment is also very complete and the large room affords the maximum of light, fresh air, hanging space and direct communication to the outside clothes yard in the rear. In the east wing will be separate rooms for bakery, cream, meat, storage, canned goods and a general work room, while at the extreme end is a men's smoking room with an adjoining toilet room and a large sleeping room, which will be used for transients or extremely untidy patients. In the front wing will be rooms for merchandise stores, general storage and the well water system. This building was originally built as the machine shop for the Cornell Steamboat Company that had its headquarters in Roundout.The company dominated the towing on the Hudson, from the 1830s to the mid 20th century.
The Cornell Steamboat Company had a long and colorful history. At its high point it was a dynamic force in the region?s economy. Its decline and final demise was in large measure due to changing economic conditions beyond its control. Railroads made canals obsolete. Changing methods of construction virtually put an end to the demand for common brick. Almost overnight the electric refrigerator ended the demand for natural ice. Fast curing Portland cement made Rosendale cement and Ulster County bluestone unnecessary. The Deeper Hudson project that permitted oceangoing ships to reach Albany was completed in 1930 and ended the towing of grain by barge.

Defrosting
These three kids, along with their father, saved me from freezing as the sun set on the Great Wall in January. I had water bottles that froze inside my jacket, it was that cold. I have never been that scared of death.
The whole reason I got in that situation is that I wanted to walk the wall backwards so I could face the setting sun. I wanted sunset shots. You can see them on this page.
The shots were worth it. The things I do for photos.
The locals don't seem near as happy as me. Maybe they gave me their only tea. They certainly sat me by their only heater.
Now thats what I call defrosting...
2 and a half hours and eventually having to call an electric fan heater to the fray.

Just beat, melt, stir, and refrigerate...these bars are that simple.
Ingredients
·2 cups peanut butter, divided
·3/4 cup (1 1/2 sticks) butter, softened
·2 cups powdered sugar, divided
·3 cups graham cracker crumbs
·2 cups (12-oz. pkg.) NESTLE® TOLL HOUSE® Semi-Sweet Chocolate Mini Morsels, divided
Directions
GREASE 13 x 9-inch baking pan.
BEAT 1 1/4 cups peanut butter and butter in large mixer bowl until creamy. Gradually beat in 1 cup powdered sugar. With hands or wooden spoon, work in remaining 1 cup powdered sugar, graham cracker crumbs and 1/2 cup morsels. Press evenly into prepared baking pan. Smooth top with spatula.
MELT remaining 3/4 cup peanut butter and remaining 1 1/2 cups morsels in medium, heavy-duty saucepan over lowest possible heat, stirring constantly, until smooth. Spread over graham cracker crust in pan. Refrigerate for at least 1 hour or until chocolate is firm. Cut into bars. Store in covered container in refrigerator.
Prairie Ink's Currant Scone
I was happy to find that a familiar bookseller from Calgary, McNally Robinson was now open at the Shops at Don Mills and within it, a cafe/restaurant. Hoping to find my mother's favourite (but no longer offered in Calgary) cheesecake, instead I found Prairie Ink's baked goods display filled with a handful of items including... scones! I've a very big soft spot for scones (and even bigger one if they're buttery and well made - not dry biscuit pucks, buns, or crumbly non-cookies). The ones at Prairie ink had good texture, a nice crumb, could use a bit more butter, but I was happy enough (it's much better than many of the dough blobs found at cafes around the city). I would gladly return to sample the other flavours I found in the refrigerator case.

Ruins of Sinagua ("Land Without Water")
Wukoki Pueblo, Wupatki National Monument (Arizona)
Little is known about the people who built and lived in this network of dwellings, and archeologists have dubbed them the Sinagua, literally "without water," for their ability to flourish in an extremely arid environment. They lived here from approximately 500 AD to around 1200 AD, when--like many other Anasazi communities--they abandoned the dwellings and apparently disappeared. There are several sets of ruins within the monument, including the large Wupatki ruin, but it's the oddly modern-looking Wukoki pueblo that captured my imagination. Thought to house 2 or 3 families, the three-story structure is constructed of bricks and mortar, and has withstood the ravages of time and weather surprisingly well. Though no one has lived in these dwellings for almost 1000 years, their Hopi descendants do not consider the site abandoned; rather, they believe that those who lived and died here remain as spiritual guardians.

My strawberry jam
I put up some strawberry jam today with a flat of the sweetest Oregon strawberries from the farmer's market. They were very ripe, so not perfect for making jam, but we did it anyway. From a whole flat, we had seven jars canned, plus two in the freezer and one in the fridge -- we didn't process all the jars because it was getting too hot at midday to keep the stove running for a second batch. I need one of those stacking water bath racks!
Recipe: 4lbs strawberries (washed, cut into 1-inch pieces) brought to a boil with 5 cups sugar gradually added in. Boil at 220° for 10 minutes or more. To test if it jells, drop a spoonful onto a plate in the freezer, let cool, then run your finger through it. Jam should wrinkle up and not come back together as a liquid. Put into jars with 1/2" headroom and process for 10 minutes in a water bath. Yummy! Strawberries that are less ripe will have more pectin, and will better take this massive amount of sugar. Be prepared for a very sweet jam if you are using ripe strawberries, but you also won't get as firm a jell.
Anyway, this recipe was ridiculously sweet. Next time I make an Oregon strawberry jam, I'll have to find a no-sugar recipe. Sweetening these berries was almost too much!

we had about 1 1/2 pints of strawberries on the edge of going bad....PERFECT for jam, they were kind of air dried, no mold at all, just not that firm supple bite that we prefer, kind of leathery but sweet.....i chopped them up added 1 cup of apple juice and 1/2 a packet of no sugar needed pectin cooked them together until a low boil, let them sit about 5 minutes stirred the foam into the mixture and it made a perfect 3 containers perfectly full of freezer jam, now ready for winter or tomorrow when i am craving strawberries.....pantry building, not wasting food, yes time consuming and work but that is my mantra of late....make it yourself, seriously storebought jam would have cost 3 bucks a jar....and the pectin and berries and juice cost 5 bucks max!
