I spent the night at my sister's, and we did some baking. I brought my copy of The Joy of Vegan Baking and a few ingredients, and we were able to whip up banana crumble (delicious - I swapped the white sugar for brown so it was more caramelised) and oat and coconut cookies. The cookies were originally the Oatmeal Raisin cookies, but we had no raisins so used coconut instead. I forgot to bring my egg replacer too, so we subsituted half a mashed banana. They were delicious; the banana flavour was definitely there but not overpowering, and they were crispy on the outside and chewy in the centre.

The banana crumble was delicious.

We had such a fantastic time doing our baking that we are planning to hold more regular baking nights.











Banana Oat Cookies




Banana Oat Cookies





1/2 cup raisins, soaked in water & drained
2 medium overripe bananas, mashed
1 cup steel cut oats
1/2 cup oat bran
1/3 cup chopped pecans
1 teaspoon vanilla
1/8 teaspoon cinnamon
100% fruit spread

Soak raisins for an hour ahead of time.

Preheat oven to 325 degrees.

Place steel cut oats in a blender and grind to your liking.

Combine the mashed bananas and the oats. Add the nuts, vanilla, cinnamon, and the soaked dates or raisins. Mix well.

Drop about one tablespoon per cookie onto a non-stick cookie sheet. Flatten a little and make an indentation into the center of the cookie. Add the fruit spread.

Bake for 13 minutes or until golden brown.

Biked over to T&T Supermarket on Cherry Street this evening and bought a few canners. Brought them home, put them in the freezer to go unconscious while I put the lobster pot on to boil. 10 mins in boiling water.
The shells are simmering now, for use in a bisque or whatever.

Asparagus Stir-fry

1 bunch of Asparagus, chopped 1/2-1 in. pieces
3-4 Garlic cloves(or more if you like), chopped
1/2 brown onion, finely chopped
soy sauce
black pepper
butter

1. Wash asparagus and pat dry with paper towel. Trim off the tough ends.

2. Chop asparagus 1/2-1 in. pieces. Put 2 TBLsp. of butter in saute pan on medium-high flame. Place chopped garlic in pan and lightly saute. Add chopped asparagus and saute for another 5 minutes. Add chopped onions.

3. Saute for another 10 minutes or until tender. Season with black pepper & 1-2 TBLsp. of soy sauce, mix thoroughly. Serve immediately.

40 Clove Garlic Chicken

1 pkg. of chicken thighs, skins taken off
40 cloves of garlic
1 cup chicken broth or chicken bouillon sprinkles
salt
black pepper
soy sauce
* For more juices you can add an additional cup of water

1. Wash and pat dry chicken thighs. Place chicken in crockpot or baking pan. Season chicken thighs with salt & black pepper, a few splashes of soy sauce and/or chicken broth or chicken bouillon sprinkles. Place garlic cloves all throughout crockpot or baking pan; making sure to place some garlic cloves between pieces of chicken thighs.

2. Place lid on crockpot and cook on low for 6-8 hours or high for 4-5 hours. Or if cooking in oven, put foil cover on baking pan and cook for 1 1/2 on 350 degrees. Serve with either rice, mashed potatoes or lightly buttered noodles.

my first attempt at cooking asparagus. I have always just eaten it out of the can. hehe... So I put them in the pan and drizzled oil over them. Rolled them in the oil until they were covered well enough. Added lemon pepper, cilantro, basil... Baked 10-15 minutes at 400degrees. They were still a little tougher than I had expected and not a whole lot of flavor from the lemon, basil, and cilantro so I put a bit of parmesean cheese on after it came out of the oven. Any other ideas for seasoning it? Thanks.

A 24 hour mystery.

Saturday evening at about 5:00 PM I was leaving to meet friends for dinner. I discovered that my wallet was missing. I search the house several times. I didn't find it. So I raided the cookie jar for cash and left without it. When I arrived late at the restaurant I told my girlfriends why and they were concerned about the lost wallet. I was concerned about my lost wallet. I continued to search that night and the next day. We checked online for activity on our credit card account and there had not been any ...yet. At around 5:30 PM Sunday I called my daughter and left a message asking her to check Grace's bags that she had taken home from our house on Friday; maybe my wallet had accidentally been put in with her toys. That or I put it in the freezer or someone had taken it out of our car when we went to the park on Thursday, the last day I remembered having it.

Faith returned my call after about a half an hour. "Mom check under the umbrella stand. Grace says she put it there to hide it from you. She said it is under the umbrella table."

And there it was. : )
And that is why one should never worry about such things...just ask your three year old granddaughter where it is.

I guess for the last month she has been hiding things...her dada's eye-glass case and flash drive among other things. I am anxious to tell my girlfriends where it was...the last place I would have looked and the last thing that I thought had happened. It also will be a fun story to tell Grace (along with many others) when she grows up.

This fence runs along the former property line of the Aulds. They were an elderly couple who lived down the street from my parents' home in Paradise, California when I was a kid. I adored the Aulds - they were the sweetest people. I would ride my bike down the street and stop and knock on their door, and they would always greet me with a cookie jar. They would ask me how I was doing, what I was up to, what my plans were for the day. They'd even give my dog Chee Chee a cookie or two. And their house, with its deck overlooking the canyon, and their yard, was always immaculate.

This trip I couldn't even bring myself to photograph the house. It looked like your typical Paradise white trash residence: huge trucks parked in front, cars in various stages of disrepair, the house badly in need of a paint job and unkempt, the gardens completely neglected. I've seen this story repeat itself time and time and time again in my neighborhood: beautiful gardens and homes which, after the residents pass away, are taken over by negative forces of destruction and neglect. Like the house on the corner where the little old lady used to live with her incredible, ornate gardens. It was taken over after her death by some moron who used it as a junkyard for his crappy old cars.

I should be hardened to it, but it breaks my heart everytime.

just thought i'd share my current domestic preoccupation which makes me very happy. a similar method is in the cookbook laurel's kitchen and my friend sarah came up with a couple of additional steps.

collect any trimmings that aren't gross from your veggies and store them in your freezer. this one had leek stalks, celery leaves, carrot ends, onion ends, onion peel if it's half soft, half hard, many summer squash ends, some herbs... save up until you have a bunch and then do the following.

put in soup pot. i usually throw in whatever i have lying around... extra potato, onion, and some garlic and maybe some fresh herbs if i have them. cover with water ( i generally do more than just covering because i want more stock), bring to a boil and simmer on medium until the veggies are soft (i do 45 min). let sit to cool. i put this batch in the fridge in the pot for two days. let it sit at least 24 hrs... it will give it better flavor (nice and dark). freeze in one or two cup incriments and use as needed.

sarah (schmidtly) freezes it in ziplock bags, they lay flat and can be stacked for those with little freezer space. she then reuses them. i use yogurt containers because i have a lot of them. another idea is to freeze them in ice cube trays so that you can use however much you want whenever.

p.s. do not save broccoli, cauliflower, cabbage, bell pepper discards... these make for bitter broth.

1/4 red cabbage shredded
2 medium potatoes shredded
2 medium carrots shredded
2 medium zuchinni shredded
parsely (1/4 cup ) finely diced
1/2 red onion sliced
2 cloves garlic diced small
1/2 rice flour
2 or 3 eggs, has to be moist.
salt to taste

heat frying pan. Combine ingredients, add oil to pan. Spoon mixture and let it brown, then turn over.
Place on paper towel.
Serve :)

These were not only very tasty, but healthy, and crunchy, and awesome.
I was scared of it because i thought they had to have gluten in it, it tasted very bread-reminiscent. (the flour). I thought they were battered.

Original Jerk Marinade – this is fire itself!
Yield: ? litre

1 wholewhite onion, small dice
? cscallions, chopped
5 scotch bonnets, whole
2 Tbsppicked thyme
5 tspground allspice
? tspnutmeg

1 tspblack pepper
2 Tbspwhite vinegar
2 tspsugar/turbinado
4 tspminced ginger
2 Tbspoil

1.Blend everything together. Please be very careful. This is VERY SPICY!

Jerk Marinade – medium high fire ?
Yield: 1? litres

? Loriginal jerk marinade
4 white onions, roughly chopped
1 bunchthyme
1? tspsalt
3 tsp allspice
3 tspturbinado
400mlolive oil

1.Buzz onions in robocoupe first, then add everything else EXCEPT the oil. You’re looking for a ‘lumpy’ texture.

2.Remove from robo and transfer to a mixing bowl and just mix in the olive oil. I find this consistency good for the meatballs and also for something that you might roast. However, if you are looking for a rub to apply on protein that is to be pan fried/grilled, I would recommend getting the marinade to a finer paste. You can do that by putting all the ingredients into a blender as opposed to a robocoupe. Go easy!!! Its spicy!!

3.Depending on personal preference, marinate your beef accordingly, ideally 24hrs. We are using 5 lbs of lean ground beef and about ? L of jerk.

3 cups panko breadcrumbs
1 cup milk
1? litres jerk marinade (depending
on spiciness)
to tastesalt


Diri et Pois Coles

Yield: full shallow hotel pan

Ingredients:

2 litresjasmine rice
2 litrescooked red kidney beans (Soak about 2 litres dried kidney beans the night
before. The next day, cover beans with about 2-3 inches of water and cook gently with a lid. Do not salt the beans until they are almost done. They take about 2 hours to cook. Let them cool in the liquid. Strain beans but RESERVE the liquid.)
4 cupsred onion, small dice
2 cupsshaved garlic
12-16 ozsmoked sausage/cured ham (optional)
8bay leaves
2 cupsflat leaf parsley, finely chopped
2 tspsalt

Method:

1.With some canola oil, saute the onions until they are lightly caramelized. Add garlic and sausage. Turn up the heat and roast them somewhat until you get some good colour.

2.Add the jasmine rice. Toss to coat well and ‘pat down’ to form a level surface. It doesn’t have to be perfect.

3.Add your reserved bean liquid (NOT the beans, just the liquid). Top up with water. In total, you need to add 3L of liquid (made up of bean liquid and water).

4.Cover with a tight fitting lid and cook over medium heat. You don’t want to scorch the bottom but the liquid should come up to a boil fairly quickly.

5.As soon as I see steam escaping, I check my rice (DONT STIR). Carefully check the bottom by moving aside some rice to see how much liquid is at the bottom. As soon as you don’t see any liquid, remove the pot from the heat, KEEP THE LID ON and let the rice steam the rest of the way to doneness.

6.DO NOT stir the rice because it allows the steam to escape. Once the rice is cooled slightly (done steaming), fold in your cooked kidney beans, chopped parsley and adjust salt.

7.Personally, I have a desire to add raisins to this concoction, although not particularly Haitian. Enjoy!

In the food-o-sphere there has been of late a grand revelry of meaty events and porcine prose waxing poetical about organic grass-fed meat and a pig’s life from birthing pen to banquet table. The truth is we need to stop focusing on meat and gristle and figure out more ways to eat our vegetables. Ones that don’t take 115 gallons of water per day (one cow) and don’t give off toxic wastes into our air, water and ecosystems.

I am not vegetation, vegan or an environmentalist even (why do they all have V’s in them?), I'm just cheap and meat is expensive. I love bacon, leaf lard and pork ribs to no end, but we don’t eat like that every day. I am all about eating locally raised meats and poultry, and locally caught fish. But we go for days on end eating only vegetables (delicious and filling Brussels sprouts and roasted beets and their fried greens last night) and then maybe have one ham hock stew where meat morsels are fished out to become the stars of tacos, then the remnants become a sumptuous chili and then the next day a flavourful soup with the scrapings of the pot. Sure, there is meat in there, but not much. How about one measly piece of bacon to add flavor to white wine risotto or Chinese stir-fried Swiss Chard. Which brings me to my mission this month: 10 ways to prepare “insert sustainable easy to grow vegetable”.

Swiss Chard, Silverbeet, Perpetual Spinach (use it in any spinach recipe), Crab Beet, Seakale Beet or Mangold which ever you want to call it. Chard is a stalky vegetable and grows well during the winter months in a wonderful array of rainbow colors.

Ten ways to cook Chard, I wont give you the recipes, you can look those up or create your own concoctions. I was able to make five of these meals out of one bunch of 2 euro Chard.

Ingredients (serves 2-3)

1. 1-2 chicken thigh
2. ? Chinese sausage
3. 4 pcs of dried shitake mushroom
4. 1 cup of uncooked rice grain (washed)

Method

• Chop chicken thigh into bite size
• Marinade chicken thigh with 1 teaspoon each of dark soya sauce, light soya sauce, sesame oil and pepper for at least 1 hr (best overnight)
• Soak dried mushroom till soft, discard stem and cut into slices
• Thinly slice chinese sausage.
• Heat up wok with some oil, add some minced garlice and fry briefly
• Add in chicken, mushroom & Chinese sausage and fry for about 5-8 mins
• Add in uncooked rice grain and fry for another 3 mins.
• Pour everything into rice cooker together with water (slightly lesser than the usual amount needed as there will be juices from the chicken and add another 1 teaspoon dark soya sauce and 1 1/2 teapsoon of light soya sauce to cook
• Give it a stir in between cook cycle
• Once cooking cycle complete, fluff the rice a little. Add more dark soya sauce if you prefer.
• Serve warm

Stuart is happy with anything that has "beef" and "roast" in the name. However, I didn't cook it long enough and had to be remedied by going into the pressure cooker for awhile longer - that pot is a life saver!

Served with steamed asparagus and baby sweetcorn (totally unseasonal, I know but when is baby sweetcorn ever in season in this country?), roasted Anya potatoes and a gravy made with beef stock, carrots and parsnips.

A Bronze Age hoard was discovered on the slopes of the hill and is now in the Sheffield City Museum. The hill was held in special regard by the Vikings who settled in Cleveland in large numbers during the early medieval period and gave the area many of its place names. They gave Roseberry Topping its present name, which is one of only a handful of known pagan names in England. "Roseberry" came from Old Norse O?ins bjarg ("Odin's rock or crag"), after the Norse god Odin.[3] The name changed successively to Othensberg, Ohenseberg, Ounsberry and Ouesberry before finally settling on Roseberry. "Topping" is a corruption of toppen, an Old Norse word for a hill. The naming of the hill followed a well-established pattern in continental Europe of hills and mountains being named after Odin or the Germanic equivalent, Wodan. ?lfric of Eynsham, writing in the 10th century, recorded how "the heathens made him into a celebrated god and made offerings to him at crossroads and brought oblations to high hills for him. Ingredients:

- Sausages (Big ones or medium ones. Whichever floats your boat. 2-5 is a good number if it fits in your pan)
- Beer (REAL beer. Good tasting beer. If you're going to use Coors, Bud Light or Molson you might as well just use water. Maybe spit in it. Personally I use Leffe Brune)
- Half an onion (chopped in to rings)
- Buns (to put the sausages in to when you're done. No ass jokes, please).
- Olive oil just about two tablespoons.

Instructions:

1. put olive oil in frying pan, crank that stove up to high. Then put the sausages in and fry until browned.
2. Once the sausages are browned, decrease the stove to medium heat, remove the sausages and throw in the onions.
3. Cook those onions in the sausage juices until rubbery and transparent (NOT until they are browned)
4. Put the sausages back in pan and pour your beer in. Depending on what beer you use, half the bottle/can might do. As long as the sausages are covered about half way in beer you should be fine. Drink the remainder for the rest of the cooking time.
5. Mix those sausages in your wonderful beer-onion concoction until the beer has decreased in volume and has turned in to a somewhat thick sauce. Your entire kitchen will start to smell amazing.
6. Remove the sausages and place in the buns.
7. spoon in the beer sauce with onions on to the sausages in the buns. If you've got loads of it, be very liberal in serving.
8. Eat and enjoy. If you're feeling in a very beer-ish mood, pour yourself a pint.

Between football and the weather, I can see me not wanting to go for another self-portrait today, so here you go. No one else in the house this week, so I'm cooking for one.

So, first time I've made sausage gravy. It's something I've seen my dad make dozens of times, but never tried myself. Everything was going well enough to start, my sausage was cooking up nice and even. I pull it out of the pan, onto a paper towel on a paper plate.Then I notice I have very little grease in the pan. Umm... okay, whatever, just go with it. So I added the flour and mixed it around... and I had a pan of flour. This isn't anything like my dad's! Okay... what's next... add some milk? Okay. Wait, this is just getting chunky! This isn't right at all! Let's try adding some more milk... okay... that's better... but I still think it needs a little more milk. And it's ghostly-white. Dad's was always somewhat brown. Let's try adding the sausage back into it. Okay, it's at least starting to look more like gravy. Cook it down a bit... it's starting to get to a gravy consistency. Maybe a little more milk... then just cook it back down to this volume. Taste it a little... okay, this tastes like gravy. Good. Now, one last touch... let's add a touch of honey, stir it around, and pour it on some of the leftover texas toast from last week's french toast.

Oh, wow; that's good.

So, ingredients:
1/2 tube sausage
Some flour
Lots of milk
A little honey
2 slices Texas toast (1 per bowl)
