Have had a sourdough starter from an Amish recipe in the refrigerator. The starter has potato flakes in it which is different from other starters I've made.

This week I made sourdough rolls and bread. A previous week, I made cinnamon rolls (plain and with raisins).

The dough is light and delicious. I like that it can be used in both sweet and non-sweet recipes.

Made this recipe for the 52 Weeks of Baking swap on Swap-Bot. The recipe and feedback about it were included in the swap.

I'm compiling all of the pictures, recipes, modifications I made to the recipes, and lessons learned into a cookbook for my daughters.

My second time making this delicious bread. It's the chain letter of cooking, but is worth the wait. You squish the bag of starter five days in a row, add milk, sugar and flour on the sixth day, let it continue to ferment/squish the bag for a few more days, then add ingredients and bake on the tenth day, saving some of the batter as starter to give to friends with the instructions/recipe.

I've been on the hunt for accessible, gluten- corn- and dairy- free products for one of my clients and holy moley did I find a wealth of them!

the (naturally hollow, segmented) lengths of bamboo are filled with water and set on the fire to boil and cook packets of rice wrapped in banana leaves. chunks of meat are skewered on bamboo spikes and set to bbq over the flames.

Here's the recipe for a tasty dinner salad:

Grocery List:

* 4 chicken breasts
* mexican seasoning
* salad dressing, I recommend Asiago cheese dressing
* 1 head green leaf lettuce, leaves halved down the middle then sliced
* 4 hard boiled eggs, sliced
* 1/3 purple onion, diced
* 1/2 red bell pepper, diced
* 2 carrots, grated
* 1/2 cup edamame (soy beans)
* 1 cup corn kernels

First, season the chicken fairly well with a dry rub and let it sit for about 5 minutes. This gives the chicken time to soak in the flavor as well as reach room temp so it will cook evenly throughout. Start the George Forman grill as well the water for the eggs. While the eggs are boiling, rinse and chop all the ingredients and set them aside. After the grill has thoroughly heated, place each breast side-by-side to cook, turning once. Meanwhile, layer all the other ingredients in a large salad bowl. After the chicken is cooked throughout, remove it from the grill and let it sit for about 10 minutes. Then slice each breast and place the the strips on top of the salad and toss!

Cleanup is a cinch, the kitchen stayed cool and healthy meal was made in no time giving you time to enjoy summer!

Extra Steps for Extra Flavor:

* grill the chicken on a charcoal grill
* get the veggies at your local Farmer’s Market (not only is it good for your local community, but they taste better, are fresher and have no added chemicals!)
* make each person’s plate by arranging the sliced chicken next to a generous helping of salad
* create your own seasoning rub for the chicken

An hour in - time to replenish the coals and wood. It was on for another 40 minutes or so...longer than it should have taken but it took that long to hit temp. It's entirely possible I was checking the wrong spot...like I said, never cooked a whole chicken before. I ended up covering the top of the bird with foil for the last 10-15 minutes or so and maybe I should have done that even earlier.

over the past month I have become aware that the wireless internet system is slowly making me sicker and sicker...

over the past 18months more and more people are connecting to this new technical wonder...BUT they are totally unaware, as I was that each persons system covers our neighbours homes as well...at present I have 4 different neighbours systems coming into every corner of my home...(I have just had my next door neighbour turn their system off for me and they are using a blue cord now so at least the room I sleep in and work in are now free from wireless)

over the past 6 months 8 houses out of 10, here in Perth Western Australia, have now got a wireless modem which they are leaving on, sending out signals 24 hours a day...

my call out to all modern communities is "Turn them OFF" if you are not using the internet and if possible turn them off and use a blue cord instead...If you have to use them turn it off when not in use...

our schools are now covered by their own systems as well as all the neighboring home wireless systems ...you should see what huge technical wonders they are connecting our grade 1's up to...

one 89 year old I am working with is living in 6 wireless systems all above the frequency of 80% 24 hours a day... she is slowly being cooked from the inside out as she lives in a modern apartment block...of all the things this amazing woman has survived in her life up till now she is being driven to her grave by invisible electromagnetic waves...

the sad thing is we all, myself included just got it installed without even beginning to question what it was all about...

everywhere I now go with the exception of only a few places is covered by internet wireless frequencies...the health issues that I am now experiencing from this exposure in such a small amount of time leaves me very concerned for the rest of humanity that are similarly exposed by it and have no idea why they are slowly getting sicker and sicker...slowly being reduced to fatigued shadows of their former selves..

I happened to buy the beef on sale. Truthfully, it was the first time I had ever even seen this product in the supermarket. I figured I'd buy it and have it on a sandwich for lunch one day. But then, the plum tomatoes were on sale another day and they told me they were in love with the beef. So, we had to marry them!!

O.K., maybe that was a forced title, but I could not think what to call this dish!!

Ingredients:

1 lb. thinly sliced beef ( as for sandwiches )

1 cup olive oil

1/2 cup balsamic vinegar

1/2 cup honey

about 6 plum tomatoes, roasted

2 boxes frozen spinach, thawed and squeezed dry

1 bag egg noodles ( 12 or 13 oz. )

1 or 2 tsp. garlic powder, or dried garlic slices

Method:

Make marinade: whisk together oil, vinegar, and honey.

Marinate beef in half the amount of marinade for at least 1 hour.

Meanwhile make roast tomatoes: slice tomatoes in half, length-wise; sprinkle tops with olive oil, salt and pepper, and a little sugar. Place on sheet pan and roast in 425 degree oven for about 30-45 minutes.

Take the marinated beef and saute in a wok with about 1 tsp. oil over medium heat. Remove beef and add the spinach and garlic powder. Saute the spinach for about 2 to 3 minutes. Return beef to pan and cook slowly over low flame.

Meanwhile cook the egg noodles in boiling, salted water.

Remove noodles with strainer or drain and put them in a large bowl. Add the beef and spinach and toss with leftover marinade. Place roasted tomatoes on top and serve.

The local church prepared food and served us after the funeral. Roast beef, turkey and the best part : funeral potatoes.

Funeral Potatoes :

Ingredients:
# 6 cups diced potatoes*
# 1 can (10 ? oz.) cond. cream chicken soup
# 1/2 soup can milk
# 1 cup sour cream
# 1 cup sharp cheddar cheese, grated
# 1/4 cup grated onion (optional) **
# salt and pepper to taste
# 3 tablespoons butter, melted
# 3/4 cup corn flake crumbs


Method:
Cook fresh potatoes or thaw frozen potatoes (see *note below). Place potatoes in a 2-3 quart casserole dish or a 9x13 cake pan.

Combine soup, milk, sour cream, cheese, and onion (see **note below) and salt and pepper to taste. If a saucier dish is desired, add 2-3 tablespoons additional milk. Mix well. Spread sauce over potatoes.

Melt butter and combine with corn flake crumbs. Sprinkle crumbs over casserole. Bake uncovered at 350 F for 30-45 minutes or until hot and bubbly throughout.

Notes:

* Use approximately 6-8 peeled, diced, and cooked fresh potatoes; or approximately 2 pounds frozen, southern style, diced hash browns (not shredded). ** Use 1 tablespoon dried onion or saute 1/4 cup fresh chopped onion in 1 tablespoon butter until transparent.

Some of the very traditional food we tried was Indian (not what you get from your average curry house as I hadn't heard of any of the curries!) and African. One of the African dishes had goat in it - i have that a miss but it did look and smell delicious! All the food is cooked in huge pans and left to simmer and the smells in and around Middle Yard are to die for.

We had a hard night. Little Bean went downhill fast after a few days of a lousy virus. So we went to the emergency room with her, fervently hoping she'd recover quickly.

We got home at 3, with a hydrated baby who wanted to sleep for the first time in days.

Whew.

We've moved slowly today. We were supposed to be on a plane to Colorado. Instead, we have been napping, watching tv, talking on the phone, twittering away.

And making food.

Somehow, I had not cooked since we arrived in this new home. This sight -- food lined up, spoons and spatulas, measuring cups and Dutch ovens -- made me so happy I had to take a photo.

It feels like life is finding its own balance again.

This is a good example of a fast and hot burning fire I make for boiling water for coffee. It requires many 1/2 -1 inch stick put Tee-Pee style. Inside the Tee-pee I place a bundle if thin pine twigs. The sap in the twigs is highly flammable. When you go to make a fire in backcountry get yourself as much dead Pine as you can to start. After the coffee is ready I put about ten 1-2 inch sticks on to make for good coals for the eggs.

Located near the City Gates, The Old School House is a surviving expression of another time. Built over 200 years ago, while Florida was under the rule of Imperial Spain, it was constructed of red cedar and cypress and put together with wooden pegs and handmade nails.

The schoolmaster and his wife lived upstairs, above the small classroom. Their kitchen was separated from the main building, because of the threat of fire and to spare the house of any excess heat during the long summers. Several of the cooking utensils used in those days are displayed here for the visitor. In the schoolhouse, related artifacts and copies of the books the pupils studied from are exhibited.

Tomatoes are a member of the deadly nightshade family, and as such were considered toxic, causing many conditions like appendicitis, "brain fever" and cancer. In fact, they may have just the opposite effect. Tomatoes were not even eaten in the US until the early 1800s, when an eccentric New Jersey gentleman Colonel Robert Gibbon Johnson brought them back from a trip overseas. Always one to take advantage of a dramatic opportunity, he announced an amazing display of courage would take place on September 26, 1820. He shocked his hometown of Salem by consuming and entire basket of tomatoes in front of a crowd of spectators, expecting him to keel over any second. Obviously, he didn't and since then tomatoes have been a staple of the American diet and with good reason.

Starting with the basics, tomatoes contain large amounts of vitamin C, providing 40 percent of the daily value (DV). They also contain 15 percent DV of vitamin A, 8 percent DV of potassium, and 7 percent of the recommended dietary allowance (RDA) of iron for women and 10 percent RDA for men.

The red pigment contained in tomatoes is called lycopene. This compound appears to act as an antioxidant, neutralizing free radicals that can damage cells in the body. Only recently, studies have revealed that lycopene may have twice the punch of another well-known antioxidant betacarotene. Studies conducted by Harvard researchers have discovered that men who consumed 10 servings of tomatoes a week, or the equivalent to 10 slices of pizza, can cut the risk of developing prostate cancer by a formidable 45 percent. However, its benefits are not limited to the prostate. Italian researchers have found that those who consume more that 7 servings of raw tomatoes lower the risk of developing rectal colon or stomach cancers by 60 percent. Israeli researchers have found that lycopene is a powerful inhibitor of lung, breast, and endometrial cancer cells. Research has also indicated that the lycopene in tomatoes can help older people stay active longer.

New research is beginning to indicate that tomatoes may be used to help prevent lung cancer. Two powerful compounds found in tomatoes-coumaric acid and chlorogenic acid-are thought to block the effects of nitrosamines. These are compounds that not only are formed naturally in the body, but also are the strongest carcinogen in tobacco smoke. By blocking the effects of these nitrosamines, the chances of lung cancer are reduced significantly.

When choosing your tomatoes, be sure to pick those with the most brilliant shades of red. These indicate the highest amounts of betacarotene and lycopene. Though raw tomatoes are great for you, cooking them releases even more of the benefits. Lycopene is located in the cell wall of the tomato, so by cooking in a bit of oil, this healing compound is more fully released. In addition cooking the tomato in olive oil allows your body to absorb the lycopene better. Don't worry about the availability of fresh tomatoes. Tomatoes don't lose any of their nutritional value in the high heat processing , making canned tomatoes and tomato sauce are both just as viable and beneficial as fresh tomatoes.

Osborne House is a former royal residence in East Cowes, Isle of Wight, UK. The house was built between 1845 and 1851 for Queen Victoria and Prince Albert as a summer home and rural retreat.

Prince Albert designed the house himself in the style of an Italian Renaissance palazzo. The builder was Thomas Cubitt, the London architect and builder whose company built the main facade of Buckingham Palace for the royal couple in 1847.
The grounds include a 'Swiss Cottage'. The cottage was dismantled and brought piece by piece from Switzerland to Osborne where it was reassembled. [8]There, the royal children were encouraged to garden. Each child was given a rectangular plot in which to grow fruit, vegetables and flowers. They would then sell their produce to their father. Prince Albert used this as a way to teach the basics of economics. The children also learned to cook in the Swiss Cottage, which was equipped with a fully functioning kitchen. Both parents saw this kind of education as a way of keeping their children's feet firmly on the ground in spite of their royal status.

The Vietnamese word for Rice Vermicelli (known as ''mee-fun'' or ''bee-fun'' in Chinese and Fukkienese) here cooked with a savory mushroom sauce. Yummie.

Unfortunately the folks at this restaurant don't keep Nuoc Cham, the sweet and sour dipping sauce, handy, and don't provide it when asked for. Not a true Vietnamese restaurant in my book. :P
