Turkey Noodle Casserole

Celery, water chestnuts, and mushrooms add texture and crunch to this ground turkey casserole. Makes enough so that you can freeze half for another day.

2 lbs ground turkey
2 cups chopped celery
1/4 cup chopped green pepper
1/4 cup chopped onion
1 can cream of mushroom soup, undiluted.
1 can of sliced water chestnuts (about 8 ounces)
8 oz sliced mushrooms
1 can of corn
1/4 cup of soy sauce
1/2 teaspoon salt
1 cup sour cream
8 ounces cooked wide egg noodles
Bread Crumbs (optional)

Cook egg noodles, set aside for later.
In a large pot over medium heat, cook turkey until it just starts to brown. Add celery, green pepper, and onion, and cook until meat is no longer pink and veggies just start to soften. Stir in water chestnuts, soup, mushrooms, corn, soy sauce, salt. Reduce heat, simmer for 20 minutes.

Remove from heat; add sour cream and noodles. Mix well. Set aside half for freezing, place remaining mixture in a greased baking dish. Cover and bake at 350 degrees for 30-35 minutes.
If desired, top with bread crumbs and uncover for an additional 10 minutes.

To use frozen casserole: Thaw in refrigerator overnight, transfer to greased baking dish, and bake as directed above.

Pre-game?

This is a photo of some of the liquor in that was supposed to make up a pre-game. In addition to this, there were 6 cases of beer in the refrigerator. I took this photo because I was amazed that such a relatively small group of people (about 35) could drink so much liquor in such a small amount of time. Between the house of 9pm and 11pm, all of the liquor was gone and about 20 beers remained. And this was just the pre-game. At 11pm, people left to go party, and drink even more. These bottles and cans were all recycled, showing the environmental awareness of the party-thrower. This photo provides an opportunity for JMU illustrate that yes, you can get very drunk, but the next day, simply recycle your huge amounts of beer cans and liquor bottles. Recycling shows that the partier's respect their environment and take responsibility for their actions the night before. If one person can convince another to recycle their beer cans, we can create a recycling movement across JMU parties campus-wide.

Gummy beer! Well, beer kanten at any rate. The beer is Sinebrychoff (Koff) porter. The recipe is:

Bring to a boil the reduce to a simmer:
33 cl beer (roughly 11 fl oz)
1 1/2 tsp agar-agar powder
(A ratio of 1 tsp agar-agar powder per 1 cup of liquid. Highly acidic liquids will require more powder.)

Simmer for 3 minutes or until no grainy texture remains. I covered the pot while simmering as not to reduce the beer too much thus unpalatably increasing the bitterness.

Add and dissolve:
2 2/3 TBSP table sugar

Pour into a mold and let set in the freezer for 15 minutes or in the fridge for 30 minutes. Remove from the mold with thin knife. If this proves problematic, rest the mold in a hot water bath for a few seconds to loosen the gel. Store in the fridge and serve cold (though they are room temp stable).

The amount of sugar will probably depend greatly on the bitterness and sweetness of the base beer. Koff porter is moderately bitter at 45 EBU, though roasted malts further the impression of bitterness.

The amount of agar-agar might depend on the manufacturer, if internet sources are to be trusted. Flakes apparently require three times the amount, so that would be 1 1/2 TBSP.

Spices and such could certainly accent the gel quite well. I'm going to try a drop of vanilla in the next batch using this beer.

Foaming is an issue if you want perfectly-solid, bubble-free bits of beer gel. The foam isn't unpleasantly bitter, but the texture is kind of weird. However it does make for a cool presentation when added to a partially-filled mold making it look a lot like beer. Cylindrical molds would magnify this effect. I don't have a solution for getting rid of the foam other than scooping it off of the surface of the finished liquid before placing into the mold. I tried both letting the unadulterated beer sit out for a bit, stirring occasionally, and adding a small amount of fat (butter) to the beer; I ended up with less foam doing these two steps, but there was still some foam.

I believe that sweeter beers (anything using a good dose of crystal malt or lots of Munich malt with minimal hop additions) and sour beers (I'm looking at you Belgian kriek beers) would probably work best in this application. Ooh, anyone want to send me a bottle of New Glarus Belgian Red?

My second batch used 2 tsp vanilla sugar and 2 1/2 TBSP maple syrup in place of the table sugar in the original recipe. Yes, they taste good.

So as you all know, i am cleaning out! I pulled all the shoes out of my closet and from around the house (56 in all) and decided to pair down. (No pun intended, it just worked out!) I get stressed out getting rid of, so Peanut was here to help out.

As i was decided between a particularly useful pair that i didn't like, and pair that weren't useful but i did like, Peanut decided this was her moment! She leaped to my shoulders for a bird's eye view, and purred there for quite a while.

You'll all be very proud of me, I got rid of more than 40 shoes! (Okay, 20 pairs, but doesn't 40 sound more productive?)

Three dozen discarded refrigerator doors will be erected in the shape of Stonehenge, the ancient ruins in England. Local artists and art students will paint words onto magnets from poems created by members of the Blue Collective.

Trouble was buried this afternoon. in the box i used i put a square piece of crochet i had made so a part of me would be with him.
i keep remembering his last moments and his struggle for breath. he made these little crying sounds and a minute later he was gone. i wish i could stop thinking of that because it hurts like hell.
i still can't believe this in a way. it's almost like a bad dream i wish i could wake up from, go into the TV room, and there he would be on top of his house with that little smile begging for attention.
never again. i will never hold him again and it is very hard to come to terms with that.

again, i am grateful and so thankful for all your kindness and support. i am glad you were all able to share the joy that my little Trouble had given me.
