Brussel spruits - another entry

I am sick and at home.
Again! Feeling VERY frustrated.

So, this morning, I made lunch for today.
Which I ate immediately because it smelled so nicely and was simply inviting me to finish it while warm. Well, this is the first time I had brussel sprouts as a breakfast.
But... there is always a first time, isn't there?

The usual recipe:
250gr brussel sprouts (cleaned)
150 gr celery sticks (cut)
100gr smoked ham (preferably with some bacon, too), cut in super small cubes
50gr walnuts, chopped

Steam brussel sprouts for 5 minutes, then add celery, too and let it steam for another 5-7 minutes).
In the mean time, put the bacon firstly to faten the frying pan. the add ham.
All together you need to fry it for 2 maximum 4 minutes.

Mix all together and that's it!

Made a dessert, too.

Filled apples
Firslty, you'll need a dish that can go to the oven and be covered.
I advise the the something proof glass dish.
So, in my case, I could place three larger apples.

What I did:
I cut 1/4 of the apple (the top part). Then de-seeded it, and spooned out the rest of the meat. You'll need meat, btw, so put it in the bowl.
Then add 70gr raisins, 5-8 dates, cut in small pieces, 2 spoons tahin paste, lots of cinnamon powder, orange juice and stir it all together.
Oh... Now I rememebred!
I could have put some cardamom, too! For a more delicious taste!
Oh, and some nuts! To be nice and crunchy!
Darn!!! (well, now I know for the next time)
Fill the apples, after being filled, add some orange juice to fill it completely.
Cover the apples with their tops.
Add 2cm water into the dish.
Put it on 175 degrees for 20 minutes.
Do not put more than 175 (I did, as I thought that there was way too much water in the dish - result - they were all squashed and lost their shape)
But were yammi!!!

Dinner, well, I still have the buckwheat porridge from this morning with apple.
So, that'll be my dinner, :D

Chinese mushroom-broccoli soup

And just to start with breakfast (which was at 11.30h for me, lol).
I baked 4 bananas. For the Croatian readers, those are special bananas. They're a bit harder, thicker and longer than the normal bananas we eat.
Although... the normal ones could be baked, too.
Ok, so what I did with bananas.
I halved them. Then added oil in the frying pan (a nice layer) and let it fry for a while. Then I added orange juice (one orange). Covered it and let it simmer. Low heat!!!
In 5 minutes I tuned them to the other side and let bake/simmer in that orange juice.
In the end, i was flipping them all the time, as the bananas tend to burn, lol.
Delicious!

The soup was also very, very nice.
Although I put a bit too less ginger.

So, I had chicken soup from a few days ago (you know I stock my fridge with the chicken soup - always something nice, healthy and warm to eat if I'm hungry).

0.75 l chicken stock
(or 1 liter water with 2 bouillon cubes and let it simmer for 5-7 minutes)
2cm fresh ginger, washed well
1 lemon, sliced
250gr chicken fillet, cut in thin slices
500gr broccoli rosettes
250gr mushrooms, sliced
125gr Chinese noodles
3 spring onions cut in 1cm long pieces

Ok, this is what should be in. I'll write with my slight modifications. :D
Let the chicken stock, ginger and 1/2 sliced lemon simmer slowly for 5 minutes.
Then add sliced chicken (125gr), broccoli(200gr) and mushrooms(125gr) and let it all cook for the next 10 minutes.
In the mean time, cook the noodles (75gr) as recommended on the package.
Two minutes before turning off the heat, add the spring onions, stir it and let simmer.
I added the noodles to the soup and then ate it all!

Now, i think I should put a bit more ginger.
For the rest, it's an easy and quick meal to be made.

Rabbit stew

I made a rabbit stew a few day ago.
It was delicious! Even my guest confirmed. And it had nothing to do with a huge knife I was holding in my hand while talking about the good quality of the rabbit stew.

The recipe I got from Sto napravit sa zecom?. It's in Croatian, so I'll translate, and include my slight modifications.

Ok, the first thing that's been said is that the rabbit HAS to be marinated at least for two hour, especially if it's a wild rabbit.
I presumed mine is Roger the Rabbit (hehehe) and I marinated for an hour.

Boil 3-5l water (mine - 4l) and add there root vegetables you have - pasternak and carrots. Add few grains of black pepper (7), few cloves (5), some nutmeg (I did none), and 1/2dl vinegar or good red wine (I added 1/2dl raspberry vinegar), laurel leaves (2), rosemary (lots, I love rosemary).
When the marinade cools down, place the rabbit in the cool liquid and let it marinate.

As the end of those two hours is approaching, take three or four onions (4) and cut it roughly, lots of garlic cut roughly, too, carrots (4) and parsley and let it fry slowly in oil (there it says half olive oil-half sunflower oil).
Add a laurel leave here, too (2) and rosemary as well.

Now, according to the site, I was supposed to take the rabit out, dry it, roll in the flour and fry a bit.
Instead, I added the rabbit to the frying stuff above, added some water, salt and pepper. Then let it simmer for a while.
After a while I added 1/2 of the marinade, let it simmer for an hour, then added the rest of the marinade, and added a few hmmm... in Dutch is jeneverbessen, in English, no idea!
And I simply let it simmer until I was happy with how much water had evaporated.

It's been eaten with rice and green salad!

I'm such a good cook!

Rice day

Today is a rice day.

Before I start describing, I must say that I ahev made some serious damage, by eating stuff i am not supposed to, or eating too much of the things I am allowed.
So, I'll try to make the photo tonight, to show how my hands look.

And for today, as I've said it's rice.

Breakfast:
This morning i had breakfast of rice cooked in coconut milk (for good hour, as this rice kept being soooooo hard). I used 1/2l milk for 40gr rice.
In the end, I added one orange and squeezed lemon juice (1/2 lemon), to break the fat.
After eating the breakfast, there was grumble in my stomach, for good 2 hours, no pain, no gasses, so I guess, this combination works, lol.

Vegetables

Yesterday I had such a need to prepare and eat vegetables.
So, I thought which colour would suit me... and decided on green and orange.
Went to the shop and made it green/orange/white/pink.

So, here it goes:
300gr broccoli, take the florets only
2 carrots (not too small), cut in stripes
6 white asparagus
60gr small shrimps
cumin seeds
coriander leaves (dry)
red chilli pepper
salt, pepper

Steam vegetables for 10 minutes. Then, after they're nice and soft(ish), take them off the fire.
Take a spoon of oil and fry shrimps for 1 minute. Add 1 teaspoon cumin seeds and continue frying for another 2 minutes. Add vegetables and stir it all together.
Sprinkle salt, pepper, chilli and coriander leaves, and cover for minutes on a very low heat.

Mmm... spicy and delicious!
And only 30 minutes to prepare (ex. peeling and cutting time, but again, I am slow in preparing my food).

Spaghetti Bologniese

Another easy day.
I am only getting into the planning thing (i.e. still very hectic and very much deciding from today to tomorrow what to cook, lol)

Breakfast:
Oat porridge with an orange.

Btw, oat is one of the things i am not allowed. I notice I get bloated (just a bit) and having problem breathing (something that scares me a bit more). But I am still doing it.
I'll have to find another way of preparing and cooking and changing the grains.

Lunch:
40 gr Spelt spaghetti
200gr minced beef
2 onions, cut
7 cloves garlic (chopped)
2 tomatoes (you can add more, I only had two), sliced
2 spoons of oil (any you like)
4 red beet

Cook spaghetti in 0.75l water. When cooked, throw away the water.
Put oil in the frying pan and let it warm up. Add onions and let them fry for a while. Stir from time to time.
When the onions get brownish, add 5 cloves garlic and stir for another 5 minutes.
Then add meat and stir it for a while (it needs to break apart).
Beef is quite dry, so add 1-2dl water, cover it and let simmer slowly.
After 3/4 of water has evaporated, add tomatoes, cover again and let simmer.
Hey, don't forget to stir from time to time.

In the end, 5 minutes before you expect to turn the heat off, add the rest of the garlic, and some oregano powder and some dry rosemary, or any kind of herb you like.

Then, add spaghetti to the minced meat and stir it all together.

Salad: I had grated four red beet, and added 1/2 lemon juice to it. (I like it that way, no salt, oil anything... just lemon juice)

And now another confession: I had 1 plain croissant. And way too many dates (around 20ish).
I simply crave sweet. (must be DMS)

And again writing late.

Pizza

I have decided to start all over again.
Yes, I know I have promised the rest of the story with new developments (i.e. new intolerances).
Let me live in my bubble a bit longer, lol (*not exactly a laughter from the bottom of my heart*). I will do it. Yes, I shall.

Anyway, I have to start my normal diet again, as I have eaten weird stuff lately (including cookies).

Today, I was almost a good girl.

Breakfast:
Oat porridge with an apple and a spoon of cranberry juice.

And then for lunch I had Burger King twister fries (that was the "almost" bit).

For dinner I made pizza.

Now, here was huge work I've done tonight.
I made the dough (i.e. mixed together oat flour and hot water) this morning around 10 o clock and left it to rest.
Then tonight after returning home (had a date), I wanted to bake bread.

I have no idea what I've done, but there was no bread! There was this half liquid mass that just didn't want to get hard and get nice and bread-y. So, finally I added some corn flour (3-4 spoons), and tried again.
And yes, there is my bread.

From that dough I made the pizza dough, baked it for 10 minutes, then added cheese, tomatoes, onions, olives, oregano powder and mushrooms. Put back to oven for another 10 minutes and there it was! My lovely pizza! (even if it would suck I would still find it delicious - I was THAT hungry)
And made it extra spicy with chili peppers.
Mmmmm, yammi!!!

Haven't cooked for tomorrow... And no idea what to cook. That's the worst part.
Hmm, my big plan. Right. Ah!

Wanted to finish this part, but can't.
I met a young guy yesterday (20 years). I am member of one of those social sites (I got the invitation from my nephew who is around that age, ok?) where you have all kinds of people.
Anyway, this young man asked me to come and visit The Hague. He's never been and would like to see it.

Now, those sentences above are my explanation.
Honestly I have no idea why he came. And I gave him a quick tour of The Hague.
The point is that that young man has NO OPINION! Nothing. I asked him about music, fashion, politics, football, stuff I thought might interest someone of that age.
He has no opinion.

Btw, I have never met someone whose Dutch vocabulary is even smaller than mine.
And I am a foreigner. He is Dutch.

I don't know if that's the gender thing, or is it just that I do like to talk and learn a word from time to time.
That young man doesn't know what is Raad van Staat (me neither, btw), and we passed it. Has never heard of Koninklijke Schouwburgh (Royal Theater), has no idea who is Queen Beatrix's mother (me neither, but hey I am a foreigner!!!)

I really don't get it.
Is it a fashion?
Being a sheep and beeee, beeee - following a leader?
Beeee... I have no opinion, beeee about anything.
Beeee... tell me what to think.
Beee... my mind is empty until you tell me what to think and say and have opinion about.

Nah, maybe I was the same way a few years ago when I was twenty (WHO'S LAUGHING DOWN THERE???).
Maybe I was also ok with everything (actually I was). Still, I learned the language. Read the books, watched tv, listened to people talking. Had an opinion, even if it was only mine and never expressed in public (well, except to my Mum).

I don't know. I guess that's part of getting older.
Maybe one day this young man from Roermond will be more opinionated. And articulate.
