This the great pit cooking, the year before we did a huge beef roast, 50 lbs on a spit and it never fully cooked and all the drunks attacked it so we needed a way to keep the fans away fomr the chow!. This was a sort of luau/clambake thing where we built a huge fire on rocks lowered 30 chickens, 4 turkeys, 100 lbs of corn and potatoes and covered it for 10 hours. This is either where we were covering or uncovering it.

Enjoying my 2nd day in Dallas. Check out my, "Texas-sized lunch". And yes, it was DEEEE-LICIOUS!!! :-) My son-in-law took us to this fantastic place called, "Red Hot & Blue". Featuring the 'Memphis Pit Bar-B-Que Rub' technique.
