I went old school this year, technique wise. I have grilled and butterflied and fried and made interesting herbal designs under the skin before, but this one is just thoroughly salted and peppered, buttered, and stuffed.

Yes, I still stuff my bird. Yes, I have read about all the reasons I should not do this. If you stuff it right before it goes into a very hot oven and make good use of a cooking thermometer, you won't die.

Use the BACK of the paring knife and kinda make a peek-a-boo cut, following its natural curve....

Here's the start of the top vein. Whatever you do, don't cut into the arteries, because then.. Blood will seep into the liver, and once cooked, you'll have, black-brown stains everywhere. That, would suck big time, friends.

Just follow the vein, using BACK of the knife until it ends.
