My sister and I were talking about how to make our own dried apples or "apple chips" this past Thanksgiving break.

She sent me a recipe, which I slightly modified for ease. I achieved thin, crispy sweet apple chips that were very tasty, fat-free and effortless.

I took a honey crisp apple and cut it into thin slices with a chef's knife (a mandoline slicer was too thin I thought). Then I soaked them for a few minutes in a solution of 1 qt water, 1/2 cup brown sugar and the juice of 1 lemon. Then I lay the slices in domino fashion on a baking sheet covered in parchment. The domino layout minimized the apple surfaces contacting the parchment or each other. I placed these in a 170-deg-F oven from 10 pm to 6 am. The next morning, Voila! Yummy, tasty apple chips. Some stuck to each other but, on cooling, they broke apart nicely.

I used a Honeycrisp apple for this run. Tonight, I'll use a mixture: Gala, Honeycrisp and whatever else I have.

Curry Cinnamon Apple Chip.

I made a bunch of these when it was cold outside and the heat in our building hadn't been turned on. It was a wonderfully scented way to keep the kitchen warm.

Ingredients:
2 or 3 tart apples (Muji or Granny Smith)
1/4 cup brown sugar
1/2 cup water
1 Tbsp curry powder
1 tsp cinnamon

1. Using a mandoline slicer, slice the apples into 1/8" slices.

2. In a saucepan over low heat, make a simple syup from your water and brown sugar. Add spices.

3. Dip apple slices in syrup and lay slices close together on parchment lined baking sheet.

4. Bake at 225F degrees for 1 hour. Remove from baking sheet and let crisp on wire rack.
