Recipe for preserving capers
If you are lucky, like I am, you too will discover a caper plant growing from a crack in the concrete stairs outside your front door. It grows prolifically during the summer months and thrives on sunshine and neglect. This is one of my garden treasures because the tender new leaves, the buds and seed pods are edible and the flowers are a visual delight.
back to the recipe:
Pick a handful of freshcaper buds + 1 heaped table spoon salt
Disolve salt in approx half a cup of water
Put capers in a clean sterilized jar cover with the salty water(brine) and let stand for 4-5 days in room tempreture.
The capers are ready when they sink to the bottom of the jar.
You can store up to 3 months in the refrigerator.....but make sure they remain in the brine.
*Note: The same recipe can be used for preserving the seed pods as well.
They take a bit longer though - aprox 1 week in the brine at room temperature.
