Naturally Sweetened Spinach Bran Muffins
After researching the terrible effects of processed sugar on the human body and the amount of sugar and other non-healthy ingredients that are in even the "healthy" granola or cereal bars and muffins that my family enjoys eating from the grocery store, i came up with this healthy snack, and they love them!

These bran muffins were so tender and delicate, they practically fell apart when I tried to smear some butter on their insides. None of that cloying, overly-sweet heaviness was evident here—these were light little muffins, and just sweet enough.
Here's the recipe:
Bran Muffins
1 ? cups bran (I used oat bran.)
? cup boiling water
? cup (heaping) vegetable shortening
? cup sugar
1 egg, beaten
1 ? cups all-purpose flour
1 ? teaspoons baking soda
? teaspoon salt
1 cup buttermilk
Preheat the oven to 400F. Grease a 12-cup muffin pan or line with paper muffin cups.
Place ? cup of the bran in a small bowl and pour the boiling water over it. Let stand for 5 minutes, until soft.
Meanwhile, cream together the shortening and sugar. Beat in the egg. Mix together the flour, baking soda, and salt. Add the dry ingredients to the creamed mixture alternately with the buttermilk, mixing only enough to blend. Stir in the softened bran and the remaining 1 cup of bran.
Spoon the batter into the muffin cups and bake for 18 to 20 minutes, until lightly browned.
Makes 1 dozen muffins.

Preheat oven 350f line muffin pan w/ liners
1cup all bran cereal
1 1/2 cups milk in a large bowl set aside for 5 minutes
add 1/2 teaspoon of vanilla
1/4 cup cooking oil
1 egg
mix with a fork.
In a small bowl combine
1 1/4 cup of all purpose flour
1/2 cup brown sugar
1/4 teaspoon salt
3 teaspoon baking powder
1/4teaspoon cinnamon. add dry ingredients into wet.
stir only until wet DO NOT OVER MIX. divide batter evenly into muffin cups. bake 20 minutes
