the secret to this salad my friends is the nice big block of feta cheese at sam's. what a find! A beautiful organic spring mix, organic carrots, tomato from the garden, organic celery, bacon, and cucumbers.
Here is my greek dressing from scratch, but you have to have the feta!
GREEK DRESSING FOR SPRING MIX
BABY LETTUCE BLEND
(makes about 3 cups, original recipe by Kalyn)
1/3 cup lemon juice (I used fresh lemon juice)
1/2 cup mayo or low fat mayo (not fat free)
4 tsp. garlic powder
4 tsp. dried oregano
1 tsp. dried marjoram
1/2 tsp. black pepper
1/2 tsp. salt
2 cups olive oil
Paul also makes his stroganof from scratch, with a combination of :
butter, organic beef broth, pepper, salt, garlic powder, mushrooms, grassfed beef, and a little cream cheese. Yum, the kids love it too!

i made a delicious salad for myself for lunch today. i usually don't have much time to spend preparing meals, so i feel pampered when i can take advantage of it.
this will probably not last me all afternoon because it doesn't have much protein, but that's where a banana with peanut butter will come into play. :)
