Bacon really makes this dish, but I didn't let my potatoes cook long enough. :( I'd still make it again though.

Toasted Garlic and Five Onion Soup

1 slice bacon, diced small
4 tablespoons olive oil
1/4 leek, sliced
4 scallions, sliced
1 shallot, sliced
1/2 white onion, sliced
1/2 vidaliia onion, sliced
1 head garlic, sliced
8 sprigs thyme, minced
1 bay leaf
3/4 cup white wine
3 cups chicken stock
1 small backing potato, peeled, and diced small
1/2 cup heavy cream
salt and black pepper

1. Place a 3 quart chefs pan over medium heat and add diced bacon. Cook until crisp and then remove bacon bits.

2. Add the olive oil, leeks, scallions, shallots, white and vidalia onions, and garlic.

3. Allow the onions and garlic to caramelize, about 15 minute. Stir in the thyme and bay leaf.

4. Deglaze the pan with white wine. Be sure to scrape the fond off the bottom of the pan with a wooden spoon.

5. Pour in the chicken stock and bring the soup to a boil. Add the diced potatoes.

6. Reduce the heat and simmer for 15 minutes or until the potatoes and onions are tender.

7. Puree the soup with a hand held emersion blender.

8. Stir in the cream and adjust the seasoning with salt and black pepper.

9. Garnish with bacon bits and serve hot.

We bought a box of Blue Elephant brand pad thai while in Paris. Blue Elephant is the restaurant/school where I took my thai cooking classes. Turned out fine, but it was pretty expensive for some noodles and a sauce package. In retrospect, I had all the ingredients on hand to make the entire dish.

We all need to be needed, but sometimes becoming Girl friday might amount too much to a reliable meal ticket, or on the other hand gruellingly to kill people with guilt through ones' womanly martyrdom.

We are supposed, always, to be angels. I handicap my perfection by swearing and eating french fries (among other small efficiently alarming sins).

About the only person I've ever met who managed to be an angel was my sainted Mother, whose main "sin" was to drink a bit too much sherry, dress in flapper beads, and dance up a storm for my childhood guests. She had a sense of joie de vivre which I mistook for mortification and embarrassment, as a young teen! Of course, she would hold a ballon between her thighs and parade around with a giant pecker effect, her sense of fun! Looking back, I see how my parents danced and loved (true angels) and I have never taken offense over the dockers blue language.

They were both martyrs and I have a profile as an altruist because of their long-suffering for others.

Since this is all wearing a bit thin, a course like this is pretty appropriate. There are embarassing times when my need to be needed surpasses any actual demand. For instance, I have cooked up a storm on more than one occasion, expecting company like in the old days. At the moment, my husband is paying for the extras (in part) and I realized I was a bit manipulative, really. We are both very generous, but family members have grown and most of them have more money than ourselves and their own lives to lead.

Right to left: Watercress; blue potato sauteed in butter; lobster cooked sous-vide; whipped verjuice; foamed dijon with a band of dehydrated onion coupled with shredded pork belly; all on a band of egg yolk with watercress sauce. The highlight was the verjuice, which was sharp and made of the juice of unripened grapes.

365.272 - Linguine ai Frutti di Mare





Ingredients:
1 tablespoon olive oil
2 cloves garlic, sliced
Red pepper flakes
1/2 cup dry white wine
12 Manila or littleneck clams
10 ounces linguine
3/4 cup tomato sauce
12 black mussels
8 shrimp, shelled (tail intact) and deveined
4 sea scallops, quartered
5 ounces calamari, cut into thin rings
1/4 cup fresh flat-leaf parsley, coarsely chopped

Method:
Boil water in a large pot. Heat oil in a large saute pan over medium heat. Cook garlic until it sizzles. Add red pepper flakes to taste; cook 1 minute. Add wine and clams; cover. Raise heat to medium-high; cook 5 minutes. Add linguine to boiling water. Cook until al dente. Uncover saute pan; simmer 1 minute more. Add tomato sauce. Season with salt and pepper. Add rest of seafood. Cook, stirring, until clams and mussels open, about 3 minutes. Toss with linguine. Add parsley; toss. Divide among 4 bowls.

My amendments:
- no clams, so still do stage one, without them.
- we don't like mussels so we tend to skip them
- this is basically a prawn & camalari dish as I've made it
- this was also made with spaghetti rather than linguine

Tuesday 5th January

Tonight's dinner, seafood pasta, as cooked by me. It's usually a recipe my brother's an expert at, but I thought I'd give it a try tonight and apparently it was good! Well I know it tasted good to me.

And as requested here's the recipe for this really simple pasta dish!

Ingredients
1 good sized shallot
1 large clove of garlic
Dried chilli flakes or finely ground fresh chilli (if you like some heat)
Half a lemon
Parsley
Mixed seafood, anything you want. I've gone for a bag of muscles, prawns and squid rings. Works well with most shellfish and seafood.
Spaghetti

1. Fry a the shallot and clove of garlic. Both finely diced. Fry in any cooking oil until soft. Also fry the chilli flakes/fresh chilli with the shallot and garlic.
2. Add the all the seafood and salt to taste.
3. Cook until seafood's got the flavour of the shallot and garlic then add the juice of half a lemon.
4. Finally sprinkle some parsley over the top (which i didn't have!)
5. Put a generous helping over your chosen pasta.

And there it is. Simple and yum.

The M35A2, AKA the deuce and a half is a 6 wheel drive working machine. It has a White multi fuel engine, and it will burn any petroleum product available accept Av Gas (due to lack of lubrication). We run 50/50 waste motor oil and diesel most of the time, but it'll run on ATF, mineral oil, used cooking oil etc.... It has a 10,000 lb PTO winch and the axles are Rockwells. This is a true go anywhere, do anything kind of truck.

i made pork chops last night, and tried to snap a few pics throughout the process. the lighting in the kitchen (and the lack of decent equipment to compensate) doesn't lend itself to good photos.

i didn't get any pics of the finished product because the rice i cooked got screwed up, and i was scrambling to fix it/come up with another option (instant mashed potatoes for the win!). they were pretty tasty for a first attempt at the sauce recipe i used (a sweet ginger sauce made with honey, soy sauce, fresh ginger, onions, and garlic...mmmm).

We realized tonight that of all the cooking magazines we get, we seem to make things from Saveur the most. We usually don't make a whole meal of the recipes, but we did tonight: the dinner was of three of the Classic Roman Food dishes: the sweet and sour glazed pork chops (our first grilling of the year), gnocchi alla Romana (they were really light and fluffy), and sweet stewed peppers (peperonata).

Washington State University, for years, had a student fire department. We had four fire trucks and an ambulance. We were responsible for ambulance duty on campus and helped out the city of Pullman at times with our ambulance. We were well trained, lived in the fire house, got a dollar a day pay, plus room and board. We had our own cook (Mrs. Erickson), who prepared meals for us during the week. There were four full time men, including the chief (Chief Pence), who were at the station weekdays or when needed.

We also had three individuals who perfomed engineering and troubleshooting tasks on camps (they are the three in the front row of this photo). During my tenure, we didn't fight any major fires but we did go on many ambulance calls I would just soon not think about again.

Our bunkers and suspenders were bright red and we all wore yellow sweat shirts with our fire station mascot (Snoopy leaning on a fire hydrant). I lived in the fire station my junior and senior year. A good summer on an Alaska fishing boat one summer, all helped me pay for the large majority of my four year college expenses.

There were some wild times in the student fire station as well. Two of us decided we needed a new "keg", like the one shown in the center of this photo with our mascot painted on it. Well, we weren't too successful in "liberating" one from a beer distrubutor late one night in Lewiston, Idaho. What seemed like a good idea at the moment (borrowing an empty keg from behind the distrubutor, late at night in a small Austin Healy Sprite), landed the two of us in jail for the night in Lewiston. The only time I got in trouble with the law.

What is worse, is that our bail was $100, which I didn't have. I got the customary ONE phone call from jail, and I called my Dad....collect. I knew what was coming. Everytime I called my Dad collect, the operator would ask him if he would accept a collect call from his son in Pullman, Washington. He would ALWAYS ask me "are you married or in jail?" and when I would answer "no", he would always laugh and say "speak to me son".

Well on this occasion, when we went through our phone routine and I answered "yes", his mood changed. He said "well I know you aren't married, so what did you do?". He paid my bail and my friend's Dad put up the bail for him. We would later appear in the local court and were basically given a light fine, for "petty larceny" for the stolen empty beer keg heist. The night in a jail cell though, had been a sobering experience (pun intended).

To pay my Dad back the $100 bail money, I took a job at the Washington State University poultry farm; gathering eggs; shoveling chickent poop; and artificially inseminating recalcitrant turkeys. I never did put that job experience on any resumes. The moment I earned exactly $100, I gladly quit that job. Part of the lesson.

For those of you who are familiar with Paula Deen and/or her cooking show, this is her restaurant! Her name is quite well known here in Savannah, and everyone is always giving great reviews about her restaurant.

My mom and I got the pleasure of eating there on her birthday, which was cool. The people standing outside are in line making reservations.

Keep in mind: that line stretched all the way around the block. My mother and I were in that line for an hour and a half, but it was well worth the wait!! xDDD

1: I LOVE POKEMON!! When I was a kid, my dream job used to become a pokemon master xD And my favorite pokemon are Electrike, Charmander, Gallade, and Umbreon.

2: I don't have a cell phone, but I use the home phone as my own. Since no one else uses it. Everyone in my grade finds it hilarious that I use my home phone as my main communication source. -.-"

3: I LOVE MATCHING PAJAMAS!!! I usually wear a tank top and a pair of sweat pants though. Which reminds me, I should totally go shopping for matching pajamas.. The pair I happen to be wearing are green with penguins! :D

4: Cinnamon Toast Crunch = Daily Breakfast. Cheerios and Cookie Crisp are my alternative choices. I even bring it with me to school when i get hungry during class. :P

5: VANS! I always feel like a poser when I wear them, but the pair that I have are so cool! And they go with every outfit I have, so I wear them practically everyday.

6: Turtles are my favorite animals ever. If I were to change into an animal, I would totally be a turtle. Why? Cuz they live longer and are practically indestructible. The only downside is that I'm not that fast. But who needs speed when I got an indestructible shell?

7: I'm very self conscious about myself and I'm a total perfectionist. So every time I see a mirror, its second nature for me to look at myself and see if there are any imperfections about my current outfit or hair.

8: I have the tendency of cutting my hair every 2 weeks or so. This habit gets quite annoying, considering that I'm trying to grow out my hair. -.-" I was pretty impressed with myself when I didnt cut my hair at all during the whole summer. Then when school started...... -.-"

9: I have never used photo shop. Ever. Paint, Picasa, and Picnik are my main editing sources :P

10: When it comes to music, I can listen to anything. From death metal to classical. Pop to country. Acoustic to Punk. Beatles to All Time Low. Killswitch Engaged to Beethoven. Sum41 to Jacks Mannequin. David Cook to Kelly Clarkson. You get the point :P

ShelterBox Response Team member Arnold Kelly with a family who recieved a ShelterBox in the Philippines. ShelterBox has been working in the Philippines since mid-October, after super-typhoon Megi struck the country. On Tuesday, December 7, ShelterBox tents were distributed in the San Lorenzo and San Rodrigo hamlets set in the hills to the south of Ilagan where families continue to be hit by frequent rain and flooding. ShelterBox Response Team (SRT) member David Hatcher (UK) said: ‘Many of the families we helped yesterday are trying to rebuild homes shattered by the super-typhoon while others are strling to find the means to give shelter to their children. ‘The people who live in these tiny hamlets off the beaten track were amazed at the gift of ShelterBox tents, blankets, cooking utensils, water carriers and other basic but essential kit that we were able to deliver to them. It seems the whole of the Philippines is looking forward to and preparing for Christmas which they take as a very uplifting season.’ The UK based disaster relief agency has sent emergency shelter and lifesaving supplies for up to 4,000 people to the Philippines since the super-typhoon struck, with SRT members from all around the world working in the country. Beach + Surf Trip

I was so worried + overprotective of them that I wanted to set them free. Growing up as a kid on the island of Guam I used to collect hermit crabs from the beach. There were big ones + there were little ones. I kept them in a brown Ovaltine canister filled with sand + would feed them cold cooked rice. Some of them needed bigger shells to move into once they outgrew their own shells, but I didn't know about that till it was too late. Eventually, they all died. Years later when we moved out of our house, I found some hermit crab shells + exoskeletons in other parts of the house. Apparently, they escaped + didn't survive due to lack of food. :( I learned my lesson.

My mom got upset that I kept them as pets because they were stinky from the beach water, so when my cousin Ching brought them back with us to Olongapo she didn't want his pets kept in the ancestral house + put them out on the porch. I replaced them in a bigger plastic tub with a lot less water [they didn't like being immersed] so they weren't climbing all over each other. Ching wasn't looking after them + even forgot about them at one point so naturally I adopted them + fed them pan de sal crumbs. At that time, some had already died + the remaining crabs were not as energetic as they were in Pundakit. I told J that I had plans to kidnap them + return them to sea because I didn't like seeing them strle outside of their environment. I didn't think Ching would notice anyway.

My cousin Joel had contributed a tiny white sand crab to the aquarium as his pet. Joel, Ching, + I were looking at the aquarium a few days after we got back + we couldn't find the little sand crab. We dug around the sand to see where it was + when we found the crab it was dead + had turned into a dull grey. We were all upset + Joel said in Tagalog, "Aww, look at it. It's not bright anymore." He said that he was going to bury it in his dad's garden, which he really followed through with. A half hour later, he showed us the little crab's grave site + even put up a cross tombstone made of twigs. :)

When our trip was coming to a close, I woke up one morning + J told me that he went to Subic Bay to bring the remaining hermit crabs that were still alive back to the beach for me. I know they are tiny little things, but it really meant a lot that he did that for me + for them. :) Hopefully the sea will take them back to their home in Pundakit.

I'm feeling much better today. I'm not quite sick anymore. Yay.
We didn't have school today, so we only had to teach one lesson at English club. It was ok, but our Friday group is crazy. We have four little boys who are just insane. They have so much energy, and they do really gross little boy things. Sometimes one will burp and then the next one will burp and soon they will all be burping. Sometimes they are nose pickers. Today they were biting their toes. I was about ready to throw up. I guess they learned something though. We figured out that if we get them to compete in a game against one another, they will actually learn. We ran a relay race today along with a game where we sit in a circle and I yell out a word that is on one of the cards in the circle. The first one to slap the right card keeps it and they try to collect the most cards. Once we get them to play fair and stop cheating it works pretty well.
In other news, Kumi is gone. Kumi, we really miss you at English club. She was good at controlling the kids, and when they didn't understand she could explain it in japanese. Well, if we speak japanese with the kids, it will defeat the purpose of our club because they will just speak to us in Japanese. Does someone, anyone understand this point???
After english club we made our weekend plans. We will cook dinner for Kumi tomorrow and then go to Tomo's birthday party. I'm turning into quite the party girl.

Serves 1

IngredientsAmount

Chicken Breast // 5 ounces
Yellow Onion, Diced // ? cup
Garlic, Minced // 3 cloves
Portobello Mushrooms, Diced // 1 cap
Spinach, Washed, Stems removed // 2 cups
Provolone Cheese, Slices* // 3-4 slices
Seasoned Flour* // 1 cup
Chicken Stock* // ? cup
Salt and Pepper // To Taste

Method of Preparation

1.Preheat oven to 500°F
2.Pound/butterfly chicken breast until about ? inch thick
3.Dredge chicken in flour and set aside
4.Heat oil in a saute pan
5.When oil starts to shimmer, add chicken, onions, and mushrooms
6.Cook until chicken is golden brown on one side
7.Add garlic and deglaze with chicken stock, and remove from heat
8.Lift out chicken, add spinach, and place chicken raw side down on spinach
a.Try to tuck spinach under the chicken as much as possible
9.Top with cheese and place in oven for 5 minutes or until cheese starts to brown slightly
10.Serve with pasta

*Substitutions
1.Mozzarella or cheddar cheese can be used instead of provolone
2.Seasoned Flour has 1teaspoon of each of the following: salt, pepper, garlic powder, and paprika
3.You can also use white wine in place of chicken stock
4.Sprinkle chopped bacon in with the cheese for some extra flavor

Tom and I started writing letters to one another in January 1990. We finally went on our first date on the 31st of March 1990, to see Cinema Paradiso. Apart from a brief argument about who would pay for the cinema tickets (he paid despite my feminist tendencies), we had a wonderful time and didn't notice the Poll Tax Riot devastation as we walked back through London.
Above are snapshots of the letters from Tom to me. As I browsed them again last week, I found a photo of the moon, some shadow shots and a rather good postcard by Rene Burri. I forget that we were already talking photography all those years ago. And rather a lot of maths too...
