We all need to be needed, but sometimes becoming Girl friday might amount too much to a reliable meal ticket, or on the other hand gruellingly to kill people with guilt through ones' womanly martyrdom.

We are supposed, always, to be angels. I handicap my perfection by swearing and eating french fries (among other small efficiently alarming sins).

About the only person I've ever met who managed to be an angel was my sainted Mother, whose main "sin" was to drink a bit too much sherry, dress in flapper beads, and dance up a storm for my childhood guests. She had a sense of joie de vivre which I mistook for mortification and embarrassment, as a young teen! Of course, she would hold a ballon between her thighs and parade around with a giant pecker effect, her sense of fun! Looking back, I see how my parents danced and loved (true angels) and I have never taken offense over the dockers blue language.

They were both martyrs and I have a profile as an altruist because of their long-suffering for others.

Since this is all wearing a bit thin, a course like this is pretty appropriate. There are embarassing times when my need to be needed surpasses any actual demand. For instance, I have cooked up a storm on more than one occasion, expecting company like in the old days. At the moment, my husband is paying for the extras (in part) and I realized I was a bit manipulative, really. We are both very generous, but family members have grown and most of them have more money than ourselves and their own lives to lead.

Right to left: Watercress; blue potato sauteed in butter; lobster cooked sous-vide; whipped verjuice; foamed dijon with a band of dehydrated onion coupled with shredded pork belly; all on a band of egg yolk with watercress sauce. The highlight was the verjuice, which was sharp and made of the juice of unripened grapes.
