Cheesey Chicken Florentine
Serves 1

IngredientsAmount

Chicken Breast // 5 ounces
Yellow Onion, Diced // ? cup
Garlic, Minced // 3 cloves
Portobello Mushrooms, Diced // 1 cap
Spinach, Washed, Stems removed // 2 cups
Provolone Cheese, Slices* // 3-4 slices
Seasoned Flour* // 1 cup
Chicken Stock* // ? cup
Salt and Pepper // To Taste

Method of Preparation

1.Preheat oven to 500°F
2.Pound/butterfly chicken breast until about ? inch thick
3.Dredge chicken in flour and set aside
4.Heat oil in a saute pan
5.When oil starts to shimmer, add chicken, onions, and mushrooms
6.Cook until chicken is golden brown on one side
7.Add garlic and deglaze with chicken stock, and remove from heat
8.Lift out chicken, add spinach, and place chicken raw side down on spinach
a.Try to tuck spinach under the chicken as much as possible
9.Top with cheese and place in oven for 5 minutes or until cheese starts to brown slightly
10.Serve with pasta

*Substitutions
1.Mozzarella or cheddar cheese can be used instead of provolone
2.Seasoned Flour has 1teaspoon of each of the following: salt, pepper, garlic powder, and paprika
3.You can also use white wine in place of chicken stock
4.Sprinkle chopped bacon in with the cheese for some extra flavor

Tom and I started writing letters to one another in January 1990. We finally went on our first date on the 31st of March 1990, to see Cinema Paradiso. Apart from a brief argument about who would pay for the cinema tickets (he paid despite my feminist tendencies), we had a wonderful time and didn't notice the Poll Tax Riot devastation as we walked back through London.
Above are snapshots of the letters from Tom to me. As I browsed them again last week, I found a photo of the moon, some shadow shots and a rather good postcard by Rene Burri. I forget that we were already talking photography all those years ago. And rather a lot of maths too...
