You can't really see it, but in this picture I'm sauteeing fingerling potatoes in butter on a two-burner electric cooktop. Now, electric cooktops are distinctly of the suck, even if they are in an adorable tiny Paris kitchen. I'm also washing haricots verts in the sink, which will soon join the potatoes in a little saucepan (with more butter, and salt and pepper), so that the skillet can be used for the fish.

Been fiddling around in the kitchen lately and I decided to start posting some of my foods on here. My first one is my Chicken Onigiri that I made with my roommate.
Ingredients:
Short grain Rice (we used about 1 1/2 cups)
Water equal to the amount of rice you are cooking
Boneless chicken breast
Dried seaweed sheets
Salt & Pepper
Red pepper flake (Optional)

Start by putting the rice in a medium sized sauce pot. Run cold water over the rice. This will make the water cloudy. Empty the water out attempting to keep the rice in the pot. Repeat until water is less cloudy.
Pour the equal amount of water to the rice into the pot and set the stove to medium. Let it reach a slow boil, reduce heat and let the rice cook for 15-20 minutes.
While the rice is cooking, prepare the chicken. We used a George Foreman grill for this, but you can prepare it however you like. When the chicken has finished cooking, cut the chicken into small to medium sized pieces. Store until the rice has finished cooking.
After the rice is done, you will need to let it cool. You can prepare the Seaweed while waiting. cut the seaweed into strips about 3/4th of an inch wide and then cut them in half lengthwise. we used 1 sheet for our riceballs.
By now the rice has cooled, so you can retrieve the chicken. Wet your hands and scoop out some rice and put a piece of chicken in the center. In your hands, sprinkle some salt and pepper, this will let you work the flavors into the rice.
Shape the rice ball however you like. Wrap some of the seaweed around the base pat it down with water so that it will form with the rice easier. you can sprinkle red pepper flake on top for spice.
That everything!! A really simple meal at a good price. The rice was $3.09 for a 2lb bag. the seaweed was 1.99 for 10 sheets and the chicken was $5.99 for 3 lbs..

2 boneless, skinless chicken breasts cut into strips
1/2 cup buffalo chicken wing sauce (or to taste)
1 tbsp blue cheese dressing
1 cup chopped lettuce
1/4 cup grated cheddar cheese
soft flour tortillas

Cut chicken breasts into strips and then toss with the chicken wing sauce. Cook in a preheated contact grill (aka George Foreman Grill) or in a skillet with a drizzle of oil until chicken is cooked through. On a flour tortilla spread the blue cheese dressing, top with lettuce, cheddar and cooked chicken. Fold up the bottom and roll the wrap from left to right (or the opposite I guess if you're a lefty). This should make more than enough for more than two wraps, I 'm guesstimating.

Recipe Notes: I've made this a couple of times so far and sometimes I use the already cut chicken fillets. The last time they had marked down turkey scallopini and that worked out just fine as well. This a great dish as it allows for individual personalization. For example Mike likes tomato, but I have to be in the mood for tomato on a sandwich or wrap. Actually I usually just grill the chicken or turkey and we build our own. You might notice on this one I used a cheese slice because Mike didn't want any and I didn't feel like grating some just for me. This is an easy meal with the kids, Abby gets cheese, mustard and whatever lunch meat we have. I then usually grill it, quesadilla style for her. Maya takes hers with just peanut butter. So everybody still eating something different, but still kind of the same. Good news for the Mom who makes multiple dinners most nights.

One of the nice things about the local organic grocery is it sells fresh noodles by the pound. I snagged some whole wheat lomein and began cooking in my head from there.

2 pounds pork, cubed
1 T ground ginger
1 t ground nutmeg
1 t ground allspice
2 T sesame oil
1 t salt
1 t black pepper

Vegetable oil

1 large piece fresh ginger, minced
1 onion, minced
3 large cloves garlic, minced
1 jalapeno pepper, sliced

1 package dried shitake mushrooms

1 qt chicken stock

1)Toss pork in spices and oil. Allow to marinate for at least 30 minutes.
2)Brown pork in vegetable oil in batches.
3)In the same pan you cooked the pork, cook onion, garlic, ginger and jalapeno until onions are translucent.
4)While onion cooks, refresh mushrooms in 1/2c of the chicken stock.
5)Mix pork and aromatics in crock pot with the rest of the chicken stock. Add mushrooms refreshed mushrooms.
6)Braise for 3 hours at least.
7)Serve over rice or as in my case, boil up some fresh lomein from the nice Korean grocery down the street and serve it on that. Drizzle with some soy sauce.

Chicken breasts
juice of one lemon
2-3 tbspns of Smoked Paprika
3 springs fresh Rosemary
Salt
Pepper

Rinse chicken and pat dry
place in bottom of crock pot
pour juice of one lemon over chicken
sprinkle liberaly with paprika
salt and pepper to taste
top with rosemary sprigs

Cook on low 3-4 hours until done

It was ok but its got too much paprika for my taste.
I made some brown rice to go with it.

For thousands of years, homemakers around the Mediterranean – food-driven by necessity, not by choice -- have used nothing more than sun and salt for curing. Given enough time, a simple brine can remove the bitterness from olives and give them a ripe, balanced, bracing flavor which is what I am doing with the darker half of these Lucques (pronounced "Luke")

Cultivated only in the West of Languedoc-Roussillon, Lucques have a smooth curve and pointed tip. Its pulp is firm and crunchy with a delicate flavor like no other. It is gathered green from September to mid-October. It is an excellent table olive, but not great for cooking as it doesn’t hold up to the heat. Some foodies consider Lucques the best green table olive in the world.

Olives ripen over several months, going from green in late summer and early fall, to maroon in late fall, to black in winter. Olive trees can be laden with olives at three stages of ripeness at one time, in varying proportions according to the time of year, that is why it’s best to hand pick them. If you wait for them to shrivel and fall they have already lost most of their fleshy flavor.

Green olives that are lye-cured or cured in potash in the old traditional way (green ones lend themselves best to that method) can be the mildest of olives; lye extracts the glucosides and other water soluble flavors from the fruit. After lye curing, flavor must be added in the form of a salt brine or a marinade.

These olives can also be used to produce a very good olive oil, but the oil is very hard to extract from them so it commands a high price. Just this morning I was telling my sister that I was not going to do olives this year; last year, I picked a lesser quality type and far too late in the season (as they get black and old they loose their flavor). The ones I cured last year were too small to make it worth the trouble. But then today, my mind was changed when I saw on government property a Lucques olive tree laden with green beauties. Big, full, plump olives as wide as my thumb. The lye is cooking on the wood stove; we lit our first fire tonight. Picked through the basket and got two liters of perfect green ones which I will do a lye bath and then brine; I am salt brining the darker olives (4 liters) directly. I might just go back for more. Lucques are my absolute favorite olive in the world.

All of Normandy’s mussel producers market the mussels under the collective national brand Moules de Bouchot, which was registered in 1994 and guarantees a method of culture that will produce high-quality mussels.

1. What name do you go by?

2. How do you identify ethnically?
I identify myself as a young Eritrean woman.

3. To what extent does your ethnic identity influence your character, if at all?
Well I don’t my ethnic identity influences my character as much as it would have if I were to have been brought up there, however, there have been aspects of a typically Eritrean upbringing that have been present in mine, for example, a strong emphasis on ambition and striving for success, gender appropriate behaviour (being well kept, lady like and a good cook) compassion, generosity and hospitality. My ethnic identity undoubtedly makes me aware of the topic of race and I am forever questioning its significance in society. I think my ethnic identity also allows me to think outside the box of western culture that can sometimes only allow you to see the world from one perspective.

4. Describe a particular incident where you have encountered racism. Keep in mind the definition of racism that I am using is broad. Therefore a racist incident is not necessarily something that should shock and disgust readers but also perhaps something that is very subtle and not overtly racist, but had an impact of making you feel different; othered e.g. someone touching your hair, being questioned about your ethnicity, etc…
Well I think it is tricky to say whether the person commiting the act was intentionally being racist or just ignorant, but I guess the two work hand in hand! When I first came to this university someone called me a rude girl. I found this absolutely hilarious because we never use that term amongst my circle in london, but heard it used in primary school when I was about ten. Additionally, anybody that knows me would not use that term to describe me. Don’t get me wrong I occasionally use slang and can be rude sometimes but I don’t think these traits are ‘rude girl’ specific. I asked the person what they meant. They said oh lots of people in London are rude boys or rude girls and listen to R&B and stuff. That didn’t answer my question so I looked ‘rude Girl’ up in a dictionary and found ‘rude boy.’ It was a term used to define a lawless urban youth in Jaimaica. I don’t think I fit that description somehow. I am a law abiding citizen, I am not Jaimaican and am twenty one (not a youth). A few days later I told the person that called me a rude girl what it meant and they were quite surprised. So I guess it was partially ignorance. I personally think she felt that she had to categorise me, and that her limited encounters with black people meant that she only had the negative media stereotype of black people to go by. I know my opinion here is bound to provoke a reaction but this my view and I’m entitled to it. I feel that talking about Racism offends people but questions need to be raised about why this is. Moreover, I am delighted that an English dictionary has become more inclusive and is describing aspects associated with other countries and cultures, but would be interested to see how easy it is to find many postive features associated with Jaimaica in a dictionary.


5. How do you feel your oppression as a woman of colour differs from a white woman's experience?
Well I believe that many feminist accounts cover issues that may affect women from all ethnicities, but take it for granted that the inequality faced by black women can be equated with that of white women. For example, a working class white woman and middle class white woman’s experience may differ significantly. The financially able middle class woman might enjoy more advantages due to a number of attributes such as those associated with the ‘right’ culture and affluence. Although I am against the whole concept of class, I find that class is more irrelevant when you are not white British. You are black so it doesn’t really matter because you are an other, outside the dominant culture. You might like only African music and not go to art galleries but go to Africa, but when you are from there you are not seen as cultures in the oh so British way. When it comes to finding a job I think that you have to prove that you are twice as competant as your white counterpart because you are not the norm, you are another. Its only right to hire someone who is from the country





6. Do you feel comfortable identifying as a woman of colour?
Definitely.
7. Do you feel there is a problem in homogenising women as one oppressed entity and not acknowledging that women's oppression differs depending on your race, class, disability, sexuality?
Yes I think my essay above indicates why.

8. If yes, do you think the term woman of colour could mobilise a new radical political agenda, where we understand our experiences as different from other women?
Yes but it would definitely be radical. There would be questions raised about the status qua and those in power despise that because they are predominantly resposible. It is extremely easy to discuss gender inequali

I hadn't intended this to be 2-day soup but the homemade stock took overnight which I didn't expect (I should read instructions more thoroughly).

6c Chicken Stock (recipe below or use low-sodium store bought)
1 Yellow Onion, diced fine
2 Carrots, peeled, halved, sliced thin
2 Celery Ribs, sliced thin
3tbsp Fresh, Flat-Leaf Parsley, chopped fine
1 Chicken Breast (~1/2lb)
4oz Egg Noodles
S&P

Bring chicken stock to a medium simmer (almost boiling) and add the whole chicken breast. Simmer until breast is cooked until no longer pink inside (about 10-12 minutes). Let chicken and stock cool (wait about 30 mins) and remove the chicken. Cut in 1-inch cubes and set aside.

Return chicken stock to medium simmer and add onion, carrot and celery and simmer until veggies are beginning to soften (about 10 minutes).

Add chicken, 2 tbsp of the parsley and the noodles and cook until the noodles are ready (about 5-8 minutes). Season with Coarse Salt and Coarse, Fresh Ground Black Pepper. Top with a pinch of chopped parsley.

Chicken Stock Recipe

4 fresh, flat-leaf parsley sprigs
1 fresh thyme sprig
1 bay leaf
6 lb chicken necks and backs (I use the wings and drumsticks too)
3 celery stalks, halved
3 carrots, peeled and halved
2 yellow onions, quartered
2 leeks, white and pale green parts, rinsed and sliced

Wrap parsley, thyme and bay leaf in a piece of cheesecloth and tie with kitchen string to make bouquet garni.

In a large stock pot add bouquet garni, chicken parts, celery, onions, carrots and leeks. Add enough cold water to cover the ingredients. Slowly bring to a boil over medium heat. Reduce heat as low as possible and simmer, uncovered for 4 hours using a spoon to skim off foam that rises to the top. Adjust seasonings by taste.

Strain stock thru a fine mesh into a heatproof container and discard the solids. Cover and refrig overnight. Skim off congealed fat and freeze in 1tbsp ice cube trays (4tbsp = 1/4 cup).

Makes about 10 cups.

Ingredients :
1 whole chicken breast meat (cut into 1.25cm cubes)
3T corn oil
6 dried Chinese Mushrooms (soaked to soften, stems discarded & diced)
1 onion (peeled & diced)
1 can young corn (425g) – diced
2 green capsicum (diced)
1 carrot (medium) – peeled if desired, diced & parboiled)
90g cashew nuts (roasted)
2 sprigs coriander leaves (for garnishing)

Seasoning :
1t sugar
1t sesame oil
1t salt
1t rice wine
1t cornstarch
1/2T corn oil

Sauce (combined) :
250ml fresh chicken stock
2t oyster sauce
1t light soy sauce
1t sesame oil
1t rice wine
1/2t sugar
1/2t salt
1T corn flour

Method :
(1) Into a mixing bowl, put chicken cubes & seasoning ingredients. Mix well & leave for at least 30 mins
(2) Heat 1T oil in a kuali or wok. Stir-fry mushrooms for 1 min & dish out
(3) To heated kuali, add seasoned chicken & stir-fry until cooked. Remove & wash kuali
(4) Heat 2T oil in a clean kuali. Fry onion pcs until transparent & fragrant
(5) Return fried chicken & mushrooms to kuali, then add young corn & stir-fry for 1 – 2 mins
(6) Add green capsicums, carrots & cashew nuts. Stir in sauce ingredients
(7) Dish out & serve hot, garnished with coriander

For the Sauce:
1 jar Ragu Double Cheese Sauce
1/2 lbs. Mozzarella cheese, shredded
2 tsp corn starch
1.5 cups Ricotta cheese
2 tbls butter (I use Earth Balance buttery spread though)
1/3 cup milk
1/3 cup diced ham

Preheat oven to 350 degrees F

1. Toss the Mozzarella cheese in the corn starch until well coated. It will help prevent stringy cheese when melting.
2. In a pot, melt the butter and turn to medium heat. Add the mozzarella, ricotta, and milk. Stir to prevent the bottom from scorching
3. Stir in Ragu Cheese Sauce
4. Throughly heat through, add ham.
5. simmer for 6 minutes, stirring every minute

For Noodles:
1 lb dried elbow noodles
pinch of salt
3 quarts water

1. Boil water, add pinch of salt
2. Add noodles, cook until al dente
3. Strain


In a 13 x 9 baking pan, pour in the noodles followed by the sauce mixture. Stir until cheese sauce is evenly distributed in the pan.

Cover with foil and bake for 25 minutes. Make bread crumb topping in the mean while


For Topping:
2 cup Italian bread crumbs
2 tbls butter (or Earth Balance)

1. Melt butter in a pan then toss bread crumbs until evenly coated
2. After noodles and cheese sauce has been baking for 25 minutes, remove foil and evenly distribute bread crumb mixture.
3. Bake another 10-15 minutes, until crumbs are golden brown.
4. Let rest for 5-10 minutes.

Serves 9 hefty portions

Ok, so. I browned ground beef, and drained most of the drippings. Then I added chopped onions and garlic and cooked till slightly browned. I added Marsala wine to cover and simmered, covered, until the meat had absorbed most of the wine. I added more wine and simmered uncovered until the wine was reduced. Then I added my favorite tomato sauce. (Homemade Leftover Marinara Sauce or even Ragu. Whatever you have.) I usually add more basil and oregano too. Simmer over low heat as long as you like. The longer, the tastier.

Preheat oven to 350

Boil water, then add salt. Cook Ziti (Yes, I KNOW this is Penne) about 4 minutes less than the package says. Drain well. Toss the pasta well with the sauce and remove from heat.

In a small bowl, mix 16 ounces whole milk ricotta, 1 egg, 1/3 cup parmesan, salt, pepper, dried basil and parsley.

In large round baking dish, layer half the pasta. Top with the cheese mixture and spread evenly. Top with remaining pasta and pat down evenly. Cover and bake for 40 minutes. Uncover and bake 15 minutes more, to caramelize pasta on top. Top with shredded mozarella and put under the broiler for 3-4 minutes to brown and melt cheese.

Let sit for 15 minutes before serving. Yum. Good.

This is my sister, Sandra, also my very good friend. We talked every day as I was driving home from work, or while I was cooking dinner waiting for my wife to get home from her job. She had taken up scuba diving in January of 2003 and was planning a trip to the Cayman Islands with us in December of 2003. We had gone to a local dive site on November 22 to test out some new gear. We did one dive and came up and the weather had turned real bad so we decided to head into town for lunch. We made it about 2 miles and some how she lost control of her SUV, flipped it 2 1/2 times, ejecting her and her best friend from the car and killing them instantly. I had to cover them both up in the field, and then call my Dad and tell him what had just happened. It was the hardest thing I have ever done in my life. This picture is almost angelic to me, and I found it on an SM Card about a year after the accident. She is in a better place now, but I still miss her greatly.

Because that is how The Husband described the salad when I asked him what he thought of it -- it was something he might think of ordering in a restaurant, but not something he expected to eat at home. I am both amused and offended :)

Ingredients: Organic garbanzo beans (chickpeas), romaine lettuce, grape tomatoes, and cucumber. Conventional olive oil, red wine vinegar, red onion, feta cheese, parsley.

“I am officially married; I have eight children here with me the others live elsewhere. I have ten children in total..
When it rained there was a lot of grass. The animals were healthy and they would produce young ones. There was plenty of milk, we even kept some dried. Women kept animal fat in containers for cooking. There were wild fruits everywhere. That was when people used to get married, usually at night. There would be traditional dancing all night long and during the day. Young men, old men, young ladies, even women. We would dance from one homestead to the next. Each homestead would cook a goat or even a camel. Those were good times there was lots of happiness. In those days god was near. Nowadays god is far, he brings no rain. .
I am living in the worst time of my life. We are poor because the season is always dry. Everything dies, every day, every day, every day. For me the world has changed for the worse. We are living with a lot of uncertainties - no water, no food. It used to rain even when the grass was still green. It was never dry like this. Now maybe it rains for a few minutes or a few hours but the earth is too dry nothing can be absorbed. This kind of drizzly rain is useless. If you look at the ground it is not even wet. You can tell whether the rain will be good or bad by looking at those mountains. You see that kind of smoke or fog? That is a symbol of the dry season. That fog needs to clear before the big rain clouds can come, then the skies can open and it will rain like it used to for days. It used to rain so that floods and rivers appear. But that will not happen until that fog disappears..
It used to rain for days. In this community there are people called rain makers. In the past when we had a prolonged drought all the men would go and see the rain maker. We would sit under a special tree in the mountains and prayer for rain. But god seems that he has become too far away and these traditions don’t work anymore. .
Back then we had everything, even wild animals were everywhere. There were antelopes, ostriches, wild cats, even lions, elephants, buffalo, leopards, everything. The last time I saw a lion it was 1971. By 1971 we could not see any animals here. The antelope remained around for a while but by 1988 the antelopes also started dying. The wild animals found no grass here, just dust. There was no shade for them. They began slowly dying of hunger. Those that could walk began walking away. They went to places where they could find shade and water. .
I miss those animals very much. The environment is not complete without them. They even used to come to our homesteads sometimes. I dream about the old times when I used to see them but I don’t expect to see them again around here. In my dreams I see the animals running away from me, playing in some isolated place or shading under a tree. These are dreams that maybe your goals are getting lost..
The ostrich was my favourite. You could walk somewhere and find an ostrich egg and along the way we would find some feathers and adorn ourselves with these. Some of the women’s jewellery is made with the shell of the ostrich egg. We would carve the shells to make necklaces and belts for the ladies to make them look beautiful. .
This is a feather that I found. I have a special container for the feathers to keep them dry so that nothing can destroy the softness of the feathers. I have kept few feathers - that’s enough for me. I wear them at special occasions..
Sometimes I have dreams that someone is coming to fight me, someone who has done me some wrong or I dream that someone is coming to steel my goats. .
Sometimes I dream of dancing the traditional Turkanan men’s dance. I was dancing when I was young, even now I can still dance if there is a wedding. I have not given up yet. When I dance like that I feel lighter. I feel good. But when I go to rest later I have aches everywhere. We used to dance and sing all the time. The pride of a man comes from defending his livestock and their pasture. The songs the men used to sing were about fighting and cattle raiding. We sung to praise our strength. The women would sing and dance to praise the men No one is singing or dancing now because everyone is sad that they have no food..
Sometimes I dream about food. I dream that I am eating, eating, eating. Sometimes sogem, sometimes meat sometimes milk but when I wake up it is not there and I realise that it is just a dream. I may grow old and die before my time because of going hungry. It’s hard to sleep when you are hungry. You get no peace. You spend all night shifting around. Everywhere aches. You try this side, that side, two minutes on your back. When you sleep on your left side the other side is sore. You can hear your stomach rumbling all night. When the day breaks, I will look around and see if there is any

Thailand - Land of Scares. Today: Ubon Ratchathani province, NE-Thailand. I am on a straight stretch of the road, and I see the other motorcycle is still behind me.

In the black Isaan night, the motorcycle in my back has been following me for seven kilometers now. We are in the middle of nowhere. I am sure they have seen the farang in the lights at Pha Thaem national park and will catch up with me when they wish so. Then, me, the farang, will have to part with Honda, wallet and maybe also with his live. Welcome to the Land of Scares.

I drive a around a long bend, the light in the back disappears.

To the left, there is a kilometer of bush, then the Mekong river, then Laos. To the right, there are many kilometers of bush. Up ahead, but still about ten kilometers away, there is the peaceful village of Khong Chiam where i have rented a tourist bungalow.

The road is straight now, and the light behind comes up again.

Even the stupid fat lady in my default noodles shack, she had told me: "In nighttime, no go outside, ok?" She had pointed at my Honda. "Have some bad people." With a bewildered ugly frightening face, she had moved her stretched hand along her throat. I had promised to never venture out of the village at night time.

In the dim light of my moto-sai, i enter another curve and lose sight of my chasers again.

But i had broken the promise I gave to the noodles shack lady. One late afternoon, i set off for the cliffs of Pha Thaem national park, about 20 kilometers far from Khong Chiam. I had paid the ridiculous 200 Baht special farang entry fee, walked through the miniscule visitor center towards the rim overlooking Mekong river and some Lao lands. Yes, and then i fell for one of the most stunning sunsets i have ever seen in my life. I sat on the warm rocks, stared and clicked at the sunset and completely forgot that this heavenly drama would finish within a few minutes - and that black night was next on the repertoire. Without seeing much i stumbled back to moto-sai and tried to find the road back to Khong Chiam. I remembered the noodles lady: "In nighttime, no go outside. Have bad people."

Bad people are still following me on their motorbike, for about twelve kilometers now, i see them again as we are both on another long straight stretch of road now.

I can't drive real fast in the pitch black night, I'd surely hit buffaloes, bicycles, chicken, dogs, kids, cats, cows, coconuts or potholes, just any of the delightful country road population you meet on a night out in Isaan. Out of nothing, a very poor village appears to the right side of the road, i didn't remember that one. There even is a shabby fried chicken stall. Grotty lights, dim, dirty, uninviting, only few people on broken benches. But without further thinking, i slam on the brakes and steer the Honda right in between the benches. I get a surprised look, then everybody continues to munch on their ropy chickens with khao niaw, sticky rice. They seem quite apathic, kind of drugged, it is only about seven thirty by now.

But then my chasers near. The motorcycle that has haunted me for about 12 kilometers, never to let loose. I want to disappear completely behind the stall, but too late now, i remain visible.

Two elderly housewives in pyjama dress zoom by on a farting pre-war moto-sai. They carry about ten plastic bags with veggies. They are in a hurry to get home and cooking. They don't look left or right. Welcome to the Land of Scares.

The “Little Red Schoolhouse” is part of the historic past of Palos Hills in which it is more or less centrally located. It was built in 1886 to replace a one-room log cabin school — the first school building of the area. The Little Red Schoolhouse was originally located a little north of where old 99th Street joins the Black oak Trail. Country lanes used by its former students still can be seen and enjoyed by hikers. In 1932 the school house was moved to Boy Scout Camp Kiwanis. The actual moving was done by a local resident with only one mule and log rollers. Classes continued in this building until 1948. In 1952 ft was moved to Its present site. In 1955 Its doors reopened as a school — unique and always interesting. For, in place of the three R’s, fascinating stories are told to children and grown-ups who visit here, stories about forest preserve plants and animals and the earth of which they live.

Before the written history of man, Indian hunters followed the receding glacier that once covered northern Illinois. They found the southern end of Lake Michigan swampy and teeming with game. Flint chips and an occasional arrow point can be found almost anywhere in this region. In 1804, there were two Indian villages near here — one at the intersection of Archer Ave. and 107th St. and the other about where the town of Palos Park is now located. Archer Ave. was a very important trail used by Indians and early settlers.

Fifty years ago Longjohn Slough was merely a wet prairie where farmers cut wild hay. Palos Hills farmers used to haul feed for Chicago’s horses — a round trip of about 10 hours! Old timers remember hunting rabbits in a hollow that is now Maple Lake, and one resident made a living just hunting and trapping. The land on which the schoolhouse now stands was a fruit orchard planted in 1906. Visitors in the spring still enjoy its pear, apple and plum blossoms.
