Pesto Pasta :
Saute on med heat finely chopped carrot, celery, red pepper and dehydrated onion and garlic (because I'm lazy) for 3-4 mins in a deep pan (I use a wok) with about 1 tbs veg oil or olive oil and 1/4 water.
Amount of veggies used depends on how much you want to make - I used about 1/4 of each veg. and 1/2 box of pasta.
Add 1/2 cup broccoli florets, leaves and stems. Add 2-3 handfuls of chopped spinach.
I season with a bit of sea salt and pepper - salt helps veggies keep their colour.
Cook pasta, drain well, add to pan with veggies.
Add pesto to just coat the veggies and pasta, I used about 3-4 heaping table spoons, again it's your own taste. I used a store bought pesto, Classico has a nice one.
Gently toss pesto, veggies and pasta on a low heat for a few mintues, serve! mmmmm.
Cassie ate hers cold, I like mine hot, I like all those stinky cheese melting, mmmmmmm

A spinach salad in a grilled cheese.

Take two halves of a ciabatta bun and place upside down in the flat top. On one side place a slice of provolone cheese and a slice of havarti cheese. On the other half place a slice of cheddar cheese.

In a pan, or on the flat top, add olive oil and garlic and heat. Add spinach, mushroom, chopped cooked bacon, and shaved red onion, plus a bit of kosher salt & pepper. Saute till cooked and add a drizzle of balsamic vinegar or balsamic vinaigrette.

Add the sauteed spinach mixture to the bottom half and put the sandwich together.

this is my order from sobahn express korean cuisine.

met up with a couple of friends to try out sobahn express korean cuisine which was in irvine. i've never had one of these hot stone bibimbap meals and after only trying it once, i'm already hooked! i love that they serve the food on a hot stone dish and crack a raw egg over it which you then mix the food and the egg cooks as you do this. plus as you eat your dish, the rice that's in contact with the hot stone dish gets crispy and just really tastes great.

I cooked this up the other day. I coated it with chopped Garlic and Thyme, and Cracked Pepper and Sea Salt and it came out Incredible!!! (It was a beautiful pink inside!!) (Once I sliced it - I couldn't wait to get it to the table and eat - forgot to get a photo of the sliced version) Wee Ha!!!!

We were so hungry that I couldn't even wait long enough to get a picture before we dug in. :-)

Originally I had planned to make this lasagna for Friday night, but since I started preparations too late we decided to make it for Saturday night instead.

I used a combination of two recipes from Cook's Illustrated for our lasagna. The sauce is a rustic 3-meat ragu (beef, veal, pork) and each layer is filled with herbed fresh ricotta, ragu, bechamel sauce and then topped with grated parmigiano reggiano.

Recently I was chatting with Valerie and Sarah about handmade fresh ricotta, so I decided to purchase fresh ricotta cheese from Di Palo, one of the best Italian purveyors in NYC instead of the usual convenient Polly-O stuff. The quality of the ricotta makes such a big difference in the lasagna! So long, Polly-O... I think I'll be sticking with Di Palo from now on!

Serves 4 with bread, or 6 as a starter
Prep 30 minutes, Cook 30 minutes

25g / 1 oz butter
3 rashers streaky bacon, chopped
1 onion, chopped
400g trimmed leeks, sliced and well washed
3 medium potatoes, peeled and diced
1.4 litres / 2.5 pints hot vegetable stock
142 ml single cream
4 rashers of streaky bacon, to serve

Melt the butter in a large pan, and fry the bacon and onion until they start to turn golden.
Add the leeks and potatoes, stir well, and turn down the heat. Cook gently for 5 minutes, making sure the mixture doesn't stick.
Pour in the stock, season and bring to the boil. Cover and simmer for 20 minutes, until veg is soft.
Cool for a few minutes, then blend until smooth (in batches if necessary).
Return to the pan, pour in the cream*, and stir well.
Serve topped with crispy bacon.
To prepare the bacon topping, grill under a medium-high heat until browned. Drain on kitched paper, then crumble and add to the top of the soup.

(*I actually froze the soup before adding in the cream, and added it when I defrosted it to eat at a later date).

2 Onions, chopped
1 Carrot, chopped
25g Butter
750g Tomatoes, chopped
4 tbsp flour
1 litre chicken stock (or vegetable stock, or water)
1 clove garlic, chopped
1 tsp salt (if your stock is already salted, then you don't need this)
1 tbsp sugar
4 black peppercorns
250ml single cream

Melt the butter in a pan and soften the onions and carrot for about 15 minutes. Stir in the flour and cook for a minute. Add the tomatoes, stock, garlic, salt, pepper and sugar. Bring to the boil and simmer for about 90 minutes. Leave to cool.

Take the soup, a ladleful at a time and force it through a sieve, pushing the soft vegetables through with the back of a spoon. This removes all the seeds and tomato skin. No, whizzing it through a blender is no subsitute. It doesn't take long and isn't as tedious as it sounds.

Return to the heat, add the cream and check for seasoning.

Serve, with a sprinkling of chopped chives.

Into the pan. The idea is to sear the steaks. We'll be having them medium rare tonight, which means "red with a warm center." So we put a flash cook on the outside of the steak (like you've seen with tuna appetizers), let it cook for a few minutes, and serve. Again this is CLARIFIED BUTTER, as regular butter will burn and taste awful, as well as stink up the house. If you want to get a little more flavor out of the pan, you can add grapeseed oil. Clarified butter is not big on flavor, but it tastes better than vegetable oils. Grapeseed oil can take the heat a lot better than olive oil, and has a pleasant nutty flavor which will equate to a subtle "toasted" flavor to the steaks.

Ingredients: free-range lamb shoulder, garlic, capers, Italian parsley, rosemary, anchovies, chef's mustard, lemon, anchovy oil, grapeseed oil.

Beet mash: beets, potatoes, marscapone, salt, pepper, fresh chives, grated pecorino cheese.

Watercress salad: watercress, baby spinach, orange, sunflower seeds, cashews, dried dates and a hand-made mustard-honey dressing with Aftelier litsea-cubeba essential oil.

My kid sister was kind enough to cook way more than we needed for Christmas dinner so I could pack home a box of leftovers. This also made it easy to bring dinner out to Donna's post. Stacked in the trunk were the ample remnants of a green bean casserole, sweet potato souffle, baked ham, roast turkey, rolls, chocolate cake, pumpkin pie, stuffing, deviled eggs, cranberry relish, cranberry sauce, orange-pineapple mousse, tangerines and sweet rolls. Yay, Sis!

Just hangin' out with my gnomies! Vintage burlap tablecloth with "cooking gnomes" printed on the border. Possibly German or Swiss? Or perhaps Swedish? From the 1970s, I'd say--that's when burlap was was last a popular material. The gnomes alternate with pine boughs and red hearts.

spooky . . . halloween party invites made by me and teddy and caroline . . . it was a bit of a teabag and glitter explosion in our kitchen . . . we made up an extreme-cheese poem (that's what you get when it's a true collaboration and one of the collaborators is a five year old boy !), printed it, tea stained the paper with varying degrees of success, 'cooked' it in the oven to make it all parchment-y, used martha stewart halloween stamps, dipped in glue, and then sprinkled the resulting bat or pumpkin or spider shaped glop with a couple of colors of golden glitter, then -- for the dangerous part -- i burnt the edges with a match, over a big bowl of water in the kitchen sink (no kids allowed for that part! teddy thinks that happened magically and mysteriously !) me, by the nineteenth one, i was sorry i ever started scorching edges . . . oh well, very spooky !

my first attempt at borsht... and my own interpertation.
recipe (easily feeds 4):
ingredients:
4 small beets
2 carrots
2 medium yukon gold potatoes
1 small apple (sour is better)
1/2 onion
handful of mushrooms
3 big cloves of garlic
red cabbage (shredded about 10 oz)
fresh dill
lemon juice
vinegar (balsalmic)
pepper
sea salt
maple syrup
olive oil
...............
1. chop up carrots, apple and potato dump in pot with enough water to cover plus a bit extra. scrub beets and add. I also added a rosemary sprig. think sage would have been better but didn't have one handy.

2. bring to boil. you can chop up the other stuff at this time if you want.

3. when it has boiled reduce heat to simmer. Fish out the beets, let them cool so you can handle them and then scrape off skin and chop into small cubes (easier to do once now that they are not as hard). add lemon juice...about 3 to 4 table spoons.

4. let simmer about 1/2 hour. Check water level periodically, add more if it looks like it needs it.

5. in a small pan add oil and saute mushrooms and onions until starting to brown. Add chopped garlic. add a couple table spoons maple syrup and salt and pepper, when onions and mushrooms are well coated add vinegar (around 3 to 4 tbs.). Add whole mix to simmering veg. pot. Stir up and then add the cabbage.

6. Let simmer for 1/2, check broth and adjust seasonings to taste. I found adding Braggs Liquid Aminos gave it a bit more of a richer taste (soy sauce would work as well).

7. Warm up some crusty bread, chop up some fresh dill add the stems to soup reserving the finer bits for garnish. Serve with a dollop of sour cream and the well eat it.

(amounts are approximation as I don't really measure, recipe is not authentic, though from what I gather borsht has many variations, so this isn't to far off and it did taste like what I have had before)

rightly so. But bake, don't fry, and you can put this
favorite back on the menu.


Ingredients
4 sprays olive oil cooking spray
2 medium potato(es), peeled and cut into 8 wedges each

1/4 tsp table salt, or more to taste (enough for
potatoes and fish)
1/4 tsp black pepper, or to more taste (enough for
potatoes and fish)
1/4 cup fat-free skim milk
1 Tbsp Dijon mustard
1/2 cup seasoned bread crumbs
1/4 cup all-purpose flour
20 oz uncooked cod, four 5 oz fillets
4 Tbsp red wine vinegar

Instructions
Preheat oven to 400?F. Coat 2 large baking sheets with
cooking spray.


Place potato wedges on one baking sheet and lightly
coat with cooking spray; season to taste with salt and
pepper. Bake until golden brown and tender, about 45
minutes.


Whisk milk and mustard together in a shallow dish.
Place bread crumbs in another shallow dish and put
flour in a third shallow dish.


Season both sides of fish with salt and pepper. Place
fish in flour and turn to coat. Place fish in milk
mixture and turn to coat. Place fish in bread crumbs
and turn to coat.


Transfer fish to second prepared baking sheet and
lightly coat with cooking spray. Bake fish until
fork-tender, about 10 to 15 minutes. Serve fish and
potato wedges with vinegar on the side. Yields 1
fillet, 4 potato wedges and 1 tablespoon of vinegar

How festive. Our only photographic souvenir from a trip to the glitzy shopping centres up Sukhumvit Road. I've had this figurine since forever, have worn it round my neck (and have been chewing on it by the looks of it), but have never been able to make more use of it than now.

Yesterday was low sunday and two of our daughters had their First Communion. We had a big family feast afterwards and this was the main course:

Chicken breast filled with goat cheese and fig jam, wrapped in spanish Serrano ham and bacon in a flaky pastry crust. Served with thai asparagus and caramelized carrots, with a sauce from mead, garlic and ginger.

Even though I was the cook I have to say it was delicious...
