Yummers! And easy to bake. All you need is a box of Chocolate Cake mix and a box of White Cake mix. Dump both in your mixer and add four whole eggs and 3/4 cup vegetable oil. Mix up well. Form into small balls and press with a sugared fork. Bake at 350°F for no more than 10 minutes. Watch them as they can burn quickly. Cool on the cookie sheet before removing them. I used a non stick cookie sheet. When they're cooled off, cream 250g package of cream cheese and add 3 cups of icing sugar. Beat well. Put about a teaspoon-ish on a cookie and smush it down with another cookie. These freeze really well.
Pumpkin Spice Cookies (II)
Pumpkin Spice Cookies.
I had some pumpkin puree left over, so I made half a batch of these cookies. The icing is the same cream cheese maple frosting from the cake (left over, too). Because I had bought some white chocolate chips about 2 weeks ago, it seemed fitting to make the cookies a tad bit sweeter and scrumptious (in truth the recipe called for walnuts and raisins, but I did not have any).
Used my new diy macro photo studio to shoot these photos. :-D
