Lobster Tail Picatta

Lobster Tail Picatta

-Ingredients-
(3) 5-8 oz. lobster tails
2 small shallots, diced
3 cloves garlic, smashed (pasty)
2 tbsp. capers
3 tbsp. butter
1 cup white wine
Juice of 2 lemons
1/4 cup parsley
Salt and pepper to taste

Remove the meat from the shell by cutting down the underneath soft part of the shell. Butterfly the tail, there is a natural seam underneath. Cover in plastic and pound gently until thin. Dredge the lobster tails in egg and flour.

Coat a frying pan with olive oil. Place tails on medium heat and cook for about 4 minutes a side or until done. Remove tails from pan and pour out excess oil. Place butter in pan. Add shallots, garlic, capers, lemon and parsley. Let cook for 2 minutes. Turn up heat and add wine and lemon juice.

Let this reduce for a few minutes. You will see the sauce thickening. Add lobster tails and coat with the sauce for only about a minute.

Plate the tails and garnish with parsley.
Serve.

Lobster Tails

Lobster Tails

Spiny lobsters (often referred to as Langostino lobsters), the ones caught in the Caribbean which are warm water lobsters. They are prized mainly for their meaty tails.

I cooked my lobster tails in butter (and a little olive oil) and chopped garlic and herbs. On low fire with the butter sauce basted over the top so as to thoroughly cook the meat inside the shell. Naturally beautiful and garnished with mango slices and basil.

Keine Ausdauer auf Neues von THE GASLIGHT ANTHEM, AGAINST ME! oder neueren THE LOVED ONES zu warten?

Denn dort spielen Mitglieder von THE CONFESSION. Punkrock, ganz leicht folkig, etwas Melancholie... Die Stucke haben auch was ... Zerbrechliches, Zuruckhaltendes an sich. 4 ganz passable Songs. Melancholie perfekt in Punkrock verpackt. Leider nur 4 Songs. Man darf gespannt sein, was da noch kommt ...

This is my submission for the weekly challenge for the group Macro Mondays. The topic for the week is "Heirlooms" as something that has been in the family for generations.

In my case, the item I have that has been in the family for generations is a house that was purchased new in 1915. It's been owned by someone in the family since that time and I had the opportunity to take it last year.

It's a little hard to get a macro of an entire property, so the deed document will have to suffice. In this day of everything being digital, holding the precious blue paper that signifies ownership can be remarkably grounding.

Snapped with a Pentax K10D camera using a smc P-FA 50mm F1.4 lens with a 31 mm Extension Tube. PP in UFRaw and GIMP.

Point Cook is a rapidly developing residential area, located in the south-east of the City of Wyndham. Point Cook is bounded by the Princes Freeway, Crellin Avenue South, St Anthony Court, Machair Drive, Dunnings Road, Point Cook Road, Tournament Drive, Fawkner Way and Crystal Court in the north, Skeleton Creek and Port Phillip Bay in the east, the northern boundary of the RAAF Williams Point Cook Base, Aviation Road and Duncans Road in the south and the Princes Freeway in the west.

The Point Cook small area includes parts of the suburbs of Point Cook, Werribee and Werribee South. The Point Cook small area excludes the Point Cook RAAF base, which has been included in the Werribee South small area. Point Cook is named after John M Cooke, mate of His Majesty's Vessel "Rattlesnake”, which charted part of Port Phillip Bay in 1836.

Settlement of the area dates from the late 1840s, with land used mainly for farming and grazing, and later for saltworks. Significant development did not occur until the 1990s. The population grew rapidly from the mid 1990s, rising from less than 200 in 1996 to over 14,000 in 2006. The population increased seven-fold between 2001 and 2006, particularly south and west of Seabrook and in the Sanctuary Lakes development. Population growth is expected to continued, as further housing is developed.

Major features of area include Cheetham Wetlands, Point Cook Coastal Park and Homestead, Sanctuary Lakes Golf Club, Sanctuary Lakes Shopping Centre, Point Cook Town Centre, Werribee Agriculture & Food Technology Precinct and numerous schools.

Memory Map of my Neighborhoods, Vol 4: Bethany [Lincoln, NE, USA]

Stumbled across the concept of Memory Maps and I loved the idea. Here's a mapsnap of the Bethany neighborhood in NE Lincoln, where Becky and I have been living since 1997. Although we go on a lot of walks throughout this neighborhood, I haven't really built up all that many "special" memories of places on this particular map.

Cabbage with bacon and thyme

Cabbage with bacon and thyme

Another recipe from Cook with Jamie.

Dead simple - cut up the cabbage, cut up the bacon, pick the thyme.
Wok fry the bacon, add the cabbage and thyme, add about 1 pint of water with half a chicken stock cube. Cover the wok, till the cabbage is cooked, add a spot of butter. That's it.

The soup was tasty, but if I did it again I'd probably cut the stock and do a straight stir fry with just a little water and chicken seasoning. I liked the addition of the thyme though - really goes well with the overall flavour of the dish

NONSTICK RICE COOKER - NONSTICK RICE

Nonstick Rice Cooker - Youtube Cookie Monster - Best Temperature To Cook Turkey

Nonstick Rice Cooker

nonstick rice cooker

    rice cooker
  • A rice cooker or rice steamer is a self-contained tabletop kitchen appliance for cooking rice. There are electrical and gas powered versions. The term can also refer to a container designed for cooking rice in a microwave oven. Dedicated rice cookers date from the earliest of times.

    nonstick
  • (of a pan or surface) Covered with a substance that prevents food from sticking to it during cooking

  • (of surfaces especially of cooking utensils) permitting easy removal of adherent food particles; "a frying pan with a nonstick surface"

  • A non-stick surface is a surface engineered to reduce the ability of other materials to stick to it. A non-stick coating may be applied to a substrate to produce such a surface.

  • Modern metal cooking pans are frequently coated with a substance such as polytetrafluoroethylene (Teflon) coating in order to minimize the possibility of food sticking to the pan surface. This has advantages and disadvantages for flavor and ease of use.

Dinner 29 December

Dinner 29 December

Channa masala (chickpea curry) with roasted butternut squash and Gardein beef tips. Spiced brown basmati rice (cardamom pods, cumin & coriander seeds, saffron, annatto, bay leaves, cinnamon stick).

Here's the basic recipe:

1. Peel, deseed, and chop butternut squash. Toss with olive oil (1-2T) and salt (1/2-1t) and roast in a 375 degree (F) oven for about 30min, flip halfway through.

2. Put brown basmati rice and spices (cardamom pods, cumin seeds, coriander seeds, bay leaves, cinnamon stick, saffron, annatto) in rice cooker, add water according to directions and press start.

3. Empty pouch of Gardein beef tips into a nonstick frying pan to dry roast over medium heat while the curry comes together. Meanwhile...

4. Melt 1T margarine (or oil) in a pot.

5. Add 1/2 onion (diced). Soften with a lid on, medium heat, 5-7 minutes.

6. Add 1-2T tomato paste, 2T masala (any mix of Indian curry spices will do. I love channa masala but garam masala, tikka masala, or any of them will do), 1T curry powder to pot, stir together for 2-3 minutes.

7. Thin with soy milk and/or vegetable broth. I used about 1 1/2 cups total, all soy milk for a creamier curry.. Once the liquid is incorporated, add salt (1t) and taste for seasoning.

8. Add 1 can rinsed chickpeas, 2C shopped spinach, 1C roasted butternut squash, and Gardein beef tips (or other faux meat).

Un-Fried Rice

Un-Fried Rice

I decided to make fried rice. Usually, I cook my rice in the rice cooker and then fry it in the wok with the other ingredients. Tonight, in honor of the new rice cooker/steamer I bought to replace my aging one, I thought it might be interesting to just make it all in one pot.

Even the rice itself was different. Usually it's just white rice but this time I used what amounts to Rice-a-Roni fried rice mix (it was the store brand 'cause I'm cheap). Three boxes of that, plus a little white rice to round the measuring cup out to 4 cups. Filled the steamer with water to the right level. Added some peanut oil, about 3 Tbs. and 1 Tbs. of sesame oil instead of using butter as the rice box suggests. A couple of glugs of soy sauce, maybe 2 or 3 Tbs., I didn't measure. 3 green onions, sliced. A package of bean sprouts, I think maybe 8 ounces. Half a pound of Chinese barbecued pork, chopped. A cup or two of frozen mixed vegetables. Lastly, a lightly beaten egg. Mix it all together, close the pot and select the "white rice" button.

And there you have it. Less of a mess to clean up because there's no rice stuck to the wok and my rice cooker has a nonstick surface.

Entree: Baked manicotti with spiced tomato sauce

Entree: Baked manicotti with spiced tomato sauce

For my first time, not too shabby!

Baked Manicotti
Cook's Illustrated
1/2007

We prefer Barilla no-boil lasagna noodles for their delicate texture resembling fresh pasta. Note that Pasta Defino and Ronzoni brands contain only 12 no-boil noodles per package; the recipe requires 16 noodles. The manicotti can be prepared through step 5, covered with a sheet of parchment paper, wrapped in aluminum foil, and refrigerated for up to 3 days or frozen for up to 1 month. (If frozen, thaw the manicotti in the refrigerator for 1 to 2 days.) To bake, remove the parchment, replace the aluminum foil, and increase baking time to 1 to 1 1/4 hours.

Serves 6 to 8

Tomato Sauce
228-ounce cans diced tomatoes (in juice)
2tablespoons extra-virgin olive oil
3medium cloves garlic , minced or pressed through garlic press (about 1 tablespoon)
1/2teaspoon hot red pepper flakes , optional
Table salt
2tablespoons chopped fresh basil

Cheese Filling and Pasta
3cups part-skim ricotta cheese
4ounces grated Parmesan cheese (about 2 cups)
8ounces shredded mozzarella cheese (about 2 cups)
2large eggs , lightly beaten
3/4teaspoon table salt
1/2teaspoon ground black pepper
2tablespoons chopped fresh parsley leaves
2tablespoons chopped fresh basil
16no-boil lasagna noodles (see note above)

1. For the Sauce: Adjust oven rack to middle position and heat oven to 375 degrees. Pulse 1 can tomatoes with their juice in food processor until coarsely chopped, 3 or 4 pulses. Transfer to bowl. Repeat with remaining can tomatoes.

2. Heat oil, garlic, and pepper flakes (if using) in large saucepan over medium heat until fragrant but not brown, 1 to 2 minutes. Stir in tomatoes and 1/2 teaspoon salt and simmer until thickened slightly, about 15 minutes. Stir in basil; adjust seasoning with salt.

3. For the cheese filling: Combine ricotta, 1 cup Parmesan, mozzarella, eggs, salt, pepper, and herbs in medium bowl; set aside.

4. To assemble: Pour 1 inch boiling water into 13 by 9-inch broilersafe baking dish, then add noodles one at a time. Let noodles soak until pliable, about 5 minutes, separating noodles with tip of sharp knife to prevent sticking. Remove noodles from water and place in single layer on clean kitchen towels; discard water in baking dish and dry baking dish.

5. Spread bottom of baking dish evenly with 1 1/2 cups sauce. Using soupspoon, spread 1/4 cup cheese mixture evenly onto bottom three-quarters of each noodle (with short side facing you), leaving top quarter of noodle exposed. Roll into tube shape and arrange in baking dish seam side down. Top evenly with remaining sauce, making certain that pasta is completely covered.

6. Cover manicotti with aluminum foil. Bake until bubbling, about 40 minutes, then remove foil. Remove baking dish, adjust oven rack to uppermost position (about 6 inches from heating element), and heat broiler. Sprinkle manicotti evenly with remaining 1 cup Parmesan. Broil until cheese is spotty brown, 4 to 6 minutes. Cool 15 minutes, then serve.

NO FAST FOOD!

NO FAST FOOD!

The works of the 2nd century AD Greek physician Galen mention itrion, homogeneous compounds made up of flour and water. The Jerusalem Talmud records that itrium, a kind of boiled dough, was common in historic Palestine from the 3rd to 5th centuries AD. But these references are vague and simply speculate on a possible connection to modern pasta.A dictionary compiled by the 9th century Syrian physician and lexicographer Isho bar Ali defines itriyya as string-like shapes made of semolina and dried before cooking, probable evidence of Arab influence on the ancestor to modern-day dried pasta. One form of itrion with a long history is laganum (plural lagana), which in Latin refers to a thin sheet of dough.
The Chinese were eating noodles made of millet as long ago as 2000 BC. This was confirmed by the discovery of a well-preserved bowl of millet noodles over 4000 years old[10]. However, durum wheat was not known in China until later times. The familiar legend of Marco Polo importing pasta from China was born in the USA on the Macaroni Journal (published by an association of food industries with the goal of promoting the use of pasta in the USA) . Marco Polo describes a food similar to "lagana" in his Travels, but he uses a term with which he was already familiar. Durum wheat, and thus pasta as we know it, was introduced by Arabs during their conquest of Sicily according to the newsletter of the National Macaroni Manufacturers Association.
In the 1st century BC writings of Horace, lagana were fine sheets of dough which were fried and were an everyday food.Writing in the 2nd century Athenaeus of Naucratis provides a recipe for lagana which he attributes to the 1st century Chrysippus of Tyana: sheets of dough made of wheat flour and the juice of crushed lettuce, then flavored with spices and deep-fried in oil. An early 5th century cookbook describes a dish called lagana that consisted of layers of dough with meat stuffing, a possible ancestor of modern-day Lasagna. But the method of cooking these sheets of dough do not correspond to our modern definition of either a fresh or dry pasta product. The first concrete information concerning pasta products in Italy dates from the thirteenth or fourteenth century. The question of Pasta's origin continues to evoke speculation. The name (??????, lagana) survives in modern-day Greece to denote an unleavened, flat bread eaten during the Great Lent. The term "lagana" is also used in the Southern region of Calabria, where it indicates a flat noodle.

Canners begin 2009-2010 season

Canners begin 2009-2010 season

MCC Photo/ Brenda Burkholder

AKRON, Pa. – Mennonite Central Committee's (MCC's) annual mobile meat canning project, an initiative that provides meat to communities impacted by war, disaster and malnutrition, begins this month and continues through April.

Thousands of volunteers in two Canadian provinces and 13 U.S. states prepare and package more than half a million cans of meat each year. Last season, 566,984 cans were filled with turkey, pork or beef and sent to 15 countries.

Canned meat provides a substantial protein source to people who are poor or on the brink of poverty. Ten to 15 people can be fed with the contents of one 28-ounce can.

Each year, a four-member meat canning crew travels to the various canning sites – 31 this year – overseeing operations from early morning until night. They set up the canner, a 42-foot long trailer, where the meat is cooked and prepared to sanitary standards. Volunteers provide the bulk of the labor on canning days.

Members of this year's canning crew are Steven Bricker of Chambersburg, Pa.; Ryun Lawrence of Goessel, Kan.; Peter Reimer of Tolstoi, Man.; and George Wieler, Jr., of Wheatley, Ont. Canning crew members commit to two-year terms, spending seven months on the road and, in the off-season, maintaining the canner and doing other duties for MCC.

Long before the canning crew arrives, the local volunteers in the host communities are raising funds to cover the cost of canning, which can approach $18,000 a day. Costs include federally-inspected raw meat as well as packaging, processing and material costs, such as cans, boxes and lids. Shipping and local on-site expenses are also covered by the host community.

Local volunteers clean the site thoroughly, preparing it for the work that typically lasts two to five days. When the canner is there, volunteers cut meat, put it in pots, stir it and wash cans. Then they label and box the filled cans.

Canning crew members find their way to MCC in a wide variety of ways.

Wieler knew about the canning operation from attending MCC fundraisers while growing up in Ontario and long had interest in being a crew member someday. Lawrence, on the other hand, heard about the canner less than two weeks before he applied to be on the crew, and was soon invited to the assignment.

Their reasons for applying, however, were similar. Wieler decided to "get out of my comfort zone, see what God has for me on this [assignment]," and became part of the crew.

Lawrence said, "I was attracted by the challenge of a two-year commitment of going out on the road and of stepping out of my element."

Bricker and Reimer, who were part of the team last year, like the way canning helps many Anabaptists cooperate in a practical way for MCC. Bricker said, "I was struck by the vast number of dedicated people it takes to pull the whole program off, and that it is such a diverse group of Anabaptist churches working together."

Collaborating on this project, Reimer added, "gives the people who are donating the money to MCC a hands-on way to work with MCC." Volunteering in his community at canner time in years past, “helped me to identify with MCC," he said.

Bricker and Reimer were surprised during their travels last year by how many people were unaware of the history and current work of the canner. They know of a way to remedy that.

"Take a day, come check it out," says Reimer.

"Come and help us out," agrees Bricker.

Turkey Pot Pie

Turkey Pot Pie

I can look forward to eating at least one meal at Zaftigs every month. So when the date of my Dining Club comes up on the calendar, I often find myself mulling my order all day long.

The weather was ambitiously dreary. Tiddling rain came down all day long. Stiff breezes pulsed around as if to say "No fair carrying an umbrella; the whole point here is to get you all wet and cold and miserable."

It really felt like a Turkey Pot Pie sort of day. And even though the weather cleared by late afternoon, I'd already clicked my stomach to the TPP setting. I hadn't ordered it in a long, long time and I was glad that I'd entered the restaurant with a good appetite.

You shouldn't be pedantic about things, and this dish is a good case in point. When I think "turkey pot pie" I think of sort of bowl or crock with a filling that's been sealed in under a pie crust. I think that's how Zaftigs served it the last time I tried theirs.

But as usual, when Zaftigs takes liberties, it's a good call. It appeared as though the traditional filling had been cooked separately and transferred to a bowl. The "crust" was this incredible puff pastry consisting of molecule-thin sheets of pastry separated by air.

A couple of corners were broken off and I popped one in my mouth. Man oh man, I could have made a meal of just the pastry. A serious Win.

Spicy Crabs, Tasty Pork Feet with Lotus Root - Sichuan House AUD39.80, AUD21.80 - dark

This crazy Tower of Terror was huge. Judging from the 5 main carapace of the crab, there were 5 crabs in this dish. Not bad for AUD39.80, and a bargain on special for AUD31.90.

A very good dish for a starter, but also messy food.

Blue swimmer crabs were coated in a seasoned flour and deep fried to a crisp and then wok-tossed in chillis, onions, ?? fermented black beans and Sichuan Peppers, a super tasty mix. The carapace was so crisp, I found myself munching through 2 of them! I only regretted it later when my tummy felt heavy with oil.

Listed on the menu as ????? Sauteed Stewed Trotters with Pickled Chilli Sauce, this dish was a huge bowl of ?? chillis, ?? Sichuan and oil hiding ??? pork trotters and ?? lotus root. It tasted quite good. Intense chilli and Sichuan Peppers from the oil, warm, but not fiery. The silky, gelatinous texture of the pork trotters is exactly how it should be cooked, with the tendons and skin almost indistiguisable, perhaps because of the way it is cooked, almost confit-style in oil.

Peekytoe Crab, Yuzu Cream

Peekytoe Crab, Yuzu Cream

Peekytoe crab, yuzu cream, mushroom puree, aged sherry
with juniper, slightly pickled king oyster mushrooms (tangled to resemble pasta curls), banana puree and roasted banana

My deepest impression of this course was how fresh and sweet everything tasted. The crab itself was incredibly fresh, and while cooked almost as if it were raw. This plate wowed me - from the yuzu to aged sherry to juniper, the accompaniments not only added to aesthetic appeal, but created a palatable balance that highlighted the various degrees of sweetness achieved on a single plate. On the revelatory end of the spectrum: the combination of earthy mushroom puree with silky, sweet banana puree blew my mind. Bananas and mushrooms? I'm neither talented nor creative enough to think up that flavor combination, but geeze, it worked so well together. Genious.

March 7, 2010

March 7, 2010

67/2010

I would have chosen a different photo, but I'm an idiot, and deleted the others I took today. This kind of oddly explains my day though; I did a lot of walking.

It was an overall all good day. Went to the Y with Began and Mailey. We played basketball for a while, explored and left. Some little boys kept wanting to play, but every time they came back, the gym was full. We played our own version of horse and used "Seriously" in dedication of Mrs. Watson. Every time someone missed, we went, "Seriously?!" Hahaha.

We then left to go get food, like always. We tried Max and Ermas, but it was closed. While on the way, some guys asked us for 50 cents, and we nicely declined, and then he followed us and asked again, like we were lying. We then got cookies at Rite Aid and then went to Primanti Brothers. After leaviing there, we almost ran into the 50 cent guy, so we ran! Hahaha. Then we went to Burlington and got Megan a BFF Bracelet. Then we went home.

I came home and did a little bit of work then I just did nothing. Me and Kayla went to Toms when Pam got home, and also to the bank.

I ordered my new camera! It's not as nice as I hoped, but it should look pretty good. I'm excitedddddddddddd,

Off to do homework!

Enjoy!!! =D

Droplets of moisture wll form on the rind (drawn out by the salt), soak these up with a kitchen towel. Rub in some more salt, then put the joint in the top of a preheated oven at 230C (uncovered) and cook for 2 hours 20 minutes. Turn the joint around after 1 hour to ensure even cooking. Allow to rest for 20 mins before carving. Delicious!

To make mumu, people put meat (usually pork), vegetable (usually ferns) on the big banana leaves, and wrap it. A two hour PAINTING FOR LIFE workshop is offered in the afternoon for those interested in painting for the sake of painting--not in imitating something out there in the world, but in painting for the very act of painting.

In PAINTING FOR LIFE you start facing a large blank page, not knowing where you are going, not knowing what's going to come up. You free yourselves from all learned techniques and ideas about realism, proportions, colour combinations, etc. knowing that you can't make a mistake if you are open to how you feel here and now.

You ask yourself, "how do I feel right now? Heavy, light, sad, happy, angry, confused, sleepy...?" You physically get in contact with that feeling. You feel it in your body. You let your body move the way it wants to. You let the images come up. You move with that image. It could be your mother, your dog, your lover, the victims of Iraq. Whatever wants to come up, you let it come up.

As you release unnecessary control, you can more fully engage in the creative act. You paint for process not for product.

Was a Long Ashton pensioner really a brutal mass murderer ?

Was a Long Ashton pensioner really a brutal mass murderer ?

Reginal Dyer from Long Ashton - Was a Long Ashton pensioner really a brutal mass murderer, or just a military man who made a mistake?

The argument still rages today - was Reginald Dyer a brilliant general who quelled a potential rebellion, or a callous killer who mowed down 379 innocent people?

Dyer, who spent his last years in Long Ashton, ordered his troops to fire without warning on a peaceful open-air meeting in Amritsar, holy city of the Sikhs in the Punjab. He insisted to his dying day that he was right, but an official inquiry called him inhuman and war minister Winston Churchill wanted him charged with murder.

Now the debate over Dyer’s role in the 1919 massacre has been reopened by the publication of the official papers on the incident which have been buried in the Stationery Office archives. They show Dyer as an arrogant, brutal bully, even by the standards of his time, and one with little respect for human life.

Amritsar was in uproar when Dyer arrived, after the British authorities had expelled two popular independence campaigners. European women and children were herded into the fort for safety as mobs rampaged through the streets in protest. Troops fired in self defence and a number of rioters were killed. The situation deteriorated, and banks, the railway and telegraph office were attacked and British staff brutally murdered.

A missionary called Miss Sherwood was knocked off her bike and badly beaten up, and the mob tried to kill European hospital workers and destroy Christian buildings. Then Brigadier General Reginald Dyer arrived to take charge. He declared martial law and banned all mass gatherings but, as the Stationary Office papers reveal, there is no evidence that most of the inhabitants of Amritsar ever heard about the restrictions.

On April 13 1919, there was a gathering of between 10,000 and 20,000 people in an enclosed park not far from the famous Golden Temple. Many were peaceful villagers from surrounding areas. Dyer placed his troops on both sides and, without any warning, ordered them to fire. The troops shot 1,650 rounds over 10 minutes and left 379 dead and 1,200 wounded. Dyer freely admitted later he had aimed at where the crowds were thickest.

He also agreed he would have turned machine guns on his armoured cars on the crowd but they were too big to get into the park. ‘I was going to punish them’ he told an inquiry. ‘My idea from the military point of view was to make a wide impression. I wanted to reduce their morale’.

But Dyer also conceded that he hadn’t needed to shoot at all. ‘I think it quite possible that I could have dispersed them without firing,’ he agreed. ‘Then they would all come back and laugh at me’.

As hundreds lay dead and dying, Dyer marched his troops away and made no attempt to help the wounded. ‘It was not my job,’ he said, ‘The hospitals were open and the medical officers were there. The wounded had only to apply for help’.

The inquiry which followed concluded that the massacre had irreparably harmed British interests in India and was as horrific as some of the German Great War ‘frightfulness’ in Belgium and France. But Dyer hadn’t finished.

In the street where Miss Sherwood was attacked he ordered all Indians to crawl on all fours, including innocent residents who had no other way of getting out of their homes.

He also had six unconvicted prisoners flogged on the spot on the dubious grounds that they just might have been the attackers. ‘The chances were that these were the particular men,’ he insisted. ‘These men had in a dastardly fashion beaten a woman and knocked her down six times in the street. Nothing was too bad for them’.

The inquiry verdict was unequivocal. ‘We feel that General Dyer, by adopting an inhuman and un-British method of dealing with subjects of His Majesty the King-Emperor, has done great disservice to the interest of British rule in India,’ it declared. ‘This aspect it was not possible for people of the mentality of General Dyer to realise!

But Dyer had powerful supporters who claim his actions had halted a full scale rebellion. He was simply sacked from the army under a cloud, and a few years later, a judge ruled he had acted correctly.

He retired to St Martin’s Cottage, Long Ashton, in 1926, and died the following year. ‘I only want to die and know from my Maker whether I did right or wrong’ he said. After a service at the parish church, he was given a full military funeral at St Martin-in-the-Fields, London.

But his legacy of hatred lives on in Amritsar and in 1997 Sikhs tried to get the Queen to apologise for the massacre during a royal visit.

They didn’t get one: instead Prince Philip untactfully expressed doubts about the death toll mentioned on a memorial plaque, claiming: ‘That’s wrong. I was in the navy with Dyer’s son’.
