Stuffed Bread Rings I haven't got FTP access to my domain on this computer so I'll put the recipe here. I saw this on the tv on Saturday so decided to make it for our picnic at the last minute. Turned out good! I'll write it with the ingredients Jamie Oliver used and then tell you what I used instead, I can reveal that it was a big success! Looks like a lot of food - and it is. It is a proper group picnic meal, made it, wrapped it in foil and sliced it on site. Sort of like a sandwich pie! I have uploaded 2 'sliced' pics too. Stuffed Bread Rings (Don't know what else to call them) Bread 1kg Strong White Bread Flour Handful Salt Handful Sugar 3 x packet dried yeast Pint of tepid water Savoury Filling Parma Ham Boiled Eggs Mozerella Grated Parmesan Sundried tomatoes Fresh Basil Decoration Rosemary Sprigs Sweet Filling Jar of Nutella 2 Bananas Chopped Hazelnuts Preheat oven to 200C 1. Put all dry bread ingredients in a large bowl. Add water and stir until all the water is mixed in. 2. Turn out onto surface (there's enough non-mixed flour to stop it all sticking) and knead for 10 mins or so until it's all togater and like a proper bread dough! 3. Set one half aside for sweet filling. 4. Roll dough out into a big rectangle on floured surface - sort of tea-towel size. Lay it out 'portrait'. 5. A couple of inches in from the top edge, layer all your savoury fillings evenly along the whole length of the dough. 6. bring the top edge of dough over the fillings and continue to roll it towards you so you have a long filled bread swiss roll. 7. Bring the dough round into a ring and tuck one end into the other, squeezing it all together. Pop on a floured baking tray, rub olive oil into the top and decorate with rosemary sprigs. 8. Leave to rest whilst you make the sweet one. 9. Roll out second half of dough as before, perhaps a little thinner if you can but it's quite springy! 10. Spread Nutella over the whole of the dough, leaving a gap on bottom edge to allow for seepage when rolled. 11. Sprinkle with chopped banana and hazelnuts. 12. Roll as before and twist round into a spiral, tucking end underneath.Rub top with olive oil and put on tray (can be the same tray as savoury bread). 13. Put both in oven for about 35 minutes, until golden and looking like cooked bread. My fillings For various reasons I didn't use the same fillings as Jamie. It all seems very flexible. I've already planned a greek one with feta and olives and a sweet one using honey instead of chocolate :) Savoury Cooked Chicken breast (with a Mexican seasoning I think) Mozzerella Sprinkle of grated cheddar. Full View - The Time Is Right I made this piece for my friend's 6 year old daughter. I was having tea at their house one day with my kiddos, and she brought out this beat up picnic basket and her mom said maybe it was time to get rid of it. I immediately saw the potential in it and I asked her to let me make it into art. I asked her to give me a couple of the little girl's personal things to include in it. Among those are the pie bird, the "N" made from sticks, the gold star, and the glass bear. Norah has been living in the Canadian Rocky Mountains, which is represented by the top part of this piece, and the Polaroid transfer I made of an image I took of a local ski mountain. She will soon be moving, which is why I used the fortune that says "The time is right to make new friends". The small birds are friends. The large bird, given to me to use, represents Norah and that she will soon fly. The middle of the piece features the "N" she made out of twigs and the fortune says "You are deeply attached to your family and to your home" in French (In Canada there are two official languages, French & English). The heart made out of sheet music represents Norah's family; her mother, father, sister, and herself are all musicians. The bottom of the piece represents where Norah will move to, the east coast of Canada. I included a Polaroid transfer I made of an image of a lighthouse. She is 6. This part contains her name because all people like to see their own name, and to make the already personal piece hers and hers alone. The fortune, "You stand in your own light, make it shine" is my way of saying not to worry about moving to a new place, you will be fine. The star pendant was given to me to use. Norah's favourite little friend, the bear, is holding a bird (as suggested by my 4 year old daughter) and since Norah is represented in this piece by a bird, he is actually holding and comforting her in this new place. The twigs represent nature in both places. And the buttons represent attachment to the past, the transition, and her future home. The red satin ribbons match the fabric that was already in the picnic basket but also work to attach the pieces and are the colour of love, which Norah is surrounded by in her life, no matter where she is. The wire is both a functional and decorative element. The beads add sparkle, something a little girl loves. The whole thing is in a picnic basket, which in this case is like a suitcase that Norah takes while traveling through her life. Looking into annealing the sugar models by putting them in a warm oven, near the melting point. These were put in a hot oven, close to but below the melting point of sucrose. (A digital oven thermometer is a must.) After half an hour in the oven, this was the result: a puddle. The bottom of the models had melted, and the lower "legs" of the model had softened significantly as well. On the top side, there was indeed some evidence of smooth annealing. I suspect that some of the melting is due to the cookie sheet- perhaps it was warmer than the air in the oven-- the same thing happens to chocolate chip cookies; they can get easily burnt on the bottom. The next thing to try might be using a semi-insulated cookie sheet. Cranberry-Raisin Maple Nut Pie Recipe INGREDIENTS: 1 box Pillsbury® refrigerated pie crusts, softened as directed on box 1/3 cup packed brown sugar 1/4 cup chopped walnuts 3/4 cup packed brown sugar 1/2 cup white chocolate chips 1/2 cup pure maple syrup 3/4 cup half-and-half 3 eggs, slightly beaten 3/4 cup dried cranberries 3/4 cup chopped walnuts 1/2 cup golden raisins DIRECTIONS: 1. Heat oven to 425°F. Place 1 pie crust in 9-inch glass pie plate as directed on box for One-Crust-Filled Pie. 2. Unroll second crust on work surface. With floured 2 1/2- to 3-inch and 1- to 1 1/2-inch leaf-shaped cookie cutters, cut 3 leaf shapes of each size from crust. Set aside. Cut remaining crust with scissors to resemble crumb topping. In small bowl, mix 1/3 cup brown sugar and 1/4 cup walnuts; stir in cut-up crust. 3. In 3-quart saucepan, place 3/4 cup brown sugar, the white chocolate chips and syrup. Cook over medium heat, stirring constantly, just until chips are melted and mixture is smooth. Stir in half-and-half and eggs until well blended. Stir in cranberries, 3/4 cup walnuts and the raisins. Pour mixture into crust-lined plate. Sprinkle with cut-up crust mixture; top with leaf cut outs. 4. Cover crust edge with strips of foil to prevent excessive browning; bake 20 minutes. Remove foil; reduce oven temperature to 350°F. Bake 20 minutes longer. Cool at least 2 hours before serving. Quaker Oat Bran - Giant Raisin Oat Cookies GIANT RAISIN OAT COOKIES *Suppose to get 1 dozen cookies, but I got 8 GIANT ones. :-) 3/4 cup sugar 1/3 cup light corn syrup 1/3 cup (5 1/3 tablespoons) margarine, soften 2 egg whites 1/2 teaspoon grated orange peel (optional) 1 1/4 cups Quaker Oat Bran hot cereal, uncooked 1 cup all-purpose flower 1 cup Quaker Oats (quick or old fashioned, uncooked) 1/2 teaspoon baking soda 1/2 cup raisins Heat oven to 350 degrees. Beat sugar, corn syrup and margarine until light and fluffy. Add egg whites and orange peel; beat until well blended. Gradually add combined oat bran, flour, oats, and baking soda, mixing well. Stir in raisins. Drop by scant 1/4 cups onto ungreased cookie sheet. Gently press into 3 inch circle. Bake 14 to 16 min. or until light golden brown. Cool one minute on cookie sheet; remove to foil/rack to cool completely. Store tightly covered in freezer or at room temperature. Time to can (again) Wendy pulled out a monster 12 qt pressure cooker from one of our closets. I had to find a manual on-line and was surprised to see these only go for $80 new. We probably have over 20lbs of tomatoes that need to be canned at this point. The previous canning sessions were water bath based, but the pressure cooker should cut that time in half. Camp Chef Outdoor Stove Depending on your forcast of the future we are either going to be remodeling the kitchen (as Catherine wants to do) and using this stove to cook outside during that time or I am adding to my collection of emergency stoves for when the power goes out. Apparently others are thinking same because there was heated competition for it on e-bay and the next one that came up for auction sold for $20 more. It is not even camping season and other stuff is hardly attracting any attention. This stove was new in the box for $59 plus $31 shipping. The stove is started with corn stalks and twigs and fed a light diet of small pieces of wood. The tall stack in the back contains an oven alcove for bread-making. Caribbean Food Made Easy In the BBC2 programme, "Caribbean Food Made Easy", Levi Roots travels around the UK and the Caribbean and reveals how delicious Caribbean food can be prepared at home with easy-to-prepare, mouth-watering recipes using fresh, healthy and readily-available ingredients. The show, made by BBC Scotland, will consist of four 30-minute prime-time shows from 8-8.30 pm, including 3-4 dishes per programme. (6) Polynesia: Uru or Breadfruit....the Fruit that changed the World Breadfruit is a staple food in many tropical regions. They were propagated far outside their native range by Polynesian voyagers who transported root cuttings and air-layered plants over long ocean distances. They are very rich in starch, and before being eaten they are roasted, baked, fried or boiled. When cooked the taste is described as potato-like, or similar to fresh-baked bread (hence the name). Sir Joseph Banks and others saw the value of breadfruit as a highly productive food in 1769, when stationed in Tahiti as part of the Endeavour expedition commanded by Captain James Cook. The late-18th-century quest for cheap, high-energy food sources for British slaves prompted colonial administrators and plantation owners to call for the introduction of this plant to the Caribbean. As President of The Royal Society, Banks provided a cash bounty and gold medal for success in this endeavor and successfully lobbied his friends in government and the Admiralty for a British Naval expedition. In 1787 William Bligh was appointed commanding lieutenant of the HMS Bounty, and instructed to proceed to the South Pacific for this task. Banks appointed a gardener for the expedition and gave detailed instructions on how the plants were to be maintained. The Bounty remained in Tahiti for five idyllic months during which over 1000 plants were collected, potted and transferred to the ship. Unfortunately, within a month of leaving many of the crew mutinied, expelling Captain Bligh and supporters in a long-boat, and returned to Tahiti. Providentially Bligh survived the ordeal, sailing with 18 loyal crew the 6710 km to Timor, reaching there in late 1789. In 1791 Bligh commanded a second expedition with the Providence and the Assistant, which collected live breadfruit plants in Tahiti and transported these to St Helena, in the Atlantic, and St Vincent and Jamaica in the West Indies. Although Bligh won the Royal Society medal for his efforts the introduction was not entirely successful as the slaves refused to eat breadfruit. Quiche Toast (beta) I made scrambled eggs for dinner last night. As is the case with at least 23% of all plates of scrambled eggs, they appeared on the evening's PowerPoint agenda as "Ham and cheese omelette with toast." Alas, I failed to put enough butter in the pan or something because the center of the omelette refused to release. I tore the thing all to hell trying to get it to "float" in the pan before adding the fillings and folding it over. I was ultimately forced to exercise the better part of valor. It was a fine dinner but it left me with a dish full of ham and cheese, all chopped together and ready to be dumped into something. I was left at a loss for what to do with it. I'd already messed up the pan (and I was suffering from Omelette Demoralization™). But I had some fresh baby spinach that was about to go bad and a thick heel of homemade bread that was getting stale. Home cooking is often motivated by a desire to use stuff before it has to be thrown away. Thus armed with a mandate of which my Mom would have approved, I looked at these random Lego bricks and decided that I could snap them together into something vaguely shaped like a quiche. Ham, cheese, chopped spinach, milk, and two eggs were beaten together. One thick slice of stale bread went into the bottom of my Bachelor-sized casserole. In went the batter, then a second slice (pre-toasted) went on top. Baked it for a half an hour at 375 or something. Results? Promising. Very, very promising. The top slice was a bit like a tough crouton and I discarded it after a bite or two. But the batter had seeped through the bottom slice, making it into sort of a heartier, meatier form of french toast that had me looking back in the casserole dish to see if maybe there was still a corner of it stuck to the side or something. I'll give this another shot, that's for sure. I'll bake it a bit longer and figure out how to get all of the ingredients to hold together a bit better; maybe I'll actually cut the bread into a "bowl" so that most of the liquid can seep into the bread while the cheese, meat, and other bits can sort of set together. A Gift from the Heart Life is an enigma at times. Such a gift might melt the heart of the biggest scrooge. The lady that baked this wonderful gift for me is so special that I would fumble attempting to describe her. Today, I thought about how others touch our lives without our ever knowing. For instance, I drove through a snowstorm to gather three hundred pounds of turkey and ham for our community Christmas dinner, all donated. I drove them to our community soup kitchen and placed them in the freezer until the volunteer cooks pick them up. The wonderful woman who works in the soup kitchen was preparing dinner for the United Way fund raiser by herself because the volunteers couldn't drive in the snow storm. She put me to work and we enjoyed gabbing while preparing dinner for an undescribed amount of people who were due to eat in two hours. After driving back home, I realized how fortunate I am to be a part of a community that embraces giving. No one will know or probably even think about how the community Christmas dinner or the United Way dinner were prepared ( I sure hadn't before). I suppose that is my gift too. Seeing the larger picture. I can't remember when I enjoyed the Christmas season so much. I have been singing Christmas songs for weeks because of the gift of community (much to the dismay of my colleagues). How fortunate am I!?! Galletas de chocolate vegan Ingredientes: 1/2 taza de pepitas de chocolate (para fundirlas luego) 1/2 taza de leche vegetal (soja, arroz...) 2/3 taza de aceite de girasol 2 cucharaditas de vainilla 1 y 1/3 tazas de azucar moreno (tambien se puede sustituir por sirope de arce poniendo menos cantidad ya que este endulza mas) 2 cucharadas de maicena 2 tazas de harina 2/3 tazas de cacao en polvo 2 cucharaditas de levadura 1/4 cucharadita de sal 2/3 taza de pepitas de chocolate Precalentamos el horno a 180? Derretimos las pepitas de chocolate en 1/3 de taza de la leche vegetal en el microondas o donde queramos. Una vez que se ha derretido lo echamos en un recipiente y echamos el resto de la leche vegetal, el aceite, la vainilla, el azucar y la maicena. Despues iremos agregando la harina, el cacao, la levadura y la sal. Lo removemos bien hasta que este todo bien mezclado y por ultimo anadimos las pepitas de chocolate. Y ahora es cuando nos pringamos las manos! (o usamos la cuchara para los mas fisnos). Vamos agarrando punaditos de la masa y aplastandolos para hacer la forma de las galletas. Y lo vamos poniendo en la bandeja del horno. En el horno lo dejaremos unos 10 minutos, echando siempre un ojo no vaya a ser que se quemen y luego me echeis la bronca por haber puesto mal los minutios que son ^^ Para terminar dejamos las galletas en una rejilla para que se enfrien y ala, a comer! Spring 2010 Wedding Dress Cookie Collection all 21 designs of my wedding dresses are here. as you can see, i started out with 7 basic shapes, and i created different interpretations out of each one. actually i had some more ideas, but i ran out of cookies hahahahahah! do check out the close-ups in the previous pictures to see all the tiny details. it's the first time ever i've used such a tiny nozzle! it kept clogging up even though i sieved the icing sugar! i had to use a wire to unclog it MANY times. still, it was the only way i could get such fine details. i really wish i had some pearl luster to do some accents, but they're all at my old workplace. still, i think it's pretty nice for a pure white collection even without the added luster. p.s. some of the designs i came up with myself but a lot of them i got from browsing through wedding magazines. i'm not a dress designer! wedding-cookies I've been working on cookies the last couple days.. what do you think? Sometimes it's really hard to think of original ideas when there are so many great ones out there!!
