before you get started, you will need: 1. cabbage. you can use red or green, but it is easiest to get a good result with green. the fresher the cabbage is, the better your sauerkraut will be, because the moisture content is higher. if you use cabbage that is too old, you will need to make a brine to cover the shredded cabbage, which is too dry. i've included some information about brine a little later on. 2. a crock. i use an antique ceramic one. i have heard about using foodsafe plastic containers, and i know you can buy new crocks at hardware stores and such. if you decide to use an antique, please be sure that its glaze is intact before using it for the first time. check it for seeping, by filling it full of boiling hot water and letting it sit overnight. in the morning, if there are water droplets on the outer surface, the crock is no longer foodsafe. 3. kosher salt 4. sharp knife 5. food processor, or a mandolin for shredding cabbage. some people claim that food processors are no good, because they don't cut the cabbage into consistently-sized pieces. but i have gotten many good batches from my food processor! you need to use the slicing blade on your processor. 6. a plate and a weight (i'm using full canning jars, which i can sterilize easily with hot water.) i know some people use a large rock instead, which they have sterilized. 7. lint-free kitchen towels. i use floursack towels, of course ;). 8. bakers twine 9. You can also add a few grilled peppers, and add or remove anchovies and capers, although it’s much more flavourful with these ingredients! Tarte a la Provencale Prepare the Garlic Tomato Sauce with Herbes de Provence for the base in advance (see comment below). You’ll also need half a 397 g pack of puff pastry, a small red onion, black olives, anchovies, capers, and old cheddar or gruyere cheese, and a 28 cm loose-bottomed tart pan or porcelain baking dish. Pre-heat the oven to 200C. Very thinly slice a small red onion using a very sharp knife or a mandolin. Slice a large handful of black olives [about 125 ml]. Finely grate the cheese [200 - 250 ml]. Roll the puff pastry very thin. Sprinkle the pan with a few drops of cold water and place the pastry in the pan, trimming the edges. Spread some tomato sauce evenly over the base –not too thick but make sure it’s well covered. You’ll need about 3/4 of the sauce. Evenly spread the sauce with the thinly sliced red onions, the sliced olives, and a few tablespoons of drained capers. Drain six anchovies and place evenly over the filling. Evenly spread the grated cheese over the tart, and bake in a very hot oven for 20 to 25 minutes [depending on how moist the sauce is, it may need a little longer to properly cook the base]. Serve hot or room temperature with a fresh salad. Medeski Martin Wood HiFi Medeski Martin & Wood (or MMW) is an American jazz trio formed in 1991, consisting of John Medeski on keyboards and piano, Billy Martin on drums and percussion, and Chris Wood on double bass and bass guitar. The band draws on influences from a number of musical traditions, from funk to Hip Hop, and is known for an unconventional style sometimes described as "avant-groove". MMW has found moderate mainstream success—often working with noted guitarist John Scofield—and touring on the jam band circuit. History The band members were introduced to each other by jazz drummer Bob Moses, who had performed with Medeski and Wood, and was Martin's instructor. Medeski Martin & Wood's first performances together were at the Village Gate, a popular New York jazz club. They were initially an acoustic jazz trio, but Medeski added a Hammond organ when the difficulties of touring with a piano became apparent. Their first album, Notes from the Underground, is a record of their entirely-acoustic era. All of their subsequent albums reveal Medeski's use of a wide variety of keyboards, including mellotron, melodica, and a clavinet. Wood entirely eschewed the electric bass for MMW's first three albums, and still relies heavily on the acoustic upright bass in recordings and during live performances. Their earlier albums reveal a Hip Hop influenced updating of classic soul jazz sounds, which is the primary theme of their well-known 1996 album, Shack-man. The band received some of their first significant exposure outside of the New York City jazz scene by performing with Phish at their October 14, 1995 concert, which led to the association of the group as a jam band.[1] In addition, their performance on John Scofield's 1997 album A Go Go helped to further their exposure. The band collaborated further with Scofield again in 2006, releasing the album Out Louder under the name Medeski Scofield Martin & Wood. This was the first album released on MMW's own Indirecto Records. From 1998–2005, MMW were signed to leading jazz label Blue Note Records, and showed them delving deeper into dense, electronic funk than their earlier albums, although the band continued to experiment with free jazz and free improvisation both on their albums and in concert. Medeski Martin & Wood's live performances are renowned for their exploratory nature. Their concerts usually involve extended improvisations, which may be both arrhythmic and atonal, an aspect of their musicianship that is rarely documented in the studio. They occasionally tour using only acoustic instruments, reverting back to the instrumentation that they began their career with. Their album Tonic is an example of these more contemporary acoustic performances. They have also done short tours of entirely improvisatory performances. These shows usually consisted of two sets of improvisation, followed by an encore of a song from an album. Their song "End of the World Party" was featured on the show Grey's Anatomy and can be found on the show's soundtrack. Side projects Each of the trio's three members are involved in a large music community, and have participated in numerous side projects over the years. In 2001 John Medeski collaborated with the North Mississippi Allstars and slide-guitarist Robert Randolph; together, these five musicians formed The Word, a bluesy gospel band. They released one self-titled album and toured extensively. Beginning around 2005 Chris Wood formed The Wood Brothers with his brother, blues guitarist Oliver Wood. They have released several albums to date and continue to tour and record together. In 2007 John Medeski and Billy Martin released an album as a duo, called Mago. Ziggy Played Guitar So where were the spiders, while the fly tried to break our balls? Is there money in being the black widowmaker? Being of near Gambit-level obsession with playing cards, I always liked the spade the best. It's very majestic, and it ultimately is just a black heart with a stick up its ass. But still, it never seemed like... me. When I was 19, I picked through the few readily available decks of cards in the house, plucked out four jacks of clubs, and decided this was who I am. The ace is the best, everybody knows who the king and queen are, but yes, I was the jack. It was the black J, just like the jack of spades, but not QUITE as important. He had all the marks and looks of *being* important, but wasn't quite there. So I took these four lesser jacks, equal parts self-deprecating, longing, inspiration, and the lingering hatred of my father who carried the same name- and shoved them away into my coat, and took them with me everywhere I went. When Tammy and I were going out, we quickly established nicknames for each other, as most young, annoying couples do. She had dubbed me "Nerd Bird" (math and a vast knowledge of most things useless) and she became "Poopy Bear" (she would often feel poopy, as it were, and would make what I swear was the most adorable face ever when pouting.) While many adjectives would take the place of "Poopy" over the years, they eventually both just shortened to Bear and Bird. (Jason has already heard this AND the Banjo-Kazooie story.) One day, after falling for the freshly funked out street sounds of G. Love & Special Sauce, I downloaded a ton of their songs, one of which was Blackbird. Being willfully ignorant of the Beatles, I had no idea that it was a cover, but it was instantly one of the most beautiful songs I'd ever heard. Of course, I would go on to obtain the original and pretty much hate it. Since then, it's become THE cover song, as there are versions out there by Sarah McLachlan, Ani DiFranco, Foo Fighers, and Elliott Smith, but none stand up to G. Love & Special Sauce. (I apparently lost all of these when the other computer died.) umbria jazz 11 Edizione particolare quella di quest’anno per Umbria Jazz, dedicata ai 150 anni dell’Unita Nazionale e alle donne, che saranno protagoniste di un cartellone che concede loro grande spazio. Donne artiste non solo dal punto di vista musicale: il manifesto ufficiale ha infatti per la prima volta un tocco femminile, quello di Grazia Varisco. Un festival in bianco, rosso e verde dunque, verde come il cuore dell’Umbria, che da quasi quarant’anni e il portabandiera in Italia di questa musica straordinaria, il jazz. Nessuno poteva immaginare nel 1973, anno della prima edizione, il peso che questa kermesse avrebbe esercitato sulla scena musicale italiana, e non solo. Oggi Umbria Jazz e un marchio conosciuto e apprezzato in tutto il mondo, un obiettivo fondamentale della carriera per qualsiasi artista, un vero e proprio punto di riferimento nel mondo della musica e dei festival musicali. Dalla prima edizione molto e cambiato, ma non lo spirito e l’identita che, insieme alla qualita delle proposte artistiche hanno fatto la fortuna della manifestazione. A confermare questa attitudine sono i nomi in cartellone per l’edizione che si svolgera a Perugia dall’8 al 17 luglio: le donne in primis: LIZA MINNELLI, forse l'ultima grande leggenda del musical americano, che torna in Italia dopo le esibizioni del 2008, CARO EMERALD e DEE ALEXANDER poi, la prima vero e proprio fenomeno musicale del momento (suo il brano di un notissimo spot televisivo); la seconda scoperta nell’ultima edizione invernale del festival, tra le piu apprezzate da pubblico e critica. Due pianiste dal Giappone: HIROMI, che aprira per il suo mentore AHMAD JAMAL e CHIHIRO YAMANAKA, protagonista della scena jazz contemporanea, che avra l’onore di precedere il trio delle meraviglie HERBIE HANCOCK, WAYNE SHORTER, MARCUS MILLER, evento in esclusiva italiana, per il tributo a Miles Davis. Rock, Funk, Pop e Blues protagonisti con star che hanno fatto la storia come SANTANA, PRINCE e B.B. KING, nomi che non hanno bisogno di presentazioni e che sono in grado di soddisfare i gusti musicali di qualsiasi appassionato. Ritmi latino brasiliani con il meglio di questi generi musicali: GILBERTO GIL, SERGIO MENDES, EDDIE PALMIERI, CHUCHO VALDES e MICHEL CAMILO, per due serate che si preannunciano incandescenti. I was trying to reveal depth of field and emphasize different elements while keeping the musician in for context. Too bad he's essentially a shadow. sax guys As a promotion for the new production of the Rocky Horror Show they staged an attempt at the world record for people doing the Time Warp. Star Wars Cookies I love Star Wars. Love, love, love! Grew up on the movies, and have even watched some scenes frame by frame with my dad. When I got this order I knew what I wanted to do. I have been oogling Rosey Sugar's Star Wars Set since my first day on Flickr, and as a matter of fact, Darth Vader was my first ever Flickr FAVE. She graciously granted me permission to use her idea, which was inspired by another Flickr-er, although I cannot remember his name. Anyway, I am definitely no Rosey, I had the time of my life making these! I added Chewy and Yoda because they are old friends, LOL, and am kicking myself for not going ahead and doing Jaba, and a Storm Trooper...and, and, and...I CAN'T WAIT until next time! Thanks a million, Yukiko! Also I wanted to mention, Death By Cupcake had an icing issue she posted the other day...same problem here in Luke and Leia's hair. I really think it is from using "old" as in yesterday's icing without mixing it enough or adding some fresh icing to thicken it up....not sure, but since she posted that it's happened to me twice! I tried some cookies awhile back for a customer..notice they are NOT posted anywhere, so that should tell you how they turned out! :) But overall, I liked this cake. Hopefully my customer will too!
