Chocolate Chip Cookies with Hazelnuts

Chocolate Chip cookies modified from a recipe in the David Lebovitz "Ready for Dessert" book.
Ingredients: organic stone-ground white flour, organic baking soda, raw organic sugar, organic raw vanilla sugar, smoked salt, butter, organic light muscovado sugar, organic ground vanilla pods, free-range eggs, toasted organic hazelnuts, Vivani 85% cacao dark bitter organic chocolate, Loving Earth Lucuma & Maca Organic raw chocolate, ground clove, ground cinnamon, ground coffee, Kahlua and saffron extract.
The flavor is intense, earthy and complex. I offered a spoonful of the batter to the BF without telling him what was in it -- he had the most confounded expression on his face as he attempted to reconcile the layers of spices and dark, bitter flavors with what he traditionally recognizes as a chocolate chip cookie.
Vanilla extract

3-4 vanilla beans, cut open
clean jar
seal and shake every couple weeks. in a few months, you're ready to roll.
add an occasional new bean (and replace the old ones) and refill liquor as you use it, and you'll have a continuous supply.

Chocolate-mint crinkles
Ingredients:
2 cups all-purpose flour
1 cup unsweetened cocoa powder
2 cups granulated white sugar
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup vegetable oil
4 eggs
1 teaspoon vanilla extract
1 teaspoon mint extract
1/2 cup confectioners' sugar
Directions:
1. In a medium bowl, mix together cocoa, white sugar, and vegetable oil. Beat in eggs one at a time, then stir in the vanilla and mint. Combine the flour, baking powder, and salt; stir into the cocoa mixture. Cover dough, and chill for at least 2 hours.
2. Preheat oven to 350 degrees F (175 degrees C). Line cookie sheets with parchment paper. Roll dough into one inch balls. Coat each ball in confectioners' sugar before placing onto prepared cookie sheets.
3. Bake in preheated oven for 10 to 12 minutes.
Hint: I found it was really helpful to make one perfect 1 1/2 inch ball and then place it into my tablespoon to see how it compared to the measure. Then making the rest of the balls are a lot easier. The size of them needs to be consistent for the baking time to work, or some might turn out hard(er). For coating them in powdered sugar I got a round tupperwear tub and filled it with an inch or so of powdered sugar. Before each ball is coated, use a fork or something to fluff up the powdered sugar -- it has a tendency to get compressed.. Then when you have a ball formed, drop it into the open tupperwear. Then hold the tupperwear in one hand (with your wrist facing the ceiling) and just spin it around in a circle. The centrifugal force of you spinning the container will force the ball along the round shape of the container, therefore maintaining the shape in addition to coating the ball in sugar. This whole song and dance is necessary because you can't hold the dough in your hand for very long. Why? The melting temperature of chocolate is LOWER than our body temperature and so chocolate-based goodies melt in your hand (a-la M&Ms commercial). So it's a good idea to handle the dough with your hands as little as possible.
Once the balls are coated fully in sugar, place 12 per sheet and bake in preheated oven for 10 to 12 minutes. I would take them out at 12 minutes, even if they don't look done. Let them sit on the cooking sheet for 2-3 minutes, and then transfer to a wire cooling sheet, or anything that is not a hot metal surface.
Lemon Sugar Crisps
Lemon Sugar Crisps (frustrating as hell to make)
The trick is in the cookie cutting.
3/4 vegetable shortening
1 t pure vanilla extract
1/2 C sugar
2 C flour
1/2 t baking powder
1/4 t salt
1/4 C lemon juice
Powdered sugar for dusting
Mix the sugar and lemon for about a minute. Mix in the shortening until fluffy-like. Add the vanilla and lemon and run the mixer while slowly sifting in the flour, baking powder and salt. Dough should be a wee bit crumbly and difficult to work with. Such is life.
Grab a roll of wax paper, sandwich a lump of dough in between two pieces and roll out fairly thin disks of dough. Too thin and it'll be impossible to work with. Too thick and it'll loose it's texture after baking. Around 1/4 inch is good. Layer the disks of dough and wax paper on a cookie sheet and freeze for at least a half hour.
Heat oven to 325. Take out one frozen disk of dough and the cookie sheet from the freezer. Use the cookie sheet as a work surface to keep the dough chilled as long as possible. Frozen dough is easier to work with. Cut up dough, reroll and refreeze scraps. Bake cookies five to ten minutes depending on thickness. We have a convection oven and 1/4 inch cookies baked in about five minutes.
These cookies are great for ADD chefs like me. Since they bake so fast you can run around being distracted in between batches while the dough is hardening in the freezer. They can be frustrating since the dough is very crumbly and you're working with fairly thin sheets of it. However, according to Andy and Billy, they're very much work it!

Ah, the #2 stop of the "over-hyped, over-price, yet incredibly mediocre" restaurant of the trip. I must admit, the meal started great. The sourdough bread was good, the steamed mussels in white wine garlic sauce was excellent. Then came the clam chowder, which was just another cup of clam chowder, completely boring. When I was choosing the entree I really couldn't decide, I normally don't get fish in a western restaurant since I think asians know how to cook fish better, but I was in the pacific northwest, salmon seemed a must. The waitress recommended the stuffed salmon, said that it was the most popular dish, so I said ok (not realizing that this dish was $28, or I would've never ordered this). Well, this was pretty foul. The salmon was incredibly fishy, the stuffing was entirely too heavy on an already heavy fish. Ugh, the more I think about how much I paid for it the more angry I get. And look at the plate, how ugly is this thing for $28?
BTW, I don't have any photos from the #3 of the "over-hyped, over-price, yet incredibly mediocre" restaurant , but it was Typhoon in portland, a Thai restaurant. We went there mainly because it was 2 blocks from the hotel, and I had difficulty walking as I had severe back pain. Let's just say that I have had better thai food from a dirty take out place in LA with 1/2 of the price tag.
Stuffed salmon

I was cooking a whole meal for a dinner party that night, so it was a little frantic. I had my "studio" setup on the kitchen table, and as things got to interesting points I set them up and took a few shots. I couldn't take too long with any one thing, or I wouldn't have things ready in time! Luckily, one of my guests is also a photographer, so there wasn't too much complaining when I wanted to get a shot of the plated meal before we sat down.
In the end this shot seemed to me to be the most suited for "the cover of a high-end food magazine". The near translucence of the back-lit fish is very appealing to me, and I like how the green and white set off the salmon and make it look extra fresh and healthy. I was happy with several other results, though, and I learned a lot by trying to find the right look for all the different kinds of food I tried out.

I didn't notice this recipe required a blender - hate those - what a mess! And I used a real bunch of spinach instead of pre-washed. What a hassle! But the recipe made tons and it's quite the interesting balance of colourful and somewhat bland yet hearty.

Cookies Anyone?
I made cookies! These are Aunt Mildred's Slice-of-Spice cookies and they are extremely addictive.
3 cups Flour (Sifted)
1 tsp Soda
1 Tsp Cream of tartar
1/2 tsp Salt
1 Tsp Vanilla
1 cup of unsalted butter (Paula Dean would be proud)
2 Cups of Brown sugar
1 Cup of Oatmeal
1/2 - 1 Cup of pecans (Chopped fine)
2 Eggs
Cream the butter and gradually add the Brown sugar. Blend in the eggs (unbeaten) 1 at a time. Add Vanilla. Slowly add the dry ingredients (Flour,Soda, Salt, cream of Tartar) Add the cup of oatmeal and pecans. Mix thoroughly.
Divide cookie dough into 3 parts and make 3 rolls in wax paper. (About 2in diameter rolls) Refrigerate the rolls for 3 to 5 hours. (Or place in the freezer for about an hour)
Preheat the oven to 350 degrees (f). Make a cinnamon/sugar mixture with 1/2 cup of sugar mixed with 3 tsp of cinnamon. On a greased cookie sheet (I just use a spray oil) slice 1/4inch cookies from the cookie dough rolls, coat with the cinnamon sugar mixture and place on the cookie sheet giving them enough room to grow. Bake for about 9-13 minutes.
This will make a LOT of cookies. I'm not sure how many because I can't stop eating them long enough to count them. If there are enough left to give away, they make a great gift for the holidays. -Ross

A neighbor ordered some cookie favors to pass out to guests at a dinner party she is having. She wanted houses with their names on them and this is what I came up with. There were 9 of them and they took me much longer than I had planned.

Using Japanese rice to make Chinese fried rice sounds unmatchable. But there are ways to make the impossible to possible, and enjoy the quality of japanese rice and at the same time the Chinese cuisine.
What you need to do is to reduce the water when cooking. Depends on the cooker you use, you might need to test a few times to get your rice not to hard and not too soft.
Add in lettuce and crab meat, dinner is ready.

Fish Baked Rice was the second main course. Baked rice has been a major reason for coming back to Swensens. Well... kinda sub-conscious i guess. But prices have gone up and the quality has gone down. Pressure cooker steamed rice is used and the cream sauce is pretty much separated from the rice nowadays. Perhaps we should venture into other parts of their menu...

Starting with the top left corner and working vaguely clockwise we have: apricot and raspberry linzer cookies, white chocolate cookies, pecan snowballs, ginger snaps and molasses cookies, three different kinds of 'bastards': Oreo bastards (the white ones), lemon bastards (the yellow) and peanut butter bastards (the chocolate), raspberry rugulach, Hanukkah dreidels and stars, Spritz cookies, mini carrot cardamon muffins, date walnut spirals, anise cut outs, chocolate crinkles, and chocolate macarons.
Not pictured are the lavender lemon shortbread and molasses raspberry cookies I brought to the swap. And all the ones that I ate before I took the picture...

Fresh raspberry- Valrhona Ivoire white chocolate mousse with a touch of framboise, layered with chocolate wafer cookies dipped in dark belgian (70%) chocolate, in a lined loaf pan, then frozen.
Contains fresh whole raspberries, and sweetened, reduced and strained fresh raspberry puree. I wanted to get it as 'bright pink' as possible (as sort of a joke for someone who hate, hate, HATES pink), so I added a bit of pink gel color.

Blanche cabbage leaves until just wilted.
Saute onion in a pan, brown some beef seasoned with trader joes grill and broil and salt, drain grease. Add 1 pkg cooked saffron rice and 1/2 can cut tomatoes (i used the kind with the peppers and seasonings), and chopped fresh parsley. Wrap mixture in cabbage leaves and place in a casserol pan. In small pan put more olive oil, garlic and onion add rest of the tomatos and liquid, beef boulion, and some red wine to make a thick sauce. Pour over top and cover and bake at 350 for about 30 minutes.
oh, and i put cheese on it too, which is not orthodox...forgive.
Cabbage Bhaaji
Heat 2 tbsp oil in a pan. Flavour the oil with cumin + mustard seeds + urad daal (split lentil) + 1" chopped ginger + half tsp turmeric powder + 3 chopped green chilies. Add 1 small chopped cabbage + 1 tsp garam masala + salt and stir fry. Cover and cook until done.
