Lasagna Mr. Moc’s favorite italian food is lasagna and being the good wifey that I am, I made lasagna for dinner. Honestly though, this is probably only the 2nd or 3rd time I’ve made lasagna for Mr. Moc in all the years we’ve been together (over 7 years). So when I spotted whole wheat lasagna noodles at the local supermarket, I had no excuses left not to make lasagna. I tried to make it a bit healthier with the whole wheat lasagna noodles but I also added in as many veggies as I could for BabyMoc. I steamed and pureed cauliflower and hid it in the "white sauce". I also added a lot of veggies (carrot, celery, onion, zucchini, mushroom, and obviously tomatoes) in the meat sauce. The only problem with making lasagna for a family of three is that we have enough leftovers for the week! Next time, I'm going to send half of it over to our neighbors. Lasagna: Noodlin' around the Sauce I didn't boil the lasagna noodles. Every pack I saw in the store said "No Boiling!" - however all of the horror stories I'd heard had one common element, dry and crunchy pasta. So Ina's recipe calls for soaking the noodles in hot tap water for about 20 mins.
