My wife had a night out on Saturday. Our 8YO younger daughter still has tough time getting through a night without her mother :D She, her elder sister, and I had fun cooking dinner for us, playing games, etc, but she still jumped up on the couch everytime she hears something outside, as she thought it was her mother coming home. I had to keep telling her that her mother would not come home until after she went to bed. She would enjoy the games, cooking and everything, but every hour or so, I would spot her on the couch, spacing out like this, missing her mother. Meanwhile, our 11YO elder daughter Kyoko was totally happy without her mother, without someone who would keep asking things about school, study, etc :D

One of two fillets that came with the entree option of "Poached Chilean Sea Bass and Green Curry Shrimp" - appealing to seafood lovers. E was too full at this point to finish most of his meal so he was kind enough to share one of the fillets (as I was, as my usual self, famished - it was a late seating!). Paired with Linda's unctuous black bean honey sauce, while moist, the silky dense fish appeared to be cooked slightly more than my liking on this visit (reminding me of what BY had noted on one of her visits) compared to in the past.

Usually I order groceries on the Internet, but I did not need very much this week. A few of the items I bought are for the 'social work' basket at church; others are for my mother-in-law (she is usually too tired to cook).
The total cost was ?44.11 ($72.18 or 49 Euro). The most expensive item was catfood, but I bought extra because it was on special offer.

My version of brisket is made cooking a 5-7 pound brisket for 12 hours in a 200 degree oven. (fahrenheit) I generously rub it with garlic, salt, pepper, chili powder, onion powder and pour Duck sauce all over it. It has a large onion underneath and all around the meat. I cut a piece (or two - lol) off to show you what it looks like and of course Tino and I sampled it.

We go to sleep and smell it cooking as it wafts through the air. Let it rest before you cut it and I guarantee you will taste heaven.

Our boys usually come for dinner on Sunday's. I will be serving mashed potatoes with caramelized onions mixed in them and also homemade apple sauce. I use a food mill for preparing the apple sauce and mashed potatoes.

If you're in the neighborhood...Come on over!!

If I'm ambitious dessert will be pumpkin chocolate cookies.....................mmmmmmmmmmmm!!!

2-3 pound beef brisket
3 tablespoons homemade pickling spice
1 cup kosher salt
1 once of pink salt
4 cloves of garlic crushed
1-1 inch piece of ginger
6 cups of water
Toast spice in dutch oven until fragrant remove and crush gently. Add water and bring to a boil add salt, take of heat and add spices and garlic. Cool completely then add brisket.
Cure for 4 days to 2 weeks.
To serve rinse brisket add to a pot with water and bring to bowl, reduce heat and cook at a low heat for 2 hours, add potatoes, cabbage and carrots 40 minutes before serving. Serve with mustard.

Mostly made from ingreidents left over from recipes I made this past weekend.

1 lb ground chuck
1 tsp peanut oil
1 onion, chopped
2 cloves of garlic, cut into several pieces
1 jalapeno pepper, deseeded and diced
1/2 can diced tomatoes
1/2 cup white wine (approximate)
1/2 tsp dried thyme
1/2 tsp dried oregano
1/2 tsp dried basil
Salt and pepper to taste
4 cooked lasagna noodles, cut into smaller pieces
8 oz frozen peas
3/4 cup shredded Cheddar

Brown the ground chuck over medium heat until all the pink is gone, about 10 minutes. Remove the meat into a bowl lined with paper towels and drain the fat from the pan.

Turn heat to low. Add the teaspoon of peanut oil, the onion, garlic and jalapeno to the pan. Add a pinch of salt and a couple grinds of pepper. Sweat the onion for 10 minutes.

Return the meat to the pan and stir in the tomatoes, thyme, basil, oregano, and white wine. Add another pinch of salt and a bit more pepper, if desired. Bring to a boil, reduce heat and simmer for about 10 minutes. Taste for seasoning. Add more if desired.

Stir in the peas and cut-up lasagna noddles. Cover and simmer for 10 minutes, stirring at least once.

Remove from heat, sprinkle the cheese on top. Let stand covered for 5 minutes and then serve.

This is pretty much made to suit my tastes, so of course I liked it quite a bit.

This is nothing original, but they turned out pretty good.

Preheat oven to 450 F.

Line a baking sheet with foil and mist with olive oil or a cooking spray.

Chop up about 2 1/2 cups of potatoes (I used red potatoes) into bit sized pieces and place into a bowl that you have a cover for (or use a ziploc bag).

Drizzle over some vegetable oil of your choice (I used peanut oil) about a tablespoon.

Then add whatever herbs and spices you'd like. In my case I used oregano, basil, salt, pepper and some red pepper flakes. No more then 1/2 tsp of each.

Put on the cover (or seal the bag) and shake like crazy.

Pour out the potatoes on the baking sheet and bake in the oven for 30 - 35 minutes.

Let them cool for about 5 minutes and then enoy.

For pate
3/4 stick (6 tablespoons) unsalted butter, softened
1 cup thinly sliced onions (2 medium)
3 large garlic cloves, chopped
1 Turkish or 1/2 California bay leaf
1 1/4 teaspoons salt
1 1/2 teaspoons ground coriander
1 teaspoon paprika (not hot)
1 teaspoon smoked paprika (sweet or hot)
1/2 teaspoon black pepper
1/4 teaspoon cayenne
1 cup dry white wine
1 1/2 cups red lentils (10 oz), picked over and rinsed
2 cups water
1 tablespoon agar flakes (non-vegetarian: you can substitute an equal amount of unflavored gelatin)
1 teaspoon balsamic vinegar
8 oz cream cheese, softened
3/4 cup chopped bottled roasted red peppers (6 oz), patted dry
1 teaspoon finely chopped fresh oregano or marjoram

For topping
1 tablespoon extra-virgin olive oil
1/4 cup chopped bottled roasted red and/or yellow peppers (2 oz), patted dry
1 teaspoon balsamic vinegar
1 teaspoon finely chopped fresh oregano or marjoram

Special equipment:
1-qt rectangular ceramic terrine; parchment paper

1. Lightly oil terrine, then line bottom and ends with a strip of parchment paper, allowing at least 2 inches of overhang on each end of terrine.
2. Heat 2 tablespoons butter in a 2- to 3-quart heavy saucepan over moderately high heat until foam subsides, then cook onions, garlic, bay leaf, and 1/2 teaspoon salt, stirring occasionally, until onions are golden brown, about 12 minutes.
3. Meanwhile, stir together coriander, paprikas, black pepper, cayenne, and 1/2 teaspoon salt in a small bowl.
4. Add spice mixture to onion mixture in saucepan and cook, stirring constantly, until very fragrant, about 1 minute. Add wine and bring to a simmer, uncovered, then reduce heat to low and add lentils, water, and agar flakes. Cover saucepan and simmer, stirring occasionally, 20 minutes. Remove lid and continue to cook, stirring occasionally, until lentils have fallen apart and mixture is thickened, about 20 minutes more. Stir in vinegar and discard bay leaf.
5. Puree cream cheese, 1/2 cup red peppers, and remaining 4 tablespoons butter in a food processor until smooth. Add lentil mixture and remaining 1/4 teaspoon salt and puree until smooth.
6. Force mixture through a fine-mesh sieve into a bowl with a large rubber spatula, scraping sieve. Discard lentil skins. Stir in oregano and remaining 1/4 cup red peppers. Pour mixture into terrine, smoothing top, and chill, loosely covered, at least 8 hours.
7. Run a sharp paring knife along long sides of terrine, then invert a platter over terrine and invert pate onto platter. Holding 1 end of parchment overhang against platter, lift off terrine. Discard parchment paper. Let pate stand at room temperature 1 hour before serving.

Topping:
Stir together oil, red and/or yellow peppers, vinegar, oregano, and salt and pepper to taste.
Serve pate topped with pepper mixture.

Steamed Clams with Fennel and Spicy Italian Sausage

The clams and sausage make a warm and comforting one-pot meal. Toss with cooked linguine, or just serve with toasted pain rustique.

Yield: Makes 4 servings
Active Time: 40 minutes
Total Time: 40 minutes

Ingredients:

2 tablespoons (? stick) butter
1 cup chopped onion
2 cups chopped fennel
1 teaspoon fennel seeds (crushed)
? lb spicy Italian sausage (casing removed)
1 tablespoon chopped fresh oregano
1 14.5 ounce can of diced tomatoes in juice
? cup dry white wine
2 pounds of Manila clams or littleneck clams, scrubbed
2 tablespoons chopped fresh parsley
Pepper to taste
Crushed Red Pepper (optional)

Preparation:

Melt butter in heavy large skillet over medium heat. Add onion, chopped fennel, and fennel seeds; saute until vegetables begin to soften, about 5 minutes. Add sausage and cook until browned, breaking up lumps with back of spoon and stirring frequently, about 5 minutes. Stir in oregano, tomatoes with juice, and wine; increase heat and bring to a boil. Divide among bowls and sprinkle with parsley and serve.

(you could substitute Cod or fresh Tuna or Crab for the clams) (you could substitute something else with a kick for the sausage too). (I wouldn't substitute anything!)

1 Tbs cayenne

DIRECTIONS
The night before the cook, rub a 6-8lb pork shoulder (Boston butt). Put the butt in a plastic bag and refrigerate overnight. Apply another coating of rub and sit out at room temp for 45 minutes. Smoke at 200-250 degrees for appox 1.5 hours per pound. Mop about once per hour.

We had a class on Chinese chicken cuisine in lecture. To spark some curiosity, the instructor made a popular Cantonese dim sum dish, ''Phoenix Claws'' or better known as Chicken Feet in English. It is deep-fried then steamed in soy, fermented bean and oyster sauce with fried tofu skins and chili peppers.

Glasgow Science Centre, on the south bank of the River Clyde, comprises of three principal buildings which are the Science Mall, an IMAX cinema and the Glasgow Tower.
Opened to the public in June 2001, the Science Centre is part of the on-going redevelopment of Pacific Quay, an area which was once a cargo port known as Prince's Dock.
The centre was built at a cost of around ?75million, including ?10million for Glasgow Tower.
The Science Mall is a titanium-clad crescent shape structure that houses three floors of over 250 interactive science-learning exhibits, a Science Show Theatre and the Glasgow Science Centre Planetarium.
At 127 metres high, Glasgow Tower is currently the tallest tower in Scotland and the second tallest free-standing structure after the Inverkip Power Station chimney.
It also holds a Guinness World Record for being the tallest tower in the world capable of rotating 360 degrees from its base to its top.
It is shaped like an aerofoil (as if an aircraft wing had been set in the ground vertically), with computer-controlled motors to turn it into the wind in order to reduce wind resistance.
Completed in 2001, the tower has been plagued by safety and engineering problems throughout its history.
Problems with the Nigerian-made thrust bearing on which it rotates led to it being closed between February 2002 and August 2004.
On 30 January 2005, ten people were trapped in the lifts and only rescued after five hours.
Following the incident, the tower re-opened again on December 21, 2006.
I'm glad to say it is currently open to the public and, having been to the top with my family, I can say that the view along the Clyde and over Glasgow is absolutely stunning.

Principal Japanese staple crop; an annual marshland plant of tropical origin; introduced into Japan in the Yayoi period (ca 300 BC? ca AD 300), either from China or the Korean peninsula. Rice cultivation was traditionally regarded as a religious act?an invoking of the inadama or spirit of the rice plant (see ta no kami). Supplications to the deity survive today in various forms of folk performing arts. Many festivals in honor of tutelary deities are also harvest festivals (see also agricultural rites). It is generally agreed that the Japanese extended family (ie) system evolved within the context of the rice culture, which required intensive farming, a sophisticated system of water control, and communal cooperation (see yui). In this sense rice may be said to have determined the very contours of Japanese society.

The common agricultural species is Oryza sativa. Like other plants of the family Gramineae, it has leaves with parallel venation; they sprout from the upper nodes of the stem, and the roots from the lower nodes. From the base of the main stem grow tillers (offshoots), and from these grow more tillers. Each tiller has leaves and roots, is virtually self-sustaining, and forms a panicle at its tip. Rice grows best in warm temperatures; the lowest temperature for germination is about 8>?10>C (46>?50>F), and the ideal temperature for growth is 26>?31>C (79>?88>F). High temperature and short days hasten heading. Since rice plants have a system for conducting oxygen from the air to the roots, they are resistant to severe oxygen shortage. They cannot withstand drought and flourish best in irrigated paddies. With proper fertilization and burning of stubble after harvest, there are no ill effects from repeated cultivation of the same field.

O. sativa is divided into three general types according to form, ecotype, and hereditary characteristics: indica, japonica, and javanica. Japonica-type rice contains less amylose and more amylopectin than other types of rice, giving it the greater glutinousness and special texture favored by the Japanese. Both mochi (glutinous rice), which becomes sticky when cooked, and the less starchy uruchi (regular rice) strains are found in all three types. Varieties classified according to area of cultivation are paddy or wet rice, suited for paddy fields; upland or dry rice, for dry fields; and floating rice, for flood-prone areas. In Japan, paddy rice accounts for 99.7 percent of the total production.

More than 100,000 varieties of rice are grown in more than 100 countries, with several thousand in Japan alone. In Japan, improvement of rice plants on an institutionalized and modern scientific basis was started in 1904 with hybridization experiments; pure line selection and, later, radiation breeding have also been utilized. These experiments have resulted in improved productivity, early maturity, and resistance to disease, cold weather, and lodging (stalk collapse). Koshihikari and Sasanishiki, both grown in the northeast, are among the most popular types of Japanese rice and command a high price. Since World War II, with land improvement, breeding of varieties responsive to fertilizers, improvement of fertilizing techniques, and the development of chemical fertilizers, herbicides, and insecticides, average yields have increased to more than 4.0 metric tons per hectare (1.8 short tons per acre). Since the beginning of the 1960s agricultural machinery has largely replaced human and animal labor, and threshing and hulling as well as transplanting of seedlings are now done by machines. At the same time, because of herbicides, there has been a reduction in the work load. In 1999 total production was 9,175,000 metric tons (10,092,500 short tons).

Typhoons pose the greatest hazard to rice plants in Japan, but in northern Japan considerable damage can be done if there is unseasonably cool weather during the inflorescence stage. Growing use of fertilizers has led to an increase in such diseases as rice blight (imochibyo), which causes the greatest damage of all crop diseases. Insects such as rice-stem borers, paddy borers, and plant hoppers cause considerable damage. Preventive measures have included the planting of insect-resistant varieties and, until recently, the application of various herbicides and insecticides. Because of restrictions on the use of environmentally unsafe chemicals, the employment of natural enemies has been encouraged.

Rice consumption has decreased dramatically in Japan, with per capita consumption falling from 114.9 kilograms (253.3 1b) in 1960 to 65.2 kilograms (143.8 lb) in 1998. This phenomenon may be explained by the increased consumption of bread and animal food products. Rice contains somewhat less protein than wheat, but the quality of the protein is superior. Ingredients:
wild rice (brown and red) + parsley + white toasted almonds + shallots + red peppers + celery + carrots

Dressing:
3 lemons + bit of red and white vinegar + olive oil + s/p + pinch of cumin

Prep:
Cook the rice and let it cool. Toast the almonds in dry pan. Cut all the veggies and parsley. Mix everything in a large bowl. Mix the dressing and add it to the bowl with some salt/pepper to taste.

Tip:
Letting this sit overnight in the fridge before eating allows the rice to soak up some flavors.
