1/2 cup chopped peeled avocado
1/2 cup chopped seeded tomato
1/4 cup thinly sliced green onions
2 teaspoons fresh lime juice
1/4 teaspoon salt

Remaining ingredients:
2 tablespoons water
2 tablespoons fresh lime juice
1/2 teaspoon ground cumin
1/8 teaspoon salt
1/8 teaspoon ground red pepper
1 (15-ounce) can black beans, rinsed and drained
4 (8-inch) flour tortillas
1 cup shredded roasted skinless, boneless chicken breast
3/4 cup (3 ounces) preshredded Monterey Jack cheese
1 cup shredded iceberg lettuce
1/2 cup fat-free sour cream

Preheat broiler.
To prepare salsa, combine first 5 ingredients in a small bowl. Toss gently, and set aside.

Combine 2 tablespoons water, lime juice, cumin, salt, ground red pepper, and black beans in a blender; process until smooth.

Place tortillas on a baking sheet, and spread about 1/4 cup black bean mixture evenly over each tortilla. Top each evenly with 1/4 cup chicken and 3 tablespoons cheese. Broil 2 minutes or until cheese melts and tortilla edges are just beginning to brown.

Top each tortilla with 1/4 cup lettuce, 1/4 cup salsa, and 2 tablespoons sour cream. Cut each tortilla into 4 wedges.

Yield: 4 servings (serving size: 1 tostada)

To prepare salsa, combine first 9 ingredients, tossing well to combine.
To prepare chicken, heat butter in a small nonstick skillet coated with cooking spray over medium-high heat. Sprinkle chicken with dash of salt and black pepper. Add chicken to pan; cook 6 minutes on each side or until done. Serve with salsa and lime slice, if desired.

Play games you enjoy no more than 21 hours a week; face-to-face with friends and family as often as you can; and in co-operative or creator modes whenever possible.
1. Don’t play more than 21 hours a week.
Studies show that games benefit us mentally and emotionally when we play up to 3 hours a day, or 21 hours a week. (In extremely stressful circumstances--such as serving in the military during war-time--research shows that gamers can benefit from as many as 28 hours a week.) But for virtually everyone else, whenever you play more than 21 hours a week, the benefits of gaming start to decline sharply. By the time you’re spending 40 hours or more a week playing games, the psychological benefits of playing games have disappeared entirely--and are replaced with negative impacts on your physical health, relationships, and real-life goals. So always strive to keep your gaming in the sweet spot: 7–21 hours a week.
2. Playing with real-life friends and family is better than playing alone all the time, or with strangers.
Gaming strengthens your social bonds and builds trust, two key factors in any positive relationship. And the more positive relationships you have in real life, the happier, healthier and more successful you are.
You can get mental and emotional benefits from single-player games, or by playing with strangers online--but to really unlock the power of games, it’s important to play them with people you really know and like as often as possible.
A handy rule-of-thumb: try to make half of your gaming social. If you play 10 hours a week, try to play face-to-face with real-life friends or family for at least 5 of those hours.
(And if you’re not a gamer yourself--but you have a family member who plays games all the time, it would do you both good to play together--even if you think you don’t like games!)
3. Playing face-to-face with friends and family beats playing with them online.
If you’re in the same physical space, you’ll supercharge both the positive emotional impacts and the social bonding.
Many of the benefits of games are derived from the way they make us feel--and all positive emotions are heightened by face-to-face interaction.
Plus, research shows that social ties are strengthened much more when we play games in the same room than when we play games together online.
Multi-player games are great for this. But single-player works too! You can get all the same benefits by taking turns at a single-player game, helping and cheering each other on.
4. Cooperative gameplay, overall, has more benefits than competitive gameplay.
Studies show that cooperative gameplay lifts our mood longer, and strengthens our friendships more, than competing against each other.
Cooperative gameplay also makes us more likely to help someone in real life, and better collaborators at work--boosting our real-world likeability and chances for success.
Competition has its place, too, of course--we learn to trust others more when we compete against them. But if we spend all our time competing with others, we miss out on the special benefits of co-op play. So when you’re gaming with others, be sure to check to see if there are co-op missions or a co-op mode available. An hour of co-op a week goes a long way. 5. Creative games have special positive impacts.
Many games encourage or even require players to design and create as part of the gameplay process--for example: Spore, Little Big Planet, and Minecraft; the Halo level designer and the Guitar Hero song creator. These games have been shown to build up players’ sense of creative agency--and they make us more likely to create something outside of the game. If you want to really build up your own creative powers, creative games are a great place to start.
Of course, you can always take the next creative step--and start making your own games. If you’ve never made a game, it’s easier than you think--and there are some great books to help you get started.
2 Other Important Rules:
* You can get all of the benefits of a good game without realistic violence--you (or your kids) don’t have to play games with guns or gore.
If you feel strongly about violence, look to games in other genres--there’s no shortage of amazing sports, music, racing, puzzle, role-playing, casual, strategy and adventure games.
*Any game that makes you feel bad is no longer a good game for you to play.
This should be obvious, but sometimes we get so caught up in our games that we forget they’re supposed to be fun.
If you find yourself feeling really upset when you lose a game, or if you’re fighting with friends or strangers when you play--you’re too invested. Switch to a different game for a while, a game that has “lower stakes” for you personally.
Or, especially if you play with strangers online, you might find yourself surrounded by other players who say things that make you uncomfortable--or who just generally act like jerks. Their behavior will actually make it harder for you to get the positive benefits of games--so don’t waste your time playing with a community that gets you down.
Meanwhile, if you start to wonder if you’re spending too much time on a particular game – maybe you’re starting to feel just a tiny bit addicted--keep track of your gaming hours for one week. Make sure they add up to less than 21 hours! And you may want to limit yourself to even fewer for a little while if you’re feeling too much “gamer regret.”

A few weeks ago Donte gave you a heads up on a several items every man needs
in his wardrobe. I wish to expand on the concept of his list. When we come
of age as men and realize that there is more to clothing than t-shirts and
jeans many of us have no clue where to start. If any of you are like me you
would have gone to the magazine shelves at your local mega bookstore and
browsed through GQ and the like for inspiration. Then spent endless hours
trying to find and create and ensemble from memory. This is truly a
backwards and tiresome approach. In comes Ticknors. Ticknors is a men fine
clothier. I know “Fine Clothier” tag makes you think of high prices and
snotty sales people. I must admit I have walked by this store many time
before with the same thoughts in mind. Last summer I ventured into a
Ticknors and what I discovered took me back a bit. He never judged or
assumed I couldn’t afford his apparel. He took the time to educate me on
clothing. There is something to be said for people who take pride in their
craft. I know they work on commission and that is part of their motivation.
I must admit the prices reflect that fact but just as eating healthier is
more expensive than junk food fine tailored timeless clothing is more
expensive than fubu. I feel confident in my recommendation of Ticknors at

The first woman to lead an armed expedition in the war, she guided the raid on the Combahee River, which liberated more than seven hundred slaves. After the war, she retired to the family home in Auburn, New York, where she cared for her aging parents. She was active in the women's suffrage movement until illness overtook her and she had to be admitted to a home for elderly African-Americans she had helped open years earlier. After she died in 1913, she became an icon of American courage and freedom.

Thomas Garrett (August 21, 1789 – January 25, 1871) was an abolitionist and leader in the Underground Railroad movement before the American Civil War.

Garrett was born into a prosperous landowning Quaker family on their homestead called "Thornfield" in Delaware County, Pennsylvania. The house in which he lived until 1822, which was built around 1800, still stands today in what is now Drexel Hill in Upper Darby Township.

In a family already inclined to abolitionism, Thomas was exceptionally dedicated. When a family servant was kidnapped by men who planned to sell her as a slave in the South, he tracked them down and released her.

A follower of the schismatic Quaker leader Elias Hicks, Garrett split with his orthodox family and moved to Wilmington in the neighboring slave state of Delaware to strike out on his own and pursue his strle against slavery. He established an iron and hardware business and made it prosper.

As he worked in the iron and hardware business in Wilmington, Garrett openly worked as a Station Master on the last stop of the Underground Railroad in the state. Because he openly defied slave hunters as well as the slave system, Garrett had no need of secret rooms in his house at 227 Shipley Street. The authorities were aware of his activities. However, he was never arrested, but in 1848 he and a fellow Quaker, John Hunn, were tried and found guilty of helping a family of slaves escape. They were both found guilty and fined. Because he was the architect of the escape, Garrett, in particular was fined $4,500. However, a compromised settlement was made and a lien was put on his house until the fine was paid. With the aid of friends Garrett was able to pay the fine and continue in his iron and hardware business and helping runaway slaves to freedom.

Garrett was visited by William Lloyd Garrison, whom he admired greatly. However, they had different views regarding the opposition to slavery. Garrison was a complete non-resistant. He was willing to be a martyr to the abolition of slavery and would not defend himself if attacked physically. Garrett, on the other hand, believed slavery could only be abolished through a civil war and, when he was attacked physically, defended himself by actually subduing his attackers.

sorry for the blurriness....

first day of school today, this was me getting dressed this morning. I've been trying to gain weight (and keep it on) and I am soo happy with my weight right now. Problem is I LOVE running which basically makes you lose weight pretty fast LOL so that probably makes it harder too!

You can probably imagine how skinny I was when I was dx I had lost 13 lbs in 10 days. When you only weigh 120, that is A LOT! I have always been skinny and could eat whatever I want but this was quite different.

I'm actually at 128 now :) go me :)

I tried to keep it on the DL about my D today but one not so smart girl kinda ruined that for me LOL but it's ok.

I handled 3 stupid comments I got today with sarcasm which earned me some laughs from others around me and so I was fine :)

Best thing ever: I went up to my math teacher after class to tell her I'm a type 1 diabetic and I might have to test in class, eat or give myself a shot. I was gonna explain to her that I might seem like I'm not focusing etc about highs/lows when she said "I am sorry to hear that. My niece is a type 1, as well!" what a small world! I told her "I'm sorry to hear that" but at the same time I was so excited because it gave me some peace of mind knowing that if I bottomed out in that class, she'd know what to do. She asked me when I was dx'd and turns out her niece was dx'd a couple of months before me so...it was nice talking to someone that knows more about D than most people seem to :)

Also: no problems=> no need for me to get Student Disability Services involved :) yay :)

I was running pretty high in the morning. Was 192 in the car, then I started feeling nauseous and was really hot while waiting to get into my class room. When I tested again in the class room I was at 280. Was pretty much almost back in range before lunch and then dropped low in the afternoon....might wanna increase my breakfast I:C but I'll wait and see if I'll be the same tomorrow again first.

BTW Confessions of a Disney Girl: when it comes to science/languages i'm a total Justin Russo ("knowledge is cool!") BUT math *shakes head* I'm Alex Russo's twin! ("if I do that homework, I'll be exhausted!") I'm hopeless...

Steve and I were married on Tanabata, 7/7/2011. We spent our first night and day as husband and wife at a local hotel recharging with no demands on our attention except each other.

And with the wedding over we discovered we have nothing to stress out about. Meaning this is the perfect time to start a 365 project!

We will be taking a photo of us as a couple every day for the next year. We are excited and think you should be too.

Our chubby little Maxie dropped a quarter of her body weight rapidly around the same time Pepper did. She went from 31 g of chubby to a svelte 25 g to a skinny 21 g. So a trip to the vet was in order a couple of weeks ago. Off we went to find out that she had injured her mouth (who knows how) and her front teeth were somewhat loose. So we've been mincing, chopping, grinding, and soaking various kinds of food to a soft consistency. She is no longer losing weight. She looks like a svelte healthy mini-ham now in stead the little ball of chub. We don't know if she should put some weight back on or how long she will need soft foods. Maxie is doing well and making friends with us, now that we are down to 3 hamsters. She has a chance of getting the attention she deserves.

Took this yesterday. Had I taken it Monday afternoon I would have looked four or five pounds lighter, but it was mostly dehydration. So I hydrated. And I ate a lot of chips to get some salt. And back to the usual. Next week will be the target week for loing a stone, and I have my doubts.

It's not what it looks like. Sort of.

I had a low tonight before dinner (56). So I treated it with a juice box and a few crackers. About a hour later I was ready to eat dinner. I had baked a little frozen (breaded) chicken.

I tested to see what I was at, and to plug in the carbs for my bolus. Imagine my shock when this number appeared on my meter.

My blood sugar had gone up 530 points in 1 hour. I don't think that is even humanly possible.

I washed my hands, tested again, and was greeted with a 122. Whew!

Too bad with the UltraLink the crazy 581 is in my pump memory (and I don't think it can be deleted).

P.S. That's a cup of sugar because I am working on my next batch of Friendship Bread - but was not the cause of the high - it wasn't out yet.

Since I almost always have to bring my dinner to work, I cook in large batches and freeze the food. This was a picnic shoulder fresh ham roast (rear) and a beef pot roast (front). We are on low carb diets, so I have to be careful with sauces. For the fresh ham I used a no-carb spicy BBQ sauce that is really very tasty. For the pot roast, just beef broth and Jack Daniels Mesquite flavored mustard. I browned both roasts in olive oil and herbs and spices. I used a pre-made dry rub for the beef. Then I cooked them at low heat for 4 hours. Very easy and economical. Both are inexpensive cuts.

Approx 6 cups All Purpose Flour
1 ? cups Water
1 cup Mashed Red Potatoes
8oz container of Sour Cream
? cup Bacon
? cup Fresh Chives
2 tsp Salt
2 ? - 3 tsp Active Yeast
Bacon Fat

Either the night before or a few hours before starting the dough:
? Fry the bacon. Let cool. Save a couple tablespoons of clean bacon fat. It takes about ? pound of bacon to get the ? cup so I always cook a pound and then enjoy any leftover pieces as I bake.
? Clean the eyes out of the potatoes but leave skins on. Cube and cook the potatoes until soft. Drain, mash, and let cool. When draining the water, reserve about ? to ? cup. I use this as part of the overall 1 ? cups of water. This gets some of the starch that gets cooked out of the potatoes back in the dough. The pieces of skin give the loaf a bit of confetti color.

Mixing dough:
? Crumble or chop the bacon into small pieces.
? Chop the chives. One pkg of fresh chives from your markets produce aisle works out to about ? cup.
? Mix the mashed potatoes, 2 cups of flour, salt, yeast. If you cooked the bacon early enough and the bacon fat has already solidified, I add it at this point. Otherwise, add it in the next step. I use a Kitchenaid mixer with the paddle attachment for this point.
? Add the sour cream, water, chives, and bacon. Mix well. You’ll have a somewhat gloppy mess in the bowl.
? I switch to my bread dough attachment at this point and mix in 2 cups of flour.
? As the dough starts coming together, add spoonfuls of flour until you reach a firm but sticky/tacky dough. This is approximately 6 cups of flour. I will usually knead in the last bit of flour by hand to get the best feel for the dough.

Rise & Bake:
? Place dough in an oiled bowl and cover with plastic wrap. Let rise until doubled. Usually about 90 min to two hours, but can vary depending on yeast and temp in your proofing area. I use a baker’s spray for oiling the bowl, and also spray the wrap I use to cover the dough, as the dough is quite sticky.
? Turn dough out onto a floured surface and gently degas it. I usually stretch the dough as if I was making a rectangular pizza and then fold it as if I was doing a letter fold on a piece of paper, and then roll of fold it once again in the opposite direction.
? Portion and shape the loaves. I get two 10" round loaves from this recipe. It could also be made into dinner rolls, or shaped as sandwich bread. I don’t have a baking stone so I use baking sheets with baking parchment, and a touch of corn meal sprinkled on them to set the loaves on.
? Allow the shaped loaves to double. As they get to size, pre-heat the oven to 450F. I want to cook them the first 5 minutes at 425, but I know when I open the oven to put the loaves in I am going lose about 25 degrees or more in heat, I pre-heat to a higher temp.
? When you are ready to put the loaves in the oven, turn the heat to 425F, and put them in. Set a timer for 5 min.
? When timer goes off, lower heat to 350F, and set timer for 25 minutes.
? After 25 minutes, check internal temp of bread for temp of 195F or for a nice golden brown color. Depending on your oven, they might need a few more minutes in the oven.
? When done, cool on racks.

There are not enough flax seed recipes out there. I love them, they are so good for you plus you can use them as an egg substitute for vegan recipes and around the house as hair gel and lube—oh the wonderful uses of flax seeds.

The cast iron skillet bread was a one of those cup’a recipes, a cup of this and cup of that!

1 cup flour
1 cup corn meal
*1 cup (its 2 teaspoons of flax seeds and a cup of water) of flax seeds that have been soaked over night (and their liquid see next photo) if you dont have flax seeds, add an extra egg.
A cup of honey or sugar
An egg
A cup of buttermilk (milk with whey on the counter overnight)
Teaspoon of each baking soda, baking powder and salt
2 tablespoons of vanilla olive oil

Melt a big pat of butter in a cast iron skillet, then add all the other ingredients and stir well, beat it if you want to add more air. Bake in woodstove or in oven at 375 for about a half hour, I talked to my mom on the phone the entire time, so it could have been 45 minutes.

Club soda?

Yes. No sooner had I stocked the previously sparse bar for my 365 beverage project, than Jim said, "Let's do the South Beach Diet again."

So. No Shuga. No Alkyhall.

Don't tell anyone, but I ate the cherry. Sometimes you have to make sacrifices for art.

The diet is most strict the first two weeks. I will have to to present and garnish low carb (or no-carb) beverages.

The consolation is when you follow the recipes and menus for the South Beach phase one, you eat really, really well.

They replied that their daughter was on a low carb diet and that their son George often cooked a low carb meal for his sister - it consists of beef cooked on the barbeque with a special marinade then layered over a large serve of greek salad featuring the best marinated feta I've ever tasted.
