We made these tonight and they have no added salt. Do we have to tell our sons ??? Here's the recipe for soft pretzels by Alton Brown. I basically omiitted the salt in and out. Ingredients: 1 1/2 cups warm (110 to 115 degrees F) water 1 tablespoon sugar 2 teaspoons kosher salt 1 package active dry yeast 22 ounces all-purpose flour, approximately 4 1/2 cups 2 ounces unsalted butter, melted Vegetable oil, for pan 10 cups water 2/3 cup baking soda 1 large egg yolk beaten with 1 tablespoon water Pretzel salt Directions Combine the water, sugar and kosher salt in the bowl of a stand mixer and sprinkle the yeast on top. Allow to sit for 5 minutes or until the mixture begins to foam. Add the flour and butter and, using the dough hook attachment, mix on low speed until well combined. Change to medium speed and knead until the dough is smooth and pulls away from the side of the bowl, approximately 4 to 5 minutes. Remove the dough from the bowl, clean the bowl and then oil it well with vegetable oil. Return the dough to the bowl, cover with plastic wrap and sit in a warm place for approximately 50 to 55 minutes or until the dough has doubled in size. Preheat the oven to 450 degrees F. Line 2 half-sheet pans with parchment paper and lightly brush with the vegetable oil. Set aside. Bring the 10 cups of water and the baking soda to a rolling boil in an 8-quart saucepan or roasting pan. In the meantime, turn the dough out onto a slightly oiled work surface and divide into 8 equal pieces. Roll out each piece of dough into a 24-inch rope. Make a U-shape with the rope, holding the ends of the rope, cross them over each other and press onto the bottom of the U in order to form the shape of a pretzel. Place onto the parchment-lined half sheet pan. Place the pretzels into the boiling water, 1 by 1, for 30 seconds. Remove them from the water using a large flat spatula. Return to the half sheet pan, brush the top of each pretzel with the beaten egg yolk and water mixture and sprinkle with the pretzel salt. Bake until dark golden brown in color, approximately 12 to 14 minutes. Transfer to a cooling rack for at least 5 minutes before serving Homemade Soft Pretzels I decided to come home after a long day staring at the computer and make soft pretzels. It's my first time making them. They didn't keep their shape very well but tasted excellent. It kind of tasted like NY bagels. So with that in mind I'll be making bagels soon. 1 cup warm water 1 package dry active yeast 1 1/2 cups flour 2 tbs. vegetable oil 1/2 tsp. salt 1 1/4 cup flour 4 cups water 2 tbs. baking soda 2 tbs. coarse salt Dissolve the yeast in the warm water and let stand for 10 minutes. Add the vegetable oil, salt and 1 1/2 cups flour. Stir togrther until thoroughly combined. Add remaining flour and knead dough for 5 minutes. Let the dough rest for 1 hour. Divide the dough into 12 equal shapes and reform them into small balls. Let them rest for 15 minutes. Roll them into 18" lengths and form them into pretzel shapes or cut each length in half to make sticks. Preheat oven to 475 degrees. In a large pot, place the baking soda and water to a boil. Let the pretzels rise for a 1/2 hour. Add the pretzels to the boiling water for 1 minute. Remove and place on a greased sheetpan. Sprinkle with coarse salt and bake for 12 minutes. (18) Day 77 - 010208 I've missed taking pictures for most of the holiday week. I was away from home visiting family. As much as I love seeing my family, it always stresses me out and I come back home totally wiped out and just want to sleep for a week. This week's focus is achievements. This picture represents an enormous achievement of mine that came about after I got my insulin pump in 2005. I had been overweight for most of my life, starting when I was around 10 years old (which coincided with my asthma getting really, really bad). When I tried for tight control, I ended up gaining even more weight. When I finally went to an endo 3 years ago my weight was 268 pounds. I found it nearly impossible to lose any weight because exercise made my BG drop very low. Taking long acting insulin caused so many lows that I was always feeding. I also was making poor food choices. I was switched to Lantus which was better than NPH but still gave me lows, plus highs at certain times of the day. I started my pump 3 months after that initial visit and everything got so much better. I was able to go for a walk after lunch without crashing low within 10 minutes. I started losing weight. In November 2005 I decided to join Calorie King. My starting weight there was 198 pounds, 70 pounds lighter than I was in February 2005. This screen shot is from a report I ran in Calorie King showing my weight from the time I joined through April 2006. My weight had actually dropped even lower, to 143, but that didn't last. Over the last year I've gained some of the weight back. For awhile last year I didn't even care. Over the holidays my sister yelled at me a few times and told me not to undo all of my hard work. She watched me when I ate and would tell me when I had enough. Her "food policing" had nothing to do with diabetes, because she knows that I can eat whatever I want, but more about portion sizes. A few times I wanted to smack her but mostly I know she's right. If you look at the picture in the large size the text is very clear. The "current weight" was the last time I had weighed in on Calorie King, back in November. My actual weight is probably a little higher than the 170 shown right now. I had never made a "weight loss/diet" New Year resolution but this year I did. I know I have to get back to eating less junk food, more fruits & veggies. The first 3 days of 2008 have been good. My insulin use is going back down to around 26 units/day. Being more careful about what I eat really changes my insulin needs, which can be seen in the next photo... I'm determined to lose the weight I gained back and keep it off. My goal is 150 pounds even though I know my primary care doctor and CDE both think that's too low, but it's a weight I felt comfortable at. April 13th 2011 [103365] Hooray I did it I got my Weight Watchers 10% keyring. Was very pleased at fat club this morning when I sailed past my 10% goal and am now only 4lbs away from my goal weight, am determined to do it before we move. I guess I like the roundness of the face & how Mowgli is seated in a somewhat curious manner & sided with the look of the expression on the Face and the Body. I think they work great altogether. Panel 2- Same thing as panel 1, but with him leaned forward. The face is a bit long, but ah well, I don’t care much anyway. I was originally going to take some familiar aspects to the 1st panel & place them here, but they were too different from each other that I had to just draw both of them individually. Panel 3 & 4- Mowgli crawling on a limb in some random tree. These have the same shot, but with different body positions in them. I added some additional detail in the Face & Feet, as you can tell. Panel 5- Mowgli sitting alone by himself at a River Bank. Again, I put more detail in some areas like the Feet & stuff. I also like the way he smiles. It has that charming, yet Childlike & Innocent mannerism to it. Panel 6- Same as the other one, but with him leaning back. Err, I accidentally goofed up on the direction of the eyes. It sort of looks like he’s either zoning out or on Drugs or something. :drunk: Panel 7- Mowgli perching with his Wolf Kin and overlooking to probably kill something & eat it. :hungry: I like how I did the back to him and for some reason, I admire how accurate I did the legs, feet & gluteus. Though I have no idea what the heck people’s problem is with butts. I mean all it is are just two meatslabs glued on to each other, OKAY? They’re FINE! It’s your butt, too! Without ‘em we all wouldn’t be able to sit, stand or walk properly, and they help us out in life. So have some respect for ‘em, Dudes! Sheesh. :X Panel 8- Sorry if I got carried away by that last speech. I got low blood sugar or something. Anyway, here’s Mowgli having some sort of Freddy Krueger dream where he’s being attacked by some giant hawk or something. I had to trace this upside down cuz I don’t do too well on Head Down/Feet Up shots & then turned it rightside up. That, and it was better that way. I also seemed to add nipples on him for some weird Joel Schumacher reason, though it’s probably the only time I’ll ever add the nipples. ;p He kinda looks like he’s shouting “OW, F*CK!!” after landing on the ground or something. ;p Panel 9- Mowgli leaning toward another River Bank to take a few drinks or view his mug. I liked the leaning pose & manner of curiosity in him, so I put it here. Panel 10- Same shot, but a different back angle. Like panel 7, I also like how accurately I did the gluteus, but only better & I also like how I replicated the feets, too. So don’t squeal fan girls, M’ Kay? ;) Panel 11- Mowgli sitting with that irritating Weasel to listen in on the Wolf Pack. Kneeling postures is something that I like so I added it here. I really love how I did the Hands on this one. And the Feet, too. :D Panel 12- Mowgli landing on the ground in an Action Movie style pose. 8-) With the grass in the way I had to draw the rest of the fingers & feet from scratch, and I think it looks pretty decent on how I did them. Panel 13- Mowgli standing alone in the dark. A side profile that I wanted to do but it was a little small, ergo the small hands, face & eyes. Panel 14- Mowgli crouched on the rocks with a few fuzzy friends. Now THIS was a small panel to get, let alone trace around in. but at least it was a bit short to edit, so I’m happy either way. :) Panel 15- Mowgli & Little Nuisance chatting about something boring. I think I may have did his mouth a bit too big, but since he’s carrying on a conversation, I think I’ll leave it that way. Panel 16- Probably following from panels 9 & 10, which shows Mowgli at the River Bank with a somewhat restless look on him. I usually need more kneeling shots so I can get a better aspect of poses & stuff. Panel 17- Same on the last one but with Mowgli leaning forward like he’s pretty uptight on something like not getting a Wii for Christmas. ;p I like how his facial expression is, which is why I like it better than the other one & how I put just a wee more detail into it, too. :D Panel 18- Mowgli getting fed up with Rikki Tikki’s B.S. which shows on his face & eyes. :steaming: I have to say that I’m very much proud of the Anatomy Detail that I did on this one, and how well I designed it just perfectly. Mowgli gets PO‘ed at Rikki Tikki & urges himself to open some canned Whup A$$ on him. :stab: Ha ha, I ju Xavier at Tapia Park I was at Tapia, which is in Malibu Canyon in Malibu, California on this beautiful Sunday with my son Joshua and my wife, to attend a book party for Sandy Ross and her new book about the Bla-Bla Cafe in L.A., a book I edited several months ago. While there was music playing and people eating and drinking and generally partying and smiling and feeling good, Joshua asked me if we could take a walk in the woods, as he was the only kid there, and got tired of his daddy talking to other adults in what must have seemed to him like endless conversation. (One seemed almost endless to me- a polite but spirited debate about the American policy in Guantanamo - a smart and gifted songwriter I know actually suggested what we are doing there is acceptable. I strongly disagreed.) So Joshie and I strolled through the beautiful canyon, admiring the immense and lovely trees, and come to an unexpected little lake in the heart of the woods, in which a Latino family was swimming and playing. One has the sense of history as a pool of energy, and one also develops a kind of Renoiresque appreciation for the fact that different people on opposing sides of a life-or-death issue have their reasons for believing what they believe. As the story moves along, subtle shifts in the perspectives of men and women who had once agreed to be absolute in their fight for freedom results in a tragic yet understandable schism among Irish patriots. The final half-hour of The Wind That Shakes the Barley says a lot about how the Irish, including people who had known one another all their lives, turned their wrath on one another for so many decades. Stuffed Cornish Hens Serves 4 When I grew up, the holidays always meant lots of visitors and a series of requisite celebratory meals, mostly at lunchtime. This easy dish was always on one of the menus. Mamie was usually busy (what else during late December?) and would make the stuffing in advance so lunch could be ready in less than an hour. The recipe serves a family of four for lunch in style, but double the ingredient portions and obviously you are ready for a full table with guests. Ingredients: 2 Cornish hens (or poussins) 2 tablespoons butter, melted 3 tablespoons chicken stock Stuffing: 2 cups water 2/3 cup brown rice 1/2 cup mixed nuts (pine nuts, walnut pieces, whole hazelnuts) 2 tablespoons golden raisins 1/3 cup chicken stock 1 tablespoon parsley, freshly minced 1 teaspoon dry herbs (chervil and savory or rosemary and thyme) Salt and freshly ground pepper 1. For stuffing: Bring water to a boil. Add rice and cook for 15 minutes. Drain and mix well with remaining ingredients. Season to taste and refrigerate overnight. 2. Preheat oven to 475 degrees. Rinse Cornish hens, dry the inside with paper towels, and season. Add stuffing loosely and truss hens. Reserve remaining stuffing in aluminum foil. 3. Put hens in baking dish and brush them with melted butter and other seasonings. Put in oven and baste 10 minutes later with chicken stock. Continue basting every 10 minutes. After the hens have cooked for 20 minutes reduce oven temperature to 350 degrees and put the remaining stuffing in a small ovenproof dish. Roast the hens for another 20 minutes. Serve (half a hen per person) immediately with a tablespoon of stuffing on each side of the hen as garnish. N.B. For a wonderful tete-a-tete romantic dinner, serve one hen each with a vegetable then dessert. I have prepared it successfully to my husband on Valentine’s Day. While the hens are in the oven, you have time to concoct a little dessert, et voila, you can pop a cork of bubbly, sit for candlelight dinner and have your husband serve dessert. Hot Chocolate Souffle Serves 6 During the season of overindulgences—Christmas, New Year and all the festivities in between—there is in our home a succession of store-brought, traditional goodies: Buche de Noel (yule log), marrons glaces (glazed chestnuts), the 13 desserts of Christmas in Provence. This is not to say that the holidays don’t bring out the baker in all of us, but whether it is to give as gifts or to maintain tradition, people do load up with holiday sweets from pastry shops (as I can attest from seeing from the window of our Paris apartment the annual long lines of people outside the pastry shop across the street). When I grew up, however, come New Year’s Day, and there was a home-cooked chocolate ritual. Our big festive meal was on New Year’s Eve, which left New Year’s Day as a quiet, family "recovery" day. (I appreciate some reverse the big meal day… or have one both days.) Anyway, for us, breakfast was well… late (especially for those of us who went partying after dinner), and limited to a piece of toast and a cup or two of coffee. Lunch was mid afternoon and usually made up of leftovers or an omelet, but the first dinner of the year was marked with a special dessert. The simple meal at the end of a week of overindulgences consisted of a light consomme, some greens, cheese, and the chocolate treat. There were no guests, plenty of time, and Mamie was ready for the flourless souffle. She is a chocoholic and it would be unthinkable to start the year off without chocolate. So, what better way to end the first day of the New Year than with one of her favorite chocolate desserts as both a reward and I’m sure good-luck charm? Ingredients: 1 cup milk 1 cup unsweetened Dutch cocoa powder 1/3 cup sugar 4 eggs at room temperature 2 tablespoons butter at room temperature Pinch of salt 1. Preheat the oven to 350 degrees and prepare a 1-quart souffle mold by lightly buttering it, dusting the insides with sugar and tapping out the excess. Place mold in refrigerator. 2. Pour the milk, cocoa powder and sugar into a heavy saucepan and stir to combine. Bring to a boil over moderate heat while stirring constantly. Reduce the heat and cook while stirring until the mixture thickens (about 10 minutes). Transfer to a bowl and cool slightly. 3. Separate the eggs and stir the egg yolks into the warm chocolate mixture. Stir in the butter. 4. Beat the egg whites until they reach soft peaks. Add the salt and beat until stiff. Whisk half of the egg whites mixture into the chocolate mixture. Fold in the remaining whites gently with a spatula. Pour the mixture in the souffle mold and smooth the top. 5. Bake in the lower-middle shelf of the oven until puff and brown for about 18 minutes which will give you a soft center. Serve at once with softly whipped cream. Red Mullet with Spinach en Papillote Serves 4 Ingredients: 2 teaspoons olive oil 8 fillets of red mullet, about 2 ounces each 1 lb. spinach, washed and dried in a salad spinner 4 teaspoons shallots, peeled and sliced 8 slices of lime 4 tablespoons of creme fraiche Salt and freshly ground pepper 1. Cut 4 pieces of parchment paper (or aluminum foil) into squares large enough to cover each fillet and leave a 2-inch border all around. Lightly brush the squares with olive oil. Preheat oven to 300 degrees. 2. Put the spinach in the center of each square and top it with a tablespoon of creme fraiche. Top with two fillets and add one teaspoon of shallots, two slices of lime. Season with salt and pepper. 3. Fold up the edges to form packets. Put the papillotes on a baking sheet and bake for 10-15 minutes. Serve at once by setting each papillote on a plate. N.B. You can use sole or snapper instead of red mullet Pappardelle with Spring Veggies Serves 4 Ingredients: 12 ounces pappardelle 1 lb. green asparagus 2 cups fresh peas, shelled 2 tablespoons of shallots, peeled and minced 1 cup extra virgin olive oil 1 cup of pine nuts, toasted 1 cup freshly grated parmesan 1 cup roughly chopped parsley Coarse sea salt and freshly ground pepper 1. Cut off end of asparagus and blanch in salted water until just tender (about 5 minutes). Blanch peas separately for about 1 minute. 2. In a heavy saucepan, gently saute the shallots in olive oil until they begin to turn gold. Add peas and asparagus and cook for a few minutes. 3. Cook the pappardelle in boiling water, drain and pour into saucepan. Add pine nuts, parmesan and parsley and season to taste. Serve immediately. Croque aux Poires Serves 4 Ingredients: 4 slices of brioche 2 ripe pears 2 tablespoons of sliced almonds 2 tablespoons of honey 1 tablespoon butter 1. Peel the pears and cut into small cubes. Melt butter in a saucepan and saute the pear cubes for 2-3 minutes. 2. Arrange pear cubes on brioche slices. Cover with honey and almonds. Put under broiler for two minutes watching carefully. Serve warm with a dollop of sour cream or creme fraiche. A yummy dessert also wonderful for a weekend breakfast or brunch.
