It is located on the south side of Randolph Street directly across from some of the tallest buildings in the world and east of the Chicago Landmark Historic Michigan Boulevard District.
It is the park's outdoor performing arts venue and the new home of the Grant Park Symphony Orchestra and Chorus. As home of the Grant Park Symphony Orchestra and Chorus it is also the home of the Grant Park Music Festival, the nation's only remaining free outdoor classical music series. The structure is built partially atop the Harris Theater for Music and Dance, the park's indoor performing arts venue. It serves as the centerpiece for the park that was opened on July 16, 2004. At first the lawn seats were free for all concerts, but when Tori Amos performed the venue's first mainstream concert at the pavilion on August 31, 2005 this changed.
The performance venue is designed with a large fixed seating area, a great lawn, a trellis network to support the sound system and a signature Gehry stainless steel headdress. It features a sound system with an innovative acoustic design that replicates an indoor concert hall sound experience. The pavilion and the park in general are well-known and respected for their accessibility.

This is a photo of me watching the Food Network. Before I moved into my own apartment and started watching TV at every possible opportunity, I had no idea that the Food Network even existed. But, once I watched an episode of “Guy’s Big Bite” with Guy Fieri, I was hooked. I know pretty much everything I know about cooking from watching something on Food Network. When I finally came home for vacation, my entire family was impressed at how much I knew, just from watching a few shows here and there. I chose this photo because Food Network has been critical element in my culinary learning curve.

Since we're on the cheapest CSA plan with Marin Sun Farms we end up getting 5 lbs. of ground meat (and 5 lb. of other cuts) a month. So I'm constantly searching for ground meat recipes.

This recipe started out with a simple thought, "I wonder what kind of Mexican Meatball recipes are out there". A detour into a Bodega or two in the Mission and I had what I needed but the recipe bloomed into something much more elaborate then intended.

I ended up making some kind of Pozole - or at least that's what I'm calling it. I didn't really use a recipe but looked at a dozen or so Mexican soup & meatball recipes online.

This is one of those recipes where each component is good but the real magic happens when everything goes into the bowl together and the flavors mix and contrast in just the right way.

-- Ingredients --

Stock:
1 pigs foot split in half the long way
2 quarts water
2 onions
2 head garlic
2 tsp Mexican oregano
2 cloves
4 sprigs cilantro
4 sprigs mint
black pepper
salt

Coleslaw:

1/2 head red cabbage
1 tsp. whole cumin
salt
1/2 lime, juiced

Salsa Fresca:

1 lb. tomatoes
1/2 large white onion
1/2 cup cilantro
1/2 lime
salt

Pepper Sauce:
15 dried chilles (I used a mixture of Pasilla, Guajillo, and mild New Mexican red chilles)
7 oz. can chipotle peppers
1/2 tsp cumin
salt

Meatballs:
1 lb. ground meat
1/2 white onion
1/2 cup minced cilantro
1/2 cup minced mint
1 egg
salt & pepper

Soup:
3 carrots
1 yellow onion
1 jar (or can) pozole

Pickled Radishes:
1 bunch radishes
1/2 tsp. salt
1/4 tsp sugar
1 Tb. vinegar

Other Toppings:
1 avocado
8 oz. fresh Mexican cheese (panela)
cilantro

-- Instructions --

(1) Cover the pig's foot with 2 quarts water. Coarsely chop the onions, smash and peal the garlic and add to the pot. Add the herbs and spices and bring everything to a gentle simmer. Cook 2-3 hours. Strain, reserving the onions, garlic and pigs foot. Return broth to pot.

(2) While the broth is cooking prepare the toppings. For the coleslaw finely chop the cabbage, put into a colander in the sink and generously salt. let sit for 30 minutes and then squeeze out excess moisture (it should be slightly wilted but still crunchy). Roast the cumin in a small frying pan until it brown and just begins to smoke. Crush the cumin with a mortar and pestle or spice grinder. Move cabbage to a bowl and mix in the lime and cumin. Refrigerate.

(3) For the salsa fresca cut up the onion into small dice. Mince the cilantro and mix with the onion. Cube the tomatoes and put with onion-cilantro mixture. Add a pinch of salt and the lime juice. Mix and refrigerate.

(4) To pickle the radishes slice them and mix with salt, sugar and vinegar. Refrigerate. Slice the avocado and cheese and refrigerate on a plate. Put a couple drops of lime juice on the avocado just to keep it green.

(5) Put the dried peppers and chipotle into a heat proof bowl. ladle a cup of the pork broth and let sit 30 minutes to rehydrate. Once the broth is finish mix in reserved onions and garlic into the pepper mixture. Puree (with a hand blender, food processor or blender) and test seasoning adding salt as appropriate. Heat 1 Tbs. oil in a small pot and add cumin. Cook until cumin becomes fragrant and then add the pureed pepper mixture. Be careful as it will splatter. Cook stirring with a rubber spatula 5 minutes or until all the ingredients are cooked. Set aside.

(6) Pick meat and skin off the pig's foot, finely chop and toss it into the finished broth mixture.

(7) Thoroughly mix meatball ingredients.

(8) To finish the soup, peel and slice the carrot into disks. Slice the onion into long slivers. Saute on high heat until they just begin to brown on the edges. Add the broth, cooked pozole and bring to a boil. Form the meatballs and drop into the soup. Turn heat down to gentle simmer and cook through (15 minutes, but you should pull a meatball out to check).

(9) Stir in the red pepper mixture. Bring the pot to a simmer.

(10) To serve ladle into shallow bowls. Put a pile of coleslaw in the center and array the other toppings in a circle around the slaw. Add some fresh cilantro leaves and (if you like) a couple of drops of lime juice.

one egg. a little salt. and as much flour as it will hold. made with my hand acting as a mixer, swirling around and around, gradually blending in the flour to the egg.

rolled ultrathin and cut with a knife. dried for an hour and then made into one of the best dinners ever. simple. almost no ingredients.

Friends are coming over for lunch on wednesday. i went through the inventory of the deep freezer in my mind (15 days of no grocery shopping so far) and kept coming up with a blank. Chefs writers' block. There is ham hock, tripe, chicken feet, five billion blackberries and cherries. Nothing that they would like.

I go through this daily at the beginning of a "no shop" (i did five months of no grocery shopping last year, not consecutively). I think that I have nothing and once I start cooking, I realize, I have so much and before I know it I am making three dishes at once and dreaming of others I can easily make: boston baked beans, eggplant parm (with goat cheese), baked apples, almond tarte, tomato and basil salad with walnuts, and the list goes on. If I can, I write down my brainstorming ideas for those moments of "i dont have anything to make" then after a few weeks of no shopping, I feel like I have more food and choices than I did before.

Wedensday, we will have homemade fettucini with a basic though homemade tomato and garlic sauce and sauted zucchini, apple and walnut salad and an exquisite almond tarte. (they are brining the cheese course and the beers!)

Step 3:
Prepping the Green Egg for maximum temperatures.

-Remove top vent completely
-Open bottom vent all the way
-Remove or compress any ashes in the bottom container to allow for maximum airflow. This step is important because it will allow your Green Egg to get to the critical temperature levels of 600-650 F.
-Add a generous amount of lump charcoal.
-I can usually get my Green Egg to 650 F in approx. 15-20 minutes using these steps. If you find that it takes a long time to get to the appropriate temps, clean out your ash collection tray.

The things they write on thermometers these days! I was putting away this thermometer after my daughter's latest jam-making exploits when I noticed these strange temperature markings. They must be significant to serious cooking types, but they just appealed to my juvenile sense of humour.

My paternal grandmother was a cook in a logging camp when my dad was a small boy and she would make these buckwheat pancakes everyday for the loggers. They’re a tradition in Edmundston New Brunswick, and often served with baked beans, cretons (which is a meat spread), molasses or brown sugar. They’re usually cooked on a cast iron skillet but an ordinary skillet would do as well. I’ve only made them a few times, but would eat them often as a child as my dad would make these for us at least once a week. My son and daughter love these, they eat them for breakfast with Nutella, but that’s not traditional at all!

Ployes (Buckwheat Pancakes)
1 ? cups of buckwheat flour
1 ? cups all purpose flour
1 tsp salt
2 tsp baking powder
3 cups of warm water

Mix together dry ingredients. Add water and mix well, incorporating as much air as possible (that will help with the bubbles!). The consistency of the batter should not be too thick so add water if necessary. Spoon batter onto a hot skillet. Cook until the bottom is a little crispy and the top is cooked, you shouldn’t need to turn the pancakes. Serve warm with butter or anything else you’d like to try them with!

AKA "Potato and Chorizo Omelette with a Kinda Parsley Salad" - Recipe from Jamie at Home cookbook, by Jamie Oliver.

The chorizo (from free-roaming pigs) lent some great color to the potatoes cooking with it. When the (pre-cooked) potatoes were starting to brown, I tossed in a little rosemary and then slipped in 6 whipped eggs (actually, I used 4 eggs and two yolks). The eggs started cooking immediately in the hot skillet. I finished it off in a hot oven, where the omelette puffed up beautifully. The shallot & parsley were dressed with lemon juice and EVOO.

Jamie called for a non-stick oven proof skillet. All this cooked beautifully in my well-season cast iron skillet. It did not stick at all. And yes, the color was that orange, and the vivid yellow yolks did their part.

This was a special brunch dish for my husband's birthday, February 3, 2010.

Traditional pibil cooking from Mexico’s Yucatan Peninsula calls for marinating in a blend of achiote paste, citrus and spices before the little pigs (or cochinitas) are wrapped in fragrant banana leaves and lowered into a carefully built, banana leaf-wrapped pit called a pibe. Mary Sue Milliken and Susan Feniger of Border Grill have adapted the dish they first tasted in Playa del Carmen in the Yucatan for the American kitchen.

Mary Sue and Susan serve the Pibil over a bed of fried plantain slices and white rice, then top it off with guacamole and pickled shallots.

Yield: 8-10 Servings

Ingredients:

Cochinita Pibil:
* 1/2 cup achiote paste or annatto seeds
* 10 garlic cloves, chopped
* 1 1/2 cups orange juice
* Juice of 2 limes
* 8 bay leaves, crumbled
* 2 teaspoons cumin seeds
* 1/2 teaspoon ground cinnamon
* 2 teaspoons dried thyme
* 1 teaspoon dried oregano
* 1 teaspoon sea salt
* 2 teaspoons freshly ground black pepper
* 4 pounds pork butt, cut in 3-inch cubes
* 2 white onions, sliced 1/2-inch thick
* 5 Roma tomatoes, sliced 1/2-inch thick
* 1 pound banana leaves, softened over low flame, or foil*
* 4 Anaheim chiles, roasted, peeled and sliced into strips
* 8-10 fried plantain slices
* 4-5 cups steamed white rice
* 2 cups guacamole
* 1 cup pickled shallots

*Banana leaves can be purchased at Asian and Latino markets and kept frozen for up to six months

Method:
In a medium bowl, mash together the achiote paste, garlic, orange juice, lime juice, bay leaves, cumin, cinnamon, thyme, oregano, salt, and pepper with a fork. Add the pork cubes, toss to evenly coat, and marinate, at room temperature, at least 4 hours.

Preheat the oven to 300°F.

Heat a dry cast-iron skillet over high heat. Char the onion until blackened on both sides. Then char the tomatoes on both sides. Reserve.

Line a large baking dish with one layer of the banana leaves or foil. Arrange the pork in an even layer and top with the onions, tomatoes, chiles and all the marinade. Cover with more banana leaves and wrap the dish tightly in foil.

Bake 2 1/2 to 3 hours or until the pork is tender and moist. Remove from oven and let sit 10 minutes before unwrapping.

To Serve:
Place a fried plantain slice on a plate, and spoon ? cup of white rice on top of plantain. Place the cochinita pibil in sauce on top of the rice.
Place a dollop of guacamole on top and garnish with pickled shallots.

As promised here’s the follow up to last night’s Cantonese Salt and Pepper Roast Chicken. I like to serve it with a home made spring onion, garlic and ginger sauce (???). It’s a classic sauce that is served in Hong Kong’s famous BBQ restaurants, and is a perfect match for BBQ pork, roast chicken or duck. To make the sauce:

1.cut up spring onions and ground up a few cloves of fresh garlic
2.gently heat up vegetable oil in a pan
3.grate fresh ginger into the pan
4.add the spring onions and ground garlic into the pan
5.add salt and sugar to taste
6.do not let the sauce/oil simmer, instead keep it as low heat as possible (this is to remove the pungent garlic after taste)
7.turn off the heat completely and let the spring onions/garlic/ginger infuse into the oil
8.serve!

This sauce can be made a day or two in advance or you can make it as you roast the chicken. You don’t have to use garlic if you don’t like it, but I think it adds an extra dimension to the sauce. Enjoy!

Lunch, cooked plain rice with less water especially for fried rice. Rika is so fond of this newfound recipe, fried rice with XO sauce! She had adjusted it with the addition of fresh scallops and prawns instead of chicken used in the original recipe. The hint of hot chilli and the flavour of spring onions had made this dish even more appetizing! Although she accidentally had added a little more dark soy sauce, it did not affect the taste of the final product...truly yummy!

I have been working on these since 9am this morning it is now 4:30 and my brain is shot, I dont know what direction I want to go to / what I want to do. So Im asking for any feedback on the next 12 sketches.

4 Digital Sketches @ 40% of Actual Size:

1. Visual element of a screw going into a gas can, in reading it says "Screw Gas I drive Hydrogen." wanted to keep it simple with colors, white + cyan blue and two shades of Red. Simple text.

2. Peace Love Biodiesel, lime color / soy ish color green + a color swatch of yellow oil from a photo of cooking oil. Again simple text, not sure on how I want to do the numbering, I like the Vanity aspect of the plates. And the fact that you have to pay extra maybe everyone should have there own saying? Just a thought.

3. Arizona Highway photo, with a Interstate Sign changed to say Alternative Fuel / HOV. To go for the fact that in Arizona if you drive a alt fuel car then you can use the car pool lanes without having more then two people. (HOV is what they call the lane). Simple text + script for Arizona and lower part saying "Hit the road - see the world"

4. First plate design wanted to do a simple design something that any tree hugger would love ;) has a HEART shape with GREEN in the shape of the heart. Kept with one color + a gradient to white. Simple fonts.

Mostly funny sayings / images.


I was thinking of the top 2 and last one that when your behind someone in traffic on the freeway jamming out to whatever and you see a plate that it will either make you laugh of youll be like me and see a werid plate and say WTF what was that and zoom up to see. :)

Any thoughs on the 3 pages of plates would be hlepful, I need to start limiting my designs down to 3 for Monday. Thanks.

Ciabatta (Italian "slipper" bread)
Makes 2 loaves.

This recipe is very easy to do, but you can't do it on a whim the same day. You need to make a basic sponge the previous day, at least 12 hours in advance, and up to 24. What I like is all the kneading is done in the mixer and on the second rise there isn't any kneading at all. Cooks up quick into wonderfully chewy, flatish loaves. Each loaf makes three substantial sandwiches when cut as seen in photo.

For sponge
1/8 teaspoon active dry yeast
2 tablespoons warm water (105°-115° F.)
1/3-1/2 cup room-temperature water
1 cup bread flour

For bread
1/2 teaspoon active dry yeast
2 tablespoons warm milk (105°-115° F.)
2/3 - 1 cup room-temperature water
1 tablespoon olive oil
2 cups bread flour
1 1/2 teaspoons salt

Preparation

Make sponge:
In a medium sized (4-6 cup) bowl stir together yeast and warm water and let stand 5 minutes, or until creamy. Add 1/3 c water and flour and stir 4 minutes. If mix is too thick and dry, keep adding just enough water so that you're able to stir it, but it isn't something you can easily spoon or looks runny. Don't go over 1/2 cup. Cover bowl with plastic wrap. Let sponge stand at cool room temperature at least 12 hours and up to 1 day. It will look wet and very bubbly (photo top left).

Make bread:
In standing mixer bowl stir together yeast and milk and let stand 5 minutes, or until creamy. Fit mixer with dough hook and add: sponge, 2/3 water, oil, and flour to the yeast and warm water. Mix at low speed until just blended and beat dough at medium speed 3 minutes. If batter is rather dry or stiff, add tablespoon more of water at a time until batter is sticky and soft but not at all runny. Shouldn't add more than a cup of water total, though trust your instincts if you've made bread before. It's pretty forgiving. Pause to scrape down sides, add salt and beat 4 minutes more. Scrape dough into an oiled bowl and cover with tea towel or plastic wrap. Let dough rise at room temperature until doubled in bulk, about 1 1/2 hours. (Dough will be sticky and full of air bubbles.)

Have ready a rimless baking sheet and 2 12" by 6" sheets parchment paper. Turn dough out onto a well-floured work surface, dust top with a bit more flour and cut in half. Do not knead dough. You're using just enough flour to keep dough from sticking to your hands. Transfer each half to a parchment sheet and form into an irregular oval about 9 inches long. Dimple loaves with floured fingers, then cover loaves with a dampened tea towel. Let loaves rise at room temperature until almost doubled in bulk, 1 1/2 to 2 hours.

At least 45 minutes before baking ciabatta, put a baking stone in lowest position in oven and preheat oven to 425° F. When bread is ready to go in, remove towel, spritz loaves with water. Line up far edge of baking sheet with far edge of stone, and tilt baking sheet to slide loaves with parchment onto stone. If Spritz water into oven a bit more to get steamy and close oven quickly. Bake ciabatta loaves 20 minutes, or until pale golden. Remove to a rack to cool. They should look somewhat like the top right picture when done. Cools quickly, and also dries out quickly so don't cut it unless you're going to eat it, or freeze it. Freezes up and toasts nicely.


Notes: I make a double batch (4 loaves, as seen in photo) to get good use out of all that time it takes to heat baking stones. Great recipe for cold days. It warms up the kitchen nicely. I've used all purpose flour in a pinch and it was fine. I've also used all purpose with a bit of wheat gluten flour added. (In the US, Bob's Red Mill makes a very good "Vital Wheat Gluten Flour") The amount of rising and the amount of water needed for the recipe will depend on the weather. First batch I made it needed a lot of water to get a sticky dough. Today, it needed less water but didn't rise as much because of the cold weather.

Lasagna. With so many variations on this great pasta dish, who's to say which one is better than the other? This recipe is a combination of the one found on the box of a pack of Barilla Lasagne sheets, and self improvisation for the tomato sauce. i.e. I used a jar of pre-made sauce instead of making it from scratch. This recipe works well as the base of a meat lasagna. Fiddle with it yourself to make your lasagna that suits your own taste.

Ingredients
10 Sheets of Lasagne
450g minced meat
200g cherry tomatoes
100g mushrooms
75g peppers (any colour, doesn't matter too much)
50g butter
50g onions, diced finely
50g grated parmesan cheese
1 clove of garlic, finely chopped
15g bay leaves, finely chopped
Glass of white wine, coffee (both optional)

Bechamel sauce
1 litre of milk
45g butter
45g flour
15g nutmeg


Recipe

1) In a large skillet, brown the onions in oil [2] along with your garlic. Add your meat to the mixture [3] and cook for another 5 minutes. Once meat is almost fully cooked, season this mixture to taste with some added goods. I added about 3 tablespoons of freshly brewed coffee [4] to the above but didn't make too much of a noticable impression. Next time I'll add more. 1 glass of white wine was also added [5]. Cook until wine has fully evaporated.

2) Add mushrooms and enough tomato sauce to make the sauce fairly liquid [6]. Mix thoroughly [7]. Add your peppers [12] and extra tomatoes [13] to the tomato sauce and mix again. Add bay leaves to mixture. Set aside on low heat.

3) Make the Bechamel sauce in another pot [8].

4) Grease the edges of an oven dish. Line the bottom with a layer of bechamel sauce [14]. Piece two sheets of lasagne on top. Then add a layer of the meat sauce. Add another layer of bechamel sauce, and sprinkle some parmesan cheese on top. Repeat for enough layers to fill the oven dish [15].

5) Bake in oven for 20 minutes at 200C [16].

Bechamel Sauce

1) In a pot, bring milk to a boil [8]. In another pot, melt the butter [9]. Add flour and pour in the hot milk. Be sure to whisk immediately so as not to form any clumps of flour. When mixture boils, remove from heat and add nutmeg and salt to taste [11].

Sidenote: This recipe called for using the no-cooking lasagne sheets, which rely on the moisture from the bechamel and tomato sauces. If your sauces are not liquid enough, the layers of lasagne sheets may still be hard after baking. Use sheets of lasagne that you boil beforehand if you want to ensure a good lasagna.

This stove is for home heating and lives in the corner of the dining room. The built in fan does a decent job of getting heat around the corners to the living room and kitchen. We knocked out a wall and opened up a hallway so that circulation goes in a circle. So even though it's a small stove, it's adequate.

Lately, we do most of our other heat tasks here as well. The stockpot, which Risa found in a dumpster, heats dishwater and "spit-baths." The coffee boiler serves up leftover coffee from the morning brew. Frying pans, sauce pans, and the Dutch over vie for the remaining space.

Here we have collard greens steaming, with a bowl of potatoes that's already done sitting on top, to keep warm.

I have this old Better Homes & Gardens cookbook from 1960 that was my mom's. Since she and my dad got married in that year, I assume it was probably a wedding present. I love this cookbook, and I use it more than any other I've ever owned b/c it has some very basic recipes - like how to cook a roast, or make biscuits. And of course, the illustrations are 50s fun!!

Dash did all of the measuring and scooping, and at the end I just added extra milk until the stuff in the bowl actually looked like cookie batter.

(I think it's a testament to these recipes that the cookies still worked at all, and were actually pretty good.)
