Bristol Bay was a sailboat only fishery until 1951. Canneries had fleets of these 32 foot sailboats that I understand were based on a San Francisco Bay design. The design was also used on the Columbia River between Oregon and the State of Washington. An attempt was made to convert the sailboats into power boats but I understand the effort was not successful. Many of these boats ended up as you see here. Existing ones in good shape are worth quite a bit of money. Fishing boats in Bristol Bay are still limited to 32 feet. And you have never seen mud until you have seen Bristol Bay mud. If you think it would be a simple task to walk across this stream channel to the other side, you would wish you hadn't tried that rather quickly. Cook Inlet near Anchorage also has some world class mud and there have been deaths when people got stuck and couldn't be freed before the tidal bore came in.

This is one of our favorite pasta casseroles!
Simple and you can make it some what different everytime by what you add in.
IMPORTANT...It makes enough for TWO casseroles!
It freezes wonderful and gives you another quick dinner for a later date !
It's wonderful with Garlic Cheese bread and a salad !

Pasta Casserole

2 - lbs ground beef
1 - 48 oz jar spaghetti sauce( Or your own homemade sauce)
2 – tablespoons sugar( we like more )
1 (16 oz) - pkg medium egg noodles
1/2 - cup margarine or butter
? - tsp onion salt (or onion powder)
? - tsp garlic salt (or garlic powder)
? - cup grated Parmesan cheese
1 - 12 oz pkg shredded mozzarella cheese

Preheat oven to 350? Brown meat and drain fat. Add spaghetti sauce and sugar to meat; simmer 20 minutes. Cook noodles as directed (AL dente); drain and toss with margarine, salts and Parmesan cheese. Spray two 9x13 pans with non-stick spray. In both pans layer half the sauce, all the noodles, rest of sauce; top with mozzarella cheese. Cover with foil; bake 45 minutes.

*You can also add some sauteed green bell peppers, onions and mushrooms to the sauce..
I add in whatever I happen to have in the house.


*Note: Since this recipe makes enough for two casseroles I always freeze one for a later dinner!
Just sit out for maybe 30-45 minutes and then heat up at 350 for maybe and hour or so !

steamed a big bunch of chopped up long beans and added a few diced boiled red potatoes, a package of silken tofu, shredded cheddar and jack cheese, sour cream, garlic, salt, pepper, herbs, and poured a batch of cornbread batter with diced jalapenos on top. baked at 375F for 30 minutes.

When living in the bush as this we do not have the benefit of an electric or wood stove, but rely on our own resources to survive. One of the staple diets of the "bushy" is damper. It is made from flour and water and a pinch of salt. It is mixed into a dough and when ready it is put into the cooking facility, in this case a billy. A billy is used for boiling water for a cuppa tea or for cooking rice or stew or whatever was on the menu for that night. A fire is set and allowed to burn for a while, then the coals are removed and the billy placed in the earth and the hot coals are placed around the billy and left for the cooking period. This was our first attempt and it tasted really nice. Only problem was the outer crust was so tough we could not cut it with a knife so this bushman's saw was employed to cut through the crust to get to the inner portion. Add some butter and vegemite (not known in the Philippines, I think the equivalent in America and England is Marmite) and a ready meal ensures. We had damper on many occasions, and as we made more we got better and better and never had another crust like this!!!!!!!!!!

AUSTRALIAN DAMPER BREAD

This is a traditional bread baked in the coals of an open fire or in a Dutch Oven (huge lidded cast iron pot) but nowadays we bake it in a normal oven. Of course there are as many variations as there are days in the years but the basic recipe is as follow:-

Ingredients

* 4 cups self-raising flour
* 3/4 - 1 teaspoon salt
* 2 teaspoons sugar
* 2 tablespoons butter at room temperature
* 1 cup milk
* 1/2 cup water

Method

* Sift the flour and salt into a bowl and mix in the sugar.
* Rub in the butter with your (clean) hands until a fine breadcrumb texture is achieved.
* For a well in the top of the flour, pour in the milk and water, and mix well with a knife until the dough come clean from the sides of the bowl.
* Turn out onto a floured board and knead until smooth and silky, like a baby's bottom.
* Shape into a mounded loaf, (some people cut a deep cross in the top) and bake in a preheated oven, 200 c / 400 F, for 25 minutes. Then lower the temperature to 180 c / 375 f and cook a further 10 - 15 minutes until done. The loaf should be a light golden brown colour and sound hollow when tapped.
* If you are "game" try cooking it on a camp fire; nothing beats that extra smoky flavour, especially using Australian Eucalyptus wood to give it that special something. If you are cooking in an oven at home, try putting a few Gum Leaves in the over to smoke as your are cooking the bread.

Damper is very similar to Irish Soda Bread, and probably developed from recipes brought over by Irish immigrants/convicts.

Variations of the basic recipe are seemingly endless, but you could try substituting other liquids, such as beer for a darker colour/flavour, or varying the ratio of milk to water, and so on. Try adding more sugar and butter and some dried fruits for a dessert damper. Basically use your imagination.

If you are cooking on an open fire you could try wrapping the dough in aluminium foil before you place it in the coals, or even try wrapping the dough around a stick and cooking suspended over the flames.

Saute onions, green peppers, 3 tablespoons olive oil, 1 tablespoon crushed or minced garlic, 2 teaspoons dry basil, 1 teaspoon oregano, 2 bay leaves, 1 teaspoon salt, and 1 teaspoon sugar. Cook until onions are clear and tender.

Feel free to add other veggies, too, or ground beef or turkey. It's very hard to ruin this recipe, which is why I like making it so often.

Look at the chaos. I am in the process of trying to figure out the meal plan for three, yes three, seperate dinner parties that I am planning. I don't know when they are yet, I don't know what I'm making yet. All that I know for certain is who is attending them. What am I thinking? Three dinners...*sigh* I'm crazy.

So, I'm going through piles of cooking magazines, cookbooks, recipe books and more. I've got dozens and dozens of recipes bookmarked in those magazines (note the little fluorescent strips in them...those mark the pages of recipes that I liked or want to try) I should just be lazy and make the same meal for all three. LOL. Who am I kidding? I couldn't do that. I'd feel like I was cheating.

I always thought these magazines were for grown-ups. Definitely not something that would be directed towards someone like me. People who were adults, have homes & kids. People who cook...A LOT!

Then I realized, I may not have kids but I am an adult (where was I when that happened) and I do have a home. Sometimes I even cook! Maybe, just maybe I AM part of the demographic for these types of magazines. Maybe I AM finally old enough.

So I bought the magazine. Haven't really done much with it. Could not even tell you where it is. But I can tell you that I then went ahead and bought one for the month of December. That one is still in the bag. Somewhere.

The six days at sea between Bermuda and Glasgow passed uneventfully. I learned three things. First: never EVER adjust the water temperature while you are still in the shower. Second: when on a cruise eat ONLY cooked or frozen foods. (These treatments kill all the calories.) Third: we are not alone. There have been three murders as we cross the Atlantic.

In all three cases, the corpses weren’t discovered for at least two days, since most old people look corpse-like when they are sleeping and there are a LOT of old people on this ship.

The medical officer, a man with suspiciously large ears, believes they all died of natural causes. I was half-hoping for a burial at sea in shark infested waters – but apparently they send the bodies home.

I drifted by the medical office on the fourth floor and casually brought up the topic of the deaths.

“Why do you want to know?” he asked coldly.

I laughed in my most disarming manner. “Curious. Call it curious.”

“None of your business,” he said finally.

“Okay,” I said. I was thinking with lightning speed now. “I am a travel writer. Yeah. That’s it. I’m a travel writer. I am working on a series about why people should avoid cruising because contagious diseases can spread like wildfire, killing all the old people first. I’m calling the series ‘Death Ships of the Princess Fleet.’”

Have you ever seen ALL the color fade from someone’s face? It goes from a healthy pink to a pasty looking white. So when I say that the ‘doctor visibly blanched’ you know what I mean.

He looked at me for a moment and I tried to keep my eyes off those enormous ears. Since he is probably sensitive about it, I avoided all discussions having to do with Dumbo or Prince Charles. That’s why I’m a pro.

Finally he shrugged. “Well, I suppose there’s no reason for you not to know. Their hearts all stopped. But they were old and that is to be expected. Why aren’t you writing this down?”

I tapped at my temple. “I memorize everything as soon as I hear it. It’s a gift. Were there any marks on the bodies?”

“They were old. There were lots of marks.”

“Any…ummm…marks like the ones on that guy who died in the deck chair a while ago?”

The doctor looked away and got intensely interested in a file on his desk.

“I have no idea what you’re talking about Mr….?”

“Smith,” I said. “I am John Smith. Travel writer.”

“Your cruise card says you are “Sam D. Diamond.”

“Pen name,” I responded with a sly wink.

He paused a moment longer, as though deciding whether or not to make a big deal out of this. In the end he just shrugged again.

“If there’s nothing else, Mr. Diamond, I have a lot of paperwork to do.”

“It’s Smith.”

“Of course it is.”

“So no marks?” I said. I was a terrier. A BULL terrier, never letting go.

“Nope. No marks.”

I tipped the brim of an imaginary hat to him. The door slammed almost instantly behind me.

We arrived in Scotland on a foggy morning. I’d taken an internet plan out that had cost me HUGE dollars…sixty cents a MINUTE! Who in their right mind would blow that kind of cash on the Internet? You’d have to be cracked or loaded to spend that kind of dough.

But I used my time at thirty seconds per session, to research the location of the chapel at Glasgow University. I had a vague idea of where I was going.

I was among the first to get off the ship, having used my elbows on several old people in walkers.

I stepped off the ship and saw a terrier thin man in a badly wrinkled suit standing before a tiny car with the words McGee Realty stenciled on the window. He held a clipboard with the name “DIAMOND” scrawled on it. He was looking hopefully at each person with a slight head bob and waggling eyebrows as he asked his silent question.

“I’m Diamond,” I said.

He looked me up and down, moustache twitching like a whiskered rodent.

“Really?”

I held up my cruise card, which he scrutinized.

“We’ve been expecting you, Mr. Diamond. I understand you need to see some angels?”

“Who are ‘we?’”

He smiled, showing really bad teeth. “All in good time, Sir. Step into the car, if you please.”

I needed to fold myself into it, since it looked like one of those cars at the circus that six hundred clowns get out of. But in a few minutes we were off to Glasgow University to meet an angel.











The Minmi




The Minmi





The SS Minmi was built in Glasgow, Scotland in 1927. She was 75 metres long, and displaced 1,455 tons. The Minmi was a collier, carrying coal from Newcastle to Melbourne and returning empty. It was named after either the lower Hunter Valley town of Minmi, or the nearby Minmi Colliery.

On 8 May 1937, the Minmi left Melbourne for Newcastle under Captain Robert Clark Callum. The Minmi's captain for all of her ten-year service was Captain McPhall, who had brought the ship to Australia. Captain McPhall commenced two weeks' leave in the first week of May, leaving Chief Officer Callum to take over as Captain. At 10 pm they were off Botany Bay in heavy seas and dense fog, and shortly after the ship struck the outside of Cape Banks, the outer northern headland of Botany Bay.

Soldiers at the nearby Cape Banks Artillery Garrison were awoken by the sound of escaping steam, and saw the ship hard on the rocks. Frederick Boulton, the ship's cook, collapsed and died of a heart attack soon after the ship struck the rocks. The rest of the crew of more than 20 were stranded on the vessel due to the heavy seas.

The Minmi split in two at about 12:45 am, with crew members stranded on both the front and back sections. Those at the front were rescued without incident, but it was more perilous for those in the rear. A line was tied to the rear section, with the other end held by rescuers. One life, a Mr Burnside, was lost in the heavy seas, and several other members of the crew spent the night on the vessel before being rescued at daylight.

Crowds estimated at 40,000 on 15 May 1937 and 60,000 the next day made the trek to La Perouse to see the wreck. Cars were banked up for four miles along Bunnerong Road (now Anzac Parade) towards the city, and police were required to control traffic and guard the cliffs. Many sightseers crossed the NSW Golf Course to get to the wreck site, and in doing so prevented golf games from proceeding, and causing damage to the course.

The wreck was sold for 200 pounds to salvagers Penguin Ltd, and while undertaking salvage operations the men lived in caves at the scene. A marine inquiry exonerated the captain of the charge of failing to navigate the ship safely. The stern section of the Minmi is still visible on the rock platform on the inside of Cape Banks.

Three-Cheese Macaroni with Thyme-Parmesan Crust





Serves 3-4

1/2 pound short textured pasta, such as macaroni, cavatppi, ziti or penne
1/2 tablespoon unsalted butter
1 tablespoon olive oil
1 1/2 tablespoons all-purpose flour
1 1/2 cups milk, warmed
about 1 1/2 cups grated mozzarella cheese
about 1/2 cup Parmesan cheese grated
1/4 cup mascarpone or goat cheese
Salt and freshly ground black peper
1 tablespoon plus 1 teaspoon chopped fresh thyme leaves
1/4 cup plain bread crumbs

Preheat ovent to 400F/200C.
Bring a large pot of slightly salted water to boil. Add the pasta and cook until bareley al dente.
Meanwhile, melt the butter in a medium saucepan with 1 tablespoon of the olive oil over low heat. When the butter has melted completely and begins to sizzle, add the flour and whisk until combined. Add milk in a slow, steady stream, whisking until the mixture is smooth and begins to thicken and comes to a boil. Remove sauce from the heat and add the grated mozzarella, and half of the Parmesan and mascarpone or goat cheese, whisking constantly to preven the cheese from becoming lumpy. When the sauce is completely smooth, add salt and pepper to taste and 1 tablespoon of the thyme.
Pour the sauce over the pasta in the pot and stir to combine completely. Spoon pasta into 3 or 4 small ramekins.
Mix the remaining Parmesan cheese, the remaining thyme and the bread crumbs together in a small bowl. Sprinkle the mixture evenly over the top of the pasta.. Drizzle the remaining tablespoon olive oil over the crust.
Bake the pasta 15- 20 minutes or until the cheese is bubbly and the crust is golden brown.

Ingredients:
2 (2 lb. each) ready-to-cook wild rabbits
or 1 (5-6 lb.) domestic rabbit
1 cup water
2 cups dry red wine
1/2 tsp. thyme leaves
2 cups sliced onions
2 bay leaves
1 tbsp. pickling spice
1/2 tsp. coarsely ground pepper
1/2 tsp. salt
3/4 cup all-purpose flour
6 bacon slices
1 tsp. sugar

Directions:
Day before serving: In a large bowl, pour 1 cup water and 2 cups dry red wine over rabbit pieces. Add next 6 ingredients. Cover and refrigerate overnight, turning pieces occasionally. About 3 hrs. before serving:

1. In 12-inch skillet over medium heat, fry bacon until crisp; drain on paper towels; reserve drippings in skillet.
2. Meanwhile, remove rabbit pieces from wine mixture; reserve mixture. Pat pieces dry with paper towels. On waxed paper, coat rabbit pieces with flour. Reserve remaining flour for gravy. Over med. heat, in hot bacon drippings, cook a few pieces of rabbit at a time. Brown on all sides and remove to platter as they brown. Pour remaining drippings from skilled and return rabbit to skillet.
3. Crumble bacon over rabbit. Strain wine mixture, discarding seasonings; stir in sugar; pour over rabbit and heat to boiling. Reduce heat to low; cover and simmer 2 hours or until rabbit is fork-tender.
4. Remove rabbit to warm platter. Stir in remaining flour to make gravy. Stir well and add water as needed. Continue cooking gravy a few minutes, stirring until smooth; serve over rabbit. Makes 6 servings.

apple sauce (i think it's called) - ready to be used in breakfasts, snacks, and desserts. cooling on my window sill.

how to:
peel and core 6 large apples, cut into smaller pieces and place in a pot together with 3-4 tablespoons water. add 4 whole cardamom pods, or a small piece of cinnamon stick, or ? split vanilla pod if you like. cover and bring to the boil, lowering the heat as soon as steam begins to form. cook for about 15 minutes, stirring occasionally, until the apples break up into a nice compote - you can leave some chunky pieces or continue until everything is smooth. season the compote with sugar to your liking - don't overwhelm the tartness of the apples. pour into very clean, newly scalded, pickling jars, and close tightly. store in a cool, dark place until needed - opened jars must be kept in the fridge.

After 30-45 minutes (depends on how high the heat is), the compote will look like this, which means it is pretty much done. I taste-test occasionally to check. The apples should be softer, but they shouldn't be mushy.

You can serve it now if you wish, but I find that the overall flavor improves if you let it cool and store it in the fridge over night. There will be quite a bit of liquid at the bottom, but you'll want to keep it. If you want to eventually eat this cold, add in a small packet or two of gelatin.

This stuff is amazing when served hot over vanilla ice cream with a dollop of whipped cream. Add a handful of granola to fool yourself into thinking this is healthy for you.

And there you have it. My apple compote recipe for anyone and everyone to enjoy. Happy cooking!

I normally don't but I was on the way to Eastbourne at the train terminal when I came across this lad shop. It not being the one I though because that would have been Kings Cross to bonnie (where I got those Parsnips: Indian Spice Flavour crisps), still it was a similar sort of place: nice, traditional, expensive.

I remember before going into the shop I was a little light headed, whimsical, happy, I backtracked onto some hippy's foot - you should have seen his face! He didn't even apologise, well you do don't you, it's natural. So I knew he was a tone! I'd just had a new haircut, it taking over my personality, I felt like smiling a lot, like Peter Cook. Normally I'm very aggressive and so that tone would have copped it, but nay, I felt too …peaceful. Was funny though.

There's always something in these places, this or that, something foreign (bit like Harrod's Food Hall), but it was a bit desperate because while the cheeses were nice, they don't have branding and I don't want that ponging up the train carriage. Plus it costs a lot of money and I'm fucking poor.

But what was this?! some Walnut Oil, in a nice tin, well, that's nice. But, well, you know, I don't want to go down that route, that twee looking tradition route. The pattern was printed and that's bad, like those fake wax seals on cheeses (some of them are printed, the others are just plastic imitations!) - basically, trying too hard. But all in row, like [French] soldiers, they looked nice. I had to reenter the shop mind!

It cost about ?5~something, and it had to because there was a ?5minimum on a card - no NFC here then!

Guess what, when I got back I checked the date and the bastard was dated: 3rd June, 2010! a solid year out of date - fucking shit mighty! That shop was right by the trains, surely they need to spring clean all the time to remove the layer of soot/dirt from customers and the trains on a regular basis?! How did they miss that?! I would have gone to get my money back but I always shred mine receipts immediately.

It tasted like Walnut Oil, which is very oily and pungent. I was wondering how I would get through it all, but of course that's not a problem now. It'll make a nice tin, not sure what to use it for though (never do, until the time is right). But I buggered the lid as I used so much boiling hot water to get the label off (easily) and clean out the oil that the plastic top fastening rotates infinitely now - should have been an all in one metal case! Embossed too.

When I was in North of England, I was surprise to see that local Pakistani (and some Afghanis [Pashtuns], Bangladeshes, Sri Lankans and Hindus and Shieks, a little bit of all of those people) gets 'bitter melons' in their grocery stores. Wao. I looked up the sky and eed. Under this gray sky and rains, you get it here. Some of them surely talked about how they miss their tropical weather back home, even you have to take salt tablets - and how they miss all those 'fragrant vegetables and great spices'.

To me it meant they are not just being insular - and segregating against white British. They got ties and connections 'to' back home in all sorts of ways and levels, and I rather believe, British society and culture really don't have capacity to even to listen about those things - even once from them.

I am not much convinced that aspect of Britishness or Englishness have changed much. It's a small change which probably has to take place - and it's probably very possible and do-able. True. Someone has to start trying, and we haven't done much about this. When younger generations and kids go wrong or do wrong, adult, older generations must take blame for it.

Bitter melon is pretty common thing in some warmer or hotter part of the world and there are varieties and ways of cooking. For ease we mostly do

- Bitter Melon and Egg (which we learned from that Chinese restaurant in Albany CA)
- Okinawan Champloo way

And bitter melon has been consistent part of our diet for past 6 years or so. When we find good ones, we just buy it and get it cooked in that day or next day. Fresher is better.

But the other night we found one becoming yellowish, we were meaning to get to it early but weather has been cool, so we thought it'd last on the shelf. When we cut it open, then inside was this red (camera failed to get that red accurately) and those red seeds had very sticky yellow coatings.

We checked on the internet and figured that this is a sign of it's becoming ripe!

We never knew that before. One account said green ones are used by Pakistani people and ripened ones are preferred by Chinese people. But probably there is more info about this.

Following recipe for Sri Lankan curry powder from Charmaine Solomon's The Complete Asian Cookbook, this is a mixture of coriander, cummin, fenugreek, cardamom seeds, cinnamon, curry leaves and chilli powder.
Charmaine says: "In Sri Lankan (Ceylonese) cooking, one of the main characteristics is that the spices are dark roasted. This gives them an aroma completely different from Indian curries".
