Oatmeal Muffin ready to eat I didn't have the quick-cooking oats the recipe calls for so I made it with the regular rolled oats and soaked them in the milk for 45 minutes. It made for a chewier muffin, which I liked. OATMEAL MUFFINS 1 cup quick-cooking or regular rolled oats 1 cup milk 1 cup flour 1/3 cup sugar 3 teaspoons baking powder 1/2 teaspoon salt 1 well-beaten egg 1/4 cup salad oil or melted shortening Combine rolled oats and milk; for quick oats, let stand 15 minutes, and for regular oats, let stand 45 minutes. Stir together flour, sugar, baking powder and salt in bowl. Combine egg, oil and oatmeal mixture. Add all at once to dry ingredients, stirring just to moisten. Fill greased muffin pans 2/3 full. Bake at 425 degrees for 20 to 25 minutes. Makes about 10-12 muffins. From my old and worn Better Homes and Gardens Cookbook.
