And for a minute, I kind of missed it-- my healthy plan. I've been thinking about going back. About starting over. Tracking my food, setting my limits back. I need to start changing the way I think about food, completely. Change it in ways I didn't the first time I tried to change the way I eat. At therapy last week, we were talking about food, about my relationship with food. We were talking about how it's ok to be friends with food, The thing I have to do is keep it from being my ONLY friend, my ONLY coping mechanism. "What do you do to cope?" She asked. "What do you to do feel better in that moment when you're overwhelmed and stressed and lonely?" My answer was, "Right now... I guess... I eat." But it's time to do something else. I'm not really sure what yet... but something besides make myself invisible. It's time to stop feeding my emotions and start feeding my body. nikelle-in-tank Digging out a tank is damn hard work. We'd sit around kvetching about this during smoke breaks, but honestly, we're probably stronger and healthier for the experience. Ingredients: 375 g dried borlotti or red kidney beans, soaked 2 tablespoons olive oil 1 large onion, diced 3 cloves garlic, chopped 2 carrots, diced 2 rashers thickly sliced streaky bacon, cut into 1 cm wide strips 2 red peppers, seeded and cut into 2 cm squares 1 green pepper, seeded and cut into 2 cm squares 1 x 400 g can peeled tomatoes in juice (I used 2 cans in my recipe) 1 bay leaf 1 sprig thyme 1 teaspoon paprika 1/2 teaspoon crushed coriander seeds salt freshly ground black pepper 3 tablespoons maple syrup, treacle, golden syrop or honey. Preheat oven to 160?C. Rinse soaked beans, then put into a saucepan and cover with cold water. Bring to a boil, then strain and rinse with cold water. Heat oil in a large enamelled cast-iron casserole and saute onion, garlic, carrot and bacon. After 5 minutes, when onion has softened and bacon is sizzling, add red and green peppers. Puree tomatoes and juice in a food processor and add to caserole with beans and remaining ingredients, except maple syrup. Mix well. Add sufficient cold water to cover beans by 4 cm. Transfer casserole, tightly sealed, to oven and bake for at least 4 hours. Stir well after 2 hours, checking that it is reasonably sloppy (if it is too dry, add a little water and reduce oven temperature). After 4 hours, stir in maple syrup, extra salt and plenty of freshly ground black pepper. The beans should now be in a rich sauce. If too thick, add a little extra water; if too runny and the beans are tender, increase oven temperature and continue to cook. Serve with a green salad. A serving idea (from Stephanie Alexander's "The Cook's Companion" recipe book: bean jaffle Make a jaffle using wholemeal or rye bread, home-made Baked Beans and grated cheese or leftover lamb. Arrowsmith Snow Gully - Climbing in a freak snowstorm in May-2 Erika in the snowstorm before descending the gully of epicness. This gully was incredibly steep. Normally this would be okay, but the snow was ridiculously soft on this particular day. So with every two steps, we would either slide back 1.5 or punch through up to our thighs. The climb was strenuous, and we were quite gleeful to reach the top! However: Once we arrived at the notch, we were exposed to the stormy(er) side of this gnarly mountain. Wind pummeled us to oblivion, and to make matters more chaotic, just as we arrived the flurries turned in an all out snowstorm. With the rock scramble looking sketchy at best, the weather being far more than we bargained for (and strengthening at that!), and the route hardly visible, we made the difficult but mutual decision to head back down. At least we made the top of the gully! That is one of the coolest parts of the mountain anyhow, and almost all the way up to (somewhat anticlimactic) the summit. The descent was quick. Once we reached the lower reaches of the gully, where peril no longer awaits in the form of jagged rocks a a mere meter away on either side, we stopped using the axes to guide our steps, sat down, and went for the bum slides of our lives! Boil half a large box of spaghetti noodles and set aside al dente. Sautee red peppers, slivered tomatoes, and hand torn sausage until meat is cooked throughout. Preheat your oven to 350. In a round pie pan, pour the cream mixture in and spread evenly. Then, one handful at a time, begin to fill up the pan with spaghetti noodles. Once full, knead the noodle mixture two or three times. Lightly spoon the sauteed mixture on top and pat to an even surface. Sprinkle with fresh mozzarella and spread out sliced olives and cilantro on top. Bake for 40 minutes. casserole Yeah, my first casserole! I was given a casserole dish last year, amongst a bunch of other, miscellaneous items of crockery and kitchen equipment, but till now I'd only been using it as a fruit bowl. Today I made a casserole in it. 500g of diced steak, 3 large carrots, 2 large onions, and a sachet of mix and water. Yeah I know, boo, sachets. Still, they work. 2 hours in the oven later, served up with mashed potatoes - and it was delicious. The meat was a touch dry, but I just need to add extra water/stock next time. It even made about 3 or 4 me-sized servings, which isn't bad going. Sometime in January my loving cat of 12 years began to get sick. She started off losing her hair. Then the skin underneath would become raw and red. It looked almost like a chemical burn. The 1st trip to the vet they gave me 3 meds to give her because they believed she had a case of fleas (which was a load of crap) and a skin allergy. A week passed and she did not get any better so I took her back. The vet upped her dose of prednisone and gave her a shot of antibiotic. 5 days later she began to lose evern more hair, she became lethargic, and she was losing weight rapidly. I called the vet on a Friday and told them what was going on. They told me to bring her in and they were going to keep her the weekend so that they could observe her. They kept her the whole weekend and on Monday they did a skin biopsy on her. Tuesday they called to say I could come pick her up and see how she did at home. I picked her up on Tuesday night and brought her home. I had to pick her and take her to her litter box and to her food dish. Wednesday, 2/13, She took a turn for the worse. I won't go into all the details but I knew that had to put her down the next day. So that night she and I slept on the couch together. That was the only way she would go to sleep, other wise she would just stand and cry. So I wrapped her up in one of her blankets and laid her on my chest. I talked to her as she fell asleep. That morning I went to work first and let my boss know what I needed to do. I called the vet and told him what was going on. He asked me what I wanted to do and I told him I thought our best option was euthanasia since we both believed that she was not going to get any better. I called my husband up and we went together to take her to the vet. That was one of the hardest things I have ever had to do in my life. It felt like someone had taken my heart out of my body and ripped it completley out of my body. Before I left they asked me if I wanted a paw print, which I wanted. I cried for two days straight. Some people were really unkind as they told me, "It's only a stupid cat, I wouldn't have spent that much money on it" One insensitive asshole at work even called me on the phone and when I answered he said, "This is your dead cat calling you from beyond" My mom called me a few times a day to see how I was doing and she would comfort me by telling me that " Tommorrow the pain in your heart will ease a bit more" It has some, but I still miss her alot. A week later the vet called me and gave me the results of her skin biopsy and autopsy that they did on her. She had cancer of the pancreas. That type of cancer is fast moving and most cats don't last more than a month once it's found. The next day I received in the mail a sympathy card and a little poem. Here is what the poem says: It is titled The Rainbow Bridge Just this side of heaven is a place called Rainbow Bridge. When an animal dies that has been especially close to someone here, that pet goes to Rainbow Bridge. There are meadows and hills for all of our special friends so they can run and play together. There is plenty of food, water and sunshine, and our friends are warm and comfortable. All the animals who had been ill and old are restored to health and vigor; those who were hurt or maimed are made whole and strong again, just as we remember them in our dreams of days and times gone by. The animals are happy and content, except for one small thing; they each miss someone very special to them, who had to be left behind. They all run and play together, but the day comes when one suddenly stops and looks into the distance. His bright eyes are intent; His eager body quivers. Suddenly he begins to run from the group, flying over the green grass, his legs carrying him faster and faster. You have been spotted, and when you and your special friend finally meet, you cling together in joyous reunion, never to be parted again. The happy kisses rain upon your face; your hands again caress the beloved head, and you look once more into the trusting eyes of your pet, so long gone from your life but never absent from your heart. It's been one year since I began my weightloss journey. While I've been quite strict on getting rid of clothes that are too big, I did keep my most comfy pants and my favourite top, so I could do a comparison down the line! So here's my little photo montage! Pic 1 ME now! :D Pic 2 pants and top doesn't it look like a clown suit, look how baggy the pants are at the feet. Pic 3 showing how big the top is, biggest change is that my boobs no longer fill it out but they once did! Pic 4 my belly also filled this out! Pic 5 how did I ever fill these pants? It hasn't been long but it's very difficult even now to get my head around the fact that these pants were almost getting too small! Pic 6 side view Pic 7 yep that is ME in ONE leg..... now when people at work say I look half myself I understand why! Compliment of the week, someone stated I must be a size 10 by now, while I can assure you that is not the case, I'm a comfortable 14-16 with some some pieces in a 12, jeans and skirts, but hey that's Australia sizings for you! The old clothes in the picture were a size 26 top and size 22 pants, so I'm pretty pleased with that drop! :) I can't stop shopping at the moment it's such a thrill to shop in normal shops and the normal size sections! The number results are: Weight and cm losses Weight : 39 kg (86 pounds) Bust: 24 cm Waist: 39.5 cm Hips: 40 cm Thigh: 13 cm Arm: 6 cm This equates to a 30% loss of my bodyweight to date. So while I still have some more weight I'd like to lose, this years focus will be more on fitness, I expect the weight loss to be slower and it will be a little trial and error to see where I feel comfortable and what I can maintain, as I haven't been my current weight since before I went overseas in 1995. Another 5 kilos and I will be around my general weight as a teenager. Needless to say no matter what my weight at the moment I can safely say I am the fittest I've ever been and I love that feeling! :D Thanks to all you lovelies who've been following my journey and offering encouragement, I really appreciate it! We were nice and earlier so we practically had the place to ourselves. This is my mate Stephen Paea. For as long I've know him he's always been a fan of the weights..........and heavy weights at that. You'll see in an alternative photo that he's holding 50kg dumbbells and he actually manages to curl them. I just ended up liking this photo better. A few years ago he did a body building comp and completely transformed his body. His lost something like 20 - 25 kgs in less than 20 weeks. It inspired me to get into shape and lose weight as well. Unfortunately I couldn't maintain the loss and ended up piling much more back on. He's quite the silver tongue and has been extremely successful in his career because of it. To the point where he's even been head hunted in the past. He's a smooth talker and has always had the gift of gab. Need to sell ice to the Eskimo's? He's your man. Seeing him lose so much weight really gave me the motivation to do the same. Through a period of 16 weeks I lost almost 20kgs. He was practically my personal trainer everyday. Eric is working late a lot this week, so I made it a simple week for food. Tonight was a baked chicken breast, boneless and skinless of course, topped with a fresh tomato, onion, jalapeno, and lime juice salsa (counts as a vegetable too!), a homemade rice pilaf, loaded with veggies, and asparagus, drizzled with olive oil and parmesan cheese and baked. The bad habit here is that dinner is by far the biggest meal of the day. Optimally, I should make the portions smaller. Maybe I'll work on that...... Healthy Food turning Bad School Project: The idea of the project was about Mistaken Identity. We were to find an idea and illustrate the message without atuaclly drawing what it means. For example the message, "Climbing up the corporate Ladder" and NOT drawing a business person climbing up a ladder. My Idea: I wanted to show how people who believe just because they eat healthy that they are indeed healthy, but that other facts in your lifestyle can cause you harm.
