INGREDIENTS

2 tablespoons olive oil
1/2 teaspoon salt
1/2 teaspoon lemon-pepper seasoning
6 small (new) red potatoes (about 3/4 lb.), unpeeled, quartered
1lb. fresh asparagus spears, trimmed

DIRECTIONS

1. Heat grill. In large shallow bowl, mix 1 tablespoon of the oil, 1/4 teaspoon of the salt and 1/4 teaspoon of the lemon-pepper seasoning. Add potatoes; toss to coat. Place in grill basket.

2. Place grill basket on gas grill over medium heat or on charcoal grill 4 to 6 inches from medium coals. Cook 15 minutes, shaking grill basket occasionally to turn and mix potatoes.

3. Meanwhile, place asparagus spears in same shallow bowl. Add remaining tablespoon oil, remaining 1/4 teaspoon salt and remaining 1/4 teaspoon lemon-pepper seasoning; toss to coat. Add asparagus to potatoes in grill basket. Cook about 10 minutes or until potatoes and asparagus are tender, shaking basket occasionally to turn and mix vegetables.

La prima, vera, Paella nasce a Valencia ed e, come per la maggior parte dei piatti tradizionali, frutto della fantasia popolare dei contadini, gente umile e povera, che lavoravano nelle campagne e nelle risaie e che, all'ora di pranzo, si riunivano e preparavano questo piatto con tutto cio che avevavo a disposizione: riso, anatra, coniglio, fagiolini, pomodoro, zafferano e, se se ne trovavano in giro, lumache.
Alla fine del XIX secolo, da ricetta popolare, la Paella inizio ad essere proposta anche nei menu delle osterie e nei chioschi sulle spiaggie di Valencia ed Alicante da dove si diffuse in tutta la Spagna e poi in tutto il mondo grazie ai turisti.
Oggi la Paella e uno dei piatti piu amati e conosciuti in tutto il mondo.
Etimologicamente la parola "Paella", deriva dal latino "patella" da cui deriva anche l'italiano padella e indica, appunto, una padella in ferro molto larga e poco profonda munita di due impugnature opposte, che veniva utilizzato soprattutto dai Valenciani per cucinare piatti a base di riso o di fideos (gli spaghetti spagnoli).
Inizialmente la paella veniva chiamata "arros a la paella" ovvero riso in padella, ma col tempo si e affermato l'uso di indicare col termine paella, la ricetta, mentre la padella in se stessa viene chiamata "paellera".

Ingredienti
250 gr di pollo
250 gr di coniglio
150 gr di salsiccia sottile
500 gr di cozze
8 pz di scampi

Olio di oliva 8 cucchiai
1 pz peperone rosso
5 pomodori
200 gr di piselli
1/2 cipolla
olive nere
2 spicchi di aglio
1 bichiere di vino bianco
1 limone

Enchilada Chicken - adapted from The Biggest Loser Family Cookbook
4 Servings
*5 points

4 - 4oz raw, boneless, skinless chicken breasts
4 tbsp Enchilada sauce
**1 cup 2% Shredded cheddar cheese
Seasoning - Mexican blend
Diced cilantro

Pre-heat oven to 350*
Place a skillet on stove and heat on high. When hot, spray with cooking spray
Season each side of the chicken with Mexican seasoning (I used McCormick Caribbean Jerk because it is all that I had).
Cook chicken on skillet for 1-2 minutes per side
***Transfer chicken to a sprayed baking dish.
Top chicken with 1 tbsp enchilada sauce, 1/4c cheese and cilantro.

Cook in oven for 4-6 minutes until chicken is cooked through and cheese is melted.

*Original recipe states to use 1/4c cheese per piece of chicken. I used 1/8c for my servings and 1/4c for DH's servings. If you use just 1/8c, the points value drops to 4.

**Original recipe called for Cabot's 75% cheddar, but I am not familiar with that, so I used Kraft 2%

***Original recipe noted to use an oven-proof skillet and just transfer the skillet to the oven and cook in that, rather than transfer to baking dish. I have Calphalon, but I am not 100% if my pans are oven proof, so I figured I would err on the side of caution and used a 8x8 glass baking dish. Seemed to turn out fine, just dirtied one extra dish.

This recipe smelled really good when cooking, though with the skillet so hot, it did make the room smokey. I suggest the exhaust fan on your stove if you have one. My smoke alarms are WAY high up and I don't want to mess with setting those off, ha!

The nice thing about this recipe is the prep was very quick. Start to finish took maybe 20 minutes, so a good choice for nights you don't have much time, and don't want to do a lot of dishes. This would be good with a side of brown rice or even dice the chicken and put it in a wrap.

We've tried the "chicken under a brick" gimmick once or twice in the past and haven't been particularly impressed. But seeing this recipe recently made me feel like giving it one more shot. The nice twist on this one is that the chicken (whole, butterflied) is cooked on the stove for a few minutes skin-side down to start, which gets it started quick and crisps up the skin nicely. And then it is finished by roasting, which goes by quicker between the stove-top starter and the brick. Very tasty.

So yeah, a tasty dinner. Which is good, because the rest of the day was basically crap. Work put me into a truly foul mood. There was some beer consumed during the course of prepping this spectacular feast. I'll just leave it at that.

Amusingly, I couldn't actually get enough light on this to get the shot I wanted in my semi-dark kitchen, so I actually got out a speedlight, gelled it orange to match the incandescent lights, and blasted the ceiling to bump up the lighting a bit. My lights are becoming just indispensable.

1980 - Rioting breaks out in St Paul’s following a police raid on the Black and White cafe in Grosvenor Road. It is the first of the inner city riots of the early Eighties.

1982 - The Watershed, Britain’s first ‘media centre’, opens across the water from the Arnolfini.To this day nobody in Bristol is quite sure what makes two cinemas, a bar and a gallery a ‘media centre’.

1982 - Bristol City FC goes bust and is reformed as Bristol City (1982). Eight of the club’s highest earners from the Division One days agree to tear up their contracts so the club can survive. They become known as the Ashton Gate Eight.

1983 - The Wild Bunch, later to become Massive Attack, become resident Wednesday night DJs at the Dug Out club on Park Row.

Making the front pages this August week in 1983 were plans for a ?30 million two storey shopping mall beneath the city's historic Castle Park. Conceived by Sir John Hartnell of estate agents Hartnell, Taylor and Cook, and built by Sir Alfred McAlpine, it would run from Broadweir to the River Avon

Any old castle remains, the developer's said, would to carefully preserved. History was not kind to this brave plan - within a few years we had The Galleries instead.

Bristol's - or should I say Avon's - social services were having a big shake up in 1983.

The Post recorded angry scenes at Meadow Sweet Old People's Home in Fishponds as 200 residents and their relatives were told that it's closure was likely.

And the future of the controversial Crescent School for Girls in Downend - the subject of a police investigation into prostitution - was also in doubt.

In the event both closed.

On the industrial front it was looking more and more likely that the long established Avonmouth ship repairers, Jefferies, would go to the wall.

The receivers, who were looking for a new buyer, had been called in following losses of around ?1.8 million.

The Post reported that two ship owners had already diverted vessels to other yards.

Out at Winterbourne Richard Pearce was asking permission to turn the village's 13th century tithe barn at Court Farm into a restaurant.

"It has a unique roof and it looks like a church inside and we would want to make the most of that feature" he told the Post.

"There would be a restaurant on the ground floor and a dance floor on a new first floor - the barn could be used for wedding receptions" he added.

The historic barn, now in the hands of trustees, has since been fully renovated for community use.

The future of the Portishead railway line is still under debate but in 1983 it looked very likely that the track line into the town would be lost to industrial development.

But John Crockford-Hawley, a Weston councillor and in those days Woodspring district's planning chairman, appealed for a reprieve.

He said, quite rightly, that all options should be left open and nothing done to prejudice the future use of the line.

With the passing of the years we tend to forget just how good a sportsman Ian Botham was.

In 1983 the cricketer reached yet another peak in his glittering career by taking Somerset to the Nat West Trophy final virtually single handed,

With half of his side out for 52 he then hauled them from defeat to victory over Middlesex at Lords with an undefeated 96 before a crowd of 20,000.

"An important innings like that is one you remember for the rest of your life" he told the Post.

1986 - The Dug Out closes following a campaign by police that culminates with police solicitor Richard Crowley telling the city council’s Public Protection Committee that the club is like a ‘Fagin’s kitchen’.

1986 - On April 26, Bristol Rovers play their last ever game at their spiritual home, Eastville. it’s a 1-1 draw with Chesterfield.

This was the week in September 1986 when the country’s first soap opera queen, Pat Phoenix, pictured, died of lung cancer at the age of 62.

As Elsie Tanner the actress had appeared on Coronation Street for some 22 years.

Locally, Bristol was beginning to feel the backlash from Operation Delivery, in which 600 men from the Avon and Somerset police force had gone into St Paul’s to make a series of arrests for drug offences.

This had led to an outbreak of stone throwing, cars set on fire, a smash and grad raid on a local store and a mugging.

To make matters worse the Assistant Chief Constable Malcolm Popperwell was taken off to hospital after a suspected heart attack.

And Tom Turvey, the police authority chairman, was asked to stand down after objecting to a Labour party statement about the police raid.

He said that there were differences between his view of the events in St Paul’s and those contained in the statement which demanded a full, independent public inquiry into Operation Delivery.

There were angry scenes at a Police Liaison Committee over the fact that the police did not consult community leaders before the raid and that it had been provocative and heavy handed.

"New Years Resolution #4"

Much like life gets in the way of achieving goals, life got in the way of my finishing my New Years resolutions. Hopefully I can finish them in the next week or so.

This one is about lifestyle. It was not a resolution last year, but something we decided we needed to do part way through the year.

Given the fact that my day off is Monday, and Eric's days off are usually Saturday and Sunday, it can be hard to plan things. Going to parties is especially awkward, as I sometimes have to work late on Saturdays, due to people booking parties for me to cater. Saturday night is prime party planning night, but unfortunately, it tends to mean I am the one doing someone else's party, not attending one thrown by someone else. Like New Years eve when I had to work, and Eric went alone to a party we were both invited to.

But, we have purchased tickets for upcoming Broadway touring productions, including Mary Poppins, Mama Mia, Les Miserables, Avenue Q, and Wicked. We picked Tuesday night, as it is one of the least likely nights for interruptions from work.

We would like to go to a few Omaha Vipers Indoor Soccer games, but they seem to always be on Sunday afternoons, when I work. Or a weeknight when I have an event to stay late for. But we will keep a close watch on their schedule. I am sure there will be one or two open nights when we can attend.

We have made a list of restaurants we want to try. Right now is rather tough, being down a person at work, and also having so many events booked at work, which means staying late. This week I have my double shift day, two parties on Thursday, one on Friday, one on Saturday, and Rascal Flatts at the Qwest on Saturday night, plus a Creighton basketball game at the Qwest. However, basketball and hockey end in March and so it should reduce the number of nights per week I have to stay late. This should open up some opportunities to go out to dinner once in a while, and let some one else cook for me!

Last, but certainly not least.....I need a vacation. I have not had one since I switched careers in May of 2002. Eric gets to travel several times a year with his job, and they work hard during the day, but they get to explore new cities at night. I need a change of scenery and a view of the world that does not include Omaha and a windowless kitchen at work everyday.

So, enriching my life will be a definite resolution for this year.

Nice day out but I wasted most of it inside finishing Mass Effect. I'd forgotten quite how epic the ending was, its amazing when you find a game with such a cinematic quality. Also came up with some nice ideas for montages during breaks from gaming. Regardless of how much I try and think of ideas they almost always come to me seemingly of their own accord. Over to Dad's in the evening, cooked supper and watched Casino, a very good if over long and gangster film with a great soundtrack.

Indian potatoes and cauliflower – mild version

Serves one as a main dish, two as a starter, three as a side dish.

2 medium potatoes, cubed
equal amount of cauliflower, divided into florets
1/2 onion, chopped
2-3 cm piece of ginger root, grated or very finely chopped
1 tsp yellow mustard seed
1 tsp cummin (or to taste)
2 tsp coriander (or to taste)
1 tsp turmeric
garlic to taste
salt
1/2 cup water
1 tbs cooking oil (2 tbs if you are not using a non-stick pan)

Heat the oil in a wok or frying pan. When hot, add the mustard seeds and put a lid on the pan. Allow seeds to pop for about 20 seconds, lower the heat and add cummin, coriander, turmeric, garlic, ginger and onion, mix well and fry gently until the onion begins to turn transparent. Take care not to burn. Add the cauliflower and potato pieces and mix to coat with spices. Fry for a couple of minutes, then add the water and simmer for 10-15 minutes or until the potato pieces are cooked through and the sauce has thickened. Serve as a side dish with meat, or as a main course with chappatis or naan and a raita (yogurt salad).

Raita:
1/2 cup plain yogurt or buttermilk
1/2 tsp cummin seeds
1/2 tsp ground cummin
1/2 cucumber, finely chopped
dash of salt

Stir salt, spices and cucumber into yogurt and serve chilled. Very good with spicy dishes.

For hot version, add as much fresh, chopped chili pepper as you can stand and remember to serve the raita – it's cooling.

I'm a big fan of good meals that can be made quickly. But who isn't?

Recipe
You will need:
• 1/2 lb ground beef
• salt & pepper
• garlic powder
• 1/2 large yellow onion
• taco seasoning mix
• Stuff to put in the Taco...anything you'd like (eg. tomatoes, lettuce, white onion, cheese, sour cream, etc.)
• taco shells

First brown the beef in a non-stick pan. Make sure you break it up into small pieces as you brown it. After it is browned add salt, pepper, and garlic powder. Then add the finely chopped yellow onion and cook for a bit. What you do next depends on your taco seasoning mix. In this case, you put the taco seasoning in 2/3 cup water, mix it, then add it to the beef and onions. Cook and let it simmer allowing for most of the water to evaporate.

Now build your own tasty taco!

Some locals refer to Bukit Mertajam as Bukit Ubat (or medicinal hill) because of the therapeutic qualities attributed to it - people with minor ailments actually claim of feeling relieved after a hike. One of the more popular hills on the mainland, the tar road trail to the top is usually packed with people.

my son and I made organic salmon wrapped in parchment paper...he is the king of ad lib...we were inspired by Martha, and then did our own version with what we had on hand...
kale, shitake mushrooms, salmon, julienne red pepper, lemon zest, garlic, ginger, sesame oil, lemon juice, olive oil, green onion, S&P, wrap in parchment ... bake for 15 min @400
sprinkle with black sesame seeds for that touche final!
so delicious!

One table's worth of the great spread my family laid out for our veggie holiday reception. Everything was delicious! Our centerpiece was the lovely vegan gingerbread house we made the night before. People were a little hesitant to break it up and eat it, so we got them started on it by snapping off a back wall. I love gingerbread.

In the kitchen we had a table of drinks that included a crockpot of wassle. The most asked question of this party was, "what is wassle?" Wassle is a warm punch of cider, citrus, spices and rum. We got cleaned out of wassle. Good stuff, that.

I did cheat a bit though: I used bottled marinara sauce instead of my own. Plus, I skipped the "Almasean".
