DO NOT ADJUST YOUR COMPUTER SCREEN. This is what I like to call a "22 oz. Rib Eye". It is a widow-maker. It is a destroyer of worlds. It is pretty much the most delicious thing ever.
Heather has basically removed red meat and pork from her diet and so generally I cook chicken or fish. Tonight she had a late night at work so I had the opportunity to have a little bachelor's dinner. In my mind, I weighted the following three things equally:
1. Taco Bell - I don't get it that often and sometimes it just hits the spot.
2. Something trashy, but delicious... something that Heather doesn't generally approve of or like to eat. An example would be an awesome tuna noodle casserole.
3. A nice dinner involving beef or pork.
Obviously, I went for #3.
The rib eye was seasoned with kosher salt, fresh ground pepper, garlic powder, and a tiny bit of "steak seasoning". Browned on both sides and set in the oven to finish to a perfect medium rare. I deglazed the pan with red wine (my current favorite bottle of local $10 red blend), added diced onions, garlic, salt, pepper, and a little bit of heavy cream. Reduced to a nice, thick sauce. Poured sauce on top of steak.
Mashed potatoes are golden yukon. Cubed, boiled, mashed with butter, cream, salt, pepper, and chives.
The greens were swiss chard. I browned bacon, removed the bacon, added onions, garlic, the greens and let it cook for a minute or two. I added chicken stock, salt, pepper, butter, and a little bit of lemon. Reduced heat and covered and let it cook until the greens were tender. Reintroduced the bacon.
Plating was a challenge since the steak was SO HUGE.
I admit that I did not eat the entire 22 oz. steak. I am not 23 years old anymore.
Ahi Tuna... Or Is It?
This piece cost me under 50 cents in ingredients to make. Did I steal from my fishmonger? Did the price of Ahi Tuna plummet? Wait - is that even fish?
In fact, what you are looking at is a piece of watermelon and one of my most enjoyable dishes to make so far. While raw watermelon has an intense sweetness and a gritty mouthfeel, roasted watermelon has a more complex sweetness and a texture that is unlike anything else I've tasted.
Recipe for roasted watermelon:
Cut a seedless watermelon into steaks approximately 3 centimeters thick. Make sure all of the rind is removed and attempt to take out as many pale seeds as you can. Steaks should be in one piece and should not have major cracks running through. You can get 6-8 steaks out of a small watermelon.
Place the watermelon steaks directly on a baking pan. Pour in 1/2 cup of dry sherry on the steaks, then top each steak with a thin slice of butter and a pinch of salt and pepper. Grease up a sheet of parchment paper, then rest it on top of the steaks. Put the baking pan into an oven preheated at 350 degrees F and cook for 2.5 hours.
About two hours into the roasting, dice and saute half an onion until lightly browned. Set aside. In saucepan, reduce 1/2 cup of balsamic vinegar.
Plate the watermelon steaks on the balsamic vinegar reduction, upside down from how they were while roasting. Top with a small bit of onion and some mint flakes, then serve without telling anyone that it's watermelon.
