This was another one of Art's delightful creations. A homemade high protein vegan patty (made with lentils, brown rice and a few other nice grains I forget now), served over a tomato, carrot & onion reduction and topped with sauteed onions & cilantro. The genius here is that his reduction reduced a bit more than planned so instead of floating the patty on the reduction, he got creative, hence the star burst, a very attractive look for good food!

We went shopping at Whole Foods, aka Whole Paycheck because their prices are pretty steep. The store has a gourmet focus. Have you seen coconut oil sold in jars before? It's solid, a lot like shortening. In fact, I bet it would work fine as a shortening. Shortening is so named because it shortens the length of gluten chains in flour making pastries crumbly, not bread-like.

Today's lecture was on the classic french dish, Duck a l'orange. It is a roast duck with a sweet and sour orange sauce.

Because the leg and thighmeat of the duck take much longer to cook than the breastmeat, the breasts are usually done long before the thighs are. So the thighs are reserved and baked a second time until thoroughly-cooked, and served along with a salad as a ''second service''.

Here the thighs are coated in mustard, breaded and broiled to give a change of pace.

Tony Baker, executive chef of Montrio Bistro in Monterey, wins the $5000 prize (and 1000 lbs. of garlic) of the Iron-Chef-like cook-off at the Gilroy Garlic Festival. The contestants had to make one pork dish and one salmon dish incorporating garlic.

Okay, the sign and building facade have fallen into a state of disrepair... but the food had not! I've been stopping at this place for meals ever since 2006 when the then director of the LaGrange Art Museum suggested that Frank's, on Interstate 85's Exit 56, was a great place to stop between Atlanta and LaGrange. The LaSagna is awesome! (I rarely use that overused word) They bake Apple, Peach and Cherry turnovers, each big enough to feed a family, beer & wine, good service. So what if they are adjacent to a service station. Worth a stop any day.

I figured this would be perfect to have some country food: hand battered fried chicken, sweet potatoes and corn. The chicken was delicious.

Within the walls of Lincoln Castle can be found a Victorian prison complete with an unusual chapel. In the mid-nineteenth century, prisoners were kept under the "separate system" and denied all contact with each other, using solitary cells, a rule of silence and hoods. The system was condemned as cruel and lasted only a short time but the prison chapel survives as a remarkable example of how the system operated. The pews were specially designed to allow the prisoners to see the chaplain in his pulpit without seeing each other. Each prisoner stood, or sat, in a wooden compartment which was locked before another prisoner was admitted. Condemned criminals sat at the back, women at the front and debtors to the side.

This is part of my family (mom's side) that was in England during late Victorian times. The move to America happened around the turn of the century, AS FAR AS I KNOW (I'm so shaky on clear facts).

On the back of the picture it reads:
"My Dear Richard this is C.A. and her little family. The tallest little girl is called Tilly and the next to her is called Janis and the other little one is called Catherine she is very delicate and that is the Old Boy sitting on C.A. lap he is a fine old Romp he is called Robert don't you think they are looking fine good bye XXX"

Yes, the "Old Boy" is wearing a dress. Ah, back in the days when they used to dress little boys like girls.

Shot in raw and then adjusted exposure using histogram using ZoomBrowser EX. Hand held camera (if I had used a tripod I would have got better clarity). Canon 50mm f/1.4 lens.

Couldn't be bothered to do much else today, so captured my reflection in the saucepans whilst cooking the dinner. Was busy on the computer for most of the day doing dyslexia stuff of one sort or another, and had a rather frustrating lesson with a reluctant pupil in the afternoon, then a quick visit to Pete and a bit of shopping in the evening. And so to bed, perchance to sleep!

I've come to the conclusion that watching The Food Network when you're hungry (and even often when you're not) is a dangerous proposition. There's a very high likelihood that you are going to start craving whatever they are showing. There's a new series on called "The Best Thing I Ever Ate" where the network's personalities discuss the best things they've ever eaten, usually in line with a theme. I've found a similar effect from watching Diners Drive-Ins and Dives...ack. I don't know how Guy Fieri manages to eat all that food and not be ginormous.

Stripped out of any traditional recipes or materials - we basically have no sense of what's the food, what's the season - or when one comes out of relatively long and tough winter what one should eat or try. [I do my best with my trainning in orinental and international kind of cooking and recipes, but with very very limited supply of fresh and usable ingredients, it hits the wall by the end of 3 or 4 months long of winter in this region. ]

We have no sense of it. In town, there are so so high grade one large grocery store, and one supposedly progressive Green - local and organic grocery store -

but we never hear anything about what to eat, how to cook at 'timing' - or season. Rather we read into books from 50s, 60s, and 70s.

Their descriptions are also often - so simple and scant or so far away - eat blue gills fished from a pond/lake - and berries - that can make a 'meal'? -

so we still mostly rely on non-seasonal, packaged, supplied from 'we don't know where' kind of food.

But last time, previous one try of traditional, very simple apple pie gave us some sense of how it can be. So we tried one more time, this time mixing one pear - in the filling.

And we liked it.

NITRO-GREEN TEA AND LIME MOUSSE (2001)

An egg white mousse, infused with green tea and lime juice, was formed into a ball (using an iSi whip) and poached in a smoking bucket of liquid nitrogen. This resulted in a thin, crisp and crunchy shell that surrounded a soft almost chewy meringue mousse interior. We were instructed to consume the ball right away in one bite (note the server doing so at the end of the video) after it was generously dusted with matcha powder. I found the matcha powder slightly grassy, obviously top notch (and kind of wished I had a nice hot cup of it at the end of the meal). The same server also spritzed a mist of lime oil in the air to heighten the refreshing sensation for both the palate and senses. Talk about a show stopping start to a lengthy tasting. :)

live octopus is salty like the ocean. when cooked it takes on a completely different flavor and loses much of its brininess. its texture is exactly what you'd expect; slimy, squirmy, suction-y. i prefer it live.

The City Wall of Nanjing was designed by Emperor Zhu Yuanzhang (r. 1368-1398) after he founded the Ming Dynasty and established Nanjing as the capital 600 years ago. To consolidate his sovereignty and keep out invaders, he adopted the suggestions of advisor Zhu Sheng to build a higher city wall, to collect grains and to postpone the coronation. Then, he started to build the city wall. It took 21 years for the project, which involved 200,000 laborers to move 7 million cubic meters of earth.

The first Ming emperor was proclaimed in 1368 and a great deal of preparation was done prior to this to have an imperial city and all the imperial trappings ready in time. The name of the city was changed again to Yingtianfu (responding to heaven). A "new city" was built to the east of the old one to be used as a new palace or "forbidden" city. This city was laid out in much the same pattern as Beijing; indeed Nanjing’s was the pattern for Beijing’s Forbidden City.
In expanding the walls, it appears the Hongwu Emperor intended initially to simply add a bulge to the existing walls and encompass the New City to the east. The main north gate would have been the Drum Tower. However, a decision was made to bring Lion Hill to the northwest into the city defenses for strategic reasons, and this almost doubled the area the walls would encompass. In addition to the surviving walls of stone and brick, an outwall was built along the river and to the south as an additional defensive measure. Old maps show that there were close to twenty walls in this rammed earth wall. This outwall is long gone, but the names of the gates survive as local place names. Part of the wall on the south shore of Xuanwu Lake was built on the foundations of the old Stone City walls from the Six Dynasties period, and reused many of the bricks from that old wall.

Originally, thirteen gates were built through Nanjing’s walls, but this number had grown to eighteen by the end of the Qing dynasty. Of the thirteen original gates, only Zhonghua Gate in the south, originally known as Zhubao Gate, and Heping Gate in the north, originally called Shenci Gate, are still standing. Heping Gate is closed to the public as it is still used as an army barracks. Parts of other gates survive or have been partially reconstructed. The remains of a west gate, Hanzhongmen, originally called Shichengmen, stand in the middle of a plaza. These walls are part of the last of a series of three or four courtyards that made up the gate complex. During the Qing dynasty three more gates were added, including an entrance to Xuanwu Lake from the west built in 1910. Yijiang Gate on North Zhongshan Road was built in 1921, as was the major entrance to the city during Republican times when most visitors to the city arrived by boat at the docks just to the west. Additional gates were added in 1929, 1932 & 1954 to improve traffic and older gates were torn down for the same reason.

Different from ancient city walls in Beijing and Xi'an, its design and construction was unique and changed the old ways of equilibrium and symmetry. The construction concentrated on military defense because the city was at the foot of a mountain-- a natural barrier to control the commanding elevation with the river as its natural city moat. Because of this, the 60-square-kilometer Nanjing city became strategically located and difficult to reach.

Nanjing's city wall belonged to a military defensive system too. The difference was that it adopted a winding, free style, based on the city's complicated topography. Construction of the Beijing and the Xi'an city walls was in the ancient style of square or rectangular design. When it was built by the second son of Emperor Zhu Yuanzhang, the dozen-kilometer long Xi'an city wall became the seat of local government. It could not match the scale of the capital Nanjing at that time.

Today the 600-year-old city wall of Nanjing still stands. Experts from Nanjing Cultural Relic Bureau say most of the foundations use granite, rectangle stones or limestone. The walls were packed layer by layer with broken bricks, gravel and yellow earth. All the brickwork joints were poured with mixed lime, water in which glutinous rice had been cooked and tong oil because the coagulated mixture was very strong. That is why the city wall has stood for a long time. On top of the outer wall were 13,616 crenellations, or battlements, for defenders of the city to observe the enemy or dodge arrows. Opposite it was the parapet wall used as a balustrade to keep the defenders and horses safe. Standing on the wall, you will see tall ancient trees under your feet. Aside the top wall there are stone sluices to drain rain and near the wall's foundation there are further outlets. This, perhaps, is another reason for its powerful foundation and defense projects. The ancient city wall was listed as a key cultural relic under state protection in 1988.

Making cheese is easy! Buy a big thing of plain yogurt - don't go for the low/non-fat. I know, I know, but you're making cheese. Stir in about a spoonful of salt and carefully turn onto a large, clean cheesecloth. To ensure cleanliness, first boil the cheesecloth in water for a minute, then drain carefully, making sure not to re-contaminate it.

Once you've placed the yogurt in the cheesecloth, gather the corners of the cloth thereby creating a sack out of it. Tie it as airtightly as you can and hang over a large bowl in a cool, dark place away from animals, children, and inquisitive guests. You can put it in the fridge as well; it'll just take longer. Depending on your climate, it will take 2-3 days for the yogurt to lose most of its water; check for cream cheese consistency. Now grab a jar which you've cleaned by keeping it (open!) in a hot oven for a few minutes. Fill about half of it with good olive oil and add garlic, herbs, red pepper flakes, and peppercorns (NOT ground pepper - you'll fog the oil.) Form 1" balls of cheese with moist hands and drop them in the oil. After about a day, fish them out with a spoon and sloppily spread on warm bread slices. Top with sundried tomatoes in oil for a fabulous treat.

The cheese has a fridge life of about 3 days... Eat or share with family and friends quickly!
