Live: Cooking in Liquid Nitrogen
NITRO-GREEN TEA AND LIME MOUSSE (2001)
An egg white mousse, infused with green tea and lime juice, was formed into a ball (using an iSi whip) and poached in a smoking bucket of liquid nitrogen. This resulted in a thin, crisp and crunchy shell that surrounded a soft almost chewy meringue mousse interior. We were instructed to consume the ball right away in one bite (note the server doing so at the end of the video) after it was generously dusted with matcha powder. I found the matcha powder slightly grassy, obviously top notch (and kind of wished I had a nice hot cup of it at the end of the meal). The same server also spritzed a mist of lime oil in the air to heighten the refreshing sensation for both the palate and senses. Talk about a show stopping start to a lengthy tasting. :)

hypnotic.
live octopus is salty like the ocean. when cooked it takes on a completely different flavor and loses much of its brininess. its texture is exactly what you'd expect; slimy, squirmy, suction-y. i prefer it live.
