Oatmeal Mini Pieces Cookies
2/3 cup shortening
1/2 cup light brown sugar
1/3 cup sugar
1 egg
1/2 teaspoon vanilla extract
1 cup flour
1/2 teaspoon baking soda
1/2 teaspoon salt
2 Tablespoons milk
1 1/2 cup rolled oats
1 1/3 cup Mini Reese's Pieces

Preheat oven to 350 F
Beat shortening, brown sugar and sugar in a large bowl. Beat in eggs and vanilla. Stir together flour, baking soda and salt. Add alternately with milk to sugar mixture. Stir in oats and candy pieces. Drop by scant 1/4 cupfuls or #16 scoop onto lightly greased cookie sheets.
Bake 12 to 15 minutes or until lightly browned. Cool 10 minutes on cookie sheet.

Note: I used a smaller scoop (#40) and baked for a shorter time.

My hubby and I took a four day mini vacation down to Chattanooga, TN. While we were there, we were lucky enough to meet Sandie (cookielady0000) from Flickr and her husband Tom. I got to see her GORGEOUS cookie shop. I made these to bring to her. (Cookie sheet inspired totally by kneadacookie!) She totally outdid me by preparing a beautiful basket of delicious cookies for me, which my hubby and I munched on our entire trip!!! :)

Perspective
Knob Mountain is a mountain in Page County, Virginia. It is part of the Blue Ridge Mountains. Its summit lies within Shenandoah National Park. This shot of the mountain was taken from Jeremey's Run Overlook on the north ridge of Neighbor Mountain. Knob Mountain and Neighbor Mountain are separated by a stream known as Jeremy's Run.

Geology
Geologically speaking, the mountain is situated in the northern subprovince of the Blue Ridge Province of the Appalachian Highlands. It is part of the Crystalline Appalachians.

Visiting Knob Mountain
Knob Mountain is is accessible from the Knob Mountain Trail, which runs along much of the mountain's ridge. The closest scenic viewpoint along Skyline Drive from which to view Knob Mountain is Jeremy's Run Overlook on the Blue Ridge.

As an bit of light relief I thought I would post some shots from the recent Knob Throwing Festival at Cattistock in Dorset.
A Dorset knob is a form of biscuit approximately the size of a profiterole - said to be the favourite biscuit of Thomas Hardy.
The aim is to hurl (notice the careful of avoidence of the word toss) the knob as far as you can using an underarm action only.
Good clean fun for all the family!
Other activities included Guess the number of knobs, knob painting, knob eating competition, knob shooting, knob darts, the knob and spoon race and, my personal favourite, pin the knob on the cerne abbas giant!

They're wearing their matching cataract-surgery survivor sunglasses. Heh, this photo was taken at Shatley Springs, up in the mountains. I'll have to tell you what county---mountain people kind of think in terms of their county, and they have allegiance thereby.
Shatley Springs is an old-timey breakfast house, that seats a bunch of people and cranks out the food. I mean cranks. You get eggs (and they do crack their own eggs) and grits and sausage and bacon and country ham and (how do I do the underscore) AND Pork side meat. I mean, they flat out make use of the pig.
You get stewed apples and redeye gravy and sausage gravy, and of course you get biscuits. They are not the best biscuits I ever had---that distinction belongs to my Aunt Betty, and I would put her biscuits up against anybody's (once, at LUNCH, at LUNCH) (of course she made biscuits for breakfast, but then she made fresh ones for lunch) once at lunch she made two different kinds of biscuits, regular baking powder biscuits and yeast biscuits, just to show off, because I told her how good her biscuits were. So Shatley Springs' biscuits aren't that good, but they're plenty good. The coffee is weak, but that's not going to change and that's they way most folks like it, so no use complaining. My only real complaint is that you don't get real butter---you get "I can't Believe It's Not Butter" or something like that. I guess I have to live with that.
When you're done eating (it's all you can eat) they bring plastic bags and extra paper napkins, and you can make sandwiches out of the country ham (I forgot to mention the country ham (very salty) and the biscuits, or the sausage and the biscuits, or the pork sidemeat. Those biscuits are fine without refrigeration. I'd guess in the old days, when the menfolk were out in the fields, they carried a biscuit sandwich or two to tide them over.
One of my accomplishments as a cook has been that I can make decent biscuits without measuring the ingredients. I doubt Aunt Betty did a lot of measuring--she knew what the right amount was.
Oh yeah, these two girls went on a cruise in 2005 and missed the reunion. I made my mother promise that that wouldn't happen this year. Why anyone in their right mind would rather be in the Bahamas when they could be in the North Carolina (actually, the campground is in Virginia) mountains is way beyond me.

Once you've split your bread and coated both sides thickly with relish, you'll pile on meats and cheeses at your pleasure. I used salami, mortadella, ham, prosciutto, provolone and mozzarella. Then I took the sandwich down to the corner of my dungeon, apparently. How did this picture get so dark?

Dangerously addictive! Easy to make ! Not too sweet !

*Chunky peanut butter (No sugar added. Choose better quality. I use the one from Trader Joe's) -- 160 g
*sugar -- 50g
*salt (optional)-- a pinch
* 1 egg
*flour -- 35 g
*baking powder -- about 1 tsp

1. Mix everything well except flour & baking powder.
2. Then add flour and baking powder, and mix them with a spatula. If they don't stick together, add a little bit of water. (I usually put about 1 tsp)
3. Make balls and flatten/make cookie-shape on the baking sheet.
4. Bake them in the about 337 °F(between 325 and 350 °F ) oven for 12 minutes.

That's it.

I made these a zillion years ago...but packing and moving and vacationing and no internet kind of put the flickring on hold.

These are from Martha Stewart's Baking Handbook. They're peanut butter cookies (made with chunky peanut butter) sandwiched with a peanut butter frosting (made with creamy peanut butter). They were buttery and peanut buttery and yummy....but a little bit of a pain to make. The dough was very soft. That said, I would still make them again.

Hungarian Shortbread

We're having a cookie bake-along on a food board and this is the current choice. Apricot on the left and strawberry on the right. The strawberry used my homemade jam. Absolutely divine! Original recipe is in Baking with Julia.

The Recipe:

Hungarian Shortbread
The original recipe uses rhubarb, but you can't always find that. I chose to make this in two dishes, using apricot and strawberry.

4 cups all-purpose flour
2 cup granulated sugar
2 tsp baking powder
? tsp salt
1 pound (4 sticks) unsalted butter, softened
4 egg yolks
1 cup apricot jam

Sift together the flour, sugar, baking powder and salt. Set aside dry ingredients.

Cream the butter and egg yolks until fluffy. Add the dry ingredients and mix until the dry ingredients are just incorporated. Scrape the dough out onto a lightly floured surface and quickly form two balls, one just slightly larger than the other. Wrap in plastic and freeze for at least 1 hour (or as long as 1 month).

Preheat oven to 350°F. Butter and flour a 9 x 13 inch baking pan.

Take the larger ball of frozen dough and coarsely grate (by hand or using grating disk of food processor) into the bottom of prepared pan.
Spread out the shreds of dough evenly in the pan. Spread the jam evenly over the base layer of dough. Take the remaining ball of frozen dough and coarsely grate over the jam layer.

Bake until golden brown, approximately 35-45 minutes. Cool completely before cutting. Sprinkle the tops with powdered sugar if you like.

Notes:
1. I baked this in two Fiesta square bakers rather than the one larger pan, so that I could have two flavours. Use 1 cup of jam per pan if you do that.
2. I let the shortbread cool in the bakers until the dishes were just barely warm to touch, then turned the shortbread out onto flat platters. Just run a knife around the edge before turning. Also, I sprayed the bakers with Baker's Joy before grating in the dough.

I made these by combining a few recipes, and I have to admit, even if I'm not a huge fan of shortbread, the taste is quite buttery, not too sweet, the flavor of the fruit is perfect, and the appearance of the sparkly crust is awesome.

Italian Vanilla Cookies

Ingredients:
• 6 eggs
• 1 cup oil
• 1 cup sugar
• 5-6 cups flour
• 1/2 cup milk
• 2 Tbsp. vanilla
• 1 tsp. baking powder for each cup of flour

Mix eggs, milk, oil, sugar, and vanilla together. Add flour and baking powder until the dough is soft but not wt, usually about 5 cups of flour. Take a small amount of dough and rub it between your hands to form a snake-like piece. Twist it into a pyramid shape on the cookie sheet. Bake until lightly brown and cool. Frost with icing.

Variations: You can also cut about 1/3 down on the cookie and fill it with jam. Replace the top and frost.

I'm the kind of woman who loves to bake, because there's something really fantastic about eating things you've made yourself. When it comes to food it's best if you know exactly what's in it, how it was prepared, and where it has been. When you're wheat intolerant to the extreme that I am, what's in your food becomes even more important.

Today I have been craving sponge cake, which is something I've not had since I allowed myself a little indulgence the day after my wedding. I pulled out the cookbook my sister gave me as a birthday present and went to play in the kitchen. These lovely, golden-brown cakes were the result. Don't they look tasty? :D

I made cookies...kind of?

I followed a recipe for vegan wheat-free chocolate chip cookies. (Because you know, I am neither a vegan nor allergic to wheat...xD)

But we had no chocolate chips or brown sugar. So instead, I added peanut butter and cocoa.

They were actually quite delicious. I might have to name the recipe. Any suggestions? Lol!!
