I have to admit I have never actually made a Bolognese sauce before. I will also have to admit I could have devoured the entire thing myself. I just loved it.
This is the result of combining three different recipes. I cooked the sauce in a slow cooker (crock pot) before finishing, but you could also do it in a dutch oven or large pot. This makes a big batch. I froze half of it for another time.
I used a bag of shredded carrot and chopped it up. Finely chop one large onion and a stalk of celery. Dice three tomatoes, or use a 28 ounce canned of chopped or whole plum tomaotes, cut up.
Brown 1 1/2 pounds ground beef and 1 1/2 pounds ground pork sausage. Drain and reserve. Heat olive oil over medium heat, and saute the carrot, onion, and celery, until soft. Add the tomato and pancetta and saute another 3-4 minutes.
At this point, either add the beef and sauage and sauteed vegetables to the slow cooker, or continue on in the cooking vessel you are using. Either way, the meat and veggies should now be in one pot.
Add two cups of beef broth and one and a half cups of red wine. Season with salt and pepper. Either simmer for 1 1/2 hours, or set the slow cooker to eight hours and cook.
When finished check for seasoning and adjust with more salt & pepper if needed. If there seems to be too much liquid, heat on high until most of the liquid has evaporated.
To serve, toss with one pound of pasta and add a half cup of milk, half and half, or heavy whipping cream while over heat. Stir to combine and plate.
Top with parmesan cheese, of course.
Chicken in Creamy Creole Sauce
This was delicious! I will make it again for sure. I did change some things from the original recipe. I used chicken parts instead of chicken breasts, added some sliced hot sausage and a small can of sliced mushrooms. I skipped the milk part, I thought the sauce was perfect just the way it was.
Chicken Breasts in Creamy Creole Sauce
Chicken breast recipe for crockpot with bacon, chicken breasts, green onions, Cajun or Creole seasoning, and tomato paste.
Cook Time : 7hr (3 hours on high for me)
1 bunch green onions (6 to 8, with most of the green part)
2 slices bacon
1 teaspoon Creole or Cajun seasoning
3 tablespoons butter
4 tablespoons flour
3/4 cup chicken broth ( i used 1 cup)
1 to 2 tablespoons tomato paste
4 chicken breast halves
1/4 to 1/2 cup half and half or milk
In a saucepan, melt butter over medium low heat. Add onions and bacon, cook and stir for 2 minutes. Add flour, stir and cook for 2 more minutes. Add chicken broth; cook until thick then add tomato paste. Place chicken breasts in the slow cooker/Crock Pot; add sauce mixture. Cover and cook on low for 6 to 7 hours, stirring after 3 hours. Stir in milk about 30 minutes before done. Serve over pasta or rice. serves 4.
