It was a fabulous experience - Robin Turner (in the pink shirt), a Newlyn fish merchant and very good chef, showed us around the fish market at dawn. Next we went to the Newlyn Trinity Centre where Robin and some lads on work experience from Brittany cooked us smoked Haddock and poached eggs for breakfast. Crockpot lamb shanks with garlic & rosemary 1 cup dry red wine 2 tbsp dijon mustard 2 tsp kosher or coarse sea salt 1 tsp freshly ground pepper 4 lamb shanks Minced cloves from 1 head garlic 2 yellow onions, chopped 1 large carrot, peeled, finely diced Finely grated zest of 1 lemon 2 tbsp chopped rosemary In bowl, mix wine, mustard, salt and pepper. Place in slow cooker. Add shanks. Scatter garlic, onions, carrots, zest and rosemary on and around shanks. Cover and cook on high until meat is falling from bone, about 4 to 6 hours. (If desired, cook on low, as per manufacturer's instructions.) Transfer shanks to serving platter. Pour juice and vegetables into bowl and pass separately. Makes 4 servings. Mine didn't quite look like theirs - and, I confess, never having had lamb necks before in my life, if it hadn't been for the pretty picture I would never have even tried it. Rye bread, buttered on both sides, is set into individual gratin dishes and set in a 475 degree F oven for 5 minutes to lightly toast. Once the toast is removed, the oven temperature should be reduced to 350. Next: for each: sprinkle 1/4 - 1/2 cup grated Emmentaler cheese over the bread, and make a slight well in the center of the cheese. Break one egg into the well. Season with S&P to taste. Drizzle about 1 T cream over the egg, and sprinkle with 1 tsp grated Parmesan cheese. Bake for 10-11 minutes. We both thought the egg was delicious; it is more filling than expected and one egg was enough for us. While we like our traditional citrus ambrosia for Christmas, we decided that spiced apples, stewed apples, or stewed dried fruit would make a better accompaniment for this dish. thanksgiving - pumpkin pie. just the normal libby's pumpkin pie recipe (from the back of the can). For the first time ever, I had the right amount of filling for one pie. Usually, I end up with too much filling, but this time it worked perfectly! The crust is the Mark Bittman "How to Cook Everything" version and it turned out pretty well also. Really interesting to see how the crust worked as a pie crust and as a tart crust (not pre-baked vs. pre-baked). The pie tasted delicious a few days after Thanksgiving (much better than it did the first day, for some reason). Blueberry Pie K and I have been having an ongoing discussion about the therapeutic results of baking. Last night, in an effort to quell the growing freakout of buying a house/moving/job hunting/life, she & her team came over to bake blueberry pies. K made the crusts (Joy of Cooking) and I made the insides (Cook's Illustrated). Mental note: next time read ahead to find out how long baking will take. Six cups cored, peeled, and sliced apples in a slow cooker with half a cup water, half a cup sugar and cinnamon and ginger to taste. Serves 10 people Ingredients For the Hush Puppies 1 cup tasso ham, diced fine 2 cups yellow cornmeal 1 cup all-purpose flour 5 teaspoons baking powder 2 teaspoon salt ? teaspoon black pepper 2 large eggs 1 ? cup buttermilk, shaken ? cup fresh chives, minced ? cup cheddar, grated ? cup fresh corn kernels Dash of cayenne pepper 2 quarts vegetable oil for frying For the Ketchup 4 cups canned tomato, pureed 1 onion, small dice 2 tablespoons olive oil 1 tablespoon tomato paste 2/3 cup packed dark brown sugar 1/2 cup cider vinegar 1/2 teaspoon salt Instructions For the Hush Puppies Cook the tasso ham in a heavy skillet over moderate heat, turning occasionally, until crisp. Transfer with a slotted spatula to paper towels to drain. Heat oil in a large heavy pot over high heat until it reaches 375°F on thermometer. While oil is heating, whisk together cornmeal, flour, baking powder, salt and pepper in a bowl. Whisk together egg and milk in a small bowl, then add to cornmeal mixture and stir until combined. Stir in tasso ham, chives, corn kernels and cheddar until just combined. Working in small batches, carefully add 1 tablespoon of batter per hush puppy to hot oil and fry, turning, until golden, 1-2 minutes, then transfer with a slotted spoon to paper towels to drain briefly. A pastry bag filled with the batter might be a good option, too. Return oil to 375°F between batches. For the Ketchup Cook onion in oil in a heavy saucepan over medium heat, stirring until softened, about 8 minutes. Add pureed tomatoes, tomato paste, brown sugar, vinegar, and salt and bring to a boil, then simmer, uncovered, stirring occasionally, until very thick, about 1 hour. Puree ketchup in a blender until smooth. Cover and chill. In small bowl, mix cheese, pepper and oil. Sprinkle mixture evenly over prosciutto on each rectangle. Sprinkle with basil. 3.Starting at short side of each rectangle, roll up; seal long edges. With serrated knife, cut each roll into 5 slices. Place, cut side up, on cookie sheets. 4.Bake 15 to 20 minutes or until golden brown. Remove from cookie sheets. Serve warm.
