Pumpkin Cookies with Browned Butter Frosting Cookies 2/3 cup granulated sugar 2/3 cup packed brown sugar 3/4 cup butter or margarine, softened 1 teaspoon vanilla 1/2 cup (from 15-oz can) pumpkin (not pumpkin pie mix) 2 eggs 2 1/4 cups Gold Medal® all-purpose flour 1 teaspoon baking soda 1 teaspoon ground cinnamon 1/2 teaspoon salt Browned Butter Frosting 3 cups powdered sugar 1 teaspoon vanilla 3 to 4 tablespoons milk 1/3 cup butter (do not use margarine or spread; it will burn) Directions: 1. Heat oven to 375°F. In large bowl, beat granulated sugar, brown sugar, 3/4 cup butter and 1 teaspoon vanilla with electric mixer on medium speed, scraping bowl occasionally, until well blended. Beat in pumpkin and eggs until well mixed. On low speed, beat in flour, baking soda, cinnamon and salt. 2. On ungreased cookie sheets, drop dough by heaping tablespoonfuls. 3. Bake 10 to 12 minutes or until almost no indentation remains when touched in center. Immediately remove from cookie sheets to cooling rack. Cool completely, about 45 minutes. 4. In medium bowl, place powdered sugar, 1 teaspoon vanilla and 3 tablespoons milk. In 1-quart saucepan, heat 1/3 cup butter over medium heat, stirring constantly, just until light brown. 5. Pour browned butter over powdered sugar mixture. Beat on low speed about 1 minute or until smooth. Gradually add just enough of the remaining 1 tablespoon milk to make frosting creamy and spreadable. Generously frost cooled cookies. Brown butter cookies and cream We had leftover brown butter ice cream that I had made the night before (?). It tasted good but I think I didn't quite emulsify the butter well enough because it was slightly grainy. Tasted good with Oreos crushed into it, though. Seattle Food Photography/Styling Meetup Cookie Swap Each year on our block, we have a cookie party with the neighbors. This year, I extended the tradition and had a party with my Food Photography meetup group. We each brought cookies to share, and spent a couple of hours talking a bit of shop and a bit of personal goings on. For the past several years, my holiday cookie of choice has been the Pizelle. I just love the intricate designs, the simple flavor and the perfect crispness. This year, I mixed it up a bit using the Tea & Honey Crisp recipe from Bon Appetit. It's not quite the same as the Pizelle recipe, but crisps up well. Also, unlike the Pizelle's the cookies come out of the iron very, very soft so they can be easily shaped into cones. I stuffed these with a mascarpone/vanilla/whipped cream concotion reminicent of a canoli stuffing. We didn't eat them quite quickly enough, so the cookie part softened up, but they were still very tasty. Steak and balsamic-glazed mushrooms - Jamie Oliver Recipe Serves 2. 2 x 250g rib-eye steaks 300g chestnut mushrooms 1 small bunch fresh thyme 1 lemon 2 garlic cloves 1 knob of butter 1 tsp English mustard 70g rocket leaves 3 tbsp extra virgin olive oil balsamic vinegar olive oil sea salt black pepper (freshly ground) Steps: 1. Preheat your oven to the lowest setting and place your plates in the oven to warm. 2. Take the steaks out of the fridge and place on a plate to allow them to come up to room temperature. 3. Pick the thyme leaves and discard the stalks. Finely grate the zest of the lemon. 4. Drizzle the steaks with olive oil, then scatter over the thyme leaves and the lemon zest. Season well with salt and petter, then rub all of these flavours all over the meat.. 5. Place a frying plan on a medium heat (for the mushrooms). 6. Bush the mushrooms clean with a pastry brush, then trim the stalks off so they're flush with the cap. Peel and finely chop the garlic. 7. Put the griddle pan on high heat. 8. Add a splash of olive oil to the hot frying pan then lay the mushrooms in the pan. 9. Fry the mushrooms gently, all in one layer, for 5 minutes, then turn each one over with a spoon or a pair of tongs. Add the garlic and a sprinkle of salt and pepper to the pan. 10. When the mushrooms are soft and the garlic is golden brown, turn the heat off and add the butter and a drizzle of balsamic vinegar. Shake the pan about so all of the mushrooms get nicely coated. 11. Lay the steaks in the screaming hot griddle pan. Press down on them lightly with the tongs to make sure they're in good contact with the ridges of the pan. 12. Cook on each side for about 2 mins for a 2cm thick steak - this will give a medium rare steak, but cook for less or more time on each side depending on how you like your steak. 13. Once done, use tongs to transfer the steaks to a plate to rest for a min or two. 14. Cut the lemon in half and squeeze a tablespoon of juice into a mixing bowl. 15. Add the extra virgin olive oil, mustard and a good pinch of salt and pepper then whisk lightly to make a dressing. 16. Make your table look respectable - get the cutlery, salt and pepper and drinks laid out nicely. 17. Pour the resting juices from the steak into the mixing bowl with the dressing and toss the rocket through it. 18. Get your warm plates out of the oven and divide the mushrooms between them, then drizzle over all the lovely juices from the pan. 19. Thickly slice the steaks and lay on the plates next to the mushrooms, pile the dressed rocket on the side and tuck in! Medium Ribeye Steak with Spinach Look ever so few carbs! This steak was seared and cooked on low/medium heat on a griddle pan but unfortunately ended up slightly overcooked... I prefer my steak rare to medium rare... this ended up medium after being left to rest for just over 10 minutes. Topped with a peppercorn sauce. This is seriously the easiest cookie ever: 1 cup creamy peanut butter* 1 cup sugar 1 egg Mix and do that criss-cross fork-and-sugar thing on the top. Bake at 375 for 8 minutes. You should get about 24 out of this recipe. I was bold today and added 1/4 cup fresh chopped peanuts to the recipe. *Resist the urge to use the honey-roasted flavor. It burns when it bakes. 3 ingredient peanut butter cookies! Yes ONLY 3!!! 3 ingredients! Easiest recipe ever. 2 cups peanut butter, 1 cup sugar, and 2 eggs. I did half granulated sugar and half brown sugar though. Bake @ 325 for 15 minutes! I made them for J's school. Actually these are for the PTO meeting, I did make my usual cuppies too. Happy Gingerminion From the first batch of minions, going to GS on Monday. The recipe: Gingerminions (homage to The Tick) 3 1/2 cups all-purpose flour 1 1/2 teaspoons ground ginger 1 1/2 teaspoons ground cinnamon 1/4 teaspoon salt 1/2 cup white sugar 1/2 cup shortening 1 egg 1 cup molasses (Blackstrap makes a very intense version of this cookie and seems to be more popular amongst friends. Use lighter if you want a sweeter cookie.) 1 teaspoon baking soda 1 1/2 teaspoons warm water Directions: 1 In large bowl, cream shortening, sugar, egg and warmed molasses. Dissolve baking soda in warm water and add to egg mixture. Beat until smooth. 2 Slowly add flour, spices and salt. Mix until well blended. 3 Cover and chill for 24 hours. 4 Preheat oven to 350 degrees F. Grease cookie sheets. 5 Roll out dough to a thickness of 1/4 inch on a floured surface. Cut out gingerbread men using cookie cutters and place 2 inches apart on cookie sheets. 6 Bake 10 to 12 minutes. Let cool on wire racks. I use a basic royal icing to decorate with. Has anyone seen my shoes?? Three weeks ago one of my dreams came true. I finally got to see something I've always wanted to witness live. I finally saw someone get hit by a car. *car/person collision noise* Nailed, this guy got hit right in the hip. That's your center of gravity and that sends you flipping through the air like Eddie Gordo from Tekken when someone doesn't know how to do combos and they're just hitting the buttons randomly. I always just miss it, right? I'm looking, and then I go to order my twisty cone. *Collision noise* Oh what, what happened?! The guy got hit? No. I just went to order my twisty cone and I missed it. This guy gets nailed.. this is the setup. He's walking down the street and he's doing that wacky speed walk.. he's got the buds in his ears, and I don't know what you're listening to that makes you do this fucking walk. Maybe just a tambourine or maracas. You're just.. *shookashookashookashooka*. So Johnny Tambourine is walking down the street, he's got the "not a good time to cross" signal. As he's going across, I see the car *car noise* coming down the street. When I see the car coming, I'm like "yesssss finally. don't talk to me. don't talk to me I gotta see this." *collision noise* The guy goes flying into the air, his shoes flew off. When you get hit by a car, sometimes your shoes will fly off. Sometimes your pants will come off. But I was not fortunate enough to see the pants portion on this strike. And before I go any further, here's the best part. This is how he lands on the other side of the car -- which was a dodge by the way, and I thought that was kind of funny and ironic. I just -- I got a little humor out of that. I did try to help this man, as the car was coming towards him I reached out and I said "ohhhhh. ohhhhh." That's all I could think of to say. theres so many things now in retrospect that I would love -- I would love to have been like "you're about to get struck by a vehicle!!!" I did not have time to say "You're about to get struck by a vehicle" so I went with "ohhhhh!" which is like a concerned moan. The guy gets tagged okay, the greatest part of the story. He's in the air flipping around, this is how he lands on the other side of the car. He comes down perfectly on his feet and then he jumps in the air and he starts walking around, embarassed. He's trying to play it off like he didn't just get hit, by a car. People around him are like.. --"Oh my god! Oh my god! Are you alright? Are you okay?" He's like .. --"I'm fine, I'm fine. Seriously, I'm fine. I'm a little bit hungry. But uh other than that I'm fi--" --"No you should really sit down, you're bleeding from the ears." --"I know, I know that. I do that. Every couple of weeks I empty the blood out of my own head, it's tradition in my family. Has anyone seen my shoes? I kicked them off in a fit of joy. I love getting struck by vehicles and sometimes I'll kick my shoes off in a fit of joy. I'm fine I'm just gonna go over here and puke shards of my own pelvis into this bush." *puking noises* Danish Platter Here goes, can't deny my heritage with this one. Open Sandwiches are practically a way of life in Denmark and also a great way to serve glammed up left overs. Ryebread is a dark grainy bread favoured by most Danes (we tend to get withdrawal symptoms, if we have to go without it too long and white bread will not do for this platter). Fortunately both Tesco & Sainbury sell it often as German( slightly larger slice) or Swedish Style Ryebread - both are a good base. The secret lies in the garnish and lemon, cucumber feature heavily often with a sprinkling of fresh dill or parsley. Danish Open Sandwiches Serves 2 1) Eggs & Prawn on Rye 2 slices of buttered ryebread 2 lettuce leaves (round or iceberg are best) 2 sliced hard boiled eggs (easiest using egg slicer) 200g of prawns Mayonnaise Garnish Sliced cucumber 4 stalks of white asparagus 2) Pate w/pancetta & mushrooms on ryebread 2 slices of buttered ryebread 2 slices of lettuce Pate of your choice 4 slices of crispy pancetta bacon rashers 150g sliced, browned mushrooms 3) 2 slices of buttered Ryebread 2 lettuce leaves Leftover Haddock in bread crumb Mayonnaise garnish: 2 stalks of white asparagus & a slice of lemon 4) 2 slices of buttered Ryebread 4 slices of Leftover meatloaf 2 sliced gherkin 4 slices of red pepper Recipe for Meatloaf: 500g lean mince pork (turkey, chicken or beef works well too) 1 onion, finely diced 100ml of plain flour 2 eggs 1tsp salt pepper to taste bacon rashers (pancetta or Danish Bacon rashers are recommended) Mix ingredients well till mixture binds together. Form the loaf in a lightly greased tin or dish and cover entirely with bacon rashers. Bake in the oven for 1 hour at 190 degrees, lower heat if bacon is cooking too fast. It should be crispy brown at the end. Goes well with most things although I particularly like it with a salad and new potatoes. recycled red velvet cupcake recipe Food recycling? Doing a month of no food shopping and learning to use what i have instead of what i think i need... I cant use my turning yogurt for something fresh, but sure can cook with it and boy am I learning to hoard the milk for my morning cappuccinos. My aunt -bless her- instead of sending us the dreaded hickory farms gift basket as usual, sent us three kilos of coffee from a roaster near us in the languagedoc region (see local can catch on!) so we will be jittery for months to come. Milk shortage, what do you do? you can use up other things to achieve some delightful dishes that you didn’t think were possible. Exhibit A: found in the freezer some strawberry ice cream that I made two years ago from fresh strawberries. It was my first foray into ie ream making so its not that great tasting and after two years with no preservatives it hasn’t fermented into anything better either, no strawberry hooch or strawberry cider. Just a block of not bad but not so great ice cream. Sugar, milk and eggs and of course all those strawberries. What better to do then make it into a red velvet cake? And along the way I came up my new should be patented “vanilla spanking” I can just see all the celeb chefs right now writing it on post it notes for their telepromters… what fun it can be, “vanilla spanking tm” your cakes, muffins and waffles! 1/2c. + 1T. Shortening, that means butter or lard, I used leaf lard and duck fat 1 1/2c. sugar 2 eggs 2T. cocoa powder 1/4c. red food coloring 1 cup of buttermilk or yogurt that is about to go bad or if you use ice cream like I did reduse the sugar by a fourth of a cup Dash salt 2 1/2c. flour 1t. baking soda mixed into one tablespoon of hot water 1t. vinegar 2 1/2c. flour Vanilla bean, spliced Preheat oven to 350F •Cream shortening and sugar until light and fluffy. •Add eggs one at a time and beat well after each one •Stir cocoa and red coloring together. •Add to creamed mixture and beat well, about four minutes. it will look curdled and that is ok, dont worry! •Put salt into buttermilk or past date yogurt or old ice cream in my case and add to creamed mixture alternately with flour *tiffany this is where you can add those mushed up kiwis and the kids will get an extra dose of vitamins from them and not know any better! Just compensate with a little extra flour. I have been know to add mushy bananas, persimmons and other fruits to cupcakes like these. •Mix after each addition, just until incorporated. (Overbeating will toughen the cake.) •Stir in baking soda and water mix •Add vinegar to mixture and combine •Pour into muffin tins This is where I found that the vanilla bean innards that I scraped into the bowl didn’t really make it into the bowl but onto the floor and crusted onto my house slipper as I reached down to put the muffins in the oven. I examine the opened vanilla pod (which didnt fall) and it seemed to have some seeds left, so I whipped the sticky battered tops thrice each until I saw vanilla remnants on their red velvet tops. Spanking the vanilla out! You heard it here first. Bake for 30 min. cool on a wire rack and frost as you please. I will be doing a chocolate and sour cream frosting, but a butter cream would be heavenly—I don’t have a lot of butter left so I am hoarding that as well for my morning toasts. Homemade butterscotch ice cream 8 oz dark muscovado sugar 3 1/2 oz butter 1 1/2 pints piping hot milk 4 egg yolks Actions: Put the milk on to heat up so that it is simmering in the background, not boiling. Melt butter in to a decent, solid saucepan and put in the sugar, as lump free as possible. It's well worth getting hold of a Delia Smith mini-whisk (they come in packs of two from Lakeland.co.uk) to help whisk the sugar in to the butter, and keep stirring the hell out of it as it begins to bubble. Let it bubble as long as you can possibly dare to make it caramelise (it's bloody difficult to tell because it's so dark, so the best way to do it is by smell really). Start to gingerly pour in the milk. the first milk will splutter and erupt terribly, which is where the whisk comes into its own. You really need to whisk the thing fast and evenly, and start to pour in the rest of the milk either on a slow stream or in smallish increments. Once you've got approx a coffee mug of the toffee and milk whisked together you can pour a lot quicker. Taste with a teaspoon, and then say "Oh, my word". Put the lid on the pan, and leave to cool for a good hour. More if poss. Whisk the four egg yolks in to a bowl (remember the set of two whisks? This is when you use the other one). When creamy looking, ever so gently start to pour in the lukewarm butterscotch milk. I tend to put it in using a table milk jug and pour it in along the inside edge of the bowl. Keep whisking and whisking to prevent premature-egg-cooking. When your custard is completely mixed, put the bowl (or change to a heatproof one if you need to) over a simmering, not boiling saucepan of water. Whisk basically continually until when you put a spoon in to the custard, the mixture coats the back of it. If you've not done that before, make sure you put the spoon in before it starts to cook, so you know what it looks like when it *isn't* coating the spoon. It only takes ten or fifteen minutes, to be fair. Cool the custard, but keep coming back and giving it a whisk to prevent a skin forming. A different technique for that which I've not tried is apparently to put a circle of greasproof paper on the top of the custard. What I tend to do is stick it in the fridge to go completely cold overnight, and make the ice cream the next day. Our ice cream maker is extremely weird, having been bought working, but borked, from Ebay for ?5. So I switch the ice cream maker on for a while before we need it, so the drum is freezing cold, then I put the mixture in the bucket, put the bucket back in and voila. You need it to keep going for at least 25 minutes but basically check it out. If it's looking seriously granular in there, the job's done. Stick it in a tub and in to the freezer pronto. Given that this has no cream in it, it's really not too bad for you and OH GOD it do taste like heaven. Damned easy to do as well. Please note - this will scoop straight from the freezer. Don't put it in the fridge beforehand. Sausage meatballs with zuchinni and brocolli Beau and I have enjoyed gourmet sausages as meatballs since watching a Jamie Oliver show where he did just that. - 6 gourmet sausages (Beau had a mix of italian, chorizo etc. We like-a the spicy sausage!) - 1/2 zuchinni (chopped) - 1/2 a head of brocolli (chopped) 1) slice through the skin of each sausage and squeeze out meat ball sized amounts. You may choose to shape them into balls if you want 2) Fry them in a pan until cooked through 3) Add the veg 4) Serve and eat We should probably had more veg, but thats all we had. Must buy more! Also, Beau made this, then I cooked the quinoa in which time it cooled so he reheated it and the veg got a bit sad looking in the process. Still delicious! It Was a Dark and Stormy Night... I felt so cold all day and just really wanted to have something hardy for dinner. Dragged the slow cooker out of the back of the cabinets and made some stew. It was yummy with barley, tomatoes, fingerling potatoes, mushrooms, turkey sausage, carrots, onions, garlic and corn. A nice glass of red wine and some crusty bread and we were good to go! Bone Suckin' Brisket Ingredients: Bone Suckin' Sauce, 1 cup Bone Suckin' Seasoning Rub, 1/4 cup Beef Brisket, 3 to 4lbs trimmed and halved Dry Onion Soup Mix, (1 oz. package) Onion, sliced, 1 Directions: Trim brisket and slice into two pieces so they will fit into the slow cooker. Cover with Bone Suckin' Rub and Seasoning, place in plastic bag and refrigerate for 2 to 8 hours. When ready to cook, slice onion and place thick layer in bottom of cooker. Place half of brisket in cooker on top of the onions. Mix together Bone Suckin' Sauce and onion soup mix. Spread half of mixture over brisket. Add additional layer of onions and brisket. Pour remaining mixture over brisket. Cover and cook on low for 8 to 10 hours or until meat is tender. MoJul11 Slow-cooker attempt #2 was a success!
